You ever just have a stupid idea and decide to roll with it? Yeah, yeah that’s this. I just like the idea of Wisp having his own little cooking show going on in his head.
Actual recipe below the cut, because why not? Might as well.

Recipe? vvv
~What You Will Need~
1.) Two mixing bowls. You need two in order to mix the wet and dry ingredients separately before combining them.
2.) Assorted measuring cups. If you don’t have proper measuring cups, but you do have a container or spoon that you know can hold a certain amount of dry and/or wet ingredients, then by all means use that.
3.) A spatula, or a decent spoon. If you have a spatula, you’re golden, but if you don’t, no worries, a large, sturdy spoon will do the trick just fine.
4.) A loaf pan. You can also use a glass or metal baking pan like you would use for a cake if you don’t have a loaf pan. You mainly want a food and oven safe container with walls so the loaf can rise.
~Ingredients and Measurements~
-2 1/3 cups of mashed, overripe bananas. Depending on size, that’s about 3-5 bananas, but you can fudge things a little if you have one or two extra.
-2 cups of all-purpose flour.
-1 teaspoon of baking soda. 
-1/4 teaspoon of salt.
-1/2 cup of butter. That’s 1 stick of butter, try to get the unsalted kind. If you’re not able to have butter, you can substitute about 3/4 of a cup of vegetable oil for every cup of butter needed.
-3/4 cup of brown sugar.
-2 large eggs, beaten. If you can’t have eggs, you can replace two eggs with a half cup of unsweetened applesauce. 
[Keep in mind that any substitutions made may effect the baking time.]
~Directions~
-Preheat your oven to 350 degrees Fahrenheit or 177 degrees Celsius, and while that’s going on, lightly grease your loaf pan and set it aside.
-In your one of your mixing bowls, combine the flour, salt, and baking soda together and then set that bowl aside. 
-In the other mixing bowl, take your butter and brown sugar and cream the two together. You want a smooth mixture without any loose sugar crystals or lumps. [If you have a mixer, then you won’t have to think about it too much, but if you’re hand mixing like me, try softening and cutting up the butter before trying to mix it, because cold butter is a pain in the ass to hand blend.]
-Add your mashed bananas and eggs into the bowl with the butter and sugar and mix before combining your wet and dry ingredients together. Mix everything thoroughly to get rid of lumps and ensure that the overall mixture is moist.
-Next, take your mixture and distribute it into your loaf pan and stick it into your preheated oven for 60-65 minutes. Check for completeness by sticking a toothpick in to the middle, if it comes out clean, then you’re all good.
-Take the bread out and leave to cool for around 30-45 minutes if you’re impatient, and an hour if you don’t mind waiting. [If you’re the type to add in other mix-ins such as chocolate chips or nuts, give the bread a longer cooling period so they can set.]
By the end of all this, you should have a loaf of banana bread that will stay fresh for around a week or so if you don’t wind up eating it all on day one or two.

how to make your pancakes taste yummy: a guide
since some people showed some interest in me making a longer post about Pancake Making Techniques (@artemisthehuntress @00qtee @supermutantprince @panerato @acemoppet @pawkaray), here you all go 
what are my qualifications? my dad started teaching me how to make pancakes when i was 2 and we made them every sunday until i was like 13. now i experiment whenever i have the time.
basic stuff:
-for every 1 cup of flour you use 1 egg.
-a recipe that class for 2 cups of flour and 2 eggs is enough for 4 people. 
-if you find a very basic recipe that you like you can use that as a base for any other add ins (such as spices or mix ins).
substitutions:
-you can substitute up to 1 cup of white flour for 1 cup of whole wheat flour in any recipe without changing anything. (so for example if a recipe calls for 2 cups of white flour you can do 1 cup of white and 1 cup of wheat without changing anything else). this will make the pancakes more hearty and a little denser and slightly more healthy.
-you can substitute white sugar for maple syrup or brown sugar. just use slightly less than the amount of white sugar that the recipe calls for. (so for example if a recipe calls for half a cup of white sugar you might use a quarter of a cup of brown sugar or a few tablespoons of maple syrup)
-if you do not have buttermilk you can substitute instead the same amount of milk (any kind words) and a teaspoon or so of either white vinegar or lemon juice. let the mixture stand for at least 10 minutes. (so if a recipe calls for a cup and a half of buttermilk you could use a cup and a half of milk and a teaspoon and a half of lemon juice)
-buttermilk can be swapped with milk in any recipe as long as you add an extra teaspoon of baking powder. (so if a recipe calls for a cup of milk you could use a cup of buttermilk plus 1 teaspoon baking powder)
-you do not need to add a lot of sugar to pancake batter. if a recipe calls for honey and sugar or honey and maple syrup or whatever, it will still taste fine if you only put in wither the honey or the sugar. the sweetness from pancakes usually comes from the mix ins. i generally do not put more than a half a cup of sweetener to 2 cups flour in any recipe. 
-butter can be substituted for and equal amount of coconut oil. 
spices and mix ins: 
-always add spices to your recipe. even if its not listed. 
-decide what you want your mix ins to be before you add the spices. 
-some good combinations are: cinnamon and apples, pumpkin spice, banana and walnut, blueberries, cinnamon raisin, orange and spice etc.
-essentially think of a dessert of any sort and copy those spices. 
-always put the spices in the dry mix. 
-if you cannot smell the spices in the dry mix, you will not be able to taste them.
-a good rule of thumb is always add the most cinnamon. then about the same amount of ginger, nutmeg, allspice and the least amount of cloves. those are the spices that i use the most often. 
-if you want to make chai pancakes, add all of the above spices and then a few teaspoons of dry chai mix. brew a strong cup of chai tea and put it in the wet. 
-no matter what a recipe says, you can Always add in vanilla. at least a teaspoon.
-if you want to add citrus in your pancakes (usually orange or lemon) add in at least a quarter cup of juice to the wet and a good amount of zest. id mix the seat with the sugar (white sugar works best) and almost massage the zest into the sugar. this releases the flavor. its best to use your hands. add this sugar mixture into the wet ingredients. 
-additionally, your mix ins do not always have to go in the pancakes. you can make a sauce instead. (like warmed apples or cranberry sauce, etc). basic sauce consists of some kind of fruit, water, maybe some juice and some cinnamon (depending on what the sauce is). you dont have to add sugar because fruit is naturally sweet.
extra tricks:
-if you are putting brown sugar in your pancakes put it in the wet. it will melt and there won't be any weird clumps of it in the batter. 
-always put the dry mix in a larger bowl than the wet mix. 
-a good pancake batter should be thick, almost like cake batter. 
-leave some lumps in it. only mix until there isn't any flour left. 
-add any mix ins to the batter After you've combined the wet with the dry. 
-always put the wet in the dry. not the other way around. 
-you can grease your pan with either butter, butter substitute, or coconut oil. all work equally as well. 
-make sure your pan is hot before you put the pancakes on! the easiest way to do this is to turn on the heat, grease the pan and then wait a few minutes. you will know a pan is ready if you throw a few drops of water onto it and they jump/crackle. 
-ideally you only want to flip a pancake three times. it depends on what is in the recipe (is there is whole wheat flour they will need more time to cook) but dont be afraid to let them cook for around 2-3 minutes per side.
-a third cup measure works very well to scoop batter into the pan. this ensures that they are all the same size. 
-if you are making sauce, start it once you are halfway done cooking the pancakes. 
-serving pancakes with yogurt and/or nuts adds variety to flavor and texture and balances the sweetness. 
-you can make pancake mix the night before. just do not combine the wet and dry ingredients. make sure you put the bowl of wet ingredients, covered, in the fridge. combine them and add the mix ins in the morning.

I’m setting my GW for this week to 56 kg so I’ll be able to make my GW for the month(55kg), and can do online shopping. It gonna be hard tho so I should avoid snacking and binging completely unless it’s planned. I should try to get in 1 more workout. 
Breakfast: Oatmeal 40g water
Lunch: Lettuce, cucumber, bell pepper, 110g chicken
Dinner: 1slice homemade bread w 1 egg +1 cup lettuce + 4 slices of cucumber
Snack: Coke zero + 200kcal cake chocolate
In addition: water, coffee, tea
End of day note: Oh sweet chocolate. I probz need to allow myself smth sweet from time to time when i crave it, but as substitute I will try using greek yoghurt. When I’m at work that doesnt always work tho, but I was able to limit myself somewhat, and also ate one less egg than planned to help make up for it. Luckily school starts soon. Tomorrow I’m done with work already 16:30, so I’ll plan my meals accordingly to keep me full but not too full to avoid a binge. Btw I felt drained of energy the entire dayyyy.

Breakfast:   1 slice of bread, 1 crispy salad, scrambled eggs(2?)(=Lunch at work)
Lunch: 1/4 of bun + 3/4 of chocolate milkshake
Dinner: 240g fish cakes (4) + 1 cup cale+carrot salad +  6 slices of cucumber + 30g potato
In addition: water, coffee, tea, pepsi max
End of day note: Both today and tomorrow I start work so early I skip breakfast. Although I was extremely drained of energy all day, it was fine until about an hour before I left. I was still full from my lunch when I was offered a piece of a bun I couldn¨t say no to and I got a chocolate milkshake as well. It was hard to resist and ended up giving me really bad acid reflux. I didn’t eat until very late since I felt I ate way too much today and didn’t wanna be hungry before I went to sleep. I only planned on eating 2 fish cakes but when I stood up to clean my plate I gave into my cravings and ended up finishing all of them... =110 extra kcal. At least I remember a lesson now: Only eat one serving and put whatever I’m gonna eat on the plate. I did plan for this day to be higher in calories, to prevent a binge, but not this high. Tomorrow I¨ll plan smaller but more regular meals.

I ended up being hungry and binge during the night. I will count it as this day’s breakfast
Breakfast: 100kcal muslibar, 1slice of bread with 30g cheese, 10g low cal butter
Lunch:   Lettuce, cucumber, bell pepper, 110g chicken
Dinner: Small portion of family dinner=lasafna(200kcal)
Snack: 1.5portions of brownie + small pieces (400) 1 portion of lasagna (500) 1 piece of bread(100) 30g cheese (100)
Flippety frick. I think I require breakfast during the morning to remind me how to stay on track. I forgot to not eat out of a plate. I hate coming home from work, having avoided the snacks there all day but only to come home to my worst cravings (chocolate, bread, cheese). Tomorrow I HAVE TO do better.

CW: doctor’s weight after breakfast: 56.6kg
Today I’m determined to stay on track. Self control. I’m going to the doctor’s then work so I should be busy all day.
Breakfast: 40g water oatmeal
Lunch:  Lettuce, cucumber, bell pepper, 110g chicken

Snack: 200kcal of choc cake @ work
End of day note: I was happy to see the 56... on the scale again today! I  have to eat clean until sunday so I’ll reach 56.0 by the end of the week. I can’t give up now! I’m craving lots of sugar so I’d like to incorporate that earlier in the day and maybe I won’t do as much unplanned snacking along with the plate rule, but my lunch is so low cal so it’s hard. I might invest in some greek yoghurt to ease the craving.  I think I’ll join my family to my great grandma tmrw to distract me from food when I’m not working but it’s 2hr drive so I won’t be able to move much and I’m anxious she might serve a lot of dessert. Nevertheless... I won’t be able to weigh myself tmrw cuz I’m at my dad’s :(

End of day note: Idk why I’ve been craving cheese all day... School starts tomorrow so I guess I’ve been bored-nervous-eating all day, but this is actually the result from avoiding several cravings. At least it didn’t turn out a full fleshed binge. I’m scared to weigh myself tomorrow, I hope at the very least I didn’t gain weight after the 56.6 at the doctor’s! Compared to last week I ate much worse this week, and didn’t work out today... I probably burn less calories too. It’s hard to tell without a scale but I’ll be going to my mom’s tomorrow before school to get my weight and measurements. I’m so scared. I have to reach 55kg by september!

Gluten Free, Dairy Free Banana Oat Bread
This is a recipe for my friend Erin. I hope it works for her. If you want a grain free and dairy free banana muffin, here’s my recipe.
Makes two loaves (I used a Pyrex 4.8 cup glass baking dish; roughly 8″x4″) 
Cooking time: 35-40 minutes (in convection gas oven) This is in glass baking pans - I would estimate around 30 minutes in metal, but check the loaves after 25 minutes, either way.
Preheat oven to 350°F with empty baking pans in the oven, so they are hot when you spoon the batter in.  Make sure your racks are such that the rack in use is just below the middle, and you place the loaves at least 2-3 inches apart in the middle of the oven.  You don’t want the bread burning on top or otherwise baking unevenly because it’s too close to the roof /sides / door of the oven.  Use the convection fan if you have it. 
When you start, try to have all ingredients close to or at room temperature.  They’ll be easier to mix thoroughly, and your baking will be faster and more even.
Gather:
Blender (You don’t need a blender if you have oat flour already made, and you have another way of mixing the liquid/mushy ingredients well.  You will need a smaller mixing bowl - around a 1.5 qt size - if you don’t use the blender, though.)
Large bowl (I used the 2.5 qt. bowl in this set.)
2 loaf pans (roughly 8″ x 4″ x 3″ - I used glass)
Measuring cups and measuring spoons
A real tablespoon on which to heap Artisana coconut butter (see below)
A large serving spoon to get the flour out of the bag, and spoon the batter into the pans.
Silicone pasty brush to grease the pans (you can use a folded up paper towel if you are careful with it - I say "careful” because I want you to grease the pans when they are hot)
Paper towels (probably around 5 or 6) - clean up messes, use folded to grease the pans (carefully) or folded to mop up excess greasing of said pans if you’re using a pastry brush, and lastly, to set the hot banana loaves on so they won’t stick or fall through your cooling rack.
I would say “timer,” but everyone just uses their phones, and I know your phone is never more than 4 feet away from you.
Toothpick(s) to check for doneness

A cooling rack would be nice
1 cup gluten free whole oats or 3/4 cup gluten free oat flour (I use Back Roads Just Oats) to be put into blender to make flour - quick cooking oats will not work in this recipe.
1/2 cup gluten free whole oats (not blended; quick cooking oats will not work in this recipe.)
1 cup Arrowhead Mills Organic Heritage Blend Flour (I use it because it’s gluten free, is a good 1 for 1 substitute for regular flour, it has a bit of xanthan gum to hold everything together, and it doesn’t have potato starch in it! If you are using an alternative that is GF, and does not have a binder like xanthan gum in it, you can add one extra jumbo/large or two smallish eggs to the amount below, but if you add the eggs, cut the coconut milk down to a half cup. Should go without saying, BUT: do NOT shake the measuring cup to balance the flour out or make it “settle” - either lightly spoon in the flour and level it off with the flat edge of a butterknife, so it doesn’t settle down; or scoop it out with the cup once and slide the straight edge of a knife over the top to level.  Shaking/settling down flour will make you put way too much flour in your baking.)
1/4 tsp salt
2 tsp Ceylon cinnamon (if the type is not specified, it’s cassia cinnamon, and then only use 1 tsp of it)
3/4 tsp baking soda (not baking powder)
around 3 - 4 mashed, ripe bananas (they’re sweeter and you will get a moister bread if you use frozen, ripe banana pieces that are thawed - they will look gross and watery thawed, but they’ll be wonderful in the bread; should go without saying, BUT if you’re going to freeze bananas, peel them first, and cut them up into little pieces, and freeze them in a covered container, preferably made of glass with a plastic lid)
1/4 maple syrup (this bread will have a subtle sweetness at this amount, but if you want it sweeter, either decrease the coconut milk by half of the amount of maple syrup you add, OR add the remaining maple in maple sugar form)
2 tsp pure vanilla powder (it’s the brown stuff that looks like moist soil - if you’re using extract, use 1 tsp)
1 cup canned full-fat coconut milk (I use Natural Value brand; if you don’t mind dairy, full-fat yogurt would be fine as a replacement -- see notes on flour/eggs as well as maple syrup for how to adjust liquid amounts based on changes - do not skimp on fat in this recipe. You will be sorry, and hey, while we’re at it, don’t blame the butter for what the bread did, ok?)
2 heaping TBS of Artisana Coconut Butter (this is not coconut oil, and I highly, highly recommend this particular brand. Make sure it’s mixed and you don’t just get oil on the top, which might be the case if it’s stored above 70°F - but you do not want to store this stuff in the fridge!  Also, by “heaping,” I mean as much as you can possibly fit on the TABLEspoon.  If you don’t mind dairy, 3 reg tablespoons of ghee or around 5-6 pats of somewhat softened butter would be ok substitutes. And holy heck, DO NOT USE margarine or some kind of “blend” of crap. Look, I’ve given you the vegan option, the ghee option, and the butter option.  Pick one.)
2 jumbo/large eggs 
1 tsp or so of coconut oil (this is just to grease the pans, but only grease them when they’re hot -- JUST before you spoon the batter in)
FIRST:
Make sure that oven is at 350°F, and that your pans are in there (ungreased), heating up. Preheating the pans ensures more even baking. Mix in a large bowl: blended whole oats (or oat flour), Arrowhead Mills flour, unblended whole oats, salt, cinnamon and baking soda. Make sure there are no lumps, especially of baking soda. Oh dear Lord, tasting a lump of baking soda in an otherwise delicious treat is horrible. Don’t let that happen. Set aside.
SECOND:
Mix thoroughly in the blender (you don’t have to wash it out if you just blended oats into flour) or in the smaller bowl: ripe, mashed bananas, maple syrup, vanilla, coconut milk (only use 3/4 cup of the coconut milk at first, and adjust it if your batter is way too thick), Artisana coconut butter, eggs.  
THIRD:
If your oven is pre-heated and the baking pans are hot, take them out carefully and place them on a solid, heatproof surface, and put a half teaspoon of the coconut oil in each pan and use the pastry brush or a folded paper towel to carefully make sure the oil covers the whole inside of the pan, including the sides. If you end up with a puddle of coconut oil in there, carefully soak some of it up with a folded paper towel so you don’t burn yourself. Then, quickly mix the smaller bowl’s liquids into the larger bowl.  Thoroughly mix the two together quickly (it should be easily mixable, but still fairly thick and definitely not pourable. Spoon half into each greased pan.  Place the pans at least 3″ apart, in the middle of the oven (slightly below middle top to bottom, and as close to middle front-to-back, and left-to-right as you can get and still separate them).
Bake for around 35 minutes, but check for doneness with the toothpick test (to “moist texture”) after 25 minutes, and at the end.  Every oven is different.  Mine took 40 minutes in pre-heated glass pans.  
If you have a cooling rack, put a triple layer of paper towels on it, and carefully get the loaf out of the pan (I turn it upside down on the papertowels, but you can also use a spatula to carefully pry it out).  If your loaf is not done completely, this could turn out badly.  Use that toothpick test I linked to in the paragraph above.

While looking into some other aspect of juicing today, I came across a site where I found a couple of interesting looking recipes using the pulp from the juice I make. After this challenge, I’ll try it out so I’m going to start collecting the pulp. Here’s the recipe:
3 cups Carrot pulp 2 cups Pineapple pulp 1 cup Olive oil 3 Eggs 1 cup of Honey 3 cups Whole grain flour 1 tbsp Baking soda 1 tsp Vanilla
Mix the carrot and pineapple pulp together in a bowl. Add the honey, eggs, vanilla and oil then mix this together. Add the flour and baking soda. Pour the contents into muffin cups or grease a baking tin. Bake for 45 minutes at 175 °C

It’ll be interesting to see how they turn out because carrot pulp can be very different from one machine to another. The site looked like it was based on a cold-press juicer like mine so it should be ok as the pulp would be of the same moisture content, so the oil & honey in the recipe should keep it moist, I hope. Now in terms of Whole grain flour, I wasn’t entirely sure about which kind they meant so I started looking into it. I am still so confused by them all but here are some of the ones I found:

It is such a minefield of flours out there! So many different types and they all need to be treated slightly differently.
I then discovered this; in case anyone needs tips on how to substitute Whole grain flours into their normal recipes:
Use any whole wheat flour to make cookies, muffins, quick breads (banana bread, biscuits, and scones) and breakfast items (waffles, pancakes). If a recipe calls for all-purpose flour, feel free to replace it with the same measure of whole grain flour.
Choose white whole wheat flour and whole wheat pastry flour when you want lighter, paler baked goods with a tender texture.
Make delicate crust doughs and cake batters with whole wheat pastry flour.
Convert bread recipes to 100 percent whole wheat (or whole grain) by adding 2 tsp. liquid per cup of flour to the recipe.
Let whole wheat/whole grain doughs and batters rest 20 minutes before baking. This gives the flour time to absorb the liquid in the recipe to help keep baked goods tender and moist.
Of course there are even more types of flour than wholegrain. I personally use Almond, Coconut & Gram flours. My mum makes a really tasty gram flour quiche crust and as I have lots of broccoli florets to use, I’m really hoping to keep her busy when she’s up here, by making a few of them for the freezer 😉 they freeze super well, and I genuinely prefer them to normal quiches but the smell of the gram dough is VERY distinctive so it maybe wouldn’t suit everyone. Gram flour is made from chickpeas and is the one used for Bhajis, Pakoras and Poppadoms.
Almond flour is made from ground almonds and is incredibly nutritious, particularly rich in Vitamin E and magnesium, two very important nutrients for health. It’s made from almonds which have been blanched in boiling water, the skins removed and then finely ground and sifted into a fine flour. I’ve found that buying almond flour is quite expensive and I did try my own a few times, but it tended to become oily the more I ground them, turning almost into an almond paste. So now what I use is simple ground almonds. It’s coarser, almost like almond meal (which is coarse and made with unpeeled raw almonds), but it works perfectly for my Banana bread recipe. Almond flour is also better for blood sugar levels as it’s low in carbs but high in healthy fats & fibre, including the magnesium which also participates in blood sugar regulation. You CAN replace almond flour for your standard wheat flour on a 1:1 ratio but whatever you are making will be flatter and denser because of the lack of gluten. You could add Xanthan gum, but it can cause digestive issues. Raising the amount of raising agent (baking powder &/ bicarb of soda) would help with the heavier weight of the almond flour.
Coconut flour can be a little harder to bake with as it absorbs more moisture than conventional flours, making the baked food dryer and crumbly. It has more carbs than almond flour and less nutrients. It also has less phytic acid which means that it contributes to your body being less efficient in absorbing nutrients. You’d typically use ¼ of the amount of coconut flour in a recipe compared with a wheat flour. I don’t use it as often but some PCOS recipes I follow include a tablespoon or so of coconut flour, so I don’t go through that much of it.
Not entirely sure how this entire blog ended up being about flours but there we go! I’m really looking forward to cooking healthy recipes after this. I definitely feel I’ve got my mojo back and of course we’re getting into better weather now so lighter & cold foods such as salads will be very welcome. Our new chef at work has been creating incredible smelling salads which otherwise would be very easy to dig into but at the moment, I’m being strong in pushing forward with another week of juice and reaping the benefits of the reset.

Easy Ginger Biscuits (Ginger Cookies)
These easy Ginger Biscuits are a bit different from a traditional ginger cookie or ginger biscuit recipe. I think of them as a cross between a flapjack and a brandy-snap. They are very quick to bake, only 10 minutes in the oven, and have a base of oats with sugar and butter, a small amount of flour and an egg. The ginger flavour comes from finely chopped pieces of stem ginger that are added to the mixture. Flaked almonds also give a bit of extra crunch and nuttiness.
This recipe is based on one that my mother used to make. She used candied peel, rather than stem ginger, in her recipe. I am not a huge fan of candied peel and I had a half-used jar of stem ginger left over from Christmas so I decided to try make a ginger-flavoured version. I was also looking for a baking recipe that did not use a lot of flour as I am finding it hard to get hold of this at the moment.
These Ginger Biscuits have a subtle ginger flavour which even those who are not big ginger fans seem to like. The biscuits themselves are chewy with a bit of crunch around the edges and are sweet and buttery.

Things you need to know about these Ginger Biscuits (Ginger Cookies)
They are very quick and easy to make. Just mix all the ingredients together and pop them in the oven for 10 minutes.
The only slightly tricky stage is getting the cooked biscuits off the baking tray. The key is to make sure that the baking tray is very well greased and that you do not try and take the biscuits off immediately they come out of the oven (they will be too soft) or leave it too long (they will be welded to the baking tray!). If you leave it for about 5 minutes, that is just about right and it should be quite straightforward to get them off.
Don’t leave out the pinch of salt. It makes a big difference to the taste of the biscuits as it balances out the sweetness.
They are very versatile. Have them with a cup of morning coffee or afternoon tea. Add them to lunch boxes. Or they are also a very nice addition to a bowl of ice cream.
I used stem ginger for this recipe. This is candied ginger in its own syrup which you can buy in most supermarkets. It is one of my favourite ingredients as a little goes a long way and, in addition to the globes of sweet ginger, you can also use the syrup as a flavouring. However, if you do not have stem ginger to hand, you could use pieces of crystallised ginger which can be found in the baking aisle in most supermarkets.
If ginger is not your thing, you could substitute the stem ginger for the same amount of mixed peel. Or you could just leave out the ginger and you would still have a delicious, oaty, buttery biscuit.

These quick and easy Ginger Biscuits (or Ginger Cookies) are crisp and buttery with a subtle note of ginger.
Scale 1x2x3x
Ingredients
1 teaspoon vegetable oil
100 g (4 oz) rolled oats
100 g (4 oz) soft brown sugar
100 g (4 oz) caster sugar
1 tablespoon flour
25 g  (1 oz) flaked almonds
Salt
100 g (4 oz) butter
1 egg
50 g (2 oz) stem ginger
  Instructions
Set your oven to 170 C, 325 F or Gas Mark 3.
Line two baking sheets with baking parchment.  Pour half a teaspoon of vegetable oil onto each sheet and spread over the entire surface using your fingers or a pastry brush.
Put the rolled oats, soft brown sugar, caster sugar, flour, almonds and a pinch of salt into a large mixing bowl.
Melt the butter in a microwave or in a small saucepan.  Add the melted butter to the dry ingredients.  Then stir in the egg.
Finely chop the stem ginger and add it to the mixture.
Drop teaspoons of the mixture onto the prepared baking sheets making sure that you leave a four centimetre gap between each one as they will spread out when they are in the oven.
Put the baking sheets into the oven for 10-12 minutes.
Remove the baking sheets from the oven and allow the biscuits to cool on them for five minutes before removing them with a palette knife or spatula.  Place them on a baking rack to cool completely.

Turkey Day Menu 2017: GF and allergy friendly

Courtesy of my sister, who is willing to adapt menus for other allergy issues. Comment here if your needs are different. 
First off, we have multiple allergies and food issues. In short:
Me; Militantly gluten free and no strawberries or sulfites due to allergies. Also allergic to crustaceans (lobster, crab, possibly shrimp?), peanuts, hazelnuts, lima beans, oats, banana, and weird issues around standard commercial dairy and eggs, but I do fine with certain local products on eggs and dairy. I also randomly have issues with tomatoes, garlic, onions, some veggies,  peppers, but there are meds I can take that help reduce inflammation to tolerate those. Some forms of garlic are better than others. I avoid most soy, refined sugar and mold-type cheeses due to inflammation issues.
My eldest: Allergic to soy, egg, dairy, peanuts and wheat.
My middle: No citric acid or citrates, reacts to wheat in weird ways, same for natamycin
Hubby has texture/taste issues (goes beyond dislike, not an allergy) with visible egg, set gelatin, and most cheese (except pizza.)
Youngest is Intensely picky.
A turkey dinner is actually one of the easiest meals to adapt.
So, within those parameters, here is our menu, according to Sis, with bullet commentary by me.
  Turkey: 20 lb Shelton free-range, brined with herbs and spices, salt water, and apple juice or cider with no added citric acid
I don’t usually brine turkeys, but I trust Sis. Dad uses wine on the turkey, I cook at high heat and don’t touch it or baste it or brine it, but I might slip some kind of fat under the skin.
Stuffing: Costco gluten free bread cubes, better than bouillon based broth, herbs and spices, soy/dairy/egg/gluten free sausage, chopped apples & walnuts
I haven’t looked at Costcco’s gluten free bread cubes, but it’s really hard to get bread that everyone can have. Happy Campers is probably the best bet. Elegant Elephant has a sourdough loaf that can also be converted to cubes easily. Middle kiddo and I can both do Franz gluten free. Eldest and I can both do BFree. Bread is very regional, don’t be afraid to investigate. Other good substitutions include riced cauliflower, quinoa, and brown rice. Just substitute those for the bread in your favorite stuffing recipe, and be prepared to either cook the grains in broth and/or adjust the liquid content down.
Sausage: standard breakfast sausage is our usual–use whatever standard breakfast sausages you can tolerate. We use sausage-shaped ones, but loose sausage can also be used. Nuts are optional, sub sunflower seeds if you want the texture but can’t do tree nuts, or omit.
Apples work for us, cranberries and raisins are other options we’ve used in the past.
Better that Bouillon is something we also call “Chicken squishy” (or “beef squishy”) and is well tolerated by all of us. We use the organic low sodium version from Costco. Vegan options exist. Turkey is probably the ideal for this meal.
  Potatoes: potatoes, olive oil, salt
I mean, you can do almost anything with potatoes, ranging from just swipe a little oil on the skins and bake, to peel (or not) and boil and mash. Contrary to popular belief, mashed potatoes are fine without milk and butter, especially if they’re going to be buttered later and doused with gravy. Sub chicken broth or veg broth for flavor and texture if you want creamier potatoes, and Earth Balance for butter if you really want them “buttery”.
Pro flavor tip: While I love a peppery olive oil, if you get the “Extra light Napoleon” it tastes very buttery, a la melted butter.
Sweet potatoes*: plain, roasted whole
*actually Garnet or Jewel Yams (which are sweet potatoes, but very orange.)
The neat thing is that sweet potatoes take zero work. Stick them in the oven at whatever temp and roast until squishy.
Once roasted, the skins slip off and they can be sliced or mashed and amended as people like after. One of my favorites involves mashed sweet potatoes with coconut milk, coconut sugar, and spices like ginger and cinnamon. For dairy-and-citrate having people, slice the cooked sweet potatoes and layer with butter, maple syrup, orange and/or lemon zest, orange and/or lemon juice, ginger, nutmeg and paprika.
If you must have them with marshmallows, see my marshmallow recipe. Make the marshmallows with vanilla, not peppermint.
One year we made purple yams, garnet yams, and Japanese sweet potatoes, and mashed them separately and let people pipe them onto their own plates.
This was more work than it was worth given how picky my children are, but a lot of fun for those who both like sweet potatoes and like playing with their food.
Gravy: tapioca or rice flour, better than bouillon based broth, herbs and spices, assorted drippings and giblets
Most of the liquid should come from the turkey, plus the cooking water from any boiled potatoes if you have it, which can be boosted with Better than Bouillon if needed.

Cranberry sauce: cranberries, sugar and/or honey
I’m lobbying for maple syrup.
Homemade cranberry sauce is the absolute easiest thing. Put cranberries and sweetener in a small pan on the stove. Simmer for 10 minutes. Adjust flavor with more sweet, spices as desired. It really is that easy. It goes from whole berries to sauce sort of all-of-a-sudden. Cook for a minute or two longer to thicken.
Not middle-child safe as cranberries are inherently high in citric acid.
You can make a similar sauce with frozen blueberries.
Applesauce can fill a similar ecological niche on the dinner plate for those who can’t have citric acid.
Green beans: fresh green beans, garlic, mushrooms (I’m hoping for chanterelles), olive oil, salt
Probably using some sort of frozen garlic as I react less badly to frozen garlic than to fresh or dried.
If you can find a safe cream of mushroom soup, use that if you want a more casserole-y thing
Pacific Foods has a yes-dairy-no-gluten condensed cream of mushroom soup.
Adding coconut milk (full fat) to the above would give a similar effect.
This will taste outstanding even if it’s not creamy.
If dairy isn’t a problem, use butter
Add a little wine if you can tolerate it
And the best mushrooms you can get.
Brussels sprouts: Brussels sprouts, uncured bacon
*side-eyes hard*
I hate Brussels sprouts.
But they’re hypoallergenic
I guess
Raw sauerkraut
Plain, lactofermented sauerkraut is delightful and will help with digestion. It also adds a bright acid note to a heavy meal
We buy it. Sonoma Brinery is fantastic, but Trader Joe’s also has a very good version.
Oregon Brineworks Ginger Roots would be fantastic and pretty alongside a turkey dinner.
Vanilla ice cream
Sparkling cider
We watch for added citric acid but lots of brands are fine
Wine
“Well Red” from Trader Joe’s is no-sulfites-detected and passably drinkable
“Our Daily Red” is a cooking wine that is no sulfites detected but kind of awful tasting
If you can find Orleans Hill Zinfandel, it may be the best NSD wine I’ve ever had.
Gluten free pies:
We buy gluten free crusts that everyone can eat. IDK the brand
Where you can’t buy safe crusts, chop sunflower seeds or whatever nuts can be tolerated very fine (not paste) and toast them with a safe butter substitute and press them into the pan a-la crumb crust.
If they’re not staying up, just line the bottom like a cheesecake
Or do a straight up custard
It is possible to substitute gluten free flour for wheat flour 1;1 and palm oil, coconut oil or Earth Balance (we do the soy-free) for the fat, and then follow almost any pie crust recipe. Or google “gluten free pie crust” if you want.  We just buy crusts, it’s easier and the texture is more consistently what we want.
Pumpkin (eggs, pumpkin, brown sugar, vanilla, spices)
Note that this is a dairy-free recipe.
It’s basically just exactly the recipe on the Libby’s label but substituting eggs for the dairy

and sets up VERY well.
Not safe for my eldest

When I make apple pie, I mix the rum (or whiskey, but that’s not necessarily gluten free) with butter, sugar and a little starch to make a “hard sauce” that gets mixed in with the apples
People have gotten tipsy off of my apple pies
We have used booze to stop the apples from browning (it may not work but people think the browning is booze)
(they’re probably right.)
If citric acid is an issue, don’t use lemon in your pie
If it’s not, definitely use lemon in your pie.
Cherry (cherries, tapioca starch, sugar, almond extract)
Use almond flour for the crust if you want to really punch up the cherry almond goodness.

Egg allergies are on the rise and one of the most common allergens in children, second only to dairy allergies. My most recent test showed that I had actually reversed my sensitivity to grains and dairy but still had a strong reaction to eggs. (A little parting gift from my autoimmune disease.)
Avoiding eggs can be inconvenient and difficult for the growing number of people with allergies. Many common baked goods, breaded foods, and breakfast dishes contain eggs. Thankfully, all is not lost, because there are great options for substitutes.
Egg Substitutes in Baking
Eggs are really two distinct parts: yolk and white. That’s why some recipes call for just one or the other. The yolk is fatty and helps bind while the white offers moisture and lightness (leavening). In most recipes that call for whole eggs, the eggs act in all three of these roles:
As leavener
As binder
As moisturizer
When replacing eggs in recipes consider what the role of the egg is before choosing your egg substitute. It’s not always easy to figure this out but here are some guidelines:
If the recipe does not contain another leavening agent (like baking powder), assume the egg acts as a leavener.
If the recipe calls for 3+ eggs, assume they act in all three roles.
If the recipe has little moisture besides eggs, assume they act as moisture.
If the recipe calls for just egg whites, they are probably used as a leavener (and moisturizer).
If a recipe calls for just yolks, they are for binding.
If you’re not sure, assume the eggs acts as all three and choose an egg substitute or a combination of them that cover all three functions.
What to Use Instead of Eggs
Whether you’re egg-free by choice or necessity, these egg substitutes are a great way to enjoy your favorite recipes.
In Baking Recipes
When you’re baking (cakes, muffins, quick breads, etc.), you can usually find an egg substitute that works well.
If an egg acts as a binder in a recipe, almost any of the below substitutes will work:
1 tablespoon ground chia seeds + ¼ cup of water (mix and let sit for 15 minutes)
¼ cup full-fat yogurt
1 tablespoon ground flax seed + ¼ cup water (mix and let sit for 15 minutes)
1/3 cup applesauce (will be more crumbly)
¼ cup pureed banana (obviously not what I use!)
1 tablespoon gelatin powder + ¼ cup water (mix and let sit for 15 minutes)
2 tablespoons dates, raisins, or prunes + 2 tablespoons  water, pureed together
¼ cup peanut butter or almond butter
If eggs act as a leavening agent in the recipe, yogurt can be used or a teaspoon each of baking powder (or baking soda), white vinegar (or apple cider vinegar), and water (mix together).
When the egg is needed for moisture, yogurt, juice, applesauce, or pureed/ mashed banana should be used.
If you’re not sure, use more than one type of egg substitute. For example, use a gelatin “egg” (binding and moisturizing) and a leavening “egg” like yogurt (even if the recipe only calls for one egg… in my experience, it turns out fine!)
For coconut flour recipes, eggs are needed for both binding and moisture, so I typically use a chia, gelatin, and applesauce mixture.
For Breading
For breading, an egg mixture is often used, but there are some easy substitutions. My favorites are melted butter, coconut oil, or plain yogurt. Full-fat coconut milk also works.
For a more flavorful binder for breading, I mix equal parts mustard and honey or maple syrup.
In Omelets
For this one, you are out of luck! I haven’t found anything that replaces the eggs completely in taste or texture, but I’ve learned to love breakfast stir frys with many of the ingredients that would often be added to an omelet (peppers, onion, cheese, meat, spinach), sautéed together sans eggs.
I also think it’s time to buck the “eggs or cereal for breakfast” rule and consider that leftovers, stir-frys, and even salads can be excellent healthy breakfast choices!
Here are some of my favorite egg-free breakfast recipes to try:
Wellness Bars – These do have a fair amount of sugar from dates but when paired with a high protein food (like homemade sausage) they are a healthy breakfast.
Protein “Brain Power” Smoothie – Just leave out the egg yolks and you have a filling and delicious breakfast smoothie that won’t make you sick.
Chia Seed Pudding Parfait – For something a bit different, try this pudding as a parfait. Add nuts, berries, coconut, or whatever you have in your pantry, for a tasty egg-free breakfast.
When you can’t have eggs, you quickly find other options for breakfast. I feel like it’s helped me have a more varied diet too, which is important for getting all the nutrients the body needs.
FAQs on Egg Replacers and Substitutes
Here are some of the most frequent questions I get on the topic of egg substitutions:
1. How do you know if you are allergic to eggs?
There are a number of tests your doctor can perform to see if you are allergic to eggs (or other foods. Some of these include:
Many people find out they have an egg allergy because they feel sick every time they eat a certain food. You can get a test to confirm but many people don’t see the point (if it came back negative they still wouldn’t eat the food based on how it makes them feel).
2. Are eggs the problem, or is it the chickens’ feed?
Some people believe that what the chicken eats can cause a reaction. Some have found that they can eat eggs from chickens fed with an organic, soy-free, corn-free feed. Others have found that duck eggs don’t bother them the same way chicken eggs do.
3. Why is silken tofu not on the list?
The short answer is that tofu is made from soy, so it’s not a healthy choice.
4. Why is Ener-g not included on this list?
Ener-g is a highly processed food so I don’t recommend it. It also contains synthetic gums. Since there are so many healthy alternatives, I’d just stay away from this.
5. How can you replace just the egg whites?
Assuming that you are only replacing the egg white in a recipe that calls for a whole egg, the simplest thing is to use two egg yolks for each egg in the recipe. You could also use 1 egg yolk and 1 of the other egg replacements in many recipes.
If you want to replace egg whites in recipes that use just egg whites (like meringue) you may be out of luck. There’s no great substitute for egg whites in these kind of recipes. However, you may be able to use a gelatin egg in some recipes like royal icing.
6. How many eggs can I replace?
For recipes that call for 1-3 eggs, any binding egg replacement will probably do fine. For recipes that call for more eggs you may have to mix and match egg replacers to meet the needs of the recipe. As I mentioned earlier, coconut flour recipes usually need eggs as a binder and for moisture. This is why coconut flour recipes tend to have many eggs.
But this same reasoning can work for other recipes types too. Recipes that call for 4+ eggs usually also need eggs for more than one action. I would use one egg replacement from each category and adjust as needed. For example, a recipe that calls for 4 eggs could have 2 unsweetened applesauce eggs, 1 chia seed egg, and 1 gelatin egg.
However, for recipes that call for many eggs, egg replacements may not cut it, so have a backup plan.
Egg Substitutes for Egg-Free Living
Many people have food reactions and allergies to healthy foods like eggs. Some food allergies can be addressed (like improving gut health and diet) but in the meantime, egg substitutes can help you enjoy some of your favorite recipes (even gluten-free ones!).

Banana Oatmeal Muffins (No Flour Needed!)
These Banana Oatmeal Muffins are a quick and easy breakfast on the go. I love that you can toss everything in your blender and have them baking in just about 10 minutes of hands-on time. With no added oil or refined sugar, they make a healthy snack for kids, too!
How to Make Banana Oatmeal Muffins
Making these oatmeal muffins is incredibly fast and efficient when you use your blender. You’ll only have one dish to clean when you’re done!
You’ll want to use ripe bananas for this recipe, as the more ripe they are, the sweeter they will be. I found that I only need to add 2 tablespoons of honey to make them sweet enough for my kids, but you can leave that out if you want to use no added sweetener and don’t mind a less-sweet muffin.

Pour the blended batter into a lined muffin pan (I use reusable silicone liners) and bake until the muffins rise and the centers feel firm to a light touch. Let them cool completely before serving.
Oatmeal Muffins with No Added Oil
I’ve been on a mission to use less oil in my recipes lately, so these muffins rely on peanut butter for a bit of healthy fat instead. Make sure you use a nut butter that has no added oil for best results.
If you don’t like peanut butter, you could use almond butter, or even sunflower seed butter for a nut-free version.
Can you Make Banana Oatmeal Muffins without Eggs?
You can make these muffins egg-free by using an extra banana and oat flour. The mixture will be thicker in this case, so I don’t recommend using your blender for mixing. (You can grind rolled oats in your dry blender, however, to make oat flour if you don’t have some already.)
Here’s what you need for Vegan Banana Oatmeal Muffins:
3 ripe bananas (about 1 cup mashed)
1 1/2 cups oat flour (rolled oats finely ground in a food processor)
2 teaspoons baking powder (this is better for vegan baking)
1/4 cup peanut butter butter
2 tablespoons maple syrup
1/4 teaspoon salt
Stir all of the ingredients together in a bowl until it looks uniform, then divide it among the 10 muffin cups and bake for 25 minutes. Cool completely before serving.
