Red corn polenta "cinnamon french toast sticks." (Plus fresh berries, but I couldn't wait to take a picture after I added those. #taurusproblems) One of our missions is to help people actually EAT more of the produce that they grow in the home garden. And a big key to that is staples that can be made in big batches and then quickly transformed throughout the week. For busy homesteaders, it's hard to beat polenta. First, corn is certainly the easiest staple calorie crop for homesteaders. Once it's grown it's very easy to store and process. I can make a large batch of a creamy polenta and top or mix it with garden veg all through the season. The next day it can be polenta cakes, or grilled polenta. And now there are these cinnamon french toast sticks, made with the solidified left-over polenta, cut in to sticks, then marinated in maple, cinnamon and cream for an hour, then dredged in a little corn meal and fried up like french toast. The marinade is the sauce, and this makes the perfect palette for eating whatever fresh berries are in season in the garden. Given the choice at a fancy restaurant, I'd probably choose these over regular French toast for taste. Tonight's project: New York deli-style dill pickles: one and a half gallons. These short, fat cucumbers (and the dill) were grown up the street from us and are the pickling variety. I'm fermenting these in a brine (no vinegar) with lots of dill, garlic, coriander seed, peppercorns, mustard seed, bay leaves and a couple of chili peppers. To keep the pickles crunchy instead of mushy, I'm packing the top of each jar with oak leaves (tannic acid) instead of artificial additives. I used to see this style when I was a kid in an Italian deli owned and run by a New Yorker family when I was a kid in Bradenton, Florida and wanted to try and make it myself. Finally getting a day back in the kitchen cooking up enough to feed an army, but we are canning/freezing/preserving everything to last us for the next month. The loaves of sourdough bread are in the oven (we'll freeze two), I've searing a beef chuck roast for about 10 pounds of chili, and we've got about 4 gallons of veggie soup stock simmering on the stove along with 4 pounds of beans. Next up is milling a bunch of wheat berries into flour to make about 3-4 pounds of pasta of various shapes, then about 5 gallons of homemade marina sauce. Spanish tortilla is classic vegetarian #farmhousecuisine for busy, hard-working folks with fresh farm produce. While I often work towards a vegan diet as often as possible, eggs and dairy in traditional dishes like this allow us to turn a large quantity of home-grown produce into super easy meals. High quality protein, carbs and fats in an easily storable form. 5 medium potatoes, 8-12 eggs, 2/3rd C of goat cheese, 1 yellow summer squash, 5-6 cauliflower florets, 4-5 large walking onion bulbs (topsets or bulbs) 1 clove of garlic finely chopped. olive oil, salt. Pre-heat oven to 350 degrees. First, brown thin-sliced potatoes in olive oil at high heat (just under smoking temp) until slightly browned on both sides, a few at a time. I simply remove them to one corner of the pan as they finish, and I add more. With the last round of potatoes, add the chopped alliums. As these finish, move aside, and sautee summer squash, until slightly browned on both sides. Finally, add thin-sliced cauliflower florets, and again, just slightly brown, while keeping the other ingredients from burning. In a bowl, beat eggs and crumble in goat cheese, add to pan and remove to oven for 15 minutes or until browned and eggs have "raised" through to the center. Remove from oven and let set for 1 hour before serving. Serve cold or room temperature with salad, etc. #homesteadcooking #farmhouseculture #vegetarianmeals
