Chicken: I only like to use thighs and drumsticks for chicken biryani because they remain juicy and don't overcook through the long cooking time. For me, chicken breast is a big no no as it will dry out and will just be rubbery.
Yogurt: Greek yogurt, plain yogurt or homemade curd/dahi works well. Acts as a tenderizer and add some tanginess to the masala
Tomato Puree: Used in the marinade for flavour and body Ginger Garlic Paste: Simply ground ginger and garlic, I recommend making this at home, but if you are in a hurry, store bought works too
Whole Spices: Bay leaf, Cloves, Green Cardamom and Saffron (kesar for that distinct orange colour) - these form the flavour base and give biryani that distinct fragrance that wafts up as soon as you open the pot
Ground Spices: Red Chilli Powder (sub with a mix of paprika and cayenne if living outside India), turmeric powder and garam masala powder
Herbs: Fresh mint and coriander leaves (cilantro) are essential to making biryani. They add freshness and bring the rice and chicken together
Fat & Dairy: Both oil and ghee. You can choose to only use ghee but in my opinion, it makes the biryani even richer. But ghee is what was traditionally used to make biryani. You'll also need a little milk to soak the saffron strands
Basmati Rice: This is a key ingredient in most biryani recipes, even the ones outside India like the Pakistani biryani and Afghani biryani. Please note that basmati rice is different from long grain rice. Basmati has long grains but also comes with a distinct fragrance and flavour.

Chicken Tikka Biryani Ingredients:
Ingredients for Marinating:
200 grams boneless chicken 3 tbsp curd 1 tsp garlic paste 1 tsp ginger paste 1 tsp garam masala powder 1 tsp red chili powder 1/4 tsp red food coloring salt to taste
Ingredients for Rice:
1 cup basmati rice (washed and soaked for 2 hours) 1 bay leaf 1 large cardamom 1 small cardamom 2 cloves 1" cinnamon stick 1/2 tsp black cumin 1 chopped fried onion salt to taste
Ingredients for Biryani:
1 finely chopped onion 2 tbsp curd 1/2 tsp garam masala powder 1 tsp chopped green chili 1 tsp red chili pickle masala 1/3 tsp caraway powder 1/3 tsp nutmeg powder 1/4 tsp red food coloring 1 bay leaf 1 large cardamom 1 small cardamom 2 cloves 1 cinnamon stick 1/2 cup chopped coriander leaves 2 tsp dried mint leaves oil 1/2 cup
Homemade Chicken Tikka Biryani 6 Easy Steps:
Wash the chicken pieces thoroughly and put all the marinated ingredients in it and keep it in the fridge for 6 hours or overnight.
Boil water in a vessel by adding bay leaves, black cardamom, small cardamom, cinnamon, cloves, black cumin and salt. When the water starts boiling, put the soaked rice in it and cook on medium heat. When the rice is 90% cooked, take it off the flame and filter it with a strainer or cloth and pour cold water over it.
Heat oil in a pan, add bay leaves, black cardamom, small cardamom, cinnamon, cloves and onions and fry till they turn pink. Now put the marinated chicken in it and fry it.
Mix curd, caraway powder, nutmeg powder, garam masala powder, chopped green chillies, red chilli pickle masala, red food coloring in a bowl and add this mixture to the chicken and cook it for some time and remove it from the flame.
Now spread coriander leaves, mint leaves and fried onions on the chicken tikka and put a layer of rice on it. Now spread the remaining coriander leaves, fried onions and mint leaves on top, cover with a lid and cook on low flame for 15-20 minutes and remove from the flame.
Serve it hot with raita or red chutney.

1. Coriander Seeds - 4 tbsp
2. Cumin Seeds - 3 tbsp
3. Fennel Seeds - 1 & 1/2 tbsp
4. Black Cardamom - 16
5. Green Cardamom - 2 tbsp (~20)
6. Black Pepper (Whole) - 2 tbsp
7. Cloves - 1 tbsp
8. Cinnamon - 5 Sticks
9. Aniseed - 1 & 1/2 tbsp
10. Bay Leaf - 10
11. Mace - 3
12. Nutmeg - 1
13. Kashmiri Red Chili Powder - 4 tbsp
14. Turmeric Powder - 2 tbsp
15. Dried Apricot - 5-6
Method:
1. Dry Roast all whole spices, except mace and nutmeg, on low heat for about 3-4 mins
2. Let these cool down
3. Meanwhile grind mace and nutmeg into a fine powder and keep aside
4. Grind the roasted whole spices into a fine powder in batches
5. Take out in a mixing bowl and add the mace nutmeg powder and mix well
6. Now add red chili powder, turmeric powder and mix everything very well
7. In the end add the dried apricots
8. Store the biryani masala in an airtight jar
