Does anyone have any good resources for Indian cooking? I’m not necessarily looking for recipes, more theory than anything. I want to understand what the different spices and vegetables are and how the work together to create a unique profile. I’m really inexperienced with Indian food and haven’t even been to any restaurants, but it’s such a beautiful and advanced way of cooking that I want to learn. Every time I pick up supplies from my local Indian grocer, I get sad in the giant spices aisle cause I don’t know what any of it is 😵‍💫
