Vada Pav is a popular Indian street food in the state of Maharashtra. It is a spicy potato pakoda (vada) stuffed into a bun (pav). Here is the complete process of making Vada Pav: Ingredients: For the Potato Filling: - 4 large potatoes, boiled, peeled, and mashed - 2-3 green chilies, finely chopped (adjust to taste) - 1-inch piece of ginger, grated - 1/2 teaspoon mustard seeds - 1/2 teaspoon cumin seeds - 8-10 curry leaves - A pinch of asafoetida (hing) - 1/2 teaspoon turmeric powder - 1 teaspoon red chili powder (adjust to taste) - 1 tablespoon oil - Salt to taste - 2 tablespoons chopped cilantro (coriander leaves) - 1 tablespoon lemon juice For the Gram Flour Batter: - 1 cup gram flour (besan) - A pinch of baking soda (optional) - A pinch of red chili powder - Salt to taste - Water, as needed, to make a thick batter For Frying: Oil for deep frying For Assembling: - Pav (small Indian bread rolls) - Green chutney or tamarind chutney (optional) - Garlic chutney (optional) - Sliced onions (optional) Instructions: Prepare the Potato Filling: - Heat oil in a pan. Add cumin seeds and mustard seeds. let them splutter - Add chopped green chillies, curry leaves and asafoetida. Fry for a minute. - Fry the ginger for a minute. - Add Mash red chilli powder, turmeric powder, salt and potatoes. Massage well. - Cook for a few minutes until the potato mixture is completely heated through and the spices are well combined. - Add lemon juice and chopped coriander. Mix and remove from flame. - Let the potato cool down.   Prepare the Gram Flour Batter: - Mix gram flour, red chilli powder, a pinch of baking soda and salt in a mixing bowl. - Add water slowly and mix well to form a thick and smooth batter. Make sure there are no lumps.   Making the Vada Pav: - Heat the oil in a deep frying pan on medium flame. - Shape the potato mixture into a ball or patty. - Carefully drop the potato balls into the gram flour batter. - Carefully drop the potato balls into the hot oil. Fry it until it turns golden brown. Repeat with remaining potatoes. - To remove oil from fried vadas, drain the oil on a paper towel. - Making the Pav: - Slice the pav horizontally without cutting them all the way through. - spread green chutney, tamarind chutney, or garlic chutney on the inside of the pav.   Making Vada Pav: - Put hot vada in the pav. - Optionally, add some chopped onions for flavor and crunch. - Add chutney if you wish and serve hot. - Enjoy your home made Vada Pav, a delicious and iconic Indian street food snack! This recipe is very simple and tasty, and you can make it easily at your home. Pakodas are a favorite in Indian cuisine and are a traditional snack that you can enjoy with hot tea or during the rainy season. Made with chopped onions and gram flour, perhaps one of the oldest pakora recipes in existence. It is a widely used Indian recipe for a deep-fried snack that can be made for different occasions, which also affects the way it is made. In most cases, this snack is prepared as pakodas layered with a thin layer of spicy gram flour batter, but it can also be made like pakodas without the multiple layers of onion.
A common evening snack recipe for deep fried pakodas known as pakoda or pakora. Although these salty snacks are very simple and easy to make, they can be challenging if some basic steps and instructions are not followed. This post on how to make crispy and flaky Pyaz Ke Pakore Recipe, also known as kanda bajji, aims to teach you five basic techniques.
I published this recipe previously, but I'm republishing it with additional tips. To put it another way, I'm trying to post videos more thoroughly this time. I have tried to describe the steps rather than make assumptions. So to put it simply, with this recipe, you will get a fresh and flaky onion. These pakodas can be served as starters and in curry recipes and also as pakodas for evening snacks. These pakodas are such a snack which can be used in many things. They can also be used as a filling between pavs to make bhajji pav, which is my favorite dish. I wrote a separate post about it, but you can also use this recipe. Besides, I have also made crispy namkeen by mixing rice flour and gram flour. Rice flour adds crunch to the snack while gram flour is essential for this recipe. The crispiness of the pakodas can be increased by adding more rice flour.
Furthermore, some additional tips, additions and changes to the Pyaz Ke Pakore Recipe. First of all, be extremely careful while adding water or moisture to the gram flour and onion mixture. In most cases, the moisture in the onion slices is enough for coating, but if you feel you need more water, add it in less quantity. Secondly, you can use cornflour in place of rice flour for the same purpose. As a result the pakodas become slightly crispier, but the taste does not change much. As a result, if you have rice flour, use it for better results. finally, the pakora should be fried on low to medium flame so that the heat is evenly distributed and it cooks evenly. Also, low flame makes the texture more brittle and crispy.

During this quarantine, the world has changed drastically with uncertainty all over. Everything has turned around in their own ways, life's, time, economy, work productivity, and whatnot. Most people around the world are stuck at home during this lock downtime.
While the world is fighting a war against the Covid-19, people like me who are staying at home under a lock down are fighting another kind of war ourselves with different types of emotions.Boredom is one important feeling among those. Everybody's lifestyle is just f***ed up and there day to day routine has completely changed. For many of us, the lock down has restricted our environments to homes with social media, remote working obligations, zoom calls, hangouts, exercise and some baseless crazy talks with our close buddies.
Initial days were pretty good spending time on office work, chilling with family, oversleeping, Netflix, chatting and the list goes on.... After certain days, it's natural to feel troubled, anxious, scared, and, yes, even bored. To overcome all those emotions especially the boredom and to pass the time I am exploring my "Cooking" hidden talent. Having long thought of myself as a person who loves eating but hates cooking, I never looked at my kitchen side other than for eating.Though I was not interested in cooking, I never compromised with my food taste, always ate what I wished to eat. My cravings for food had no limits before the current crisis and it continued the same during the lock down as well. Since there are no restaurants open and my mom's restriction against outside food due to the fear of the contagious virus. She never let me order food from outside so I had no choice but to cook myself.

Firstly I started baking cakes, which ended up with great taste. My mom was really surprised with the great start to my cooking experiment. I shared it on my Instagram status as well and received compliments from all my cousins and friends, this made me try some more items. Since street food is my all-time weakness, I also prepared Manchurian and noodles, even though that turned out to be delicious. After certain days I started cooking almost all the evenings after my work, with different food items, meanwhile, my cooking skills improved. As my cooking skills got better, my and my sibling's food cravings gradually increased. They started ordering me different items every day for evening snacks. The first disaster was preparing Indian sweet called jalebi, maybe due to uneven consistency, and for a first timer it wasn’t that bad, but I tried it again and again to get the better result and finally I got the best delicious jalebi. Then I tried other handfuls of my favorite dishes like omelets, gulab jamun, onion pakoda, egg bonda, bread omelets, toasts, and the dish everyone is missing pani puri which is on my list of experiment, all the other dishes turned out to be exceptionally well. Although I usually mess up the whole kitchen while cooking, my mom never said no or demotivated me over my cooking ability. she even added her experience touch-ups, which gave an add on to the taste because of  this both my cooking and presentation skills have got much better. My whole family has got more creative with food and taste than before.
Most of my recipes were picked up from cooking blogs, thanks to those bloggers for the best recipes and I would like to credit them in helping me during this tough time as a food lover missing tasty food. I always thought that cooking was not my cup of tea but now things have changed for me. With all the negative impacts of quarantine on our lifestyle, the lock down has really helped me explore and bring my hidden talent out.

How To Prepare Chana Pakora In A Clay Pot

It's easy to see why because the heat retention properties of clay and their natural non-stick surface make them very convenient for cooking just about any food to perfection. We all know that using a slow cooker allows you to cook your food slowly and without much attention required, which is especially nice if you're busy or away from home during the day.
Cooking Indian foods in clay pots provides an equally impressive performance. Clay pots retain heat much better than regular metal pots or pans and can give your dish some extra flavor while making it healthier than methods that require oil or grease. We love sharing traditional recipes with our readers, so today we will be preparing Chana Pakora which is a tasty Indian appetizer made with garbanzo beans, gram flour and spices.

 Ingredients:
·         2 cups Chana (chick peas soaked overnight)
·         1 cup onion finely chopped
·         5 tsp ginger garlic paste
·         1 tsp chili powder
·         2 tsp coriander powder
·         1/2 tsp turmeric powder
·         1/4 cup gram flour or besan Salt to taste
·         Water as needed
·         Oil as required
 To prepare the Tadka (tempering):
·         Heat oil in a small saucepan on medium heat.
·         Add cumin seeds and allow it to crackle.
·         Add red chili, cloves and cinnamon stick.
·         When the cumin seeds turn brown,
·         add minced garlic to it.
·         Sauté for a minute or until golden-brown.
·         Add green chili and curry leaves to this tempering mixture.
·         Pour the entire tempering mixture over the prepared Chana Pakora
·         Mix well
 To prepare Chana Pakora:
 ·         Chop onions into small pieces
·         Squeeze excess water from Chana using a towel
·         Mix all ingredients given under "to prepare Chana pakoda," except oil
·         Heat oil in a non-stick pan on medium heat
·         Form small portions of the batter by taking 1 tsp of batter at a time between your palms
·         Dip each portion in besan so that it's evenly coated from all sides
·         Drop gently in the oil  
·         Shallow fry Chana Pakora until both sides are golden brown
·         Serve hot with chutney or ketchup

It's pouring illustration. Week 4 of my time here has surrounded me in sitting with my laptop and pen tablet for hours on the end. But here’s the thing, this is exactly what I’ve been looking forward too. Since assignments in school almost never require a full illustrative job to be done, I’ve wanted to work on something that does for the longest time. Of course I draw at home, but venturing into a live illustration project is something I’ve wanted to do for so long. And that chance is here. I’m illustrating a series of posters that will be put up in the elevators here at the Taj Lands End, Mumbai, where the store I’m working at is also situated. I’d been given free reign over this one, just as long as the posters looked like they belonged to the company. Immediately I thought of pattern, looking at all the beautiful, peculiar pieces garments that are produced here in house. I wanted to highlight the pattern and the fabrics of these garments, and I knew I wanted to add a lot of colour, while still maintaining that luxurious brand image for the final outcome. I’ve been working on these posters for about a week now, and I can say they’re coming out just great. And what’s better than to pair them with some hot, freshly deep-friend onion pakodas as it rains cats and dogs outside?
