Recreating favourite restaurant meals gluten free at home is really satisfying.
With my complex mental health, cooking has always been something really difficult for me. But lately I’ve had some help with it & so I’ve been able to make a couple of meals that felt easy enough to make gluten free. Once I make something with someone else, it’s a bit easier to do on my own if it’s simple.
The two I’ve done are Singapore Noodles & creamy pumpkin Gnocchi.
For the Singapore noodles the changes is making sure the vermicelli noodles are gf (rice noodles), gluten free soy sauce, Chinese cooking wine needs to be substituted for dry sherry or Japanese sake. I didn’t use sesame oil to begin with, thinking ‘how can an oil taste that different’. Omg. Use the sesame oil. It makes a massive difference. Also, honestly, I would stay away from pre-made sauces. I tried two & they were crap. Nothing like the Singapore noodle flavour I’m use to.
For the gnocchi it’s an easy swap. There’s no reason gnocchi needs wheat flour. Simply wise seems to be an internationally available brand & its great. It’s shelf stable so it last ages, pick a few packets on discount if you can.
Even something as simple as shoe string chips like maccas are actually really good in the air frier.
These are two meals I probably never would have made at home but now are ones I will or have made again. I really encourage anyone to think of their favourite restaurant or take away food & see if you can recreate it.
If it seems overwhelming start just thinking about something you enjoy & would love to have again. Write it down somewhere for next time you get some interest in this project if you don’t want to continue right then. Next try looking for recipes online. I just looked for standard gluten recipes. Find one that sounds like it should match what you remember of the dish, what parts you particularly likes. The next step is looking for substitutions. There’s substitutions for basically everything. I found that out when looking for Chinese cooking wine. Who would have thought such a specific ingredient would have other options? If I’m doing something alone, buying ingredients, preparing ingredients & cooking often fall on different days. I like to cut up veggies sitting down, mostly because of pain but it also just takes some pressure out of preparation. I always group ingredients together. A bowl or container of all the ingredients that go in at the same time. It again takes some of the executive functioning stain off while I’m focused on not burning the food. I find portioning containers a much better way to store left overs. I have several small containers. But do whatever works for you. & celebrate the fact that you now have several days worth of delicious food.
