First meal in my new InstantPot and it didn’t disappoint! This meal was so easy, healthy, and tasty. Most of the ingredients I already had on hand. I served over whole wheat penne pasta. Would like to try brown rice next time!

This was a really good broccoli side dish. The roasted pignoli and lemon zest were a great flavor combo. Roasting the broccoli brings out natural sweetness and the texture has a nice crunch, not mushy like steamed broccoli tends to get. I’m always looking for different ways to enjoy broccoli—this is going to be in the dinner rotation moving forward. ▫️ Toss broccoli florets with EVOO, salt, pepper and thin sliced garlic. Top with some grated pecorino and lemon zest. Roast at 400 for about 20 mins. While broccoli roasts, toast 1/4 cup pignoli nuts. This is undoubtedly my absolute FAVOURITE slimming world friendly recipe, so I’m very excited to share it with you! What makes this recipe even more amazing is that it’s 100% syn free, inexpensive, it tastes amazing and it’s so simple, taking only 15 minutes to make and serve!
Spaghetti Carbonara
Serves 2
Ingredients (my measurements are not exact, they’re only ever a rough estimate so only use what you think you will need):
2 handfuls of spaghetti (1 per person)
3 cloves of garlic
1 small onion
5 rashers of lean smoked bacon (make sure no fat is visible)
3 heaped tbsp of quark
3 large pinches of grated parmesan
Dried Parsley
Garlic powder
How to make:
1. Add spaghetti to boiling water
2. Spray some fry light in a pan and, on a low heat, add the chopped garlic, onions and bacon to a pan and allow to cook slowly (to allow the spaghetti to be ready at the same time).
3. Add dried parsley & garlic powder to the bacon mix and stir, still on a low heat.
4. Continue to add fry light if bacon mix sticks to pan.
5. Once spaghetti is cooked, drain and put back into the pot. 
6. Add all of your quark and mix thoroughly.
7. Bacon mix should be cooked by now, so add this in with the spaghetti & quark.
8. Add your parmesan, mix thoroughly.
9. Serve and enjoy!
Writing this recipe has made me want some but I’ve already had it for dinner 3 nights this week haha! Please let me know what you think :)
