Une pièce que j’aime particulièrement fabriquer au tour c’est l’assiette creuse. Je les tourne « à la motte », c’est à dire qu’à partir d’un très gros morceau de terre je fais plusieurs pièces d’affilée. Elles sont faites comme des bols, avec une base étroite mais très très ouverts et fins. Et la difficulté est là: un geste qui dépasse les limites de la terre et tout s’effondre. Lors de mes fouilles sur internet j’ai trouvé un outil d’origine japonaise qui sert à ouvrir des bols tournés avec le moins de gestes possible, idéal donc pour les terres peu plastiques et peu clémentes. L’outil s’appelle Gyubera ou « Bull’s tongue » (langue de boeuf) en raison de sa forme. Il existe en plusieurs tailles et matières. J’ai choisi un gyubera en bois, que je trouve plus léger et confortable à utiliser. Apprendre à l’utiliser correctement n’est pas évident mais une fois habitué au geste, c’est un véritable plaisir. Mille-feuille ist ein Schichtkuchen aus Blätterteig und einer Füllung aus Sahne oder Marmelade. Seit etwa dem 17. Jahrhundert bekannt, wurde er bis ins 20. Jahrhundert immer weiter verfeinert. Derzeit sieht das Rezept sechs oder acht Blätterteigschichten vor, die verschieden bestrichen sind. Wörtlich übersetzt heißt der Kuchen übrigens Tausendblatt ! Viel Spaß mit #veda_food !

I have eaten at some of Sicily's best haute cuisine restaurants like I Pupi in Bagheria, Bye Bye Blues in Mondello, Ristorante Cortile Arabo in Marzamemi, and others. And yes, these are excellent restaurants with eye-popping menus and artistic presentations. But you know what? 364 days of the year, my wife does not allow me in the kitchen (for good reason!), but on one day the maestro shines forth, and I create my famous haroset for the Passover Seder. This concoction of chopped apples, almonds, apricot, prune, mixed with cinnamon and wine symbolizes the bricks which the ancient Egyptians forced their Jewish slaves to make. This year I chopped some pistachios and added them. Wishing you all a Happy Passover or Easter, and stay safe.
