Miso-Pilze mit Bohnenpüree und Chimichurri
ein veganes Gericht, eine echte “Umami-Bombe”
Aus weißen Bohnen (aus der Dose oder aus getrockneten weißen Bohnen (dauert seeeehr lang, 24 Stunden einweichen plus mind. 2 Stunden kochen)) ein Püree herstellen.
Dazu schneidet man einer Knoblaubknolle oben den “Deckel” ab, etwas Olivenöl drauf und dann in Backpapier verpacken. Braucht im Ofen ca. 45 Minuten, am besten man steckt es mit in den Ofen, wenn man eh ein Brot oder ähnliches backt.
Den gegarten Kenobi dann aus der Schale quetschen, die Bohnen, etwas Olivenöl, ein Schuss Zitronensaft, Salz und Pfeffer dazu und im Mixer ein cremiges Püree herstellen.
Für die Pilze einen Marinade aus Misopaste, Sojasauce, Harissapaste und Öl herstellen. Die Pilzköpfe damit von allen Seiten mit einem Pinsel bestreichen. Nebeneinander in einen Auflaufform geben und bei 200 Grad ca. 30 Minuten backen.
Für das Chimichurri einen Bund Petersilie, einige frische Chillischoten, etwas Knoblauch fein hacken. In einer Schüssel mit Olivenöl, Salz, Pfeffer und einem Schuss Essig mischen.
Leicht, vegan, eiweißreich- wir fanden es neu und köstlich

Ingredients: Chilli pepper — 140 grams Ground cumin — 1 teaspoon Ground coriander — 1 teaspoon Ground cumin — 1 teaspoon Ground smoked paprika — 1 teaspoon Tomato paste — 140 grams Olive oil — 2 tablespoons Salt — 1 teaspoon Garlic — 6 cloves
Description: Harissa is a sauce or pasta from North Africa. You can use any hot peppers to make this paste. The paste is thick, stored in the refrigerator for about a month. Of course, you can buy it in the store, but it’s more pleasant when you make it yourself. We add harissa to the preparation of chicken and vegetable dishes, for spicy sauces based on peanut butter or coconut milk.

What is Harissa Paste? - - - Harissa is a spicy North African condiment of Tunisian origins. The main ingredients of which are roasted red peppers, Baklouti peppers or serrano peppers, spices, and herbs such as garlic, caraway seeds, coriander seeds, cumin and olive oil.  There are numerous variations of harissa depending on the region (or the family) since some recipes include herbs and spices. Harissa Roasted Chicken Thighs with Potatoes + Fennel 
INGREDIENTS
8 small bone-in, skin-on chicken thighs (about 2 pounds total)
Kosher salt
12 ounces very small potatoes, halved if wider than 1 inch
2 tablespoon mild harissa paste (CAVA brand from Whole Foods)
4 tablespoons extra-virgin olive oil, divided
4 medium leeks, halved lengthwise, cleaned, thinly sliced
6 garlic cloves, crushed
1 fennel bulb, very thinly sliced, preferably with a mandoline, divided, fronds reserved for serving
3 tablespoons fresh lemon juice, divided
DIRECTIONS
Arrange a rack in top third of oven; preheat to 425°. Season chicken with salt and place, skin side down, in a medium cast-iron or other ovenproof skillet. Arrange potatoes around chicken. Heat skillet over medium and cook, without moving chicken but turning potatoes occasionally, until chicken skin is browned, crisp, and releases with just a bit of coaxing from a spatula, 14–16 minutes.
Transfer chicken, skin side up, and potatoes to a plate, leaving as much fat in skillet as possible. Let skillet cool slightly, then add harissa. Start conservatively, and add harissa according to personal taste. Return skillet to medium heat and cook harissa, stirring occasionally, until fragrant and sizzling, about 30 seconds. Pour off harissa schmaltz (rendered fat) into a small bowl; set aside.
Heat 1 Tbsp. oil in same skillet over medium. Add leeks, garlic, and three-quarters of sliced fennel and cook, covered but stirring occasionally, until softened, 8–10 minutes. Return chicken skin side up and potatoes to skillet. Transfer to oven and roast until chicken is cooked through and juices run clear when pierced with the tip of a paring knife, 10–12 minutes.
Meanwhile, toss 1 Tbsp. lemon juice and remaining sliced fennel and 1 Tbsp. oil in a small bowl; season with salt. Add remaining 2 Tbsp. lemon juice to reserved harissa schmaltz and stir to combine; season with salt.
Transfer chicken and potatoes to a platter. Top with fennel salad, then fennel fronds. Drizzle with harissa dressing.

So time for some non-vegan cooking. This is one of my faves to do, and relatively straightforward (if you don't make your own homemade harissa paste). The chicken thighs are first grilled 5 minutes aside preferably on cast iron. Remove and put aside.Then sauté the onions and garlic, then some tomato past. Then add two cans of chickpeas along with 3/4 cups of chicken broth and the harissa paste. Bring up to a simmer, then nestle in the chicken thighs and bake for 25 minutes in a 425 degree oven. And then serve up with fresh parsley and lemon wedges to squeeze on top. #chicken #harissapaste #harissachickenandchickpeas

New Product Alert from @joshandsue Gourmet Selections. The Hot Harissa paste! I love this Australian made brand that is Gluten free and preservative & additives free. Here is my easy delicious lunch I made today and happy to share the recipe. . Boil Gluten free pasta with some Oil, Salt and Garlic and set aside. . In the pan add chopped Garlic, Spring Onions, Mixed Italian herbs, Salt & Pepper and chopped Baby tomatoes. Lightly fry and then add 4 Tablespoons of Organic Tomato paste and 4 teaspoons of Harissa paste. Stir then add 2 cups of water and lightly simmer. . Add the sauce to the pasta and stir in baby spinach then the chopped feta. And there you have it, a easy Delish pasta with some kick. . I recommend you add the Harissa paste a teaspoon at a time and taste to check how spicy you want it. Next time i will definitely add another teaspoon or two as i love some kick. I also want to try with some Basil next time but I couldn’t find any today while shopping. .
