#HalloweenPrepChallenge by @oddlikeus and @emandsprout week three—RECIPE: Garlic, Chickpea, Potato and Spinach Soup This is one of the tastiest meals I have ever made, and is the perfect soup for a crisp fall day. 🍂🍁 I hope you like it just as much as I did! ❤ Serves 4 (but it's so good, you might want to double up on it!) •2 tablespoons olive oil •4 garlic cloves, crushed •1 onion, roughly chopped (if you don't like onions, you can pick it out after you sautee it, or you can use onion powder/dry minced onion for flavor) •2 teaspoons ground cumin •2 teaspoons ground coriander •5 cups vegetable stock •12 ounces potatoes, peeled and finely chopped (I used 2 cans of diced potatoes in my soup) •15-ounce can of chickpeas, drained •1 tablespoon cornstarch (I used 2 to make it a bit thicker; use less or more to acheive the thickness you want) •2/3 cup heavy cream •2 tablespoons light tahini (sesame seed paste) •7 ounces of spinach, shredded •salt and pepper to taste (and you can use cayenne pepper if you want) 1. Heat the oil in a large saucepan and cook the garlic and onion for 5 minutes, or until they are softened and golden brown (if using onion powder/dry minced onion, use less oil and DO NOT add the onion powder/dry minced onion until step 2). 2. Stir in the cumin and coriander and cook for another minute (you may have to had a skosh more olive oil, especially if you are using onion powder/dry minced onion instead of real onion). 3. Pour in the stock and add the chopped potatoes to the pan. Bring to a boil and simmer for 10 minutes. Add the chickpeas and simmer for 5 minutes more, until the potatoes and chickpeas are just tender. 4. Blend together the cornstarch, cream, tahini and plenty of seasonings. Stir into soup with the spinach. Bring to a boil, stirring, and simmer for another 2 minutes. Season with salt and pepper, and enjoy! *This is a very hearty soup (almost like a stew).
