CHEF ILONA: Make ahead Blueberry-Chia Pudding

Did you know chia seeds are more than just for those adorably retro chia pets?

I am a big fan of the uniquness of the chia seed, and its natural transformative powers!

Despite their small size, chia seeds are full of nutrients, including Omega-3 fatty acids, iron, calcium, and antioxidants. 

They have a mild, nutty flavour, and when mixed with anything that has moisture, a gel forms around the seed. This gel is the reason for their distinctive texture. Chia seeds can absorb up to 12 times their weight in liquid, which makes them useful in keeping baked goods moist. We call that quality, “hydroscopic”.

The Aztecs and Mayans both used this valuable plant to supplement their diets, but it was probably the Aztecs who contributed most to the importance of chia as a food crop. In Mayan, the word “chia” means strength, and it is interesting that these ancient people recognized the invigorating qualities of the chia seed.

Make Ahead Blueberry Chia Pudding Chef ILona Daniel Serves 4

2 Cups (250ml) frozen blueberries

2 Cups (250ml) almond milk or other plant based milk

½ cup maple syrup or honey

1 Tablespoon vanilla extract

¾ cup chia seeds

Topping: vanilla yogurt and fresh blueberries

Instructions

Start by adding the frozen blueberries to a microwave safe bowl and cook on hight heat until they start to bubble and split or heat berries on the stovetop. Mash berries with a fork or mix in a blender for a smoother result.

Stir in the rest of the ingredients until there are no lumps. Let it sit for 5 minutes and stir again.

Divide the mixture into 4 jars with lids and top with vanilla yogurt and a few fresh blueberries.

Cover and refrigerate overnight.

Broken water main floods part of Armdale Roundabout: Halifax police

A broken water main flooded part of a roundabout in west-end Halifax Monday morning.

Police said drivers should avoid the area around the Armdale Roundabout because of “hazardous” driving conditions. They said the break is in the area of Quinpool and Chebucto roads.

Halifax Water said it is working on the break but there is no estimate for when service will be restored.

Viola Desmond by halifaxnoise

(July 6, 1914 – February 7, 1965)

In November 1946, hair salon owner Viola Desmond went to a film at the Roseland Theatre in New Glasgow, Nova Scotia. But what began as a night at the movies became a night in prison.

Unaware that the theatre was segregated, the Black Nova Scotian chose a main‐floor seat. When she refused to move to the balcony, where Black patrons were expected to sit, she was arrested and dragged out of the theatre.

For many people, the story would have ended there – but Desmond refused to accept the charges against her, and her case went all the way to Nova Scotia’s Supreme Court.

In late 2018, Desmond became the first Canadian woman to appear alone on a Canadian bank note—a $10 bill.

I Love Halifax.

Halifax is the place where I grew up, right on the outskirts of it. All of my life I have spent here. I have been fortunate enough to travel outside of my city as well as my country, and have seen bigger cities in my life. I am still rather young, I am 16, so I still have a lot more of Halifax to see, but I respect all of it none the less. 

Like everyone else who grows up in a small town (Halifax isn’t small, but my part is), you dream of leaving and taking on bigger things, and for the last year and a half, I’ve desired to do so. But now that we are all stuck in the house it’s gotten me thinking about all the good we have here.

One of my favorite things about Halifax and Haligolians as a whole is that we appreciate the little. When Deadmau5 played the Halifax Common for Canada Day 2017, half the city turned out and had a blast, when the rolling stones came to Halifax with Kanye, 50,000 people showed up. When YBN Cordae came to Halifax for Hopscotch Festival in Rogers Square, the place was packed. 

When the Halifax Thunderbirds of the NLL came to Halifax, we all came to the games, the Scotiabank Centre was pretty damn near packed every single game. Every mid-tier musician that comes to Halifax packs whatever venue they’re playing. It is magical to see the awe and wonder on people’s faces when things like this happen.

I respect huge ass cities, like Vancouver, Montreal, Toronto and Calgary, but they just don’t hit the same as Halifax and Nova Scotia as a whole. When I’m in Halifax, I don’t hesitate to pass my phone to someone to take a picture for me, and the people that flock here for our beautiful summer sunsets on the ocean, don’t hesitate either.

We are the perfect mix between big city and tight-knit community. I love Halifax in all its glory, and I love the people.
