DINE 'N CRIME: DUMPLING

This recipe is part of the menu of 'Chez Molerat vs Dine 'n Crime'.
HOW TO MAKE THE FILLING. Ingredients: - Fatty pork meat/porkbelly slices (preferably ground meat) - 2 hands full of big shrimp (deshelled and cleaned out). - Two gloves of finely chopped garlic - A piece of ginger (size of your pinky finger), also finely chopped - 2 Spring onions - 1 can of bamboo shoots (use only half of it) - 2 quick shakes of ground white pepper (or to your preferred taste) - 2 tbsp of water - 2 tsp of Soy sauce - 2 tsp of Shaoxing cooking wine - 1 tsp of Sesame oil - Samyang Buldak sauce to your liking (HOT!) Optional ingredients: - Finely chopped carrot - Finely chopped cabbage - Finely chopped shiitake mushrooms
Instructions: - If you have ground pork, great! If you don't; chop the pieces of fatty pork meat as big as your pinky fingers. After that, carefully start hammering down on it with two knives; ground it ye olde way! It's a bit time consuming but you'll feel like a professional chef when you start double wielding kitchen knives. Keep in mind that this causes a lot of noise though and PLEASE BE CAREFUL BECAUSE KNIVES ARE SHARP! Once you are done, put the ground pork into a bowl. - Wash and deshell the shrimps in cold water. Take out the guts, wash the shimps once more and finally chop the shrimps into 4 to 5 pieces. Add the shrimps to the pork. - Clean and finely chop 2 spring onions (depending on the size it can also be 1 or 3). Chop the bamboo shoots and lastly mince the ginger and garlic into tiny pieces (you can also grate the ginger and use a garlic press for the garlic). Add these ingredients to the pork shrimp mixture. - Add the water, ground pepper, soy sauce, Shaoxing cooking wine, sesame oil and Buldak sauce to the mixture. Stir well until everything is evenly divided. Once combined, cover the bowl and set the filling aside in the refrigerator. NOTE: If you do not have the Buldak sauce, that's no problem! You can easily replace this with a bit of Madam Jeanette or any other hot pepper to your liking. It's up to your spice level. Keep in mind that this recipe is made to my preferences and not everyone likes hot foods. So if you want to eat good dumplings without the spice; leave out the Buldak sauce (or use it seperately for dipping).
HOW TO MAKE THE DUMPLING SKIN (RECOMMENDED FOR MORE ADVANCED COOKS). Ingredients: - Water 120mL/4.2oz - 200g/0.85 cup of All purpose flour - A pinch of salt - 80g/half a cup of Spinach (preferably fresh baby spinach) for the green dough - Liquid Squid ink for the black dough
Instructions: - Add the flour and salt to the mixing bowl. - Boil the water, turn off the stove and add the baby spinach to soften it. Make sure to NOT overcook spinach as it contains 'prussic Acid' which means that your body can turn this stuff into Cyanide.Not enough to actually kill you, of course... I hope. I'm a Doctor, but not a health doctor or dietician, so don't take it as hard facts from me! Technically speaking, you're also not a 'doctor', you know... Since you're a drop out. ZIP IT, SHEGO! - Add the softened spinach and the water to a mixer and blend it until smooth. - Sieve the blended spinach juice until all the pulp is seperated from the warm green water (yummy). Make sure that the water is around 45°c/113°f - Carefully add the warm water to the flour as you mix it - Make a ball of dough and if it's too wet, add a little bit more flour but not too much! Keep on kneading and once the ball of dough is springy to touch (push it in with your finger and it should go back up) it's ready! - Divide the dough in two equal pieces. Wrap up one of them and to the other we will add a few drops of squid ink. Knead the ball (yes it will be a bit sticky again) until it changes color. We're aiming for a dark grey color, not to worry; this will turn black during the steaming process. HOW TO FOLD THE DUMPLINGS: For the life of me I cannot explain to you how to fold dumplings so here; have this amazing tutorial by China Sichuan Food. My auntie taught me how to fold crescent moon dumplings but well, I'm still not the best at it when it comes to folding home made dumpling skin. That's the reason why I adviced at the start that making this is for more advanced cooks. If you have never folded dumplings before, I recommend you start with store bought frozen gyoza skins. They are WAY easier to make dumplings with but sadly, I haven't found any black and green frozen gyoza skins in stores.
Once you're finished making all your dumplings, you can go right ahead and steam them for 7~8 minutes OR you can store them in the freezer (make sure to first seperately freeze them for up to 1 hour (or until slightly hardened) and then you can put all of them together in a bag, this way they won't stick together) If you want to heat them up after freezing; steam them for 15 minutes.
HOW TO MAKE THE DIPPING SAUCE. Ingredients: - 1 tbsp Chinese black vinegar - 1 to 2 tbsp Soy sauce - 1 tsp Sesame oil Mix these condiments together in a little bowl, for topping you can add: - Sesame seeds - Sliced chilli - Finely sliced ginger
Enjoy these dumplings while hot! Carefully bite the tip to create a little air hole so you won't burn your mouth because these dumplings are juicy!

As someone who lived for years on cheap carbs, I had to gradually ease into more protein and fruits and veg. Over months your body will adjust! The cravings change, what things taste good change, your energy levels after a plate will change.

All of this.
I've been skinny nearly my entirely life because of my fast metabolism and during middle school I skipped breakfast because my guts were in knots due to the bullying I received, and didn't have much for lunch in high school because it got worse.
I didn't stop looking underweight until my brother died and I hardly did anything or went anywhere and ate pizza, and that's when I looked a little "normal." When my health got worse because of a large ovarian cyst that was endometriosis started to pinch my larger intestine shut (not fully, but created a bottlenecking effect) and my tolerance for certain foods were being lost, I slowly went underweight again despite what I ate.
After surgery, I had no idea how to diet to gain weight back, and before I saw a doctor about it, I made the mistake of seeing a counselor (went to her for abandonment issues and insecurities about how my face simply looks thanks to bullying), and because of my weight and my insecurities, she used it as an excuse to try and say I'm definitely anorexic and wanted to put me into in-patient care "before we get you back onto solid food" DESPITE THE FACT THAT I HAVE ALWAYS ATE SOLID FOOD. She wanted to milk my Medicaid insurance and ignored everything I said that contradicted her accusations. Then she GOT MAD when I told her I didn't want to see her anymore.
Know what I ended up doing? Saw a dietician (who only begged me to eat more, didn't understand how endometriosis could affect what foods I could safely eat, and gave me Ensure until the carrageenan finally became too much for my guts), looking up how to gain weight, and discovered the Yuka app to watch out for problematic additives.
I went from being underweight to looking like a cross between athletic and normal. I'm the heaviest I've ever been because I was never taught how to diet because if I'm not fat, then I don't need to diet. I love weight-lifting and exercising to build muscle, and my thighs feel powerful with a healthy layer of fat. I HAVE BOOBS NOW AND IM NO LONGER FLAT-CHESTED. DO YOU HAVE ANY IDEA HOW HARD IT IS FOR ME TO NOT TOUCH MY TITS BECAUSE IVE NEVER HAD THEM THIS BIG BEFORE?!
I had to figure this shit out for myself. I'm glad Medicaid covered the visits with these useless "professionals."
I've noticed a theme with the professionals who DIDNT help me: they had quite a bit of religious Christian stuff decorating their workspace. The gastroenterologist and the gyno both had their work spaces having some informational posters and charts for patients and they didn't interrupt and were really understanding of me. My gyno is fucking awesome and he even helped ease my anxiety of my first major surgery and stuff.
Part of me wants to see the counselor again. And tell her to eat shit, I built this solid muscle and fat all by myself because I had to thoroughly look up how to diet for weight gain.
Currently, I don't have a very diverse diet in terms of meals, because I'm too poor for a lot of quality stuff and I'm still trying to figure out what all I like that I would like to try recipe-wise (don't wanna waste money on something I'm likely not gonna like).
My whole fucking life up until now, I've been accused of being anorexic by people because of how skinny I was despite eating like a pig either at home or at a friend's house for the weekend. Now I finally have more flesh on these bones. I hope to keep going.
And here's the context of my situation:
I am 5'3", the canonical height of Wolverine. I never made it to 100 pou ds until recently. And now I'm hovering around 109 to 111 pounds (it fluctuates depending on my foods available and how much muscle I've built; the muscle helps me maintain the weight). This is literally the heaviest I've ever been. My tits have boob physics when I move now for once in my life. All because I had to look up with no help how to gain. Weight for my situation.
Because of what I've went through, I will NEVER comment on someone's weight, even if I've noticed a change in their weight, because I don't know what they're going through.
For my entire life people have told me I am "naturally athletic". I am not "naturally athletic": I am an asthmatic with historically really poor cardio health and joints that partially dislocate themselves if I put pressure on them slightly weird. What I *am* is naturally tall and slender, even more so when I did absolutely no physical activity and ate very little because my neurodivergent body didn't give me hunger signals, which most people mistake for "naturally athletic".
That's not to say I don't have the potential for athleticism. My mother, who has never been under 250 pounds my entire life, is built of sheer farm girl muscle, has stellar blood pressure and cardio health despite her weight, and could (and has!) bodily haul me and my grown brother around like we weigh nothing. When I was a kid the woman was biking triathlon distances before we were even awake for school. The woman is an ATHLETE, and her whole life she has been obese (and heard from everyone and their dogs that she needs to lose weight).
I'm not sure where I'm going with this long piece of anecdotal evidence, except to say: my whole life I heard I was naturally athletic, until I actually became athletic. Because the thing is, I put on muscle like my mom. It fills out my shoulders and arms and makes me look big, thick, and barrel chested. "Genetically beefy", as my brother puts it. And suddenly I wasn't getting comments about my athleticism anymore. I'm quite literally the healthiest I've ever been. I can run for miles, lift my weight, my balance and heart health are excellent. I'm just bigger now. And not one stranger has a comment about my physique since I got fit. Because I don't look like what they think "naturally athletic" is.
I guess what I'm saying is, maybe don't let your perception of what "athleticism" or "health" LOOKS like color your perception of like. People's actual health.

it’s hard with the gut issues/ impaction. i really can’t do much without provoking discomfort and i don’t have the drugs that could help this….. it just makes me sick how we’re all just winging it and failing miserably at this. there is a way to make the process of eating more bearable, even exciting but without help, like, it’s a very long process. first of all, i never should’ve been purging for 9 years of my life. that is just fucking insane. secondly, going through all the phases of essentially learning how to eat regularly and then what to eat, what not to eat, how much and when, like that’s a process that changes over time based on your circumstances. but it’s the fact that we start out missing that knowledge and there’s no help for the application process so we always start out wrong. the process of correcting these errors takes several years and it will never be perfected. generally speaking, it can’t be, but it could come close. i believe that it could absolutely come close if the support was there. so it just makes me sick to watch. i’ve done the thing. i’ve done all the things. and the overexercise and large portions just isn’t cutting it. that’s not a mistake i can do again given how badly it affected my gut or rather exacerbated what was already wrong in the first place. and it can be part of the process for some people but it’s honestly a process that doesn’t need to happen to begin with because it’s faulty. so it’s like really shitty watching people go through that because i just went through it. restriction by itself isn’t any better but the reality is, it’s the closest thing we have to “recovery” and eating better. if you can eat throughout the day, you’re kind of halfway there. it’s not a completely novel experience than if you’re doing otherwise i.e. b/p, overexercising, fasting etc. ultimately it’s just safer and less chaotic. so i am now living the goal i had in mind. so things have improved since like May for instance but it’s been quite the lengthy process and it’s not over yet. 
i don’t have the health privilege to exercise like that anymore. i don’t want to push myself. i’ve already achieved my running goals. like i’ve done it. what i haven’t done is low weight mainetance and finding stability with my diet. so that’s my current goal. the body doesn’t want to overexert itself with excess movement. that’s why the olympics exist because it’s the outliers that push their bodies to extremes and do beautiful things with it. but these athletes, they dedicate their lives to their craft….they have dieticians, physical therapists and coaches. they’ve got all the support. full body massages 3x a day, they’ve got chefs doing the cooking and meal prepping for them, they’ve got surgeries and xrays right away whenever something goes wrong. you know, that’s not my life. i don’t have that and i will never have that because i’m not an olympian. so it’s like less = more because it’s sustainable. if i run under 5km today, i can honestly run every single day for 365 days if i choose to and i can totally succeed at that because i’m not pushing my body beyond its current limits. 
so that’s really my goal in terms of weight loss as well. i just can’t gain any of this back. fuck appearance, i just can’t put my body through this constant weight cycling and i’m not gonna buy fat clothes to then get disgusted i fit into that and then donate it and then wait to fit into X clothing for the 6th time of my life, like i just can’t live my life on an endless loop like that. how about just fitting into those jeans once and for all, not having to buy additional sizes, not having to avoid the mall for years, then spend everyday at the mall once in a blue moon because i like myself again and then i hate myself again and then i love me and then i hate me and then i love me again and then i fucking hate myself all over again. it’s just too fucking much to live like that. 
so yeah, i’m never gaining the weight back. this is my life now whether or not my poor overall baseline health has forced me here or i’ve done it myself, or whatever multiple factors are at play. i am not suffering for another day with my weight or my body image. and i find that peaceful. there is peace in acceptance even if it’s not what you initially thought was the definition of peace. peace is personal, not societal, not universal. it’s what is peaceful to you. it probably could be different. it has the potential to be, in a perfect world. but i’m not living in that world. i have what i have and i am who i am.
