Glory to Xiao Long Pao, the greatest of all dimsum, where from the inside of it's smooth wrapped layer they bless us with the heavenly taste of meat filling and savory broth. One does not simply eat them without respect or their mouth will be burned with the fury of Xiao Long Pao. Bite it a little, let the air flow a bit, and slurp the broth soup before ate the whole of it. A little bit of ginger will enhance their perfection. Yes, this is my favorite Dimsum. ^^; The filling usually use pork, chicken, or crab. But there are some variation of them such as 7-8 colors Xiao Long Pao where each color contains different filling.
