Easy. quick and yummy dinner. I got this idea from @grilledcheesesocial Spaghetti squash fast spaghetti dinner. I baked spaghetti squash plain and by itself at 350 for maybe 20 minutes. Then I added vegan Camembert and cream cheese to each squash. Returned to I en for maybe 10 minutes. Then I sprinkled with garlic powder, oregano and salt and pepper, added grape tomatoes and returned to a Ben. Maybe another 10 minutes. My times are weird because one, I have an old over with hotspots and two, in the middle I turned it down and ran to the store. So, play with your times. I pulled the squash apart with a fork mixed it all together in a bowl. So light and yummy. There are a million ways you could do this meal. I used what I had on hand. Next time I would add some spinach and basil and try it with feta for a tangy zip. I’ve also though about doing this with sesame oil, soy sauce, minced garlic, ginger, carrots, spinach, peas or whatever needs to be eaten. I’ll let you know next time! I made a few tweaks to the recipe below enjoy xx Baked Feta Pasta Recipe Serves 4 Ingredients 1 box of your favorite pasta 1 8 oz block of feta cheese 2 cups cherry tomatoes 1 garlic clove, chopped 1/4 cup + 1 tbsp olive oil 3-4 basil leaves, chopped 1 tsp salt 1 tsp black pepper 1 tsp oregano Lemon zest Directions 1. Preheat oven to 415F degrees. Add cherry tomatoes to a baking dish and add 1/4 cup olive oil, chopped garlic, salt & pepper. Mix together. Add feta cheese block to the center of the baking dish. Top with 1 tbsp olive oil and oregano. Add lemon zest. Bake for 25-30 minutes until tomatoes are roasted and feta is soft / melted. 2. Bring a large pot of salted water to boil and cook pasta according to boxed instructions. Strain pasta and set aside. 3. Remove tomatoes & feta from oven and using a spoon, add fresh basil and mix together the tomatoes and cheese to create a sauce.
