National Chili Day
A hearty meal full of beans and savory meat, topped off with sour cream, cheese, and diced onions — warm, spicy comfort.
Some like it hot, some like it mild, some like it on top of a baked potato and some prefer it with or without beans – but however it is most appreciated, National Chili Day is the perfect excuse for millions of spicy food fans all around the world to chow down on a bowl of this delicious fiery favorite.
History of National Chili Day
Though many people believe chili originated purely in Mexico, modern thinking suggests that it was probably truly created in Texas and is a blend of Native American, Spanish, and Mexican cuisines. This claim is supported by the fact that the first-ever written reference to chili occurred in the city of San Antonio, Texas in 1828. This is just one of the many delicious varieties of food that fall into the category of Tex-Mex.
However, one legend dates chili back a little further, stating that some immigrants who came from the Canary Islands brought the recipe with them to San Antonio when they settled there in the 1700s. This was before the name “chili” came to be and it was simply referred to as “Spanish stew”.
Eventually, by the 1880s, a popular way to eat the dish in San Antonio was by picking up a “bowl o’ red” at a chili stand in an open-air stall, usually run by a “chili queen”. The popularity of chili began to spread throughout the US, and it was given a huge boost when it was featured at the 1893 World’s Fair which took place in Chicago, Illinois.
The dish that is now known as simply “chili” has, in the past, often been referred to as “chili con carne”, which just means chili with meat. Of course, today, many people make it without meat, and it can easily even be made into a vegan dish with no animal products of any kind.
Some people do tend to spell it differently, depending on where they are from. Most Americans will include only one “l” in the word, while some British folks and people from other parts of the world may add an additional letter to spell it “chilli”. But no matter how it is spelled, this is certainly a tasty dish that is worthy of celebration!
National Chili Day Timeline
1828
First written description of Chili
J. C. Clopper writes, after visiting San Antonio, Texas, about “a kind of hash with nearly as many peppers as there are pieces of meat – this is all stewed together.”
1880s
Chili stands become popular in San Antonio
Women who are called “Chili Queens” set up trailers or carts to serve spicy bowls of beans and meat (chili con carne) to workers and passersby on the street, where small tables, seats and lanterns were set up. These last until the 1930s when the health department shuts them down.
1896
Chili powder is invented in Texas
German immigrant William Gebhardt creates a way to pulverize dried chiles using a meat grinder, which eventually becomes the product known as Gebhardt’s Eagle Chili Powder. It’s a critical ingredient in Chili.
1960s
An American president loves chili
Lydon Johnson, president of the United States from 1963-1969, declares that Texas Chili is the best: “One of the first things I do when I get home to Texas is to have a bowl of red. There is simply nothing better.”
1977
Chili becomes the state dish of Texas
As the continuation of its association with Texas, the state’s legislature names Chili the state dish.
How to Celebrate National Chili Day
Though not an official public holiday, National Chili Day is widely celebrated with many restaurants offering free samples of their own unique recipes. Others mark the day with a huge chili party for family and friends – or simply make sure they have a big bowl of chili for lunch!
Try out these fun ideas for celebrating the day:
Make a Big Pot of Chili
Even people who don’t really do much cooking can make a pot of chili to enjoy with a whole group of friends. It really is one of those meals that allows pretty much everything to be thrown into a pot and simmered while the flavors meld together.
A classic chilli recipe usually consists of a protein (often meat as well as beans), some sauce (usually tomato sauce), some veggies (corn, onion and diced tomatoes are typical) and spices for flavor (chili powder, garlic, cayenne pepper, onion powder and paprika). Toss in some jalapenos or other chili peppers for a little bit of kick. Let the whole thing simmer for a while and enjoy!
Learn Some Fun Facts About Chili
Celebrate the day and impress friends by spouting off interesting tidbits about this delicious dish. Get started with these, and then do a bit of internet research to add in a few more, just for fun:
Lyndon B. Johnson, United States President from 1963-1969, was a huge lover of chili and named his favorite recipe after his ranch in Texas, Pedernales River Chili. Americans were so fond of it that his wife, Lady Bird Johnson, had the recipe printed up on cards and mailed out from the White House.
In 1977, lobbyists worked to convince the state legislature to call chilli the official state food of Texas.
In the late 1890s, it was possible to buy a bowl of chili off of the back of a wagon for a mere 5 cents. This even came with an unlimited number of crackers to go along with it–and usually a glass of water too.
The first chili cook-off is recorded to have taken place in 1952 at the State Fair of Texas located in Dallas. But another story says that the first one took place in 1967 in Terlingua, Texas, where no winner was declared–as it was a tie between a native Texan and a person from New York!
Enjoy a Chili Contest
Chili is a food that people love to gather around–and it’s great for competing too! Whether participating in a chili cookoff that pits top chefs against each other, or a chili-eating contest where the winner consumes the most chili in a short amount of time, this is a dish that can be filled with fun.
Today’s chili cook offs can get pretty serious, where contestants often use ingredients that will help them to create the most intense flavor possible. They also try to be unique, using interesting meats such as sausage, turkey or even venison, as well accessing a variety of chili peppers to create just the right amount of heat.
Get into the competitive spirit by participating, or just enjoy watching and rooting for a favorite person to win. Can’t find a chili contest in the local area? Don’t let that get in the way–go ahead and start one in honor of National Chili Day!
Get Creative with Chili Recipes
Getting involved in this day can be a delightful culinary experience! Take things far beyond the ordinary by including unique and interesting ingredients into that pot of chili. While the classic recipes are certainly amazing, these types of ideas get things moving to a whole other level:
Chorizo Sweet Potato Chili. Give that pot of chili a delightful twist using a paleo friendly recipe that is a quick fix (can be on the table in around 30 minutes!). Chopped vegetables and some spicy chorizo sausage are flavors that meld together deliciously.
Short Rib Black Bean Chili. Beginning with short ribs as the protein base, this chili is slow cooked with the bones to add tons of flavor and depth. Mildly spicy, the black beans round out the taste into something delightfully delicious.
Spicy Chocolate Chili (Vegan). Sweet potatoes, maple syrup and cocoa powder work together in this recipe in a surprising way. Filled with beans and veggies, then topped with cilantro, lime and pumpkin seeds, this unique recipe will keep the whole family coming back for more!
Kale and Barley Chili. Keep things super healthy with this chili that is filled with healthy greens. Add some white beans in for extra protein and bulk!
National Chili Day FAQs
When is National Chili Day?
National Chili Day is observed on the fourth Thursday of February, which is the perfect time of year to enjoy a spicy bowl of deliciousness.
Where was Chili invented?
Most likely, the origins of the dish known today as chili came from the southwestern parts of the United States, particularly Texas. Some stories say that the idea was brought from the Canary Islands in the 1700s.
Is Chili a soup?
Because it doesn’t usually use stock or broth, Chili isn’t necessarily considered to be a soup. Actually, it would be considered to be more of a stew because it is thicker, with a more solid base.
Is Chili healthy?
Depending on how it is made, Chili can be a rather healthy meal. It contains nutrients such as protein, fiber, iron, Vitamin C and more. Of course, it’s healthier if it is made with lean meat and less fat.
How to make Chili?
Most Chili recipes will include the basic ingredients of ground beef, beans, onions, tomato sauce, spices and tomatoes. The ingredients are cooked together for some time to allow the flavors to meld together.

I’d love to hear more about your eating “Cas has an eating disorder” Destiel fic if you have a snippet or wanna talk about it 🙂
Thank you!!! I’m excited about this one and am glad people are curious about it.
Like me, this post-Empty human Cas has trouble eating things that aren’t exactly what he wants to eat, and he prefers foods that are the same texture with every bite. Also like me, Cas has a partner (well, at first, a “friend”) whose love language is acts of service and food and is determined to make sure Cas gets enough to eat.
Unlike me--a vegetarian raised on California cuisine--Cas got his palette from Dean Winchester, and Dean’s the one doing the cooking, so there’s a lot of meat, plus Midwestern US excess and weirdness.
Like I mentioned before, the fic is in the form of recipes, and the thing about recipes is they’re usually in the 1st person. I don’t mind 1st person in fic, but I absolutely get why it bothers a lot of people. (I sometimes write in 1st person and then change it to 3rd person in late drafts.) But I’m committed to the recipe conceit for this one, so it’s gonna stay 1st person.
Recipes so far include:
Bacon Cheeseburger
Cas's Peanut Butter and Jelly Sandwich
Fried Bologna Sandwich
Blackberry Pie
Shakshuka
Noodles with Cottage Cheese
Persimmon Pudding
Biscuits and Gravy
Chicken Noodle Soup with Noodles Made From Scratch
Cinnamon Rolls and Chili
Grilled Sunflower Heads
Spring Zucchini Kugel
Brisket
Schnitzel
The style of the recipes changes a bit once Dean and Cas get together, move out of the bunker, and start cooking with plants they grew in their garden.
(Anyone who has suggestions for Midwestern and/or Jewish recipes Dean would make should feel free to shoot me an ask!)
And here’s what is currently the very first section/recipe, the Peanut Butter and Jelly Smoothie:
***
Sammy figured it out first, which pissed me off. Couldn’t say why, just seemed like something I should’ve caught.
I mean, I knew Cas wasn’t eating enough. All sorts of reasons for that, I figured.
I wouldn’t say so where anyone could hear me, but I thought that it could’ve been—it sounds so fucking stupid, but I thought maybe there was a tiny bit of grace left after all. That he didn’t need to eat. Idiotic, I know. I just hate seeing him have such a rough time, and wanted to pretend he wasn’t.
Sometimes I think I might’ve sent him away the first time he was human even if Gadreel hadn’t told me to, just so I didn’t have to watch him hurt so much.
This guy thinks I’m the most selfless person he’s ever met, and that’s how I treat him.
Point is, Sam spent a whole morning making a dozen different smoothies and having Cas try ‘em until he found one he liked—like, really, really liked. I came in at the tail-end of it and there was green gunk spattered all over the place and it smelled like a lawnmower, but Cas was eating—well, drinking, but it counts as a meal apparently—and smiling for maybe the first time since he got back.
So the next day when Cas was out with Jack, I had Sam show me what he’d done so I could make it for Cas, too.
Peanut Butter and Jelly Smoothie
Ingredients:
Milk, about 1 cup
A handful of fresh baby spinach (Sam made it with kale the first time, but even the baby stuff tastes like grass, if you ask me. I made it for Cas with spinach and it was a lot smoother, for one thing, and Cas said he liked it better. Maybe if you have one of those hipster high-speed blenders you can stick a whole head of kale in, stems and all, and have it come out without little leaf chunks in it, but I have a normal person blender and I say just use the baby spinach.)
2 tbsp rolled oats
¼ frozen banana (You can freeze ‘em whole, peeled, just make sure they’re broken up before you put ‘em in the blender. That way it won’t make that awful knife-in-the-disposal sound it does when Sam was dropping ‘em in whole.)
½ cup frozen strawberries
Ice, as needed
2 tbsp smooth peanut butter
1 tsp maple syrup
Salt
This isn’t much milk for a smoothie this size, but Cas likes his smoothies so thick you can barely get ‘em through a straw, so I only add enough liquid that it won’t break the goddamn blender.
Instructions:
Add the spinach to the blender and just enough milk to cover it. Blend it together, starting with low power and working your way up to the highest your blender can go. If you have a regular blender, this is the best way to make sure the greens get broken down small enough to really mix with everything else.
Add the oats next. Really you can add ‘em whenever, but doing it early keeps it nice and thick and gives you a good idea of how much liquid you’ll need. Blend from low to high.
Add the bananas and strawberries, along with the rest of the milk. A lotta recipes just tell you to add everything and blend it together. Pretty sure that’s what they call hubris—or maybe it’s having a five hundred dollar blender. Probably the two go hand-in-hand. Just sayin’, the order is important to getting it all smooth, which is the point. S’why it’s called a smoothie.
Blend low to high. When it’s all combined add the peanut butter, syrup, and salt. Be careful with the salt. You shouldn’t be able to taste the salt, it’s just supposed to make everything else taste better, ‘cause, y’know, it’s salt. It’s a sweet smoothie, but you add salt to cookies, right? Same deal. Until you get used to it add just a little at a time, blend it, and taste it to make sure it’s right.
If it’s not creamy or cold enough, add some ice. You could add more banana pieces, but Cas doesn’t like the banana to be the main taste. Add more milk if it’s getting too thick to blend.
Sometimes Cas tells me not to make it with the greens. I just use a lot less than usual and the peanut butter covers it. S’why I got so good at making sure they blend in just right. Cas wasn’t eating a lot of meat, at first, so he really needed the iron ‘n’ all that stuff that’s in green things.
I’m pretty sure the people who say these things are a real meal are all either people who sit in offices all day and don’t burn any calories or people who get paid to tell other people to starve themselves, but Cas will drink this smoothie when he won’t eat anything else, and that goes a hell of a long way.

National Hot Heads Chili Day
Chili lovers celebrate National Hot Heads Chili Day on January 17 every year. On this day, chili heads, heat-seekers, and extreme eaters try out the spiciest chilis. National Hot Heads Chili Day is celebrated with habanero-eating challenges, fancy-dress contests, and cook-offs of popular recipes. Chilis are also made to take the official Scoville heat scale. This doesn’t mean that you have to be a daredevil to celebrate the day — anyone who likes their meal a little hot can celebrate the day! Spices and chilis add a distinct flavor to the dish. Thai, Indian, Creole and Caribbean dishes are famous for their heat content and boast of some excellent gastronomic experiences!
History of National Hot Heads Chili Day
We don’t quite know how National Hot Heads Chili Day came to be but it’s safe to say that one fine day all the chili lovers got together and decided to celebrate hot and spicy food. This makes sense given how humans have always had a knack for chilis in their food — the first recipes for spicy foods go back to 6,000 years! This means that humans have been enjoying spicy food for quite some time. While the foods that we enjoy today may have changed and recipes altered, we still love spicy food. Unlike other animals, humans prefer spicy food simply because it tastes so incredible and on a plus side, spices also offer several health benefits.
Spices such as turmeric and cumin that have powerful antimicrobial and antioxidant properties can kill bacteria outright. Studies show that the capsaicin in hot peppers can reduce inflammation and decrease the chances of heart disease. It can also aid in weight loss. In Ayurvedic medicine, the inflammatory properties of chilis have brought relief from many different conditions, such as headaches, autoimmune disorders, and arthritis. Spicy foods can also help fasten your metabolism. Studies also show that certain spices, like pepper chilies, turmeric, cinnamon, and cumin can curb your appetite and improve your metabolic resting rate. Who knew chilis could be so versatile!

I finally had a green chili cheeseburger. I don’t have burgers very often.
If you’re not familiar with New Mexico, the green chili cheeseburger is the signature sandwich.
I went to El Paso to see a hockey game. On the way home, I drove to Hatch. Sparky’s is the home of the New Mexico state fair winning green chili cheeseburger. It was quite tasty.
Since I was in Hatch, I picked up some prickly pear habanero jelly to fire up my PB&J.

Can't Stop - Won't Stop
I traveled, ate well, had a head cold situation, missed one workout all this week - and I'm still on top of this weight loss game.
The workouts have been good/easy but still get my heart pumping and create a good sweat.
My sleep schedule has reset - I feel rested for the first time in months.
Probably my favorite week of the year so far energy-wise.
Last week I stated I was going to reward myself - that has been postponed - still being mindful on honoring my progress.

Some things about my Sonic the Hedgehog OC (yes, I already have one and I haven't even been in the fandom a week), Soneca
Not a true info page, like my muses, but who know, she may become a muse. For now, I just wanted to get some things written down about her.
She exists in the world of the live-action movies.
She comes from an alternate universe (that no longer exists thanks to its own Dr. Robotnik) and she's that universe's version of Sonic.
She's a blue hedgehog and has the same powers as Sonic, but that's where the 'exact sameness' ends
In her universe, she was the Queen of the hedgehogs, who were more warrior-like than Sonic and could match the Echidna in battle, resulting in the two groups agreeing to coexist when their leaders agreed no one would win if they kept fighting.
Soneca was sent through a portal to our universe's version of South Island (after Knuckles and Sonic had gone) when elders of the Echidna and Hedgehog both had 'visions' warning that the same evil that was responsible the imminent end of her universe was also afoot in another. She was tasked by both herself and her people to stop it and prevent another universe from meeting the same end as hers.
She learned of Earth and other worlds by finding a recently crashed alien ship on the island. The vessel had actually belonged to either traders or smugglers, as it contained items and technology from various races. From this vessel, she obtained a few Portal Rings and an alien energy staff (for those familiar with my original species, it's a Rovarian staff weapon, though I'm debating whether or not she knows its origins.)
Of the worlds she learned of, only one name was the same as her universe: Earth. So of course she went there.
Like Sonic, she spent years on Earth, not really knowing how to go about her mission. She developed a few similar interests to Sonic (most notably comics and superheroes, her favorite of which is Wonder Woman, who she identifies with because of being a royal from a warrior society now living in an unfamiliar world and tasked with stopping some great evil.
Unlike Sonic, she's been trained in some forms of combat, especially physical combat and martial arts.
She's a little older than Sonic (but still considered a kid by Tom, Maddie, and at times herself) and a little taller, with a more feminine build (she DOES NOT have T&A, especially not T, because she doesn't need them. She's just a little leaner and has slightly more defined hips)
As Queen, her outfit was somewhat similar to her hero's, in that it was sort of armor. She's changed it a little bit after being on Earth, and it now resembles a sleeveless (not strapless) Wonder Woman (live action movie) outfit, but with a longer skirt and shades of blue and silver in place of the red and gold parts.
Instead of the white gloves of Sonic, she wears armored fingerless gauntlets. She prefers her claws out and keeps them sharp. She also has a silver band around each upper arm. These don't serve any purpose, she just likes how they look. When she really wants to show her inner Amazon, she also has a Wonder Woman-like tiara/headband thing to wear.
Her shoes are armored boots (the originals from her universe) made of some lightweight alien material.
She's kind of a mix of Sonic and Knuckles in personality, but she's also her own person, too.
She meets the Wachowskis shortly after Sonic 2, as the use of the Emerald got her attention, and she tracked it to Green Hills.
After helping Sonic and friends catch Agent Stone (who somehow survived and was trying to find Dr. Robotnik) she comes to like them and the town, and wishes to stay. At the suggestion from Sonic, the family adopts her and she becomes sort of a big sister for the others.
She will (lovingly) call her brothers idiots, but warns that anyone who hurts them will never be found (she's not actually a killer, just a somewhat overprotective sister)
Where Sonic likes chili dogs, she prefers bacon cheeseburgers with no veggies but with ketchup, mayo, and barbecue sauce
Even Maddie's sister Rachel says she could get behind this alien. (Don't know when it would happen, but I have a scene in my head of Rachel, having seen Soneca kick some bad guy ass, telling her "you may not be a royal here, but you still a damn Queen." as a sort of pep talk. Spoiler alert: it works)
She affectionately calls Sonic "little hoglet" (Hoglet is the name for a baby hedgehog.)
She is the only person (besides Maddie) who can call Knuckles 'puggle' and get away with it. (Puggle is the term for a baby echidna) This is because she bested him in a sparring match once and he decided she earned the right to do it.
She identifies a lot with Knuckles (both of them being warriors) and enjoys sparring with him. She keeps her speed in check to keep the match fair and relies only on her skill to win (She wins about as many as she loses and sometimes the match is a draw)
Unlike Sonic, she can swim.
May add to or change this later, but here you have it.
