Making my Meatless Monday gluten-free too! I was vegetarian/pescatarian for many years so a #meatlessmonday every so often is a piece of cake, but trying to go gluten-free in my household in these last few months has been a challenge when bread and tortillas (and sometimes even cake) are on the menu. So yesterday at Whole Foods, I picked up Maria & Ricardo's Quinoa Flour Gluten Free Tortillas, some black beans, and $25 worth of organic produce (because Amazon Prime members get an extra $5 off produce when you spend $25âŚyouâre welcome). đ
But those pretty tomatoes...those are from my garden! đ
Now itâs time to make fajitas! â The Quinoa Flour tortillas from @mariaandricardos are certified gluten-free and made from quinoa flour, tapioca & potato starch and avocado oil- you canât even tell itâs gluten-free! I have another kind of gluten-free tortillas in the fridge right now and there is just something off about the texture and density, but these get a PASS so will be adding these to my grocery list going forth! Easing into Gluten Free
For the 411 on why gluten can be Satan reincarnate to millions of people, read my other post here. This post is dedicated to gluten-free brands. Keep in mind gluten-free junk food is still junk food. So limit the still processed, high sugar, refined treats and focus on the healthier options like fresh, organic fruits, veggies, gluten-free lean meats, fish, eggs, seeds, nuts, sprouts, legumes, lentils, coconut oil, Udo's oil, avocado and so on. Here are some great links! A quick note, pay attention to labeling and ingredient panels when purchasing by brands...some companies make GF and gluten versions - so know which one you are getting. Don't assume because a company has a gluten free flour or bread that their entire line if GF.Â
