Toss roasted cauliflower with lemon zest, almonds, and juicy pomegranate seeds in this Keto-friendly recipe. It's a great mix of tastes and textures and would be great as a side dish or light main dish.
Ingredients: 1 medium head cauliflower, cut into florets. 2 tablespoons olive oil. Salt and pepper to taste. 1/4 cup sliced almonds. 1/4 cup pomegranate seeds. 1 lemon, zest and juice. 2 tablespoons chopped parsley optional, for garnish.
Instructions: Preheat the oven to 400F 200C. In a large bowl, toss cauliflower florets with olive oil, salt, pepper, and lemon zest until evenly coated. Spread the cauliflower on a baking sheet lined with parchment paper in a single layer. Roast in the preheated oven for 25-30 minutes or until cauliflower is tender and edges are golden brown, stirring halfway through. While the cauliflower is roasting, toast the sliced almonds in a dry skillet over medium heat until lightly golden and fragrant, about 3-4 minutes. Once the cauliflower is roasted, transfer it to a serving dish. Drizzle with lemon juice, sprinkle with toasted almonds and pomegranate seeds. Garnish with chopped parsley if desired. Serve hot and enjoy!

Cook Time: 25 minutes

These vegan blackberry lemon thyme muffins are bursting with fresh flavors. The combination of tangy lemon zest, sweet blackberries, and aromatic thyme creates a delightful treat that's perfect for breakfast or snacking.
Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1 cup almond milk. 1/4 cup coconut oil, melted. 1 tbsp lemon juice. 1 tbsp lemon zest. 1 tsp vanilla extract. 1 cup fresh blackberries. 1 tbsp fresh thyme leaves.
Instructions: Warm the oven up to 375F 190C and put liners in a muffin tin. Mix the flour, sugar, baking powder, baking soda, and salt in a large bowl with a whisk. Add the coconut oil, lemon juice, lemon zest, and vanilla extract to a different bowl and mix them together. Mix the dry and wet ingredients together until they are just barely mixed. Mix in the blackberries and thyme leaves slowly. Fill each muffin cup with the same amount of batter. Put it in the oven and bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. After baking, let the muffins cool in the pan for 5 minutes before moving them to a wire rack to cool completely.

Ingredients: 1 cup all-purpose flour. 2 eggs. 1/2 cup milk. 1/2 cup water. 2 tablespoons melted butter. 1/4 teaspoon salt. 2 tablespoons sugar. 1 lemon zest and juice. Powdered sugar for dusting. Fresh berries for garnish, optional.
Instructions: Put the flour, eggs, milk, water, melted butter, salt, and sugar in a blender. Mix the batter well until it's smooth and free of lumps. Adding the zest and juice of one lemon to the batter will give it a fresh citrus taste. Put a crepe pan or nonstick skillet on medium heat and lightly grease it with cooking spray or butter.
