ok for those who don't have 1 min 14 to waste :
Tips for bakery style muffins
Rest your batter for 15 mins in mixing bowl. Flour hydrates and makes a thicker batter that'll help make a dome.
Fill muffin holes with 6-8 tablespoons of batter (4 tbsp = 1/4 cup, so 8 = 1/2 cup flush, NOT A HEAPING urgh), i.e. super full so they will make that dome.
Fill every other hole (so half the holes, alternated) to let the muffins spread and make pretty round domes.
425 °F (220 °C) 7 mins, then keep them in and lower to 350 °F (175°C) for remaining baking time (rises fast, makes dome, then finishes baking).
