You know what would be funny?
If Pacifica unintentionally became somewhat friends with Fiddleford.
Like at first he's just known as the hobo she had to hold hands with during the whole Bill fiasco. And then he becomes the guy who bought her parents house. And Pacifica not even thinking about would sometimes walk by her old house because it was her home originally for 12 years. And Fiddleford he'd notice her stopping by and looking at the home from time to time and then one day he's outside and he sees her walking towards the gate.
Fidds doesn't hesitate to call out to her, startling her and Pacifica sees him and she gives him a look that's supposed to be unwelcoming but it's hard to take her seriously when she's blushing from being embarrassed at having been startled. She'll huff and stick her nose up in the air and dramatically storm off in an effort to save face and as she's walking away Fiddleford calls out-
"Stop by again sometime Pacifica!"
And she stops, whirls around and snaps-
"As if old man!"
But despite her saying that, Fidds once again finds her coming back around. And he humors her, getting reactions out of her and finding her amusing instead of intolerable. This continues on and then before Pacifica and Fiddleford realize it, he's invited her inside and they continue their strange friendship. Fiddleford learns that Pacifica's pretty smart and kind despite her snarky and uppity attitude. She just hides it beneath a mask of "I'm better than everyone."
And Pacifica learns that Fiddleford isn't just the crazy town weirdo. Instead he's a genius and to her surprise, beneath his somewhat timid, polite, nature he's got a dry sense of humor and hidden snark under the surface. He's also incredibly sharp and keeps it up his sleeve as his ace.
They bond over the snark and jabs, and they teach each other things without realizing it and for awhile it's this tentative thing till one day Pacifica shows up on Fiddleford's doorstep. Looking miserable and red eyed and Fidds he doesn't hesitate to bring her inside, his dad alarms kicking in much like how they do with Tate. He doesn't say anything, and she doesn't explain it. But an unspoken barrier has been crossed and neither of them mind. They don't knowledge it, mainly for Pacifica and her refusing to do so.
But Fidds doesn't mind it. In a way she reminds him of his son, with the way she handles things. Pacifica would tell him in her own time, and Fiddleford was more than patient with her taking her time.
Afterwards they're basically in a strange mentor/mentee/paternal/unspoken adopted daughter kind of deal.

Underrated Gravity Falls fact is that "Tate" is a nickname. That mans legal name on his birth certificate is Tater McGucket. I think about this every day.

At one point I asked myself why he would be named Tater legally instead of just nicknaming him the potato-related thing and putting the regular name on the certificate and then I remembered that his father's name is Fiddleford

Pines Family Morning Headcanons
So because I just learned that I'm apparently a morning person, I'm going to headcanon that Stan is too
But not the extroverted kind of morning person, like Mabel, who wakes up with energy and is ready to go go go
Stan wakes up early and he enjoys the quietness of being the only person up. He enjoys early mornings in the winter when it's still dark outside. He likes having the quiet time to himself so he can just sit there and drink his coffee in peace.
Ford doesn't wake up early though, he sees Stan because he didn't go to bed at all, but he is surprised to see Stan up so early.
When they were kids, Stan always slept in as long as he could and was usually grumpy in the mornings.
After a conversation, they both realize the reason Stan hated mornings back then was because he had to deal with their father and then teachers that didn't like him, and it was a more stressful time back then.
But now Stan is an adult and doesn't have to deal with anyone other than his brother or Mabel occasionally, which is company he actually enjoys, so it's worth getting up early for. Sure Mabel wakes up with a truckload of energy right off the bat but she also understood very quickly that her Grunkle enjoyed the quiet time, so she'd keep it down for him, which he was grateful for.
If she absolutely needed to get her morning energy out, she'd go outside to chase off the gnomes that get into their trash.
Dipper is not a morning person at all. He doesn't wake up with energy like his sister, and he doesn't even enjoy the quiet like his Grunkle. This kid wakes up dead to the world and it takes him time to fully wake up.
If they've gotta go somewhere early, Stan's well aware he's usually gotta give him time to wake up or just carry him out to the car. When he gets older, Stan gets him his own coffee mug and makes sure it's ready for him when he gets up.
He also makes sure Dipper doesn't just live off of Coffee like Ford does.
No one really knows Ford's stance on mornings because his sleep schedule is all sorts of fucked. If you do see him in the morning, it's because he's still up from the previous day. If he does manage to get sleep, he sleeps in late because he's exhausted.
When he was younger though, he'd naturally wake up early but still be groggy and sleepy for the next half hour, not fully waking up for a while. He wouldn't be able to fully understand something that had been spoken to him, it took him a minute to process.

Bonus because he's not a Pines but I just love him
Fiddleford was always a morning person, and the type to be cheerful about it. This guy woke up and would go about his morning whistling, which is something Ford put up with because Fiddleford would also make him breakfast and coffee.
He used to wake Tate up in the mornings by just flipping the light on and talking to him in a normal tone of voice (something his son hated), and he'd wake his wife up with a kiss (something she tolerated because it was him)
Today he's still a morning person, and for a while acted as the town's "rooster," as many people would be woken up by the sounds of banjo playing and know to get up and ready for the day
"Oh there's McGucket, it's 6 am, time to get up."
Even after he moves into the mansion, he still walks down to the junkyard to play because it's been routine for 30 years and it's familiar to him, and the towns people hadn't said this, but it's also comforting for them as well, because he's just always been there, it's just always been part of their daily routine
Some people never realized how much they actually liked him being there. Especially Tate, who finds the most comfort in hearing his father up and playing Banjo so early, it really does help him start the day.

2012 Gravity Falls lake:
Tate Mcgucket stared out into the water, his thoughts a whirlwind in his head. A few days ago he'd received a phone call, from California. And on the other end were two children no older than 12, and what they'd told him had left him floundering.
'Is this Tate Mcgucket?'
'Who's asking?'
'Um well, you see me and my sister we were going through our grandpa's attic a few weeks ago, and we'd come across a photograph. We.....we think it might be a picture of your dad.'
'What?!? How in tarnation did you get-'
'We actually um-'
'What Dipper's trying to say is we think our families were connected back in the day the photo was taken!'
'.......What y'all say your names were again....?'
'Oh shoot! My name's Mabel, and the boy who spoke was Dipper. Last name Pines!'
It was hearing that name that made Tate quickly make up an excuse to hang up. But not before Mabel insisted he had their number. The girl was persuasive he'd learned real quick. After he'd hung up, he may or may not have thrown something to get rid of the outlet of emotions he'd felt. The fisherman let out an exhausted sigh as he came back to the present, his light brown eyes scanning the lake. Maybe if he was lucky, one of those sirens might come by and drown him. But given his luck, he highly doubted it.
Pines.
Of all the people in the world to contact him, it had to be from that family.
'Why can't they just leave well enough alone? Damn em....'
Tate thought feeling frustrated. It wasn't that he hated the Pines family, it was that they'd left a tidal wave of emotions behind for the older man. After all, it was because of those Pines boys that his father came to this God forsaken place. And yet.....
Tate could recall the memories of an older man that went by the name Pines and an elderly woman who accompanied him. Could recall the search parties that they accompanied his ma, Emma May on. Both stricken with grief just like his ma and him.
It wasn't Stanford and Stanley Pines' fault that Fiddleford Mcgucket disappeared. They, too, were victims to whatever the hell happened in that awful year of 1981.
The Mcgucket family were not the only ones who lost loved ones. Who had family disappear into thin air, as if they never existed in the first place. Taking a deep breath, Tate reached into his pants pocket and pulled out the crumpled piece of paper that contained Mabel and Dipper Pines' phone number. It'd be so easy to toss it, so easy to pretend that he never got the call but......
Tate wasn't the only one who wanted to find loved ones. And by God despite the feelings he felt he'd be damned if he didn't help somewhat. He couldn't leave those kids empty handed. Not like how he was left that way all those years ago.
'Alrighty Mcgucket, get a grip. We've got a call to make and a cold case to break.'
With that thought Tate Mcgucket turned away from the lake of Gravity Falls and headed back to his fishing shack, ready to dial the number of the newest set of Pines twins.
Hopefully, it won't come back and bite him.

Co-Parenting AU
- In this dimension, Fiddleford and Emma-May split up soon after their marriage and they make the collective decision to leave Tater Mcgucket in the custody of his father.
- For some reason, Fiddleford doubles down and joins Stanford at the shack to help with research as he takes care of Tate. Together, they make an odd unlabeled family and Stanford doesn't mind the company.
- Events in the original story play out and Fiddleford gets sucked into the portal and sees Bill being 𝓯𝓻𝓮𝓪𝓴𝔂, he refuses to help anymore and distances himself from Ford, living in some motel in gravity falls.
- However, in this universe, Fiddleford made the memory-gun but never chose to use it with the hindsight of it getting in the way of his relationship with his son.
- He stays in this situation, working at Greasy's diner, until Stanley comes over and Stanford asks for him to hide the journals and gets sucked in with their argument.
- Word of this quickly gets to Fiddleford through Stanley as a last resort once he registers the little tidbits of evidence of his former presence in the shack. Together, Fiddleford and his highly intelligent son, Tater, help Stanley out to restore the portal and bring Stanford back and they all live together.
- Despite all of their efforts, they still end up getting Stanford back 30 years later, but things are a lot better.
