Vegan "beef" momos (Nepali dumplings in tomato achar)
Tender wrappers encase flavorful, juicy filling and swim in a spicy, tangy tomato sauce in this Nepali-style steamed dumpling recipe. Momos originate in Tibet, but are commonly served as a street food or snack in Nepal. Many restaurants in Nepal are known for their unique or distinctive achar recipes--mine is flavored with sesame, ginger, and a spice blend of timir peppercorns, coriander, cumin, turmeric, and chaat masala, but feel free to play around until you get something you like.

EQUIPMENT
A bamboo or metal steamer, or a wok / large, deep pan / large pot, with a closely fitting lid
Parchment paper
INGREDIENTS:
For the dough:
1 cup (120g) AP flour
enough water to create a soft dough (about 1/4 cup / 60mL)
For the filling:
2/3 cup (65g) TVP
1/4 cup (60mL) vegetarian 'beef' stock from concentrate (or substitute vegetable stock + 1 Tbsp soy sauce)*
1/2 small yellow onion, grated
1/2 Tbsp grated garlic
1/2 Tbsp grated ginger
2 1/2 tsp momo masala
1/2 Tbsp vegetable oil or vegan ghee
1 tsp salt, or to taste
2 green onions, minced (optional)
*I like TVP because its flavor is so customizable, but if you don't have any you may substitute any other vegetarian ground beef substitute for the TVP and stock.
For the achar:
4 roma tomatoes (300g), chopped
2 tsp sesame seeds
2 tsp cumin seeds
1 tsp coriander seeds, toasted and ground
6 timir or Sichuan peppercorns, toasted and ground
large pinch turmeric
pinch chaat masala (optional)
2 dried bird's eye chilis, crushed, or 2 tsp chili paste
1 Tsbp neutral oil
1 tsp grated ginger
1 tsp grated garlic
1 tsp salt
3/4 cup (180mL) water
squeeze of lime or lemon juice (optional)
For the momo masala:
Nepali momo masala is available commercially from brands such as Century; you can also make it at home by adjusting the following recipe according to your taste or what you have on hand. This spice blend will make about as much masala as needed for this recipe.
1 small bit Ceylon cinnamon (or substitute cassia cinnamon)
3 black peppercorns
1 clove
1 strand mace
3/4 tsp coriander seeds
3/4 tsp cumin seeds
1 small dried chili, or 1/4 tsp Kashmiri chili powder
1/4 tsp ground ginger
1/8 tsp fenugreek seeds
1/8 tsp black mustard seeds
large pinch of grated Indian black cardamom pod (or substitute 1 green cardamom pod)
pinch nutmeg
pinch turmeric
pinch ground cassia cinnamon
INSTRUCTIONS:
For the dough:
1. Measure your flour into a large bowl by weight, or by spooning it gently into a dry measuring cup and levelling it off. Slowly add water (you may need more or less than 1/4 cup / 60mL) until a cohesive, non-sticky dough forms.
2. Knead your dough for 5-10 minutes until it is smooth and elastic. Cover and set aside to rest while you prepare the filling and achar.
For the filling:
1. Add all ingredients to a mixing bowl and mix or knead until well combined. Allow at least 10 minutes for the TVP to hydrate.
For the achar:
1. If using whole spices, toast coriander and Sichuan peppercorns in a small skillet on medium heat for a few minutes until fragrant, and grind them in a mortar and pestle.
2. Heat oil in a large pan on medium. Add sesame seeds and fry 5-7 minutes, agitating often, until they are fragrant and a shade darker.
3. Add cumin seeds and fry until fragrant. Add remaining spices (coriander, peppercorns, and turmeric) and allow to bloom in the oil for 30 seconds.
4. Add ginger and garlic and fry for 30 seconds until fragrant. Add chilis or chili paste and cook for a minute or two.
5. Add tomatoes and salt and cook until tomatoes are slightly softened.
6. Add water and cook, covered, 5-10 minutes until dried chilis (if using) and tomatoes are soft.
7. Blend all ingredients (including cooking water) using a countertop or immersion blender. Add lime and more chili paste as desired.
For the momo masala:
1. Toast whole spices in a dry skillet on medium heat for a few minutes until fragrant and a shade darker. Toast larger whole spices and smaller seeds separately to prevent the seeds from burning.
2. Remove the skillet from heat and toast ground spices for 30 seconds, agitating constantly.
3. Grind all spices together in a spice grinder or mortal and pestle.
To assemble:
1. Divide the dough into balls of about 1” (2.5cm) in diameter (mine weighed about 14g each) and roll each ball out into a 4” (10cm) wide circle. (If you're inexperienced with rolling out circles of dough, you may also divide the dough in two pieces, roll each out into a sheet 1/4" thick, and use a 4" cookie cutter to cut out circles. Allow scraps to rest before rolling them back out.)
2. Hold a wrapper in the palm of your non-dominant hand and add about 2 Tbsp of filling (if you're not experienced with making dumplings, it may be easier to add less). While pressing the filling down with your non-dominant thumb, use your other hand to pinch pleated folds in the dough all the way around the circle of the wrapper. (You may shape your momos to be completely closed at the top, or leave a small hole in the center where your thumb has been--it's up to your preference.)
Place completed dumplings on a plate and cover with a kitchen towel to prevent drying out. 3. Steam your dumplings. Place a parchment-paper-lined bamboo steamer in the bottom of a wok or large pot, and fill the wok with enough cool water to cover the bottom rim of the steamer by ½". If you’re using a metal steamer, tie a kitchen towel around its lid to prevent condensation from dipping back down onto the dumplings; line the metal steamer with parchment paper, or oil it, to prevent the dumplings from sticking. If you don’t have a steamer, place a small bowl in the bottom of a wok or large, deep pan or pot. Place the dumplings on a parchment paper-lined plate and place the plate on top of the bowl–the plate should fit inside your pot. Make sure that you can cover the plate and dumplings with a lid. If your lid is domed, there is no need for a kitchen towel, since the condensation will run down towards the outer rim. If your lid is flat, tie a tea towel around it just as you would with a metal steamer. Fill your cooking vessel with 2 or so centimeters of cool water.
4. Raise the heat to high and allow the water to come to a boil. Once boiling, lower the heat to medium-low and cover your steamer or pot. Steam the dumplings for 6-10 minutes, until the dough is tender and cooked. Serve warm drizzled with achar, or with achar to the side. You may also mix the achar with a bit more water or stock to thin it out, and serve momos in a bowl filled with achar; this "momo soup" is known as momo jhol achar.

Hola !
It was a slow and relaxing day !
I woke up at 5:30 am and studied inflammatory bowel disease.
Went to college , attended all my lectures, clinics and practicals .
Came home and ate yummy garlic noodles and tandoori momos.
Completed my psm jounral and slept very very early!
I feel guilty because I relaxed and didn't get much work done. I don't know how I've become this person who gets anxious after relaxing and not getting much done.
I get too stressed about things , small things and it spoils stuff for me. Ughh

She has a calm and composed personality, even in a stressful situation. This is due to her work environment as a pastry chef. But she also has a hidden mischievous side that often shows when she joins the Anti-Lucifer League with their antics, much to Lucifer's dismay.
She's perceptive of other people, especially when it comes to their emotions, but can be oblivious when it comes to herself. This obliviousness also applies when someone is showing romantic interest in her.

Her maternal grandmother is a known albularyo (healer) in their hometown. It is implied that the maternal side of Camellia's family are Lilith's descendants.
She can see otherworldly entities (they're usually harmless so she just ignores them)
Her hobbies are: baking, reading, and drawing.
She is a pastry chef, and she owns and runs a patisserie and café called Sweet Tooth's Haven with her classmate and bestfriend Momo Koizumi.
She's a very patient person, but rivals Lucifer and Satan when mad. (Mammon and Levi witnessed it first-hand when they got her sketchpad wet during their scuffle)
She's usually behaved but she also has a reputation for being a petty menace (the reason she's called "Gremlin" by Lucifer)
In the Timeskip AU that is still stuck in my drafts, she had twins: a boy and a girl. (One of them was summoned to Twisted Wonderland when they were 17)
She is a supportive and doting mother to her twins. She is also quite protective over them, especially when they were kids.
Q: What kind of relationship does she have with the boys?
Lucifer
They are dating!! When she first arrived at the Devildom and met him for the first time, he had piqued her interest. That interest soon developed into a small crush, then it turned into love (she needed Asmo's help to realize it though).
He was giving her the cold shoulder though, so she thought it was hopeless even if she confessed.
When she did confess before her departure at the end of S1, she was really shocked when he accepted and reciprocated her feelings. As it turns out, Lucifer thought she was interested in someone else, that's why he kept giving her the cold shoulder.
Even though they're already in an official relationship for a few years, she can't help but act like a middle schooler with a crush whenever Lucifer's around. He finds it very amusing.
Fun fact: they haven't done the deed™ yet as per Camellia's request until she was 26 (and they were already married at that time)
"What do you think of Lucifer?"
Camellia: He's amazing. He may not seem like it but he is a very caring person that treasures his family above all else. He's also very supportive, and understanding and respectful of my decisions. I'm so lucky to have him! ^^
Mammon
Her best friend and partner in crime. They are a chaos-incarnate when combined, much to Lucifer's dismay.
They are very protective with each other. Out of all the brothers (except Lucifer), the two of them have the strongest bond with each other.
"What do you think of Mammon?"
Camellia: Being his best friend is probably one of the best things that has happened to me. I can confidently say that his presence has changed my life positively. He is precious to me and that would never change. I do wish he'd stop getting in trouble every chance he gets. *sigh*
Leviathan
They get along pretty well because of their similarities in personality. They like exchanging recommendations with each other and has made it a bonding activity. Camellia often helps Levi through his social anxiety during social gatherings.
"What do you think of Leviathan?"
Camellia: Levi is an amazing person! I really love how he's so passionate about the things he likes, and I think everybody needs a little bit of that. I'm also grateful that I finally found someone who I can bond with over our favorite webcomics and light novel series. I hope he knows how awesome he is.
Satan
They also get along pretty well. He is her usual go-to whenever there's an upcoming test. They also bond over cats and go to regular cat café dates with Solomon. He knows Camellia owns a cat and is absolutely in love with Pepper (he is over the moon when he finally meets the cat).
Satan is her rambling buddy when her geek side is activated. And in turn, Satan tells her facts that she doesn't know yet and book recommendations.
"What do you think of Satan?"
Camellia: Sure, he's scary at first glance but he's a great person once you get to know him. I think his expressions when it comes to cats are quite adorable, but don't tell him I said that hehe.
Asmodeus
They did not get along at first but got closer later on. He's her fashion consultant (she has no clue when it comes to fashion lol) and her biggest hype man when it comes to her endeavors. He is also the one who helped Camellia realize her feelings towards Lucifer.
He brings her to some social events (with Mammon sometimes) so that she could experience more of the Devildom (his words). He is quite attentive of her during these events as he knows her social battery can get drained quickly. He only brings her when she agrees.
"What do you think of Asmodeus?"
Camellia: I cannot tell you enough how much I enjoy our time with each other. He is literally one of the nicest people I have met in my life. I have never met someone as supportive since I met Peachy, whom I met when I was in elementary school. I know I can rely on him and I hope he knows that he can rely on me too.
Beelzebub
Not as close as Mammon, Levi, and Satan, but they also get along well. He's her partner during workouts, and her No. 1 go-to when she needs help in general.
She occasionally bakes for him and she enjoys it. She does need his help reaching for the things in the cupboard though.
"What do you think of Beelzebub?"
Camellia: He's very nice. He may look intimidating but he's a gentle giant. Very sweet and kind, and he gives out one of the best hugs out there ^^
Belphegor
She had some trouble getting along with him after the events of Lesson 16, but she's slowly starting to open up to him again after bonding over astronomy.
"What do you think of Belphegor?"
Camellia: It's still a bit awkward around him but I know he's changed, so I'm giving him another chance. It's also nice to have someone knowledgeable about astronomy around, y'know?
Diavolo
They get along well so much so that the brothers sometimes say that they are like real siblings. They bond over things that they find interesting. Barbatos and Lucifer find the way they lit up over random things quite amusing to watch.
"What do you think of Diavolo?"
Camellia: He has this intimidating aura around him, but he's actually pretty cool to hang out with. There's never a dull moment when I'm with him. I like how he always works hard for the Devildom, and I respect him for that.
Barbatos
Camellia admires him a lot. She developed a crush of some sort towards him early on the start of the exchange program, though she never acted on it. She says the feelings she had for him at that time is akin to what a fan has for an idol.
Sometimes, she joins Luke and Barbatos's baking lessons for a chance to learn new recipes or skills. It become the highlight of her week if she does.
"What do you think of Barbatos?"
Camellia: He is so freaking amazing. Like– it's hard not to be amazed by him. He always does things so efficiently. It makes you wonder; does this man even make mistakes?? He's very nice but I definitely do NOT want to be on his bad side. Him being mad terrifies me a little.
Luke
She adores him a lot. They do a lot of baking together (sometimes joined by Barbatos and/or Simeon), and go to regularly planned outings with the other Purgatory Hall residents.
She is also protective over him, but even Luke is not safe from her teasing side, much to his chagrin.
With Simeon, the two of them tries to teach Solomon how to cook a decent and actually edible meal (there's no successful attempts yet, unfortunately).
"What do you think of Luke?"
Camellia: He is so adorable! He is like the little brother I never had!! There's just something about him that makes you wanna adopt him, y'know? It's also quite fun teasing him ehehe ಡ ͜ ʖ ಡ
Simeon
She finds his presence soothing. They both like to dote on Luke, and he sometimes give her some life advice or stories about the brothers, which she appreciates very much.
"What do you think of Simeon?"
Camellia: He is probably one of the nicest people I know. He's like a caring older brother figure for me. He's kind of funny when it comes to technology lol. Although he is quite scary when he's angry...
Solomon
She admires him like how a younger sibling admires their older sibling. They do like to tease each other from time to time and has a competition on who can fluster who more.
"What do you think of Solomon?"
Camellia: He's a very cool and funky guy. He is quite a menace sometimes, but it's part of his charm. I do hope he gets better at cooking though. It's obvious he likes cooking for others but you know the issue about his cooking...
Final thoughts/Facts:
She is my most developed character, as she was originally a self-insert character. She has some of my personality traits and my hobbies, but I decided to make her a bit more different than me because it feels weird to have a character based on me at the moment I created her.
She is not my first OC though (that title goes to her older sister, Lillienne Hyacinth Sanchez, originally named Lillienne Cordova)
Lillienne was supposed to be my MC's name in the game but they won't accept it, and I was obsessed with camellia flowers at the time I started playing Obey Me. And that was how she was created.
She was really fun to make and I love her to bits.
I'm really happy to properly introduce her to others!

Last book I read: Emily Wilde's Encyclopedia of Faeries by Heather Fawcett! 5 stars! (the current read is A Master of Djinn by P. Djeli Clark)
Last thing I googled: crock pot french dip recipe I made for dinner tonight! It's the easiest thing in the world. It's a 4 pound pot roast, an onion, a few garlic cloves, 4 cups of beef broth, a pack of french onion soup mix, and some seasonings. Just throw it in the crock pot on low for 8 hours, then put on a hoagie bun with provolone cheese and stick under the broiler until it's melted. Absolutely divine dinner.
Relationship: Been dating my boyfriend, we hit six years in December! (and hopefully engaged soon wink wink)
Fun fact: I went to high school with the Paul brothers and funner fact! Jake Paul used to be a piece of shit! He still probably is! But he sucked in high school! He was mean! And a douche!

himalayan wild yak

📅 dinner; July 2023. 1st time
😋 overall: the centering of yak on their menu makes this nepali restaurant stand out. they don't fuck around with their spice combos!!! everything we tried had complex, interesting flavors that made me want to keep eating (except for the desserts, which were mid). I'd come back to try literally everything else on their menu

🍹 mango lassi - tasted slightly more yogurt-y than mango-y, but a strong-enough mango flavor that I didn't complain upon 1st sip. I wouldn't mind getting it again
🍸 cocktail that I forgot the name of - they didn't put much alcohol in this but I forgive them because this was a delicious drink. i'd get it again!
🍹 zero-proof cocktail that had citrus in it - in love with this flavor combo. this was tangier than it was sweet in a way that made every sip interesting. i'd definitely get it again!
🥩 grilled yak (medium rare) - what a delicious cross-section. I can tell that yak is a tough meat, but the sous vide worked to make it tender. they seasoned this meat simply but effectively; it was a tasty bite. just 1 bite. lol between 5 ppl this appetiser portion was gone way too quickly!!
I would get the entree portion next time lmao
🥟 steamed buffalo momo - honestly I don't remember much about this dish but both the momo and the accompanying sauce were delicious. I don't remember the buffalo having a distinct taste tho 🤔 I was kinda afraid that the buffalo would be tough but then again it's steamed meat.
I'd get it again! I love dumplings lol I wanna try their veg ones next
🍛 spicy pork curry - man we fucked around and found out. this dish (labeled VERY SPICY tbf) HURT to eat a few bites in 🥵🥵🥵 I forgot the texture of the pork but I know it wasn't dry. I kept going back to the sauce even though it was spicy as hell (I felt like a masochist)
I wouldn't get this again cos i couldn't take the heat 😭 like you know when a dish is so spicy that you have trouble focusing on the actual flavors? and then the spiciness lingers in your mouth for a LONG TIME even when you eat other dishes? 😭😭😭
🐐🍚 [in the 1st photo] bone-in goat biryani - they are LYING when they say that it's for 2 because it easily fed our table of 5!!!!! they brought out a whole pot and mixed it right in front of us!!! i looooved the bits of burnt rice. the goat wasn't tough, the spice level was bearable (compared to the pork curry at least lmao), and the spices themselves were wonderfully warming in my mouth. we had like 1.5 portions of this as leftovers
I want this again but also I don't because I wanna try everything else on the menu and my stomach real estate is scarce 😔 what a dilemma
🧄🫓 [in the 1st photo] garlic naan - I'm conflicted whether or not i'd consider this dish as having a reasonable portion cos the slices were a good size but each piece was pretty thin. I definitely wanted more after my piece was gone 😆 the garlic was fragrant but I feel like they could've been heavier with it (but also i'm the type who puts 4x the recommended amount of garlic in recipes).
i'm a sucker for garlic naan. I'd get it again!
🍡 gulab jamun - lots of gulab jamun end up being a chore to eat because they're so soaked with their sugar syrup that they're overwhelmingly sweet. that wasn't the case with this dish tho (maybe that was also accomplished by using honey rather than sugar). as for the yogurt- I feel like it didn't add much to the dish other than being a light element to counteract the heaviness of gulab jamun.
I wouldn't get this again tho like it's not that interesting
🍮 kheer - this is prob the most fragrant rice pudding i've ever had. it's kinda lacking in the taste department tho 😔 slightly sour, in a good way, but not much else going on. it was refreshing to eat after the spicy entrees

💲 price: we were definitely very full! I was surprised by how affordable the food was- each entree was less than $20 and each dessert was $4-5. considering that it's is like 1 of the only restaurants in the DMV that spotlights yak, they offered it at a much cheaper price point than I expected.
🗒️ other notes: this restaurant is COLD AF 🥶 also their space is so huge; I appreciated that they spread out their tables. land is cheap out there in ashburn I guess
