While turkey is traditionally the main centerpiece of a Thanksgiving table, it is typically accompanied by an array of seasonally appropriate side dishes whose ingredients reflect the new world bounty that greeted the Pilgrims upon their arrival at these shores. Here are some ways to bring a fresh, new farmers market spin to several of these iconic Thanksgiving side dishes this year: 
1. Green Bean Casserole Green bean casserole is considered a quintessential Thanksgiving side dish thanks to the clever marketing machine behind Campbell’s Soup Company. In 1955, executives at the company were looking to increase sales by developing quick and easy recipes that incorporated their soups within the roster of ingredients. And, presto, the green bean casserole was invented by Dorcas Reilly who featured frozen, packaged green beans, French’s fried onions and Campbell’s condensed cream of mushroom soup in her test kitchen prototype. 
Of course, nothing compares to a green bean casserole made from scratch using fresh, unprocessed, locally grown foods. This quick and simple Saveur recipe is an adaptation of the original Campbell’s Soup version, but can be made using seasonal ingredients you can easily find in the farmers market this weekend:
Ingredients 
3 cups Yellow Bell Farm chicken stock
1⁄2 oz. Mushrooms.NYC shiitake mushrooms, stemmed (when using fresh farmers market mushrooms, skip first part of Step 1 in recipe which calls for reconstitution)
2 lb. Norwich Meadows Farm green beans, cut into 2" pieces
Canola oil
1 1⁄4 cups flour
2 small Newgate Farms yellow onions, thinly sliced
5 tablespoons SOVA Farms butter
1⁄3 heavy cream
Freshly ground black pepper and Kosher salt, to taste
2. Cider Glazed Brussels Sprouts Brussels sprouts have not always enjoyed the coveted spotlight of the Thanksgiving table. Historically speaking, brussels sprouts were the least favorite vegetable of many children who went to great lengths to avoid eating them (ahem, I had several good strategies back in the day) because they became mushy and bitter when boiled. However, in the 1990s, a Dutch scientist named Hans van Doorn identified the chemicals that made brussels sprouts taste bitter and successfully bred out the compounds from crops, resulting in a major cruciferous makeover. 
Not only do the new and improved brussels sprouts taste better, which has helped catapult them into Thanksgiving table superstar status, they’re now typically served roasted instead of boiled, which further mellows their bite and enhances their natural sweetness and nutty flavor. So, pick up some of these miniature-cabbage-like veggies in the market and give this cider-glazed recipe a whirl that is sure to lure in even the pickiest of young, yet discerning, palates:
Ingredients for 6 servings
2 pounds Norwich Meadows Farm brussels sprouts, trimmed and halved or quartered if very large
3 tablespoons extra virgin olive oil
1½ teaspoons kosher salt
1 teaspoon black pepper

½ cup finely chopped Orchard Hill shallots (about 2 medium shallots)

3 tablespoons apple cider vinegar

Maple Mashed Sweet Potatoes Sweet potatoes are native to Central and South America but were cultivated in Virginia starting around 1648, several decades after the first Thanksgiving which took place in Plymouth, Massachusetts in 1621. Since that time, sweet potatoes have become an iconic staple at modern-day Thanksgiving tables with their naturally high sugar content providing a sweet counterpoint to platefuls of turkey, stuffing and other savory delights. This recipe calls for baking versus boiling the sweet potatoes before mashing, while the addition of maple syrup, butter and fresh thyme adds an indulgently decadent, yet earthy, overtone.
Ingredients for 4-6 Servings
3 pounds medium-sized Newgate Farms sweet potatoes (3 or 4)
6 tablespoons SOVA Farms unsalted butter

KIWA Native Andean Potatoes
In previous blog posts, I have written about socially conscious companies including one that spends all profits on soup kitchens in the Detroit area.  These stories were focused mostly on the revenue side.  Today's post is the story of the supply side.  
There is an old Chinese proverb:  
Give a man a fish and you feed him for a day. Teach a man to fish and you feed him for a lifetime.
The story below could create the following Ecuadorian proverb:
 Buy a potato from a small farmer and you barely sustain him for a day...... Teach a small farmer to grow a special potato and you help sustain him for a lifetime.  
KIWA was formed in 2008 by a couple, Martin and Natalie Acosta, that returned home from their honeymoon in Ecuador with the intention to help improve the lives of the people of Ecuador.   After a year and a half of determining their plans and educating themselves, they started selling vegetable chips. Today their chips are a leading brand of premium vegetable chips.  KIWA makes some of its chips from Native Andean Potatoes that are only grown from Colombia to Chile having originated between Peru and Bolivia.  I met Maria Jose Guillen of KIWA Snacks at the Sweets and Snacks Expo on Chicago.  She explained:
The variety is turned into a chip keeping its natural benefits.  The native Andean potatoes were almost extinct in Ecuador and KIWA is actually the only company that makes it possible to grow this type of potato in Ecuador, so it is a huge responsibility for us to keep making it clear for people the amazing kind of potatoes the are.
I thought the story would make an interesting blog post, and Maria put me in contact with Rodrigo Quevedo who is the agronomist for KIWA.   An agronomist is someone who studies the growing and harvesting of crops .  Rodrigo spends most of his time in agricultural fields in the mountains of Ecuador (with bad connections to cell phone and internet service.  His main activities are planning the sowing and harvesting of the fields, giving advice of the best practices to the growers, and seed multiplication.  Because of the communication challenges, Rodrigo educated me by sharing a paper that Martin Acosta presented to the World Potato Congress in Peru earlier in 2018.  The paper is entitled "Launch, Growth and Challenges of Native Andean Potatoes as we take them world-wide."   Per its web-site, KIWA is an acronym for the company's values.

In 2010, Martin received a call from a British person asking if he had access to Native Andean potatoes in Ecuador.   Native Andean potatoes are the single best alternative in terms of cost-benefit for low-income farmers living above 11,000 feet above sea level where these potatoes need to be harvested.  These potatoes were of superior quality because of their high nutrients (especially increased levels of Iron, Zinc, and Potassium that are important to child development)  including antioxidants than regular potatoes, but would have been expected to cost more.  Because of their higher cost, other chip manufacturers had shied away form using the potatoes.
Upon receiving the call, Martin had no idea what Native Andean potatoes were, and after hanging up, googled them and found the name and found the web-site of the International Center for Potatoes in Lima, Peru.  He asked his Research & Development ("R&D") manager to call the organization and by coincidence two of its representatives were in Quito, the capital city of Ecuador, and Martin's R&D Manager met with them the next day.   The R&D Manager told Martin about the potential of the potatoes and Martin and his R&D Manager then met with them again on the following day, right before the two persons flew back to Peru.   For seven years, organizations had been looking for a partner in the private sector to help improve the income of farmers in the Andes mountains of Ecuador.   A few months later,the Native Andean potato industry in Ecuador was born.  After KIWA signed the contract with the International Center for Potatoes, the organization opened an office in Ecuador,  This collaborative effort has involved development organizations including the International Potato Center, the private sector, farmers associations and the private sector.  Their combined goal was to raise the income for low-income farmers.  
Despite their expected higher cost, as a premium brand, KIWA decided to take a chance on using Native Andean potatoes, especially since nobody from Peru was exporting these potatoes to be used as chips.  Initially two varieties of the Native Andean potatoes were selected, Puca Shungo (red heart) and Yana -Shungo (black heart).  
Under a long term  contract, the local farmers are paid more than twice the cost of production.   This is far higher than the price for regular potatoes and a lot more than the local farmers were receiving in the local farmers market.  
By February 2011, KIWA chip products hit the shelves of the largest retailer in Ecuador and they were an immediate hit.  KIWA won an award from the German Chambers of Industry as the best corporate social responsibility in Ecuador.  The monetary award was used to fund KIWA's first technical agricultural officer and multiple seeds that were given away to farmers in Argopapa, the association of producers.   Today, KIWA provides the farmers with seeds, technical assistance, training and even financing.  InSeptember 2011, ANUGA, the largest food show in the world, awarded the KIWA National Andean Potato Mix as one of the top innovations in the world.  Only 10 companies received the award out of 6,500 exhibitors.  KIWA was the first Latin American company to receive the award.  Buyers flooded the KIWA exhibit with as many as 16 buyers visiting at the same time.    KIWA was also selected as one of the Top 10 social enterprises in Latin America.  
The collaborative organization has grown to 50 farmers with at least 300 indirect beneficiaries in three of the 23 provinces of Ecuador.  The long term contact helps sustain the farmers by providing them with a guaranteed yield.  Today, production has multiplied and the potatoes are now exported to 30 countries in five continents.  The Native Andean potatoes comprise over 20% of KIWA's total sales.  The chips are sold to retailers all over the world in sizes ranging from vending machine size, to Club sizes for customers such as Costco in Canada.  However, this effort has not been without substantial challenges as climate changes, particularly in September and October Spring in South America) in the Ecuadorian Andes mountain range killed 80% of the harvests in both 2014 and 2017.  
The current focus is to expand in the US, Middle East and Eastern Europe.  The first KIWA Organic Native Andean potatoes package was launched in March 2018 at the largest natural food show in the US.  
KIWA is currently working with its collaborators to develop new varieties of Native Andean Potatoes in Ecuador.  They hope these potatoes will be more productive and more resistant to climate changes.  They are working to improve the quality of the seeds so that the potatoes are more suitable for frying.  Production has increased, but is still far below the average that a large farmer from regular potato derives. The goal over the next two years is to further increase the productivity yield through partnerships with academic institutions such as Stanford University.  In 2017, Stanford sent a team to help develop a harvesting tool that will allow farmers to increase yields by 30% and reduce costs, mostly of labor during harvesting by 40%.  
KIWA is exploring diversifying the products its makes from Native Andean potatoes starting with frozen french fries and the first purple naturally-colored mashed potatoes. They also want to educate Ecuadorians about these native potatoes as only one percent of the urban population is aware of them .  Studies demonstrate the antioxidants in these potatoes, but they need to overcome the Ecuadorian stigma that naturally colored potatoes are rotten.

Chili Cheese Fries
Hannibal once more found himself strolling down the fresh produce aisles of the small grocery store in town. He had left home while Will was fast asleep, and had made sure to leave a note, but this trip he needed to make on his own as he wanted to surprise the empath when he returned. Hannibal stopped in front of a display of Yukon gold potatoes. Nodding to himself he shifted through the pile, making sure to pick the best potatoes of the bunch; no sprouts, no bruising. Hannibal added 6 potatoes to a bag and added them in his basket.  He walked quietly thought he store gathering the perfect ingredients for these chili cheese fries. Hannibal was intent on proving to Will that the frozen variety of chili cheese he adored, were nothing short of vile greasy circus food.  
 A variety of spices and herbs, a variety of cheese, and an array of fruits and vegetables were placed onto the counter. Hannibal was content in his own little bubble until he heard the man in front of him raise his voice at the young cashier. Hannibal turned so that he was now facing the younger man, watching him as he belittled the cashier. From what he gathered the man was now this woman’s ex-boyfriend, and judging from the scarf around her neck, that didn’t quite hide the bruises on her skin, and the way she cowered, Hannibal knew it had been a difficult split. “I would advise that you’ve scared her enough, pay for your groceries, and leave the woman be.” Hannibal spoke, which caused the man to whirl around and stared at him. The younger man puffed out his chest in a display of anger, trying to prove how macho of a man he was. Hannibal shook his head and tsk’ed his tongue at the younger man, “Such ill manners, apologize to the woman before I make you,” Hannibal spoke which only angered the man further. The young woman was as bright as a tomato at this point, and Hannibal saw a manager approaching.  The man turned towards her snarling that he would see her later, and at this point Hannibal grabbed his upper arm, stepping closer as he whispered dangerously low into the man’s ear. “I would advise you to leave her alone, before I take matters into my own hands and make you disappear permanently.” The man’s eyes went wide, he could hear the truth in Hannibal’s words, and he suddenly knew that Hannibal would follow through. The man pulled away from Hannibal, threw his money at the girl and grabbed his bags before he disappeared.
 When the manager arrived, the girl was nearly in tears and fumbling to put the money in the drawer. The manager apologized profusely to Hannibal, who promptly ignored the balding middle-aged man. “Are you alright Miss?” he asked in a calming tone, “I do apologize that he has upset you so.” Hannibal turned to the manager, “I would advise you to have that young man barred from this store.” The manager’s response was to have Hannibal checked out at another line, which he promptly declined. “I already have my items in this line, and I prefer to stay here,” He spoke turning his attention back to the young woman, “Take your time, take a few deep breaths and calm yourself.” Without thinking he reached over and flicked off her light to her register, “I am in no rush; please do take your time.” The manager was paged overhead, and told the girl he would speak to her later before he rushed off to the dairy department for a spill.
 Hannibal stood there silently as the young girl struggled compose herself. She used a tissue to dab the mascara from her cheeks, and blew her nose shortly after. She sanitized her hands, all before she brought her gaze up to meet Hannibal’s finally, “Thank you,” she barely whispered, “no one has ever been so kind to me.” Hannibal offered her the warmest smile he could manage, and they engaged in small talk while she rang up his groceries.  As she totaled his bill, Hannibal pulled his fancy Italian leather wallet from his back pocket, and inserted his platinum credit card into the machine. “I come here quite often, how about the next time I come, we catch up?” He asked the younger girl, “And if he returns before then to give you a hard time, you call me and I will take care of it?” The girl looked at him wide eyed, and nodded her head. “Y-you’d do that?” She stammered. Hannibal nodded, “well you see my partner, he has a great deal of pull with the FBI, I’m sure we could managed to convince him to stay away from you.” Hannibal left out the part that the boy would never bother here again, because he would be served on his dinner table as a variety of delicious meals. A delighted smile crossed his face at the idea, and he pulled out a white business card. All that it contained was the name Hannibal and a disposable cell number. “If needed, please take this,” Hannibal offered the business card over to her, and then removed his card from the machine as it beeped.  Replacing his platinum card back in his wallet, Hannibal took his bags. He nodded his head politely in the girls direction, offered her a warm smile, and ducked out of the store.
 The drive back to their cabin was uneventful, and Hannibal swore to himself he would insist on getting a better vehicle. He had given over a bit of control, allowing Will to pick out their mode of transport, and to say that he was unimpressed would be the understatement of the year. Hannibal pulled up to their cabin, and killed the engine in a hurry. He shook his head as he excited the truck, and walked around to the passengers’ side to gather the bags of groceries. Taking the bags in one trip, Hannibal made his way into the cabin. As he set the bags down on the counter in the kitchen, he was quite surprised that the cabin was still so quiet. Shrugging off his jacket, Hannibal walked towards the entry way, where he hung his jacket in the closet. He made his way to the master bedroom, and a smile spread across his face as his dear Will was still fast asleep sprawled out across the entire king size bed. Hannibal walked into the room, where he leaned over the bed and pressed a soft kiss to the top of Will’s head. He took care to not disturb the younger man, and quickly exited the room to allow him a proper sleep. Hannibal closed the bedroom door behind him, leaving it open only a small crack, and headed back to the kitchen.
 Once in the kitchen, Hannibal rolled up his sleeves and hooked an apron around his waist before he settled into making these chili cheese fries that his better half had been craving. Hannibal moved around the kitchen with ease, it wasn’t as big or as fancy as his previous kitchen, but he made due with what he had. Hannibal pulled a package of meat, a mixture of ground rump and shank.   Hannibal took his time to season he meat before he added it into the pan to to fry. He was intent on making this chili the best that Will had ever tasted, in a hopes that he would refrain from eating chili from a can. As the meat was searing, Hannibal started another pot, tomatoes and onions were chopped and added. Giving the meat a quick stir, Hannibal moved to the cutting board where he chopped a variety of fresh herbs and spices to add them to the simmering pot on the back of the stove. Giving the tomatoes a quick stir, Hannibal moved to the fridge to pull out the beans he had already prepared before leaving for the store. He added in the red kidney beans and black beans to the tomato mix, and then drained the little bit of grease from his browned meat.  A smile was spreading on his face as he mixed the meat in with the pot of tomatoes; he knew all too well this would be something that Will would request often from him. Giving the pot one last stir, Hannibal set the cover onto the pot to let it simmer and come together completely.
 He then moved onto the Yukon golds. Peeling the potatoes, Hannibal took his time to cut them into the perfect French fries.  Hannibal coated the fries with a thin layer of oil before spreading them out onto a large cookie sheet. Hannibal would not fry these, as he wanted them to be perfect, baking was the only option.  The oven had been preheated, so he slipped the cookie tray into the oven, and closed the doors. Wiping his hands on his apron, Hannibal glanced up at the clock. He wanted to wake the younger man, but decided against it and set out making the perfect cheese sauce.  Hannibal moved back to the stove where he gave the chili a stir, it smelled delicious, and he promptly returned the cover to the pan.
 Hannibal grabbed a small sauce pan from dishwasher, and set it onto the stove. He poured in a small amount of milk before he grabbed a grater and started to shred the cheese into the pot. When the two blocks of cheddar was complete, he moved onto the grate the mozzarella into the pan. He used a small amount of mozzarella only enough to give the cheese the right stretchy consistency. Hannibal reached for a silicone spatula, and started to stir the cheese together, watching it closely as the cheese started to melt into one orange mixture.
 Hannibal hummed happily as the meal was coming together. The oven promptly chimed, letting him know that the fries were now cooked to golden perfection. Hannibal turned off the cheese sauce, and moved to the oven. Sliding on the odd-mated oven mitts that Will had purchased him, Hannibal removed the fries from the oven and set them on the opposite side of the stove. Hannibal wasted no time gathering a serving tray, and putting the meal together.
 He started with a layer of fries.  Added a hearty amount of chili, and followed it up with a good helping of cheese sauce. Hannibal reached for the small bowl of chives that he had chopped earlier, and sprinkled the perfect amount onto the top. Just enough green was added to make the dish look not so orange. Rather pleased with himself. Hannibal added the covers back to the chili and the cheese sauce. He had placed all of the fries onto the serving tray, so he dropped the cookie sheet into the sink. Hannibal removed his apron, and rolled his sleeves back down. He took a fork and knife from the drawer and wrapped them in a cloth napkin before he picked up the serving tray, and headed to the bedroom.
 A wide smile spread on his face as he pushed open the bedroom door and stepped inside, “William, it’s time to wake up. I have a surprise for you.” Hannibal spoke as he sat beside the empath on the bed, and waiting for him to wake.

my story
i remember last year during this month (april 2018) i started exercising and restricting. its funny to see that it has been a year already. and i’m still not on my ugw. right now i am 20, and i’m gonna be 21 in august 2019. and i don’t want to be fat when i’m 21.
when i started losing weight i was 74kg. and i haven’t seen any number below 63kg in my teenage life.
march 2018: i remember slowly cutting certain food groups out of my diet such as rice and pasta. i still used to have some unhealthy food. at the end of march i was 71kg.
april 2018: i started going for walks everyday in the evening just before dinner time. i managed to lose 3kg in april. i remember on 23th of april i was 68.8kg.
may 2018: on may, i lost 2kg. i don’t remember anything specific for that month but i was still exercising and restricting. but i believe i went to germany to see me sister and couldn’t restrict for a week and slightly binged. i was 66.3kg on 30th of may.
june 2018: i lost 2kg in june. i was still exercising and restricting. when i go and look back at the entries that i made those days, there must be some days where i binged. i was 64.4kg on 29th of june.
july 2018: it was a failing month for me. i lost only 1.5kg. i went to italy for a course and stayed there for two weeks that’s why i couldn’t restrict much and we where drinking every night. i was 62.9kg on 18th of july. i remember doing chew and spit every now and then.
august 2018: i lost 5.3kg this month. i don’t know what i did different but i lost it. i even went to holiday with my parents to the summer house my grandparents have and exercised there. i even lost 500grams there. i believe during this month i was doing chew and spit on cookies and chocolates.
on september 2018, i was at my lowest weight (58kg). then on november 2018 i started to gain the weight back slowly (i moved to a new country for college and started living alone), i was constantly binging on salty snacks and chocolate bars that i got from the vending machines and restricting the day after. then i met with chew and spit during november and december 2018. i was buying insane amount of food and then doing chew/spit for hours. it actually made me lose. i also remember coming back from christmas break being 64kg because of the binges i had in my country. then i met with purging. on january 2019, i realized i can eat soft foods and then throw them all up. my favorite purge foods were cookies dissolved in plant milk and ice cream. i was still losing when i was purging. still, i remember purging before january but not that much. then during february 2019 i realized i could cook food whenever i want and since i live alone there was no one to judge. at first i made healthy dishes (mostly vegetables and vegaterian patties). then i remember cooking way too much pasta and making frozen french fries in the oven. i remember cooking the whole package of fries and eating it one sitting then feeling so full that i hated myself. i also remember cooking instant noodles 4 packages at a time. i was never too lazy to cook. these stuff happened over the course of february and march. i was doing well at the beginning of march 2019 but i binged so much when i saw 60kg on the scale. when i first came to this country i remember not buying any of the unhealthy food from the store and avoiding them at all costs. then i started to buy cookies then chocolate bars then spreadable chocolate then crunchy granolas. when i get spreadable chocolate i started to also buy bread or plain cookies to eat it with. i also remember spending way too much money outside for eating. there was a specific night where i went to a chinese place to have two orders of noodles. and the same two orders stuff happened once more at a pizza place where i got two pizzas for myself and ate them all in my room. i never got to 58kg ever again after october 2018. i remember seeing 59.8kg on january 2019 and being so happy that i wanted to reward myself which of course turned into a binge for a week. since then i never saw below 60kg. there was one time in february i saw 60.5 then i binged again starting on chocolates. i don’t know what is different this year compared to last year that makes me binge instead of restricting but i know i am strong enough to stop this. i’ve been eating under 200 calories for the past two days and i know i can continue this. i’ll be going home on 19th of april and i want to be 59 by then. i have 17 days. the problem is i haven’t been weighing myself but from my assumptions i think i’m around 62-63kg. losing 4kg in two weeks is doable right? wish me luck!
