Summer Bummer - But I’d Tried
Summer shimmers on seawaves and seasand
Beaches abound with sunseekers, funseekers, beachballs abounce
Butlins bore the brunt once as the middle-class Mecca
Many a popular playground for holidaymakers is still around
Cruises to the Caribbean are copycat amusement
For the well-heeled and even- keeled or Hawaii
Fiji or Florida is a toss up, Boss, the Keys still the bees knees
Coconut palm- edged seas, leaves swaying in sea breeze
Grass- skirts and floral- shirts and sun-dapples
Drinks served in coconut shells and in pineapples
Leis braided with fern fronds and flowers of plumeria and pikake, or pupu
On Poipu Beach, wearing behind your ear or in your hair
Hawaiian Hibiscus. Mangos Melons and Paw-paws
Preening in your plate or breakfast bowl -a surfeit
Of all that’s ripe and sweet and succulent or just plain juicy
Soups salads sandwiches savoury or slurpy
Tinkling in tumblers ice in spiced lemonade
Tall glasses holding masses of smoothies and shakes
Someone makes a killer frozen yogurt for the yogis
Yoga or Ayurveda enthusiasts with diabetic pasts
Still given to intermittent fasts and Vipassana
Still looking for a short cut to Nirvana
This summer hammock- swinging in Havana
Licking Iced Key Lime Pie in Magpie’s Nest in Key West
Or other options in salubrious climes
For serenading serendipitous Summer.

Self Care 101 🦋

In this post I’ll be outlining my current routines as they relate to self care. I’ll cover everything from head to toe making sure not to skip your spirit. You cannot be a girl of ANYONE’S dreams if you aren’t taking care of the most important person in your world: you.
mornings:
wash face with gentle cleanser from curology, tone with organic Mamonde rose water and finish with rich moisturizer and spf30
brush teeth with activated charcoal toothpaste by Crest and baking soda for whitening and gum clarity
take vitamins : woman’s one a day, hair skin nails, biotin, vitamin c
drink glass of water then a cup of tea
black tea, raw cane sugar, a lemon slice, ginger
good for energy, immune function, and detox
showers:
this may sound so extra (😅), but depending on my hairstyle, I sometimes like to let the shower run for about five minutes with the door closed to create a sauna effect. this is especially if I have a mask on my hair.
my showers usually are about 20-30 minutes
I have a back brush, pink exfoliating gloves, a loofah, and tree hut body scrubs and I use them ALL.
I wash first with my dove beauty bar to assure clean skin before washing with EITHER my OGX Shea So Soft body wash or Dove Renewing Peony and Rose Oil body wash to add scent or silkiness to my skin.

hair removal:
I haven’t yet mastered the art of waxing myself so I’m still riding the shave wave. *when I do I’ll make a post 4 that*
I exfoliate throughly before AND after shaving
I shave my entire body using Tree Hut Shaving Oil and a nice conditioner I’m not using. This leaves my skin super soft and silky and helps the razor to glide without skipping. I use Gillette Venus. no less than five blades, anything less is ASKING for nicks and a hard time.

when I don’t feel like shaving, I use Nair. use at your own risk. yes, I Nair my ENTIRE BODY. only leaving it on for about 7 minutes I rinse in WARM (not hot) water and exfoliate afterwards. it is imperative to moisturize after to avoid irritation. however, Nair is much easier to do than shaving and seems to last an inkling longer.
after shaving, once a month, I pull out my KENZZI. it’s an IPL device and it has helped to slow the growth of my hair. it’s noticeable for us long, thick haired chicks. I use the second to lowest setting as a melanated babe, as the higher settings could burn me.
I know many endorse the hair on women movement and I can understand it. But I personally love my skin silky, hairless, and smooth.
nights:
after eating dinner, I wash my face and apply the tiniest bit of glycolic serum and my curology night cream. my skin has been the best it’s been in a few years. then I brush my teeth and rinse with peroxide.
every four days I give myself a facial

I then write in my planner my new plans and what I did that day if I hadn’t already. then after that I script and make mood boards in my diary. then I read a little. currently reading: Making Faces by Kevyn Aucoin, and Live Like a hot Chick by Jodi Lipper.

emotions:
I talk to my grandmother about my feelings, she helps me sort things out. please try to find one person you trust to talk to, my messages are always open. 💓 I often overthink. I suffer from anxiety and clinical depression. sometimes these things make me FEEL limited. these experiences wax and wane. I remind myself that the darkness is temporary.
I write in my diary what I feel and track my emotions for potential patterns. I don’t manufacture or sugar coat my feelings, I just talk.

sometimes you need a good cry. let it out. clean your slate. you’ll always feel better, sometimes great after a hard, deep sobbing cry.
I try to get out of the house and get some sunlight. it helps brighten my mood sometimes.
baths:
LOVE taking baths I don’t care what the status quo is about dirt. just rinse off. I love wrapping my hair up and soaking in warm-hot water.
first I run the water. as it’s running I add my bubble bath, then body wash, then my Shea Moisture fragrant coconut oil. it smells soooo good, literally yummy. then I inevitably scream from dipping my toe in the hot water. finally I get in, scrub down my body, emphasis on feet. then I wash, and just relax. I’ve even fallen asleep in the tub once, I was so zen.
careful not to soak too long or overdo it with your products. synthetic materials lingering in your lady bits for too long cause cause infections like bv or uti
some women add tea tree oil, acv, or even Aztec clay to their baths for wellness purposes. I love adding essential oils to my baths to relax and the natural scent is just great 🥺
when I get out I always put something that feels lush and soft on. *invest in super soft, comfy bath towels, they’ll make you feel so luxurious and soft after a nice relaxing bath*
flower:
the yoni is something sensitive that needs to be taken care of thoroughly, and differently than the rest of your body. it’s not recommended to use soaps down there, it can unbalance things and make you itch. also make you prone to infection. this is why I use clear warm water to clean. if I use soap it’s a sensitive, gentle formula. don’t ever try to clean the cavity. she’s a self cleaning vessel.
to shave, I trim my hair down as close as possible and use a FIVE BLADE razor with conditioner and take my time. making sure not to pass a spot twice, I apply moderate pressure and move slowly. when finished I rinse and scrub gently. I PAT not rub dry. to finish off I apply TendSkin, and salicylic acid to avoid ingrowns. once that’s soaked in I apply shea butter. very soft and pretty 🌸
⚠️ DO NOT PUT ON TIGHT PANTIES OR RIGHT PANTS AFTER SHAVING. it restricts the hairs and causes irritation and ingrowns. throw on some comfy loose shorts for a while, let it breathe
dietary needs:

at home vagacial for the high maintenance girlies:
*make any necessary extractions with pointed and slanted tweezers *
scrub: 
brown sugar, tea tree oil, a little shea butter

baking soda, fresh lemon juice, vitamin e oil, papaya juice, gelatin
fixes discoloration and brightens the skin while softening
moisturize:
aloe vera gel, rose hip seed oil

smelling sweet:
ah yes, my favorite part. I love fragrance so much. I love to smell like you could literally break off a piece of me and eat it.
I find that using fragrant washes and oils make your scent more strong and help it linger. I already mentioned the body washes I use. the tree hut scrubs I use smell amazing also. I alike to add essential oils and man made scents like strawberry and chocolate to my Shea Moisture oil (so yummy).
I also use a fragrant lotion, eau de parfum, and fragrance mist.

hair:
it’s super important to keep your hair moisturized. quenched tresses move, grow, shine and bounce. dry hair is limp, lackluster, and extremely fragile
my fav diy deep conditioner:
a banana, half an avocado, three spoons of honey, an egg, a spoonful of mayo, a spoonful of coconut, olive, and castor oil each
strength from egg, avocado, mayo and olive oil
moisture from avocado and honey
cover damp CLEAN hair and scalp in mixture and cover with a plastic bag, then towel for an hour, rinse thoroughly, and seal in moisture

helpful tips:
when shampooing, concentrate on the scalp and wash thoroughly twice, as the suds will naturally cleanse your stands without drying and stripping them
rinse hair with apple cider vinegar every now and then. it restores your ph balance, smooths the cuticle, clarifies the strands, and adds shine
always add oil and leave ins to DAMP hair, never dry; this will ensure you’re sealing in moisture
try to use smooth fabrics to dry your hair, bath towels encourage frizz and breakage

and last but not least, let’s cover manicuring and pedicuring.
it’s super important to make sure your nails are either DONE or filed, shaped, and smooth. at home maintenance is super easy. make a point to scrub your hands and feet well when bathing. make sure to stay on top of your cuticles by trimming or pushing them back. I like the look that pushing them gives. I use an orangewood stick, metal pusher and cuticle softener to make the process super easy and safe. after I’m done I add my pineapple scented cuticle oil. I do this on my fingers and toes.
invest in a rasp and pumice stone for your feet and use these gently every two weeks after soaking them in warm foot salts. rough usage can cause cuts and irritation. in between treatments keep your feet soft by slathering them in a moisturizing foot cream, cocoa/shea butter then oil to seal it all in. buy some soft thick aloe infused socks and wear them to sleep. you’ll thank me 😉

Chapter 47. Fiji

I was born on May 13, 1989. I don’t remember much about the day, but from pictures, it looked like a great time. My parents were celebrating, there were balloons, someone brought a children’s Chicago Cubs baseball set.
Today is my 30th birthday, so I’m reflecting … looking back all the way to the very start.
It’s interesting to imagine my mom & dad’s thoughts in that delivery room 30 years ago. They must have been terrified by the responsibility of raising a toddler (I would be), but also excited for their new son’s future. What will he grow up to be? Where will he live? What will he do? Their dreams for me had to be bigger than their 1980’s hair.
In the least dramatic way I can say this: they couldn’t have predicted where I’d end up 30 years later.
Birthdays are important to celebrate, but especially milestone birthdays. This is mainly Chelsay’s influence speaking, but I agree with her: milestone birthdays are ones you’ll always remember. 15 years from now, we’ll think back and ask: “What did we do for your 30th birthday?” ... I won’t let that be an ordinary memory. Life is busy though, so it’s tough to carve out a day for festivities, let alone plan them. Even a month ago, Chelsay and I didn’t know how we’d be celebrating. Chels had plans in motion, but my work complicated things by scheduling meetings in Atlanta the week before. My trip back to Sydney would require 24 hours of flights, so would we still be up for a big celebration? The answer is Yes. I’m not 70, and I just said milestone birthdays were important, so we’re making this happen. Work would pay for me to get from ATL back to SYD via any route, so Chels and I started looking for convenient connecting destinations. Hong Kong, Tokyo, Patagonia, and Hawaii were all considered, but in the end, we found the perfect blend of celebration, relaxation, adventure, and convenient flights in Fiji. Fiji is a county made up of 330 islands, and each island chain has its own unique characteristics. Viti Levu is the main island and home to Nadi Airport, but most tourists don’t stay here. Near Viti Levu are the Mamanucas, small sandy dots amongst the expansive blue. The Mamanucas are stunning, but they’re typically more resort-y and popular with nearby Aussies & Kiwis. Then there are the Yasawas, where Chelsay and I chose to stay. The Yasawas are further from the mainland, and their remoteness means their less touristy.

This is a double-edged sword though, because less tourists means there’s less tourist infrastructre, so finding a comfortable option would take some research. We eventually decided on Paradise Cove, which perfectly balanced vacation comforts (comfy bed, outdoor shower, and excellent food, which can’t be understated on a remote island) with a sense of wild adventure (fewer guests, great snorkelling, and hiking paths around the large island).

I nailed my meetings in Atlanta, so my birthday weekend was off to a good start even before boarding the plane. For the next 24 hours of flights, I had nothing to worry about - just enjoying a few movies and catching up on sleep. Chelsay and I met up in the Nadi Airport after extremely disproportionate flight times (hers was only 4 hours), and caught a ferry to Paradise Cove. Seaplanes were an option, but they were 5x the price and this wasn’t our honeymoon. The other advantage of the ferry is that it allowed us to see the different Fijian islands up close. Viti Levu and the Mamanucas were very nice, but Chelsay and I knew we’d made the right choice as we arrived in the less crowded Yasawas.

We were in heaven as we stepped onto the sandy beaches of Paradise Cove. A jungle of palm trees lined the beach, at first hiding the resort before eventually revealing a dream island getaway: shaded cabanas, pool-side lounge chairs, and a bar concocting frozen, fruity treats.

The pineapple on top of this pina colada was that Chelsay told the resort it was both of our birthdays, so they upgraded our villa and outfitted it with balloons and welcome drinks. As birthday surprises go, drinks on a beach in Fiji was pretty good.

After drinks on the beach, scuba diving wasn’t really an option, so we decided to snorkel in Paradise Cove’s house reef. I was really surprised by its color. It was just last week that I wrote about the scale of the Great Barrier Reef... but out in the middle of the Pacific, Fiji’s immense soft coral, highlighter vibrancy, and sea life abundance were incredible.

Now, it was inevitable that jet lag would catch up to me. Atlanta is 16 hours behind Fiji, and I was mentally nearing midnight. Chelsay was also dealing with severe time zone change (2 hours), so she was equally down for a nap. We gave ourselves 90 minutes but would wake up well before our 6:30 dinner. Apparently we woke up to the alarm at 5:30... I don’t remember. I guess I turned it off and only woke up once Chelsay checked her phone. 6:20. Woof. I say all this only to give you an idea of the mental state I was in over dinner. It was similar to that infamous Innsbruck dinner, where Chelsay and I giggled through our whole meal in a tired haze. After our mains, I asked Chelsay if it was time to call it a night... Despite having sour straws in the room, she insisted we stay at the restaurant for dessert. “Alright, well if we’re going to be here awhile, I need some extra bug spray.” I stumbled back to the room and, as I was re-applying, I heard singing in the distance. “Must be the ‘Kava Social’ by the fire pit,” I thought. ...These resorts always put on a show. Still in a sleepy haze, I leisurely made my way back to Chelsay. As I got closer though, I realized the singing wasn’t coming from the fire pit… it was coming from the restaurant. I turned the corner and could see they were surrounding Chelsay and I’s table... and Chelsay had her hands clasped over her mouth... and they weren’t making eye contact with her... and they had a cake. OH NO! They’d been singing this whole time for me!!!! Ahhhhh-I rushed back to the table, face bright red, and started clapping along as they sang a Fijian happy birthday song. I don’t know what they sang actually... it could’ve been the alphabet. I just tried to focus on Chelsay and not on the fact that the song had been going for at least three minutes. I thought to myself, ���Chelsay must be so embarrassed!” And then I thought, “Oh no everyone thinks I was taking a shit!” The song finally wrapped up, and the waiters were laughing with Chelsay and I. They accusingly pointed out that it was the longest they’ve ever had to sing happy birthday… “Guys, I swear, I was putting on more bug spray!” Luckily a nearby couple caught the awkwardness of camera.

The next morning, Chelsay and I had scheduled back-to-back dives. We’ve been diving quite a bit recently, but it was still fun to float around the bottom of the ocean. Much like the local humans, Fijian fish seemed incredible friendly: the sea life was very comfortable with divers, staring back at Chelsay and I from only a few inches away.

After our dives, Chels and I took a 1.5 hour hike around the island, stopping at a secluded beach for private snorkelling. Along the hike, the resort had set up a few small exercise stations. One station was a tire flip... like what NFL prospects train with. This is probably why all the Polynesian players are so big. Anyway, Chelsay challenged me to flip it and I did so without difficulty. It must not have looked hard, because Chelsay confidently stepped up to try it herself. She bent down, grabbed the tire, lifted from her legs for less than one millisecond, and walked away with nothing but a “Nope.”

At dinner that night, first of all, there were no birthday song surprises. Second, we had phenomenal steak with a spread of beetroot, pea, and garlic purée. It was exceptional, as was every meal we ate at Paradise Cove. This can’t be overstated. I mentioned earlier that food in many Yasawan islands is poor, often limited to rice and fries. These resorts just aren’t prepared to meet all vacation comforts... Paradise Cove was ready though. Over our three days, we enjoyed tasty local kokoda, beef lettuce wraps, coconut crusted chicken, and their many fresh catches of the day.

The next morning, Chelsay and I joined a snorkel excursion through a nearby island channel. In Fiji, these channels serve as a funnel for pods of manta rays, which are probably my favorite non-dog animal. See, ever since our failed hunt for mantas in the Maldives, I’ve had an appreciation for how hard they are to find. Even though we’ve since seen entire pods of mantas, I’ll always jump at the slightest chance to see another. Our boat between the two islands, and the guide jumped in the water. He wore a weight belt so that he could sink down where the mantas swim, which I only mention because I want to remember how easily he descended 10 meters (30 feet), sitting in the dark blue for 2 minutes before resurfacing. This guy is a fish. On the other hand, Chelsay had a less graceful descent. When we scuba dived the day before, we exited the boat by sitting on the ledge, tanks over the water, and just falling backwards. The weight of the tank would naturally fall into the water and 360-degree flip you back to the surface. When snorkelling though, you don’t have the weight of the tank. Chelsay threw herself back and entered the water, but was too buoyant to complete a flip. She’d contoured herself into an arch, with her belly sticking out of the water and fins frantically trying to rotate over. She probably scared the mantas away. It took about 30 minutes of tense anticipation, but while staring down at the blue abyss, we heard the guide yell, “Manta!” Chelsay and I swam over quickly to take in the majestic giant. At around 3 meters wide, this female manta was bigger than me, yet swam with such gentle grace. Its grace is deceptive though, because it’s actually still moving quickly - between our hunt and subsequent chase, I probably swam 3 km that morning.

Chels and I were tired when we got back to Paradise Cove, but it was our last day so we decided to snorkel the house reef one more time. It was cool to see the soft coral again, but we were pooped. I actually had to tow Chelsay back: you know, when I swim in front and my wife just holds onto my foot.
As I was towing her, we passed over a shallow part of the reef but I kept powering along. Suddenly, Chelsay let go of my foot and started slapping the water. I stopped in my tracks, unsure what she was freaking out about. She swam off, so I followed, and it wasn’t until we’d gotten to shore that she told me what it was: apparently a venomous white-banded sea snake popped out and launched within 1.5 ft of me. That was enough sea life for this trip, so we spent the rest of the day on the resort’s inflated jungle gym. We laughed, played around, and attempted backflips (key word: attempted). Just a reminder that I’d turned 30 a few days before.

That note actually transitions well into my conclusion…
A lot of people get anxious about their 30th birthday. It isn’t a vitality thing - too early for that - but the anxiety comes more from gauging where you are vs where you thought you’d be. Life isn’t a checklist, but it’s natural to have expectations for when you turn 30, 40, etc. Well, I’m writing this from my villa patio in Fiji, so I’m nailing the “Where you are” part. To answer that question less literally though, I’ll instead consider “Where I am” against Chelsay and I’s life motto, something we wrote in our wedding vows: “We’ll never let age get in the way of our youth.” This is perfect motto for age-related milestones because youth isn’t a concept tied to age. It isn’t chapter in your life that just fades away. It’s a mindset, and it’s one you can measure whether you’re 5, 20, 30, 40, or 80. To be youthful is to be energetic, playful, and optimistic. Now I’m technically 30, but this milestone age doesn’t bother me. “Where I am” is energetic enough to swim with Mantas, playful enough to laugh at awkward cake situations and splash around on an inflatable jungle gym, and optimistic enough to make a celebratory Fiji weekend happen despite all of life’s complexities. I’m not worried about turning 30, because after the past weekend, I know I’m as youthful as I’ve ever been.

Hello everyone! This list consists of 4 fragrances that I have been using alternately and I have been loving ever since I discovered them. Bear in mind that this list is made by a person (ehem, me) who still have no financial income therefore does not have boujie Tom Ford level of fragrances. This is a humble list from a student who have been saving her ass off so that she could buy some of these items. Hehehe! Without further ado, let’s get right into my list!

The first photo is a VS classic! It’s one of their fragrance mists in Pear Glacè. I love that scent so much. It’s very sweet and elegant. It’s one of those scents that are very nostalgic to me, personally. Nowadays, it’s very difficult to look for this specific scent because I have heard from a favorite seller that this scent is already faced out. I wanted to stock up on this scent but yo girl aint got the bucks so I’ve been using this lesser lately. As you can see, I’m almost out!
The second photo is another VS fragrance mist. It’s the Bombshell Seduction. It’s from their Bombshell line. I actually haven’t heard anything special from this line before until a friend of mine told me that she was really obsessed with the original Bombshell scent and that it was her hands down most favorite scent of all time. I got curious and told my papa (who was travelling to New York at that time) to buy me one since it’s cheaper in the US. Unfortunately, he wasnt able to get the original one (it was my fault. I didnt know there were so many bombshell subtypes hehe) but I guess you could say this is a...happy accident? I fell inlove with the scent. It’s fresh and bubbly. It’s the type of scent where you can wear it all summer long and you won’t get tired of it. ❤️
The third photo is also a fragrance mist from BBW. It’s the Fiji Pineapple Palm. It smells like Hawaii in a bottle although I’ve never been to Hawaii before. It smells literally like sweet pineapples with a hint of coconut. I love it so much that I got through the whole bottle very quickly! A lot of people have complimented me on this scent and my bestfriend, Hazel, always asks me if I brought the bottle with me whenever I report to the hospital because she wants to spray some on she goes out to meet her boyfriend. 😂
The last photo is a rather special one because it’s an EDT. It has a higher oil content therefore it’ll last longer than the fragrance mists but this also means that it’s pricier than the other ones I’ve mentioned. It’s from a brand called Monotheme and it’s their Blackberry scent. I got this bottle at Rustan’s Glorietta when I was rotating at Makati Medical Center. I’m a shy person, okay? I dont really like it when sales associates follow me around when I shop so I was browsing through an area where there weren’t a lot of customers. I saw this huge wall of monotheme EDTs and I was able to take a whiff of all their scents and this scent was the most...interesting and fragrant FOR ME. I really love it to the point that I powered through half the bottle in just 1 month! I know. I know. It cost me a lot. But I just love it so much! Anyway, unfortunately, my boyfriend thinks it’s smell caters more for men than women’s. I strongly disagree. To each their own, right? Hahaha!

The choice is overwhelming, with acai combinations of dragonfruit, mango, vanilla protein and banana.
If you’re keen to sample something different, try the activated charcoal bowl. It’s delicious, refreshing and surprisingly filling, but make sure you check your teeth for black smudges afterwards. The bowls are all refined sugar-free, as well as dairy- and gluten-free, and vegan. The bar also whizzes up fresh juices and smoothies, making this a health-food heaven.
Lafew Café & Kombucha Bar, Cairns

“It’s going to sound like a cliche, but I love Indian food,” says Gary Foulkes, who chefs at the Michelin-star Angler in London. On his day off, he and his family enjoy spicy food, so it’s often Indian or Thai. It’s often Brigadiers, Gunpowder, and Trishna in London.
This is Gary’s third visit to India; he stayed here the longest when on a three-year trip around the world with his wife. “Most of my inspiration comes from travel,” he says. He picks up the nuances of ingredients, and uses them for their flavour profiles, without actually cooking that cuisine. For instance, he’ll infuse curry leaf into a roasted cauliflower with cashewnut milk and curd, to give it a different “flavour spectrum”. There’s also a cashewnut pesto he does, with curry leaves, salt, pepper, and olive oil.
His style of cooking he says, is “tasty, light, rooted in classic cooking techniques but delivered in a modern way, but it’s all about flavour.” At his dinner, “Expect big flavour, presentation — it’s very important to me that food looks as good as it tastes. It should be delicious,” he says. While his king fish and lamb will be similar, the menu is based around what’s of prime quality in India.

He calls himself a chef, restauranteur, TV presenter, author, consultant, surgers, fisherman and family man, and tells stories that are an amalgamation of all. At a preview, he goes from person to person, pouring the coconut-based sauce onto the Snapper, as he talks of his of his grandmother’s kitchen, his own childhood in Sri Lanka, and his oldest son of three taking part in a surfing competition. Peter Kuruvita pulls up memories easily. Of his fondest food memory, he says it’d have to be “My Aunty Padmini’s breadfruit curry. She’ll still make it when she knows I’m coming. It’s just rich and creamy, nutritious, satisfying — food filled with memories.”
His life has been touched by the food of the islands: Sri Lanka, where he spent his growing-up years; Australia that he’s made home; and Fiji, where his wife comes from. “The ocean is my soul; it’s a part of me,” says the chef, whose Noosa Beach House that has a Chef Hat (Australia’s version of a Michelin star) is based around his cooking style.
His dinner is about the sea, with crab, fish, and prawn forming its core, with ingredients from the tropics: coconut, palm treacle, pineapple, tamarind. He describes his food as using the freshest ingredients from not more than 200 km away, modern, with a Sri Lankan twist. His butter-poached crab and beetroot curry are dishes to look forward to.

It’s about giving people insights — insights into my world. In India you eat lots of rice, and it’s vegetarian,” he says, meaning everyone will have a taste of the food.
The class will have White engage with people in a conversation, as he invites people to cook with him, sharing the principles of making a risotto. “Once you learn the principles, then you can create your own flavours.”
Known for being the youngest chef to have three Michelin stars and then returning them later, White who was called “the original bad boy of British cooking” by The Telegraph, is relaxed and feels he’s almost on holiday in India. “This morning they made me the most delicious dosa,” he says, adding that Indian cuisine’s time is yet to come. “People in India have given me more than I have given India. In India, they don’t try to impress you. ”
