It's not Aerith, just her image. And the singing is lip synced like I said it had to be for it to make sense. It's all a big hologram. Not real. Just like their ship.
And for people who want the source: it's Nomura.
You can read here that they had the theme song first and then added it to the stage show, so Aerith singing it wasn't considered at all until they reached that part of development.
The whole stage show is a vr event, which is why Jessie appears in it. Shinra have her image on file, the same way they have Aerith's. Since Shinra own the GS, it's not hard for them to produce the image from their stock to use for things like this.
So, in the end, Cloud isn't looking at Aerith singing, he's looking at an ai hologram with her face. Which kinda implies he's shocked not awed since Aerith is probably standing on the far side of the stage also watching it.
