Sense of Humor
At first glance, Danse comes off as all business and fairly humorless. Being in charge of others in life or death situations is something he takes seriously and consequently he doesn't allow himself the luxury of humor. He feels like he has to be a professional at all times. In the instances where he does indulge in any kind of humor, it comes off as very bland and not quite a joke, for example:
(From the third affinity conversation with him about Haylen)
“I signed up to be your sponsor so I teach you everything that I know, but it looks I'm the one that needed the lesson today.
All joking aside, I'm pleased that we had this discussion and with all the problems you're facing, you still took the time to listen.”
It's stuff like this that gives him the reputation of being a serious person who doesn't make jokes. He internalizes this and believes it himself. That's just his humor such as it is.
He also hasn't had a real friend in years by the time the Sole Survivor meets him. For those who are truly close to him, they get to see his real sense of humor which can actually be very dark.
In his affinity dialogues, there's one time he actually laughs and it's during the second one about Cutler. After he tells the story and mentions how having a bond with someone and losing them changes you and he doesn't want to go through that again, you can select the sarcastic dialogue option which is:
“Well, there goes my dream of being reborn as a Super Mutant.”
He gives a low chuckle and rolls with it. He just opened up and told you about what was probably the most traumatic event of his life and he gets hit with that and laughs.
Given his long career as a soldier, it would make sense. People with traumatizing jobs (such as soldiers and first responders) tend to develop a sort of gallows sense of humor to cope with some some of the rougher aspects of their job.
I'm reminded of a story about British soldiers in WWI digging a trench and had to pass all of the dirt down a line to make room. They kept finding pieces of human remains from bodies just being blown to bits and would pass it down the line shouting things like “Bit of Bill!” “Another bit of Bill!” One of them dug up a severed head shouting “Bill's ugly mug!”
For Danse, it was more prevalent in his days as a knight. He rarely made the jokes, instead he just listened to his teammates recount amusing anecdotes of gore and laughed. In the rare instance he'd let his guard down enough to utter a joke himself, it was hysterically funny and horribly fucked up at the same time. After all, Danse had been in the Brotherhood for a long time. Longer than most of them. He'd seen some shit.
As he moved into positions of leadership, those moments happened less and less. When he was promoted to Paladin, the only one who was privy to it was Cutler. He took his conduct seriously. He represented the Brotherhood! The other high ranking members of the Prydwen didn't make those kinds of jokes (he, of course, was the only one consistently out in the field).
Members of Gladius would make those kinds of jokes, usually after a fire fight against feral ghouls or super mutants. Danse had wanted to laugh. It just didn't feel appropriate. Then as he lost each member of Gladius, there were less jokes until they just stopped completely.
So when he's finally getting comfortable enough to allow himself to be vulnerable in front of the Sole Survivor and they respond with a joke about being reborn as a super mutant, he stops in his tracks and actually laughs for the first time in what felt like years.
