I'm really concerned that when a chef is on Expo, the Bear only has two to cook.

Especially since the menu changes every day.

So I looked up on Escoffier website and they said the following

At fine dining restaurant Ever in Chicago, Chef Curtis Duffy has a crew of approximately 40 employees for only 14 tables!

I get it. The Bear is not EVER RESTAURANT but two cooks? With a packed house every night?

They go on to say

Expect to see more specialized kitchen employees in a fine dining restaurant—this is where the brigade de cuisine really shines. After the executive chef and the sous chef, there may be a pastry chef, as well as a garde-manger to run the cold station. There is also a crew of line cooks. Estimate around six kitchen employees per 50 guests in a fine dining restaurant

So come on now. What's happening at The Bear. I think it's one of those not real situations

I met @daveberan where he was the chef @nextchicago in 2011 for their opening menu which was an #escoffier menu from 1906 #paris. needless to say, it was a sublime experience. what a joy to experience his #cuisine again a dozen years later.
