Nice ask week!
I always love seeing photos of things you're baking...do you have a go-to favorite thing to bake? And, if it's something different, what's your favorite thing that you've ever baked?

We all know how much I love baking but I gotta be honest vegan baking is a nightmare half the time. And I've only been doing it since last year so there is still a lot of trying out new recipes and a lot more trial and error than I want there to be. And I'm impatient and not good at not being good at stuff so there was actually a time where I didn't bake a lot.
To answer your question: I used to have a lot of go-to things but those were non vegan. There is one recipe of those, a Christmas cookie recipe, that I have successfully veganized, so I guess you could stay that is still a go-to fav.
As for new vegan recipes...the tres leches cake is definitely a favorite, it still needs some tweaking because the first time around I didn't like the coconut cream the recipe told me to use on top, the second time (last week) I used a different cream but it wasn't stiff enough. Tasted amazing though. I've also made a Straciatella cheesecake and a Chocolate Mousse Torte a couple of times already, so I guess you could say they're go-to favs.

Agnes nodded. "It was very good. Malmö is known for having the best vegan food in Sweden." And while she wasn't vegan herself, the brunette had several vegan friends she'd made while attending Lund University. The University was about half an hour away from the city; so it was very easy to take trips to all the vegan establishments. The vegan eateries were one of the only few good things she could say about the city. Malmö as a whole tended to be viewed as a bit of a joke by the rest of Sweden.
"Oh, uh... Nej. No thank you. I will have to get home to my son soon." As much as she would've loved to accept the offer for a table inside and try some other foods from the café, the brunette knew she'd be needing to get home to her son soon. He was with her former host family while she'd finished up some late work and stopped for the chocolate torte; but it was nearing his bedtime if he hadn't fallen asleep already. And if he was still awake, she didn't want to miss the chance to have their nightly snuggles while she read to him. She cherished those moments. So after she finished this slice of cake and got her second for the road, she knew she'd be needing to head out. "I will come back, though. I was reading the menu; and all the food looks delicious." The crab cake sandwich was calling her name.
Amara's face perked up at the mention of her having had a vegan kladdkaka before. "Really? I'm glad you've tried one. Sometimes making things vegan can change the integrity a bit but it's nice to know that it's been done. Was it any good?" Noting that the cafe had slowed down a bit, she could see some tables freeing up and her staff letting out some sighs of relief. "Can I offer you a table inside to enjoy anything else? Or to finish up that torte?"

Vegan Chocolate Orange Cake
What a DELICIOUS cake I created last weekend at bhuti Richmond. Chocolate and orange is one of my most favorite flavor combinations so I’m always looking for ways to mix the both together!
Creating a vegan cake without sugar AND that is gluten free is actually pretty hard, you either end up with a too dry crumbly mess or something that’s basically raw. That’[s why peoples cakes can differ so much even depending on which brand of flour they use. Its best to try and test recipes yourself I always think, as only you know what your ovens temperamental self is like, which texture of cake you prefer. I hope this simple recipe is a good starting point for your own experimentation though!
This cake is more of a torte texture, super fudge like and rich with a totally decadent icing and topped with fresh orange zest and cornflowers.
Its actually a pretty easy recipe but easy to customize with your own flavors (you could add espresso to make a mocha flavor instead ;))
Also please note that mixing the buckwheat and coconut flour gives a light and fluffy texture, but you can sub these for Doves gluten free flour blend which is one of the best
Cake
2/3 cup soy or almond milk 1 1/2 tsp apple cider vinegar 1/2 cup pure maple or agave syrup 1/4 cup melted coconut oil 1 orange juiced (keep the zest for the topping) 2 tsp pure vanilla extract 1/3 cup raw cacao powder 1/2 cup buckwheat flour 1/2 cup coconut flour 1/2 tsp salt 3/4 tsp baking powder
Icing
5 tbsp coconut oil 1/3 cup maple or agave syrup 1/3 peanut butter 1/2 raw cacao powder 1 tsp orange blossom extract or fresh orange juice (taste for flavour)
Toppings - pick and choose (get creative!)
Fresh Orange zest Cornflowers Rose petals Cacao nibs
Method
Heat the oven to 180c and prepare a small round baking tin with grease proof paper.
In one bowl, whisk together the milk, vinegar, maple, coconut oil, and vanilla. Leave aside for 10 minutes. This will create a take on buttermilk which is perfect for helping the cake to rise.
In a separate bowl, mix together the dry ingredients and then after the buttermilk is ready, combine both, then adding the orange juice to taste.
Pour into the tin and level off, before baking for around 45 mins. The cake should still be super moist and will continue cooking in the tin whilst you leave it to cool.
To prepare the icing, in a small pan melt together all the ingredients, then place into a fridge to slightly harden whilst the cake cools. Have a taste to check the orange flavor is strong enough for you.
Top the cake with the icing and any other decorations you may want, then serve!
Best enjoyed at room temperature, serves 12 portions.

September Seasonal Produce Guide
Late Summer and Early fall leads to heavy loads at the farmers market and thus very long lists in this Seasonal Produce Guide for September. Bear with me because there are so many good recipes to enjoy right now! Fruit is still making a good appearance as are all of the vegetables and you can’t forget the big, busty, ripe tomatoes right now! This time of year I love making a big batch of marinara to store up for the winter. I also serve this One-Pan Farro with Tomatoes, Sausage, and Kale frequently for a quick dinner and a big bowl of apples once again graces our kitchen island.
Though I’ve given you plenty of ideas below for recipes, I also wanted to add a few end of harvest ideas for you. Just pick one of the ingredients listed above and find a way to store it up for a mid-winter celebration. This year try shucking a lot of corn to freeze for winter meals, or make your own jam (this maple vanilla apricot jam is a little taste of heaven), can some peaches in this honey simple syrup (one of my favorite things to enjoy mid winter), or try your hand at pickling – this strawberry pickled radish recipe is fun and I always make at least one batch of these pickled vegetables every year.

It’s that time of year again...Veganuary
I can hardly believe it’s been twelve months since my last foray into veganism, and a year since I last penned a blog post *hangs head in shame*.
In 2016, my reasons for taking part in Veganuary were primarily health-based. While this is still incredibly important for me, the environmental and ethical reasons have also become a huge factor for me. I know many of you may have seen Cowspiracy, but if not I urge to watch. It may not prompt you to put down the pint of milk for cuppa straight away, but it will certain stay on your mind.
Some key takeaways for you to consider if you’ve already made your mind up you’re not going to watch it:
It takes 2,500 gallons of water to produce 1lb of beef
Livestock covers 45% of the earth’s total land
Animal agriculture is the leading cause of species extinction, water pollution and habitat destruction
As many as 40% of fish caught globally every year are discarded
More than 6 million animals are killed for food every hour
And that’s just for starters.
Anyway, I’m sure you didn’t click on this link to hear an inconvenient truth, but it’s worth thinking about if you’re wondering why anyone would want to be vegan...
A fortnight into Veganuary and I’m loving it! I’m feeling a lot more prepared than the previous year, it’s given me an excuse to try out a load of new recipes with lovely plant-based ingredients and I’ve noticed more conversation than ever before across social media from those taking part.
I stocked up on some of the more ‘obscure’ vegan ingredients from a fantastic shop in Northampton, the Daily Bread Cooperative, before the start of the New Year under the guidance of my bff/ vegan-moral compass/ all-round amazing person, Charlotte (so many things are accidentally vegan!).
The majority of remaining items however, I could pick up in Tesco and Lidl as part of our usual shop and I was sorted for the challenge ahead.
The first week or so was hardly a healthy start to 2017, with the biggest success being a batch of Flora’s vegan chocolate brownies. These were a success with El and the office - deliciously moist and oh-so moreish, with a simple recipe to suit that I definitely recommend trying for yourself.
I also made a stash of Nigella’s breakfast bars 2.0 as a last minute breakfast option or ‘3pm slump snack’.
As for eating out, Cosy Club’s avocado on toast with tomatoes and coriander didn’t disappoint and Lounger’s dark chocolate and ginger torte was the most indulgent sweet treat I’ve had in a long while.
But the most experimental meal this fortnight was perhaps scrambled tofu. I know what you’re thinking - what could possibly be appetising about scrambled tofu?
EVERYTHING.
Many of the recipes I found recommended scrambled tofu as a breakfast dish, given its resemblance in colour and texture to scrambled egg. I preferred to make it for dinner on top of a warmed tortilla wrap as a post-gym quick and easy meal. It’s safe to say I will DEFINITELY be making this again for dinner this month, and thereafter.
I opted for smoked tofu as the star ingredient of the recipe, which I picked up from the Daily Bread. Most supermarkets will stock tofu, but having cooked with both plain and smoked varieties before, I can definitely recommend the latter. The beauty of the recipe below is that you can really adapt it to include whatever veggies you prefer, or likewise whatever needs using up in the fridge.
I think there’s a certain stigma around tofu, it’s got a bad rep for being soggy, bland and just a bit odd. If you’ve never cooked with tofu before then choose this as your first experimentation and trust me, you won’t think of it in the same way.
You’ll notice that the recipe below includes nutritional yeast. Now, I know the phrase ‘nutritional yeast’ sounds awful, but if you’re following a vegan diet it will soon become a staple in the kitchen. Not only is this product fortified with vitamin B12 to make sure us vegans are getting all the vitamins we need to be healthy, it has a fantastic cheesy and nutty flavour that gives dishes a similar flavour to that of adding Parmesan to a risotto, for example.
Oh, and for anyone that questions whether a vegan diet can offer enough protein - this dish has 25g of it.
Scrambled Tofu
Serves one very hungry person, or two as a smaller dish.
Ingredients
A good glug of rapeseed oil or olive oil 1 onion, diced 225g smoked tofu (approx. 1 pack) 1 tsp turmeric 1 tbsp soy sauce 1 red pepper, roughly chopped A handful of broccoli florets 1 tsp nutritional yeast Salt and pepper Fresh herbs such as coriander or flat leaf parsley (optional) 1 large wholemeal tortilla to serve (optional)
Method
Add the oil to a frying pan over a medium heart and when hot, add the onion. Cook for around 5 minutes until soft but not charred.
Take the tofu from the packed and squeeze out any excess water by wrapping the block of tofu in kitchen town and squeezing gently.
Crumble the tofu into the pan into small chunks - don’t worry about these being uniform at all - and sprinkle in the turmeric stirring all the time.
Add the soy sauce, red pepper, broccoli and nutritional yeast and stir well. Cook for around 5 minutes until the vegetables are tender and your tofu is cooked through.
Season and add any fresh herbs of your choice. Serve straight from the pan onto a warmed tortilla.

September Seasonal Produce Guide
Late Summer and Early fall leads to heavy loads at the farmers market and thus very long lists in this Seasonal Produce Guide for September. Bear with me because there are so many good recipes to enjoy right now! Fruit is still making a good appearance as are all of the vegetables and you can’t forget the big, busty, ripe tomatoes right now! This time of year I love making a big batch of marinara to store up for the winter. I also serve this One-Pan Farro with Tomatoes, Sausage, and Kale frequently for a quick dinner and a big bowl of apples once again graces our kitchen island.
Though I’ve given you plenty of ideas below for recipes, I also wanted to add a few end of harvest ideas for you. Just pick one of the ingredients listed above and find a way to store it up for a mid-winter celebration. This year try shucking a lot of corn to freeze for winter meals, or make your own jam (this maple vanilla apricot jam is a little taste of heaven), can some peaches in this honey simple syrup (one of my favorite things to enjoy mid winter), or try your hand at pickling – this strawberry pickled radish recipe is fun and I always make at least one batch of these pickled vegetables every year.
