Lavender Apricot Galette

Fragrant with the purple flower in all possible forms, this Lavender Apricot Galette is a delectable Summer dessert, and a rather easy one to bake, too! Happy Wednesday!
Ingredients (serves 4):
1 1/2 tablespoons unsalted butter
1/2 teaspoon Dried Lavender
3 freshly picked just bloomed lavender flowers
a dozen just ripe apricots, rinsed
2 tablespoons Lavender Liqueur 
1 heaped tablespoon Lavender Honey (I brought this one from Menton last year!)
415 grams/14.6 ounces Almond Pastry 
2 heaped teaspoons Lavender Sugar 
In a large, deep skillet, melt butter over medium-high heat.
Once butter is melted, add Dried Lavender and lavender flowers. Cook, 1 minute.
Halve and pit apricots.
When the lavender butter is just foaming, add the apricots, cut-side down. Cook, shaking the skillet over the flame occasionally, about 5 minutes.
Once the apricots are just golden brown on their cut side, deglaze with Lavender Liqueur. Then, drizzle generously with Lavender Honey. Cook until mixture reduces and becomes syrup-y, about 3 to 5 minutes more.
Then, remove from the heat and allow to cool completely.
Preheat oven to 200°C/395°F. Line a baking tray with baking paper; set aside.
On a lightly floured surface, roll out Almond Pastry into a large circle, not too thinly. Trim the edges, and gently place Almond Pastry circle onto prepared baking tray.
Arrange apricot halves, cut side up onto the Pastry, from the centre out, into a circle. Fold the edges of the galette, slightly on top of the apricots.
Sprinkle apricots and Pastry alike with Lavender Sugar.
Place in the hot oven, and bake, at 200°C/395°F, 30 to 35 minutes, until pastry is a nice golden brown colour.
Remove from the heat and scatter fresh lavender flowers on top.
Serve Lavender Apricot Galette warm or cooled, with Kir Royal à la Lavande.

We don't celebrate thanksgiving but we do have a Harvest Celebration the same weekend each year and this year we decided the activity would be trimming the garden down for autumn, part one. My daughter and I tackled the front garden today; trim it all down, cover in burlap and then make witchy bundles of our plants as my girl calls them. We've not tackled trimming the hops yet though, think that will be next weekend.

Lavender and Vanilla Biscuits

When you read this, Ava will be here!! And I shall have welcomed my girl into my home with these Lavender and Vanilla Biscuits. These delicious bikkies have the fragrance and flavour of the first embrace after a long time, when the combination of the vanilla notes in Ava’s perfume and the lavender scent of her shampoo hit my nostrils, and fill me with joy. And naturally, they pair beautifully with Avas!
Ingredients (makes a dozen):
6 tablespoons unsalted butter, at room temperature
1 1/2 teaspoon Dried Lavender
1/2 plump vanilla bean
¼ cup Lavender Sugar
1 teaspoon Homemade Vanilla Extract
1 ¼ cup plain flour
In a medium bowl, beat butter and Dried Lavender energetically with a wooden spoon. 
Scrape seeds off the vanilla bean, and add to the butter mixture. stir in Lavender Sugar and cream, gradually adding Vanilla Extract, until pale and fluffy. 
Add the flour, all in one go, and work it into the Lavender and vanilla mixture, with a wooden spoon at first, and your hands then. Bring the mixture together into a ball. The dough will be short, but you still can shape it into a sort of sausage shape. Roll tightly in parchment paper and place in the refrigerator for a couple of hours, or until firm.
Preheat oven to 165°C/325°F. Line a baking tray with baking paper.
Once it has hardened, remove dough sausage from the refrigerator. Unwrap, and cut into thick discs. 
Place the biscuits, spaced evenly, onto prepared baking tray and bake at 165°C/325°F, for about 15 minutes, or until the edges just start getting golden brown. Remove from oven and let cool completely.
Serve Lavender and Vanilla Biscuits with piping hot tea or a couple of Avas.

thank you so much! as a disclaimer, i'll just say that these flowers are definitely NOT accurate to their real life counterparts - i changed their shape or size to what i liked best haha. the most important thing to me was their color!

if i remember correctly, the first two were based off field marigolds and forget-me-nots, and the flowers in the vase were meant to be wildflowers (black-eyed susans would probably be the closest thing i can think of to the yellow flowers here). thank you for the question!!

some process photos of me blending my all natural lemon room and linen spray! there is lavender in there too to add a bit of softness to the bright citrus mist. after this tincture has infused for at least 4 weeks it will be ready to bottle 💛💜
i also chose lavender to blend with lemon because they’re both immunity allies, with a penchant for perking people up when they’re feeling blue
this was so much fun to make, and so calming. yesterday i crafted *so* many new medicines and creations for Bloom Again. i prayed over the medicines throughout the whole day and told them how i love them✨ i thanked each of them for the joy of collaborating with their essences to craft blends that can help people 💓
herbal medicines have been a deep part of how i take care of myself for a while now. but there was quite a while when i was studying herbalism where i *knew* what medicines would be so helpful - but i couldn’t afford them. and that taught me why they are so important, what it’s like to need what you don’t have. one of my main missions within Bloom Again is to help that person - whoever they are and however divine need may express itself
