"tart!"

tart only makes himself laugh harder. reeq shakes his head at him. it's so unfair, who allowed the warrior of darkness to be so adorable?

he purses his lips to appear serious. "be honest with me, now. did you pick your name only for a situation like this?"

tart tilts his head and smirks, "what do you think?"

"no, you don't have that kind of foresight."

"hey!" his long tail smacks reeq's back. reeq laughs, then lies down with his head on tart's lap. he looks at his partner and smiles. "want me to find one that's sweet for you?" asks tart.

"no, i'll have the first. i'm sure the taste will grow on me," reeq says lightly, "and you can peel the rest of them for both of us." the request earns him a kiss on the forehead, and reeq considers it his just desserts.

My Favourite Orange Cake

I have ... opinions about oranges. I think they’re too intense, too acidic, too orange-y. Orange flavoured things also taste kinda awful. I pick out orange gummy bears and give them to other people.

What you’ll need

Citrus: any orange, tangerine, clementine will work. I’ve tried a variety, and they all taste good. The level of tartness will vary depending on what you use. Different citruses will have different ratio of flesh to peel so keep that in mind. If you’re not keen on the bitterness of the peel, use less peel, more flesh. But don’t leave the peel out completely, that will make the batter too wet. You need to end up with a total of 300g or about 1 1/2 cups after blending.

The coconut milk adds a bit of creaminess. The yogurt adds tang. But if you have neither, just straight up milk/almond milk will be ok too. I’ve tried that before, just use 2 tbsp since milk is more liquidy.

4. Add flour and baking powder. Fold to combine till smoother and no dry flour remains. Don’t overmix.

5. Add vanilla and blended orange to batter and fold to evenly combine.

6. Pour batter into greased and parchment lined pan. This recipe makes exactly 12 cupcakes with 6tbsp batter for each. Optionally, sprinkle chopped almonds on top and pat them down gently to stick to batter.

7. Bake at 350°F for 55-60 mins or 35 mins for cupcakes. Inserted toothpick should come out clean and dry.

8. Let cool in pan for 15-20 mins before transferring to cooling rack. Let cool completely before icing and/or slicing.

HELLO FAM, GUESS WHO IS BACK  

Time for a recipe, this one courtesy of @hardmakerstrawberry who was kind enough to gift me a 10lb bag of organic sugar my dentist is weeping. Also a big thank you to my patreon sponsors who allow me to do what I do, you guys are amazing :D

Today I’ll be showing you how to make candied lemon peel the ole fashioned way, something which is actually rather simple to do but a lot of people feel intimidated by, largely I suspect because a lot of recipes don’t explain the process of how candying works, so I will attempt to do my best. The ingredients you will need to make candied lemon peel are 

2-3 medium sized unwaxed lemons

sugar

water

And that’s it. No other syrups or special ingredients needed. You will also need a knife, a chopping board, a medium to large sized pot and something to drain your pot with (I’m using my silicone colander because I’ve lost my sieve lol) and a wire rack for drying. 

I will stress before we begin, I am working with extremely hot sugar water for this recipe, and you need to be really careful not to burn yourselves with it. Sugar boils extremely hot, and I’d hate for anyone to hurt themselves trying, so if you do want to try this, please be very careful <3

Take your lemon(s) and give them a good scrub to remove any dirt/residue. I like to use my veggie scrubbing brush, it makes the bristles smell citrusy. Dry them off then take your knife and chop the ends off, then carefully cut the lemon into long quartered segments, like so.

Next you’ll want to remove the pulp while leaving the pith and outer peel intact, and there’s actually a really easy way to do this using a spoon. Take a teaspoon and wedge it just between the pith (white layer) and the pulp, and carefully prize the pulp free.

If you’re really careful you can usually keep the pulp whole, and use it for something else, either breaking it down for juicing, or throwing it into a roast dish to give your food a bit of zing. It will also keep pretty well in your refrigerator for another day or two, if you’re not ready to use it yet. Just make sure to keep it sealed and try to use it asap.

Next you’re going to start cutting the peel into strips.

You want them to be roughly about 1/4 inch thick, but you can do it thicker or thinner depending on what Aesthetic(tm) you are looking for. Just be aware that if you make it REALLY thin, it might actually dissolve during the sugar boiling process. It’s a learning curve. Once you’re done cutting, pop the peel into your pot, and cover with 2-3 inches of cold water, and bring to a rapid boil for approximately 10 minutes.

Now this is the important part, because you’re going to repeat this step two to three times depending on how sweet you want your peel to be. The reason we do this is is not only to make it soft and edible, but also to remove the bitterness from the pith as well. Boiling aslo helps to break down the natural pectin, which also helps to release more flavor and scent from the citrus oil glands in the skin, which is what you want. 

After the first ten minutes are up, tip your water out and blanch the lemon peel in fresh cold water, then return the cold water pot to the heat again for another ten minutes. Rinse and repeat once more, and by then you should have a nice transparent pith going on, and soft peel which you can easily bite into without much resistance, like so.

Compare the colors of the peel and the pith, once you’ve reached a nice level of translucency you’re ready to take it off the heat and prepare your sugar syrup.

Using a ratio of 1 cup sugar to 1 cup water, bring to a boil. You’re going to want enough syrup to cover the peel evenly. For preserving the peel, you’re going to want to get it up to 220′f (my sugar looks a lot darker here cause I did not use white sugar but blonde sugar, but it can get a little caramelly at this stage too) if you’re not so much concerned about preserving it for long shelf life like I am (I make a lot in advance for cake decorations) and plan to use it straight away, just get it up to a good hot rolling boil, and add your peel. Let it boil for a few mins, stirring frequently, then reduce to a simmer for about 20-30 mins. I know some websites say 4 hours but honestly unless you’re making a huge batch I don’t think it’s worth it. I’ve accidentally created hard boiled candy more than once that way.

Incidentally this also works really well for making orange and lime peel too if you want to mix things up a little (grapefruit also but I am allergic so it doesn’t grace my kitchen). And you can do it all in one big pot too and get a really deliciously concentrated citrusy syrup at the end up.

Or if you hate yourself and don’t have a big enough pot, in lots of separate little ones, yay 👍👍👍 .

I will say however that for limes, I had to blanch them a few extra times before the became soft enough, so just keep that in mind if you decide to do them all in one big pot. Maybe blanch the limes separate if you do. Anyway where was I, right yes, molten sugar. Please don’t burn yourselves. It hurts, like a lot. I blistered my fingers making this tutorial when I almost dropped my phone into the pot and it was bad very not good do not recommend no siree. So be careful when handling the syrup.

After you’re done, remove your pot from the heat. If you want to keep the left-over syrup (and why wouldn’t you*) you can scoop the peel out using a slatted spoon (Apologies I don’t have any pics of this stage, it’s rather hard to work with boiling sugar and a camera at the same time.) and let them drip dry a little before rolling them in sugar and then leaving them to dry on a wire rack, like so. 

*If you don’t want to keep the syrup, just drain it out into something like a sieve or a colander and try not to burn your fingers off as you pick the fruit out. I do like to keep the syrups, and incorporate them into my baking or add them into water to make flavored drinks:

(I’ll post the strawberry syrup soon but it’s basically all of the above minus the blanching, but I will say keeping the syrup adds a lot to home baking in terms of flavor, I like to sub it in in place of other syrups of sweeteners and it is 👌👌👌)

Also rolling the peel in sugar isn’t necessary, but I find it helps them to stop from clumping together during storage. Leave them to dry at room temp (I normally leave mine over night with a paper towel draped lightly over the top) for several hours, or if you intend to use them right away, wait until they are cool enough to handle and do with them what you will. Whether it’s baking them into cookies or decorating the top of a cake:

+ 2 oz. Buffalo Trace Bourbon

+ 1 oz. Black Tea Simple Syrup

+ Orange bitters

+ Crushed ice

In a Julep cup, lightly press one full and cleaned strawberry with 6-10 mint leaves

The mint julep is synonymous with horse racing and derby events like Packwood Grand. Sophistication and 

David made the point that this cocktail is usually served in a tin cup to keep the drink extra cool in hot weather, but you can use a tall collins glass, as well.

Can’t you picture us all in fancy dresses and obnoxiously large hats sipping this one under the hot summer sun? It starts a little boozy, BUT as the crushed ice melts it waters down the drink.

PS THE GARNISH. So cute!! David cored the strawberry and cut a small hole in the bottom. Then he stuck a bundle of fresh mint leaves through the berry and VOILA. How cute?!

Ingredients

+ 2oz No. 3 Gin

+ 15ml basil cucumber shrub**

+ 15ml cucumber water***

+ 15ml chamomile tea simple syrup (1:1)

+ 15ml fresh lemon juice

+ Ice

+ Graver Tree tonic

Instructions

Add No.3 Gin, basil shrub, cucumber water, simple syrup, lemon juice, and ice into a shaker tin

Shake well; strain into collins glass filled with ice

Garnish with cucumber peel and basil leaves

Notes

David’s Pro Tip: combine shrub, cucumber water, tea simple, and lemon juice to speed up your service

*Earl Grey/Chamomile simple

5tbls. Earl Grey or Chamomile, depending on which you’re making

1.5L water

1L sugar

Combine tea and water, boil, reduce by 1/3 strain solids, add sugar and bring to a simmer and let cool

**Basil Cucumber Shrub

5-6 sprigs basil

1 whole cucumbers peels (from the juicing stage)

1L apple cider vinegar

1L sugar

Bring vinegar and sugar to boil and pour it over basil and cucumber peels in a mason jar and seal! Best to leave for days but will be usable overnight

***Cucumber Water

2-3 cucumbers

Peel all the green and juice cucumber; cheese cloth or fine strain the pulp out

Note: This product has a one day shelf life

Atlanta, Georgia, Wednesday night, Mid-May

Brack Pelton waited in his Porsche by a no-parking zone in a very bad part of the city and watched someone he thought he knew well climb out of an old Eldorado convertible. The man entered a ramshackle building with a neon beer mug shining through its one dirty window.

Easing away from the red-marked bus stop, Brack found a better location down the block and pulled in. Before getting out of the Porsche, he woke Shelby, his tan mixed-breed dog slumbering in the backseat, and pulled a forty-five from the glovebox. He verified a round was chambered.

Shelby licked his lips and gave a quick bark as Brack slid the pistol down the back waistband of his cargo shorts.

Patting his dog on the head, Brack asked, “Ready?” A needless question. Another bark affirmed Shelby’s stand on things.

“When we get inside, your job is to find Mutt. Okay?” Shelby licked his face. Brack knew that as long as their target hadn’t escaped out some back door, Shelby would find him. Mutt was one of his favorite people. Brack’s too. That was why tracking him like this went against everything he believed in doing.

Mutt was the one who often rode shotgun with Brack as they’d right Charleston’s wrongs. Now Mutt was the one in the crosshairs. Thanks to an early morning phone call from Cassie, Mutt’s girlfriend, a life depended on answers his friend would give. The forty-five wouldn’t come out unless trouble came up.

The barroom’s rusty screen door screeched open. Shelby darted ahead, already focused on his objective. Brack entered a time warp. Uncanny how even the sour bar wash fragrance and cigarette smoke were the same. Through the old familiar haze, he imagined Mutt standing behind a peeling Formica counter pouring drinks to patrons who could barely afford their rent. Somehow, Mutt had managed to replicate his termite-infested watering hole three hundred miles west of where his original joint stood before some spoiled neighborhood brat burned it down.

“You lost?” A very large African-American man wearing a soiled wife-beater chalking a pool cue confronted the white newcomer.

Meeting his gaze, Brack said, “No. I’m looking for a loudmouth Marine named Mutt. If he’s here drinking, the rounds are on me. If he owns this place, I’m going to beat the life out of him.”

“Big talk coming from someone in yo’ shoes,” he said. Four other men flanked him, two on each side, all with arms folded across their meaty chests. Five soiled wife-beaters in a row. A worn-out AC unit clicked and sputtered, failing to condition the polluted air in the establishment.

Shelby seemed to take longer than usual to find Mutt. Only one thing could sidetrack him. But no women had ever been present in the original Mutt’s Bar in Charleston. They’d been afraid to enter the place.

Maybe Atlanta women were different. Casually Brack removed the half-smoked cigar he’d been saving in his pocket and lit it. The only faithful friend he had left at the moment was his own adrenaline. Brack was angry at Mutt and wouldn’t mind working it out of his system on these five gentlemen facing him.

Three more joined them. Okay, these eight gentlemen.

Brack felt more gather behind him. His wayward dog better have a real good excuse for not warning him.

Taking a drag on the stogie, he exhaled a cloud of smoke to add to the carcinogenic fog. “It’s going to be a bad day for some of you.”

Chuckles echoed around the room, undoubtedly at his expense.

Mutt pushed his way through the gathering mob. A few inches over six feet, he’d replaced his boxed Afro with a close trim since the last time Brack had seen him. His clothes were of a more recent vintage, another change, and to Brack’s untrained eye, quite stylish.

“Opie, you always got to do things the hard way, don’t ’cha?” Brack couldn’t decide if he wanted to punch him or shake his hand. The fact that his friend sported a bridge that replaced his missing front teeth also caught him off guard.

Shelby was not with Mutt. From behind, Brack heard the gruff words, “You want us to take this cracker out back, Mutt?”

Mutt knew as well as Brack did that they were greatly outnumbered. But Brack figured Mutt also knew that a few of his patrons would spend the next few weeks in the hospital if things went south.

Before either of them could say anything, a husky female voice came from somewhere in the crowd. “You got the prettiest dog.”

All the men turned in the direction of the voice. Through a break in the undershirt line, Brack observed a heavyset black woman in a way-too-tight purple body suit. Clearly she’d fallen in love with his dog. Her extra-long orange day-glo fingernails scratched behind his ears.

Sitting on his haunches with closed eyes, Shelby flapped his tongue and panted in what Brack recognized as pure bliss. Two other women wearing similar attire also gave Shelby their full attention. Brack was about to get pummeled by eight or more hulks itching to right the wrongs of their world, yet his dog had managed to pick up what looked like all the women in the establishment.

The spokesman for the wife-beater ensemble said, “We ain’t finished wit you, white boy.”

Brack turned back to him. Mutt got between them. “Easy, Charlie. He’s my brother.” The men looked at each other as if Mutt and Brack could possibly be related. Of course, they weren’t in the traditional sense.

“Summertime” by Billy Stewart began to play somewhere in the room. A real classic.

Circling Shelby, the women moved their ample hips to the beat. The dog, in plus-sized heaven, spun around, not sure which lady to kiss first.

A fourth woman Brack hadn’t noticed until now came from behind the bar to stand beside Mutt. Almost as tall as Brack, with dark brown skin, a buzzed haircut, and toned figure bordering on muscular. Her inked-up arms momentarily distracted Brack.

The man Mutt called Charlie said, “I don’t care who you think he is. He ain’t got the juice to come in here talking about beatin’ you up.”

Mutt turned to his old friend. “You said you was gonna beat me up?”

“Something like that.” Brack cocked his head. “I get a call begging me to drive here from Charleston. It’s Cassie. She’s scared half to death because some men threatened her, and she doesn’t know what you do when you leave her house late at night. Put yourself in her shoes.”

The woman bartender looked at him. “You must be Brack.” Mutt interrupted. “Opie, I’ma tell you like I tol’ Cassie. What I do is my bidness. She ain’t got no right to ask.”

Charlie moved in like he was about to throw a punch. Before Brack could react, the toned female bartender grabbed Charlie by the shirt collar and said, “You really don’t want to do that.”

Mutt said, “Easy there, Tara. We all friends here.” She didn’t let go. Charlie backed off. Brack dropped what was left of his cigar on the floor, crushed it with his foot, and turned back to Mutt. “You better tell me what’s going on, or I will beat the ever-living daylights out of you.”
