I don't add corn maza to my chili to thicken it- instead, I love tearing my corn bread and just dump the pieces in the chili- I get the richness with the kick from chipotle peppers of the chili mingling with the sweetness and cheese-iness of the corn bread!

Beef stew -these chunks of beef are seasoned with salt, freshly cracked black pepper and paprika then browned on all sides before onions and garlic are thrown in respectively followed by tomato paste, beef stock, red pepper flakes, golden potatoes, carrots and bell peppers. Then just let it cook on low till the meat is tender. I love adding sweet pickle relish towards the end for added flavor.

Coricos fresh off the oven! Again, the kitch smells amazing! And the cookies- buttery and melts in your mouth. I'm reminded of alphabet cookies but these taste better because I used Kerry Gold unsalted butter and has more texture because of the corn flour!
