Remember, if you’re frying a turkey:
- THAW THE TURKEY COMPLETELY
- Set up your fryer OUTSIDE and away from any buildings/structures
- Make sure the fryer is on level ground
- Before filling the fryer with oil, place the turkey in it. Add water until it covers the turkey. Remove the turkey and mark the water line, then empty and dry the fryer. That line is where you want the oil to be before you put the turkey in. Any more and the fryer will overflow when you add the turkey, leading to a fire.
- Have a way to lower the turkey carefully into the oil (don’t drop it in!) while protecting your hands from oil splashes.
Don’t be the reason that firefighters and paramedics have to work on Thanksgiving.

My dad deep fries a turkey most years. It can be done safely, but honestly I don't find it to be much different from turkey baked in the oven and generally not worth the expense, hassle, and potential risk of burning your house down.
