A proper old school lunch today with a classic coronation chicken salad 🥗 It always goes down a storm in our house! I made some extra for sandwiches tomorrow as well... Anyone with me when I say it's the best sandwich filling ever? 🤷🏼‍♂️ ~ Ingredients: 3 tbsp mayonnaise 2 tbsp plain yogurt 2 tsp medium curry powder 2 cooked chicken breasts, shredded 40g watercress 1/2 cucumber, sliced into half moons 50g cherry tomatoes, halved Juice 1 lemon 1 tbsp mango chutney 2 tbsp olive oil 2 naan breads, toasted and torn into chunks 2 tbsp toasted flaked almonds ~ Directions: 🌿 In a bowl, mix together the mayo, yogurt, curry powder and shredded chicken. 🌿 In another bowl, toss together the watercress, cucumber, and tomatoes. In a small bowl whisk together the lemon juice, mango chutney and olive oil. 🌿 Toss half the dressing in with the salad then plate up along with the chicken and naan. Chocolate orange brownies ✨ These chocolate orange brownies are a perfect indulgent treat for the festive period. Refined sugar free, thick, chewy and gooey, just as a perfect brownie should be 😋 ~ Ingredients: 150g dark chocolate (70% cocoa solids), chopped 175g unsalted butter, chopped 3 medium eggs 200g coconut palm sugar Zest of 1 orange 75g plain flour 40g cocoa powder Icing sugar to dust ~ Directions: • Melt the chocolate and butter together in a heatproof bowl over a pan of barely simmering water. Once melted, lift the bowl off the pan and set aside to cool for 20 mins. • Preheat oven to 180°C/160°C fan and lightly grease and line a 20cm square tin with baking parchment. Beat the eggs, palm sugar and orange zest together using a handheld electric whisk in a large bowl until thick and moussey - 4-5 mins. • Add the melted chocolate mixture to the egg bowl and fold together. Sift over the flour, cocoa powder and fold together. • Transfer the mixture into the baking tin, level off and bake for 30 mins or until there is no wobble left when you gently shake the tin. My dad makes the best pancakes. He used to make regular ones (before he found out he had a gluten intolerance) which were awesome. But his gluten free ones now are just as fantastic. He's the only (aside from my late grandmother) who cooks pancakes right.

🍋 Lemony lentil salad with griddled halloumi 🍋 I've been looking for a good halloumi salad recipe for a while and saw one by @sainsburys which I had to make. Turns out it was pretty good too! Teddy tucked into the cheese and loved picking the pomegranate seeds one by one 👌🏻 - the salad leaves ended on the floor though 🤷🏼‍♂️ ~ I N G R E D I E N T S For the dressing: 2 tbsp olive oil 1 lemon, juiced 1 tsp Dijon mustard 14g fresh mint, leaves picked and roughly chopped For the salad: 500g cooked puy lentils 1 small red onion, halved and very finely sliced 100g pomegranate seeds 80g watercress 225g light halloumi, cut into ½cm slices ~ D I R E C T I O N S 🌿 Combine the olive oil, lemon juice, mustard and mint and season.
