Sandwich with sesame-gochujang cauliflower and garlic-yoghurt sauce
Inspired by Vietnamese bánh mì thịt, this submarine sandwich pairs fresh vegetables with fried cauliflower coated in a spicy, tangy, savory, and sweet sauce. Toasted sesame oil and the fermented notes of gochujang add depth and complexity to the mildly nutty backdrop of the cauliflower, while the raw garlic in the yoghurt sauce brings the taste profile to a sharp head.
Also consider pairing the gochujang cauliflower with vegetables of your choice in a rice bowl or salad.

Ingredients:
Serves 4.
For the dish:
4 bánh mì, or 2 freshly baked baguettes halved and cut open
300g cauliflower florets (1/2 a small head)
1/2 cucumber, sliced
2 inches carrot, julienned
1 small roma tomato, diced
Other toppings of choice
Drizzle toasted sesame oil
1 Tbsp toasted sesame seeds
For the batter:
2 Tbsp (15g) all-purpose flour
2 Tbsp (20g) potato starch
1 Tbsp (10g) egg replacer for baking (optional)
Water
For the gochujang sauce:
2 Tbsp gochujang
1 Tbsp gochugaru (Korean red chili flakes)
1 Tbsp granulated sugar
1 Tbsp Korean soy sauce
2 tsp rice vinegar
2 cloves garlic, grated
1 green onion, sliced
Pinch salt
Pinch MSG (optional)
Several cracks ground black pepper
Water
For the yoghurt sauce:
1/4 cup non-dairy yoghurt
1 clove garlic, grated
1 tsp high-fructose corn syrup, or sugar
1/2 tsp rice vinegar
Pinch salt
Instructions:
1. Break cauliflower into smallish florets and wash. Prep vegetables.
2. Mix all gochujang sauce ingredients and use a blender or immersion blender to pulverise the green onion. Add a bit of water as necessary to achieve a slightly runny consistency. Set aside.
3. Mix all yoghurt sauce ingredients and whisk to combine. Set aside.
4. Heat a small pot with several inches of oil to 350 °F (175 °C). Mix all dry batter ingredients in a mixing bowl. Add just enough water to obtain a mixture the consistency of pancake batter. Do not overmix.
5. Coat cauliflower with batter and carefully drop one floret at a time into the oil. You may have to fry them in multiple batches. Fry until lightly golden brown and floating. Set aside onto a paper-towel-lined plate.
6. Increase the heat to bring the oil to 400 °F (200 °C). Fry cauliflower again for 30 seconds until deeply golden brown. Set aside.
If you aren't comfortable deep-frying, you may bake battered cauliflower at 400 °F (200 °C) for 30 minutes, turning over halfway through.
7. Heat a large skillet on medium and cook gochujang sauce, stirring often, until thickened. Add cauliflower and stir to coat. Drizzle in sesame oil and sesame seeds and stir again.
8. Serve immediately with bread, vegetables, and yoghurt sauce.

Nevarran Flat Bread and Yogurt Dip


DON’T LISTEN TO THE RECIPE ITS TOO MUCH SALT 🗣️
Super disappointed in this one, wish I had searched other people’s experiences with the recipe before trying it myself. The bread was salty to the point of being inedible and I had a hard time parsing out any other flavors in the dip :( I’ll try again eventually but Man…
Oddly not the first time this has happened. My brother made a crème brûlée recipe from the Sonic the Hedgehog cookbook and my mouth burnt with salt. We followed the recipes but at what cost 😔
Notes:
I would use 1 tsp of salt for the yogurt dip and 2 tsp for the bread
I used caraway seeds instead of black cumin seeds just because that’s what I had

There's something supremely satisfying about a tall stack of Nevarran flat bread-and I don't just mean in the aesthetic sense. Of course, being pleasing to the eye is certainly a consideration. This is a Nevarran dish, after all. But the process of being able to go from dough to ready-to-eat bread in minutes reaches a whole level of satisfaction on its own, especially if you're used to waiting hours for a loaf to finish baking! Best of all, this bread can be eaten in a variety of different ways, whether on its own, brushed with oil, or as a vehicle for an assortment of dips. Personally, I'd love to try it with a good stew from home one day

Ingredients
Yogurt Dip
1 cucumber
2 tablespoons salt, plus more to taste
1 small carrot, finely grated
4 garlic cloves, minced
18 ounces Greek yogurt
2 tablespoons olive oil
1 tablespoon lemon juice
Pepper
2 sprigs fresh mint, leaves only, minced
Flat Bread
4 cups plus 2 tablespoons wheat flour, plus more for the counter 5½ tablespoons salt
2 teaspoons olive oil, plus more for the bowl 2 teaspoons sugar
1 package active dry yeast
1½ cups plus 4 teaspoons water
1 egg
Black cumin seed, for sprinkling
Equipment

To make the yogurt dip:
Wash and peel the cucumber, then cut it in half lengthwise. Use a small sharp knife to cut out the core. Grate the cucumber and transfer it to a bowl. Stir in the salt and allow to stand for 30 minutes. Then strain, collecting the cucumber water below the strainer.
Transfer the grated cucumber to a clean dish towel and use your hands to squeeze out as much of the remaining liquid as possible into a small bowl.
Combine the carrot, garlic, yogurt, cucumber liquid, and cucumber in a large bowl. Stir well to combine. Season with olive oil and lemon juice, and then generously season to taste with salt and pepper.
Cover loosely with plastic wrap and refrigerate for at least 6 hours ideally overnight) for the flavors to meld.
Before serving, stir thoroughly and fold in a bit of freshly chopped mint. The dip is best enjoyed slightly chilled.
To make the flat bread:
Combine the flour, salt, oil, sugar, yeast, and water in a bowl, and knead by hand until a very soft dough forms (about 8 minutes).
Transfer to a separate oiled bowl. Cover the bowl with a clean dish towel and allow the dough to stand in a warm place for 90 minutes.
Transfer the dough to a lightly floured surface, and divide it into four equal portions. Shape the pieces of dough by hand into a somewhat oval form, and press lightly to flatten. Set the dough on a baking sheet lined with parchment paper. Cover the baking sheet with a clean dish towel, and allow the dough to stand for 20 minutes.
Whisk the egg and 1 teaspoon water in a cup. Brush the tops of the dough with the egg wash, then sprinkle with black cumin seed to taste. Allow the dough to stand, covered, for another 20 minutes.
Preheat the oven to 475°F.
Bake the flat bread for about 7 to 9 minutes until golden brown; then remove it from the oven and allow it to cool on the baking sheet for 5 minutes. Serve as promptly as possible with the yogurt dip. The bread is also excellent with Stuffed Vine Leaves (page 105).

And if you have the eating disorder AFRID, definitely talk to a doctor/dietician about incorporating more into your diet, you don't have to do this alone.
Also, here's some veggies that I enjoy, and I would highly recommend people try:
Broccoli. You can either have the green giant broccoli and cheese, which comes in a steamer and is super easy to make. Or perhaps you can get some frozen ones and put it in a broccoli and cheese Knorr's sides. It's really good either way and pretty tasty. I also recommend beef and broccoli frozen dinners, they're pretty tasty.
Green beans. I hate green beans on their own, but there's this frozen PF changs tempura green beans and its really delicious made in an air fryer or something. I eat them like french fries.
Cucumbers. If you love crunchy veggies, this is the one for you. I usually like serving them with ranch (or any salad dressing) and crispy onions (salad topping), it's really yummy to eat like that. But you can also have pickles, I prefer pickles in a burger or something, and that's a good way to eat them, but you're allowed to eat them on your own.
Potatoes. Everyone's had potatoes before, but I'll share a recipe that is my favourite. Get a bunch of baby potatoes, cut them up into quarters, wash them, pat them dry with a paper towel. Now put them into a gallon bag or a container, with one or two capfulls of oil and onion soup mix, and close it tightly. start shaking that bag!!! shake it up until its all completely covered. Now place them onto an aluminum lined baking sheet and spread them out with a spatula or something. Put them in the oven or toaster oven for about 20-30 mins for 375 or 400. It will become nice, crispy and tasty. I look forward to it whenever I get the chance to have them. Highly recommend this recipe.
There's also tons of super yummy frozen dinners that is easy to make, I really like simply choice ones as they're delicious and healthy. Food prep is a pain in the ass, so you don't need any for that.
I'm gonna be honest, there's veggies I'll never touch in my life, but I definitely do recommend finding your safe veggie, or your preferred veggie recipe/item. Once you've found your veggie comfort zone, you'll be able to keep trying more, and you may find more you like or more you dislike. It's okay to refuse things, but try veggies with food you do like. You got this. :)
i mean this in the gentlest way possible: you need to eat vegetables. you need to become comfortable with doing so. i do not care if you are a picky eater because of autism (hi, i used to be this person!), you need to find at least some vegetables you can eat. find a different way to prepare them. chances are you would like a vegetable you hate if you prepared it in a stew or roasted it with seasoning or included it as an ingredient in a recipe. just. please start eating better. potatoes and corn are not sufficient vegetables for a healthy diet.

Did y'all know???
No, obviously you didn't. My sister was bitching about me using all the fruit. I did not even remotely use all the damn fruit. She shoved it in the freezer and forgot about it.
And then I'm over here meticulously cutting the strawberries into blender-friendly pieces, freezing the pieces so they don't get stuck together, so she can only use exactly what she wants or needs.
Oh, and I got one bowl of the mushy strawberries to make preserves.
But when we got back in, I was rather looking forward to at least putting my cut and frozen fruit into a container for storage. Between my migraine and how hot it was out today and how all my energy just vanished, I guess it's fine whatever, I'll just do that while I make my preserves tomorrow.
Randomly, I'm holding on to all of the strawberry tops and I'm going to throw them in the compost when I'm done. I'm so curious how much strawberry top material is going to be produced.
Then my sister (fairly and reasonably) got on me about continuing my education and advocating for myself in getting the help that I need with this.
As happy as I presently would be to do this whole strawberry thing again, I think I would feel more fulfilled with a career that will let me make some of the changes I want to make to the world. On the other hand, I kind of want to wash my hands of gardening and food preservation and lock myself away with my graphic novel script planning until I'm sick of writing.
I am getting really sick of being outside. I'm just not an outside kinda person. I'm almost done fucking around with plants: I have to dig out the patch for the peppers, and I'm waiting for the digging people to tell me where the lines will are. Once the lines for the lines are all drawn, I put down my sister's trees, and that's it.....apart from watering and weeding, and when we get there, harvesting and most of the preservation, whether that's canning or preparing for freezing.
I'm honestly so relieved to be done with the hardest part.........for this year. Depending on what I'm doing next spring, it'll be time to do it again in no time. If I'm busy next spring, like I keep saying, I'm just going to put down ground cover and we can mulch it when my sister gets back. I might, however, join my dad in using some raised boxes.......but what the hell would I even grow?? I don't like bell peppers. I don't think I want to make tons of pickled cucumbers. That's all I personally can do with cucumbers, as I can't eat them raw. I refuse to cut onions. I don't understand what else to do with cabbage besides feed it to the small animals. I can probably continue growing tomatoes, but really, how many jars of tomatoes and sauce and sun-dried and paste is one realistically going to want? I'm not really positive what else she bought--we were going to do potatoes this year, but personally, with the soil we have here, I don't think potatoes would like it. I bought sage. I only germinated a few before the chickens ate them as well.
I would have absolutely no problem continuing to look after the berry plants. I have no problem preserving fruit as I have the time.
Snap peas are good.
We were going to grow beans before the chickens ate the plants. Beans dry pretty easily, or I could.....well, no wait. I don't think anyone wants to eat sour beans. Beans are good to have at the back of the pantry, just in case, in my opinion. I find factory canned beans to be more convenient.
My dad is currently growing an asparagus plant. I like asparagus.
Oh, we are currently growing spinach and broccoli and I think that's cool as fuck. I wouldn't say no to growing carrots, but I'd also want a large, deep container, like a barrel, to grow carrots. Did you know you can grow dandelions as a microgreen??? I am so seriously thinking about growing my own dandelions on purpose so that it's a controlled quantity and they won't get mowed.
I think my sister would be really pleased if I could establish a couple apple trees and cherry....bushes?
