Hopped onto the free shuttle bus to Sembawang Shopping Centre for some grocery shopping and dinner. Checked with mum if she would like to have pasta today and proceeded to Saizeriya (サイゼリヤ) at the basement floor. It is an Italian casual dining restaurant from Japan with wallet friendly prices. They have a new seasonal menu with four new dishes so I chose one from there in addition to two pastas.

Ordered the Black Pepper Chicken Spaghetti (S$5.90) for mum since that is the one she always had and she is not keen to try the other pastas. Hers came with black pepper sauce with grilled cubes of chicken.

I went for the Black Truffle & Mushroom Spaghetti (S$7.90) with truffle cream sauce and plenty of earthy mushrooms. For sharing, this Creamy Mala Chicken (S$7.50) with a grilled boneless chicken steak, potato wedges, corn kernels in a rich and spicy mala sauce. To be honest, there isn’t much of the white sauce and the mala paste is not as spicy as you think it is.

Avocado Chocolate Mousse
4 servings Prep Time: 10 minutes + chilling time
Ingredients:
2 ripe avocados, peeled, pitted, and mashed
1/4 cup unsweetened cocoa powder
1/4 cup maple syrup (or honey)
2 tablespoons unsweetened almond milk (or your preferred milk)
1 teaspoon vanilla extract
Pinch of salt
Optional Toppings:
Fresh raspberries or berries
Chocolate shavings
Whipped cream (or coconut whipped cream for dairy-free)
Chopped nuts
Instructions:
Combine Ingredients: In a food processor or blender, combine the mashed avocados, cocoa powder, maple syrup, almond milk, vanilla extract, and salt.
Blend Until Smooth: Process the mixture until incredibly smooth and creamy. It should have a thick, pudding-like consistency. Taste and adjust sweetness as needed.
Chill: Transfer the mousse into individual serving bowls or a larger dish. Cover and refrigerate for at least 1-2 hours to allow the flavors to meld and the mousse to set.
Serve: Before serving, top with your favorite optional toppings like fresh berries, chocolate shavings, whipped cream, or chopped nuts.
Tips:
Picking Avocados: Choose ripe avocados that yield slightly to gentle pressure.
Sweetness: Adjust the amount of maple syrup based on the ripeness of the avocado and your desired level of sweetness.
Variations: Experiment with a hint of orange zest, a pinch of cinnamon, or a dash of espresso powder for extra flavor dimensions.

I made a great batch of ricotta cheese today. It's so light and creamy, with a slight hint of lemon from the lemon juice that I used to make it. It is the best cheese that I have made so far. Delicious 😋 Now, I gotta figure out what to make with it. I'm thinking that I should make stuffed shells with this ricotta and some real Italian cheeses that I got from New York. That sounds wonderful. It's either that or a ricotta cheese cake. They both sound good. I might have to flip a coin to decide. 😁 either way, it'll be delicious 😋 Remember.... you've got a friend in cheeses 🧀 😉😁😍

I've been cooking a lot lately and I have really discovered the joys of vegan recipe sites. I'm a vegetarian, but I don't like the taste of eggs or milk or most types of cheese and I'm lactose intolerant, so while I'm not giving up the occasional pizza when it comes to cooking myself I tend to find things on vegan sites waaaaay more appealing than vegetarian or omnivorous sites. I made the most amazing dish tonight and it called for cashew cream and it was my first time making that and it was sooo good. It made the dish really rich and creamy without the gross milky flavor in actual cream based dishes and without upsetting my stomach. I feel like I have solved the secrets of the universe lol.
