Episode 1 - Turkish Eggs
Servings : 1
Total Time: 20 minutes
Level: Easy
Ingredients
2 x Eggs (Room Temperature)
Double Cream Yoghurt (4-6 tbs)
Minced Garlic (1 tsp)
Salt (to
Chili Flakes (1 tbs)
Butter (1 tsp)
Coriander/Dill (10 sprigs)
Honey (1 tsp)
Olive Oil
Special Instructions
Get your eggs and yoghurt out of the fridge for about 10 minutes before prep to get room temperature.
Preparation
Time : immediately before cooking
Roughly Chop Coriander
Place Chili Flakes in a dish
Special Utensils and Tools
Non-stick pan
Wooden Board (to hold your bowl and your serving accompaniments)

Preamble
I use fried eggs because I don’t have the confidence or the patience for a poached egg. The original calls for a poached egg, but it’s your kitchen and your life. A slow cooked fried egg won’t hurt you and it definitely won’t hurt your feelings like the inability to poach an egg will.
If you want to poach your eggs, then you’re more than welcome. If you’re as defeatist as me, then stick with me.
Instructions
In a serving bowl, mix Double Cream yogurt and garlic throughly using the back of a dessert spoon. Add salt and pepper for seasoning. (If you want to lightly heat your yoghurt over stream, you can. I use room temp yogurt and the residual heat from the chilli butter) Create a “well” for the eggs in the bowl by pushing the garlic yoghurt to the sides.
Add olive oil/neutral oil to non stick pan, crack eggs into the pan and allow eggs to fry as the stovetop warms
Once the eggs are cooked to your desire, slip them into the serving bowl. Swoop the garlic yoghurt mixture over the egg whites
Dollop the butter in the remaining egg oil, once screaming and bubbly decant the heated fats into the bowl with chilli flakes. Drizzle the hot chili butter onto your eggs as desired
Drizzle honey on the top of the entire dish
Top with corinader or dill, and season with salt
Serve with two golden slices of toast or heated flatbreads.

INGREDIENTS  
200 grams Boneless Chicken
2 tbsp Ginger-garlic paste
2 ½ tbsp Corinader Powder
2 tbsp Chilli Powder
2 tbsp Garam masala Powder
1 tsp Turmeric Powder
½ Lemon's juice
2 tbsp coconut oil for marination
Coconut oil for cooking
Few curry leaves
Salt to Taste
INSTRUCTIONS
Wash the chicken thoroughly.
Add all the spices one by one over the chicken. Pour 2 tbsp of oil and lemon juice along with the spice powders. Season it with salt as well.
Mix them evenly and rest the marinated chicken for at least 30 mins.
Heat enough oil in the pan for shallow frying the chicken.
Place the marinated chicken one by one in the pan and do not over-crowd them.
On medium flame, fry them for 15 mins or until the chicken is fried well.
Once the bottom is fried well, turn the chicken to the other side and add a few curry leaves over the chicken and gently mix them.
Cook the chicken until they are fried well.
Serve hot.

Add salt and black pepper to it. Grease your clean palms and make lemon size balls, flatten them and stuff, chopped raisins and cashews in it..
Roll them again, keeping in mind, no cracks are formed. Else they might break in oil. Fry each of them on medium heat.
Gravy – Soak 5-6 cashews in little warm milk After 5 minutes, churn them in mixy to form a fine paste, keep aside..
Meanwhile, take a kadhai and add oil, finely chopped onion, ginger garlic paste and cook them on medium flame, till they turn pink..
Add in tomato puree, salt, kashmiri laal mirch, haldi powder, coriander powder, cook it till it leaves it side. Switch off the gas, cool the gravy.
When it is cooled down, put it in mixie jar and give it a nice churn. Pour it again in kadhai, add little water to it, make thick gravy consistency. After one boil, add in cashew paste, kasoori methi, kewra essence, honey, add one teaspoon cream to it. Switch off the gas.
While serving, warm your koftas in microwave and pour in hot gravy, on top of it. Garnish it with elaici, powder, garam masala powder, chopped coriander and few drops of cream.Serve it with your fav bread like lachha parantha or naan! Happy feasting!.
Notes: Clean the papaya, nicely and remove the white seeds and thin white layer from inside, before grating Koftas are very soft, so do not boil it in the gravy for too long..

GRILLED HALOUMI & ASPARAGUS WITH SALSA
2 Bunches Asparagus, ends trimmed
One tablespoon Olive oil
250 g packet Haloumi, sliced
AVOCADO SALSA
In a bowl, combine all ingredients. Season to taste:
250 g cherry tomatoes, quartered
1 Avocado, seeded, peeled, cubed
2 Tablespoons coriander, chopped
1 Eschalot, finely chopped
1/2 birds eye chilli
1/2 Lime juice
METHOD
Preheat barbecue grill and plate on high
In a bowl, toss asparagus in oil, season to taste.
Cook on grill 2-3 minutes, turning, until tender
Cook haloumi on plate 30 seconds each side, until golden
Pile aspargus and haloumi on serving platter, cover with Salsa
Dress with extra lime and corinader

This week we have nasi ayam biryani, aloo mushroom masala and palak paneer ! I think this is the prettiest rice I’ve made. I made the rice separate from the chicken this time bc I wanted more distinct flavours. Here’s an earlier nasi biryani I made @ my old apartment w/ Tin Tin where I baked the meat and the rice together. Also when I still bothered to make my own naan. 
The yellow comes from saffron and tumeric. I added toasted pine nuts and cashews, pomegranate arils, golden and black raisins and chopped corinader leaves. I only had time to marinate the chicken for a couple of hours instead of overnight so I think tt affected how it was cooking on the stove originally. I switched to baking it in the oven after about 10 minutes. If it had been left to marinate overnight I think the chicken would have absorbed it more. On the stove, the chicken was sort of cooking w/ the sauce laying on top of it instead of being saturated w/ it. I usually also make a mint/corinder chutney w/ mango but they didn’t have mangoes @ the store. ☹️You can see the chutney and another palak paneer (it’s my favourite !!! 🌱🧀🌱🧀) here when I cooked our last meal together w/ Mayhim. 💛🐱 
Tiny kitty looked too cute, I couldn’t choose one ! Shortly after, she wanted to chomp on the skinner portion of the drumstick. You can tell she was angling for it the whole time. I usually use whole thighs but they didn’t have any at the store this weekend.

Clean and cut the okra into thin lengthy pieces.Heat oil in a pan and saute onion , ginger,garlic and green chiles for a couple of minutes and add sliced okra and fry until they are well sauteed , for about 10- minutes 2. Add chopped tomato fry for a minute , followed by chili powder, corinader powder and turmeric powder toss it well for a minute. 3. Add salt , thin coconut milk and boil for 5-7 minutes.Pour the thick conut milk and garam masala and crushed black pepper , simmer for a couple of minutes and remove from heat. 4. CHICKEN FRY
Chicken Fry is an aromatic, spicy and flavourful fried recipe that goes amazing with hot rice with rasam or any other lunch recipe. The ingredients are very simple and there is no big deal to make this chicken fry. I have used broiler chicken for this recipe but you can either prefer country chicken or broiler.
INGREDIENTS
