Currant Scones
source: The Flavors of Bon Appétit 1997
3 cups all purpose flour
3 tablespoons sugar
1 teaspoon baking soda
1⁄2 teaspoon salt
6 tablespoons (3/4 stick) chilled unsalted butter, cut into pieces
1⁄3 cup dried currants
1 egg, beaten to blend
3⁄4 cup plus 3 tablespoons (about) buttermilk
1 tablespoon milk
Butter or whipped cream
Assorted jams
Preheat oven to 425°F. Lightly flour large baking sheet. Mix 3 cups flour, sugar, baking soda and salt in large bowl. Add butter and rub in with fingertips until mixture resembles fine meal. Mix in currants. Mix in egg and enough buttermilk to form soft dough. Turn dough out onto floured surface. Pat dough into 3/4-inch-thick round. Cut out rounds, using 2 1/2-inch round cookie cutter. Gather scraps, press together and pat out to 3/4-inch-thick round. Cut out rounds. Transfer scones to prepared baking sheet. Brush tops with milk. Bake until scones are golden brown and cooked through, about 18 minutes. Serve warm with butter or whipped cream and jam.

Ava and I participated in our first Cook the Book Cookbook Club at @farmingtonpubliclibraryar last night. Everyone made a different recipe from the monthly featured cookbook and then we brought them in to share together and discuss at the library. We made Fall Crostini with brie and orange marmalade, and Ashton and Stella even got to join us! Gougères

These wonderfully cheesy little puffs of pâte à choux-cream puff pastry- are easy to make and terribly popular at a party-so make lots!
1 cup water
1/2 cup (1 stick) unsalted butter
1/2 teaspoon salt
1/4 teaspoon ground pepper
1 cup all-purpose flour
4 medium-size eggs
Makes 26 to 30 puffs
3/4 to 1 cup grated Gruyère cheese
1 teaspoon dry mustard
Pinch of cayenne pepper
Grated Parmesan or Gruyère cheese or small cubes of Gruyère for garnish Combine water, butter, salt, and pepper in a medium-size saucepan and cook over medium heat until the butter melts. Add the flour all at once and stir the mixture vigorously and constantly, still over medium heat, with a wooden spoon or spatula until it is very firm and pulls away from the sides of the pan. Off the heat, add the eggs, one at a time, beating vigorously after each addition until completely incorporated. The dough should be smooth and glossy. Add the 3/4 to 1 cup grated cheese, mustard, and cayenne, and blend thoroughly. Drop the mixture by small spoonfuls onto a lightly buttered baking sheet, or if you want to be a little fancier, pipe small puffs of the mixture through a plain-tipped pastry bag. Sprinkle the tops with additional grated Gruyère or Parmesan cheese or place 2 or 3 small pieces of Gruyère on top of each puff. Bake the gougères in a preheated 375° oven for 30 to 40 minutes, or until puffed and golden brown. Remove from the oven and make a crosswise slash in the bottom of each to allow excess steam to escape. Return the gougères to the warm oven for a few minutes to dry them. Serve hot or at room temperature.

Repost @rainydaybites - Chicken and rice, street cart style with warm pita bread and served with a creamy white sauce, spicy red sauce, and salad. Street food is often the best rustic comfort food you’ll find. When I saw this recipe in Smitten Kitchen Every Day by @debperelman of @smittenkitchen I knew it was a must make and it did not disappoint. Chicken thighs marinate overnight in lemon, garlic, olive oil, paprika, coriander, cumin, cloves and oregano. The thighs are cooked until crisped up on the edges. Jasmine rice is toasted in the pan with tumeric and cumin and then stock is added in. The thighs are chopped and then seared at the last minute and everything is served up in bowls with a tangy white spicy and a spicy red sauce. This is absolutely delicious and another favorite from this fantastic book which will go on repeat in our house! This is the second recipe challenge this month for our #rainydaybitescookbookclub.
