Chicken with Forty Cloves of Garlic 
Source: The New James Beard 1989
A Provençal recipe I taught for years in my classes-and which never failed to astonish the students. They couldn't believe we would use forty garlic cloves, but the slow braising softens the garlic to a lovely buttery consistency and delicate flavor, like the garlic purée on page 534.
Makes 8 servings 
2/3 cups oil
8 chicken drumsticks and thighs (or use 16 drumsticks or 16 thighs)
4 ribs celery, cut in long strips
2 medium-size onions, chopped
6 sprigs parsley
1 tablespoon chopped fresh tarragon
(or 1 teaspoon dried)
1/2 cup dry vermouth
2 1/2 teaspoons salt
1/4 teaspoon freshly ground black pepper
Grated nutmeg
40 cloves garlic, unpeeled
Put the oil in a shallow dish, add the chicken pieces, and turn them to coat all sides evenly with the oil. Cover the bottom of a heavy 6-quart casserole with a mixture of the celery and onion, add the parsley and tarragon, and lay the chicken pieces on top. Pour the vermouth over them, sprinkle with the salt, pepper, and a dash or two of nutmeg, and tuck the garlic cloves around and between the chicken pieces. Cover the top of the casserole tightly with aluminum foil and then the lid (this creates an airtight seal removing the cover. so the steam does not escape). Bake in a 375° oven for 1 1/2 hours, without removing the lid. 
Serve the chicken, pan juices, and whole garlic cloves with thin slices of heated French bread or hot toast. The garlic should be squeezed from the root end of its papery husk onto the bread or toast, spread like butter, and eaten with the chicken.

Ava and I participated in our first Cook the Book Cookbook Club at @farmingtonpubliclibraryar last night. Everyone made a different recipe from the monthly featured cookbook and then we brought them in to share together and discuss at the library. Repost @rainydaybites - Chicken and rice, street cart style with warm pita bread and served with a creamy white sauce, spicy red sauce, and salad. Street food is often the best rustic comfort food you’ll find. When I saw this recipe in Smitten Kitchen Every Day by @debperelman of @smittenkitchen I knew it was a must make and it did not disappoint. Chicken thighs marinate overnight in lemon, garlic, olive oil, paprika, coriander, cumin, cloves and oregano. The thighs are cooked until crisped up on the edges. Jasmine rice is toasted in the pan with tumeric and cumin and then stock is added in. The thighs are chopped and then seared at the last minute and everything is served up in bowls with a tangy white spicy and a spicy red sauce. This is absolutely delicious and another favorite from this fantastic book which will go on repeat in our house! This is the second recipe challenge this month for our #rainydaybitescookbookclub. Cheeses: 6 month Manchego, Monte Enebro, and Mahon Meats: Jamon Serrano and Mild Chorizo Extras: Tortas de Aceite, Quince Paste, Fig Almond Cake, Marcona Almonds I love putting together boards with a concept or theme, and Spanish is actually one of the easiest to achieve. Spicy Squash Soup
Source: California Wine Country Cooking Secrets (1993)
Serves 6
Preparation Time: 45 Minutes
Pre-heat oven to 350°
2 butternut squash
2 yellow onions
1 mild chile pepper
1 Tbsp. butter
1 qt. chicken stock
1 Tbsp. whole cumin seeds Whipped cream garnish
1 cup pine nuts
Salt and pepper to taste
Cut squash in half and discard pulp. Place face down in roasting pan with enough water to coat the bottom. Bake at 350° until soft. Remove from oven and peel off skin. Sauté the onions and chile pepper in butter over low heat. When onions are transparent, add the cooked squash and any remaining juices from the squash pan. Add the chicken stock and bring to simmer. Toast cumin seeds in hot dry pan until golden brown. Remove and grind to a fine powder. Add to the soup with the salt and pepper to taste. Garnish with a dollop of lightly whipped cream and toasted pine nuts.
