Hasselback Potatoes
Chef’s Note: Glorified baked potatoes, but it feels novel to eat. Also I really like the topping (cream cheese and everything bagel topping)

Ingredients
Potatoes
4 large russet potatoes
2 tbsp extra-virgin olive oil
1 garlic clove, grated/minced
Kosher salt
Toppings
4 tbsp cream cheese, softened
1/4 cup boiling water
1 tbsp sesame seeds
1 tbsp dried onion flakes
1 tbsp garlic powder
1 tbsp poppy seeds
(opt.) Sriracha or hot sauce
(opt.) Diced red onions
(opt.) Freshly chopped chives
Instructions
 Potatoes
1. Preheat the oven to 425°F.
2. On a cutting board, place a potato lengthwise between two chopsticks. Cover the chopsticks with a paper towel to protect them. Partially slice each potato into 1/8”-thick slices, making sure not to cut all the way through by using the chopsticks as a safety guard.
3. Place cut potatoes on a large, foil-lined baking sheet.
4. In a small bowl, whisk together oil and garlic. Brush half the garlic oil mixture all over the sliced potatoes. Season each potato with salt
5. Bake potatoes for 30 minutes.
6. Remove potatoes from the oven, then carefully fan out the slices by gently squeezing while twisting the potato with just your index finger and thumb. Brush remaining garlic oil mixture onto the potatoes, making sure to brush in between the slices.
7. Continue baking for 40 minutes more, until potatoes are completely tender and the slivered tops have bloomed outward and turned crispy and deeply golden.
 Make Cream Cheese Sauce + Toppings
*You do this while the potatoes are baking
1. In a small bowl, combine softened cream cheese with boiling water, whisking until smooth.
2. In a second small bowl, combine sesame seeds, dried onion, garlic powder, and poppy seeds. (This is the Everything Bagel seasoning)
3. Once potatoes are done, drizzle with cream cheese sauce and (optionally) hot sauce. Sprinkle with the Everything Bagel seasoning, red onions, and chives before serving.

sometimes work involves:
running the soil hopper a little bit. I needed flats to plant seeds into! the machine was very well-behaved. ✨ ah and I left a whole trolley full of flats directly in everyone's way in the cold house and am not in tomorrow OOPS.
planting chives seeds! exciting. the workroom roof is corrugated plastic so when the weather does whatever tf it was doing today, it is Exceedingly Loud. always feels like the whole structure's gonna come down on you during the next wind gust.
