Bacon, Tomato and Courgette Casserole

When one intends to bake a Flan de Courgettes for dinner and that the first egg you break is bad, and that the three others after that "feel wrong", one has to think on one's feet and come up with another recipe, which is exactly how this Bacon, Tomato and Courgette Casserole came about! And with its bright colour and smoky flavour, it was just as tasty as the intended meal! Happy Wednesday!
Ingredients (serves 3 to 4):
1/2 tablespoon Chilli and Herb Oil + more, for drizzling
2 large courgettes, rinsed
1/2 teaspoon fleur de sel
1/2 teaspoon freshly cracked black pepper
1 teaspoon dried thyme
4 Whole Peeled Tomatoes + 1/3 cup of their juice
1/2 tablespoon caster sugar
1/2 teaspoon smoked paprika
1/4 teaspoon Red Chilli Flakes 
2 rashers smoked streaky bacon
Preheat oven to 200°C/395°F.
Drizzle Chilli and Herb Oil at the bottom of a large roasting tin.
Using the coarse side of a box grater, grate courgettes into the tin. Season with fleur de sel, black pepper and dried thyme, tossing gently to combine. Set aside.
Roughly chop Whole Peeled Tomatoes, and spoon into a bowl, along with all their juice. Add caster sugar, smoked paprika and Red Chilli Flakes.
Spoon mixture onto the courgettes, levelling with a spatula.
Tear bacon rashers into bits and scatter liberally on top.
Drizzle all over with a little more Chilli and Herb Oil.
Place tin in the middle of the hot oven, and bake, at 200°C/395°F, for 30 minutes.
Serve Bacon, Tomato and Courgette Casserole hot, with.

I'm right behind this - I make my own Hot Crispy Oil!
It's dead simple: a heaping palmful (about a cup) of whole dried peperoncini piccante get simmered very slowly in olive oil until the oil is red and the chillis are (a) chocolate-coloured and (b) crispy.
There's nothing else in mine (I've seen versions with capers, anchovies, garlic, shallots - not here). The oil has a toasty scent and a slow burn, the chillis have a crunchy texture and a fast burn.
Let it cool, then store in clean jars. This simple oil has nothing in it to go off, so should last for months - but never does because it's drizzled over, or the crunchy chillis get mixed into, so many things.
In fact making double the amount is probably a good idea... :->

Spicy Lime and Vanilla Prawn Skewers

Ingredients (serves 4):
16 fresh King prawns
2 limes
1/4 teaspoon ground chilli
1/4 teaspoon freshly cracked black pepper
2 teaspoons Homemade Vanilla Extract
2 tablespoons Chili and Herb Oil 
Rinse King prawns under cold water and pat them dry; set aside.
In a large baking tin, grate the whole zest of one of the limes.
Add ground chilli, black pepper and Vanilla Extract. Thoroughly squeeze the juice of one lime in the tin. Drizzle in Chili and Herb Oil, and give a good stir until well-blended.
Add King prawns to the tin, and toss thoroughly to coat in the marinade.
Cover with cling film, place in the refrigerator, and allow to marinate, at least a couple of hours.
Heat your oven grill to the highest setting. Line a baking tray with baking paper.
Place four marinated prawns onto each of four metal skewers (or wooden skewers which you have soaked in water for a bit!); and arrange them onto prepared baking tray.
Cook under the grill, 15 minutes, carefully rotating the skewers halfway through cooking. Or, you can grill them on a barbie, too!
Cut remaining lime into wedges.
Serve Spicy Lime and Vanilla Prawns Skewers hot, with lime wedges and Garden Herb Mayonnaise.
