prompted by asks and @sangwoochos here is the sauce kings favorite sauces / condiments to make in his house.
nam prik pao / thai chili jam. chilies, garlic, shallots, tamarind, palm sugar, fish sauce and fermented shrimp paste. depending on the maker of the sauce you get varying levels of flavors. his is less sweet and more foward on the heat and fish taste. honestly for this he likes to be lazy and mix it in with microwave brown rice and throw a fried egg on top when he’s too tired to cook a full dinner for himself.
brown garlic sauce. a kind of all-arounder stir-fry sauce he just dumps on stuff lol. soy sauce, rice wine, sugar, white pepper, ginger, etc etc etc etc. he’ll repurpose this for just about anything if given the chance.
dipping oil for bread n stuff. listen vi loves charcuterie boards. he loves dipping his lil fancy breads, meats, and cheeses in oil. he likes an oil with red pepper flakes, oregano, basil, garlic powder, rosemary, seasalt, parsley, and just a hint of fresh, crushed up onion.
his lazy ass salad dressing. lime juice, cilantro, greek yogurt, mayo, onion powder, honey, olive oil. dump that shit on a bag of lettuce from the grocery store and some $2 canned chicken? yeah.

Healthy recipes using Rice Bran oil
1. Winter special Khichdi:
For a hearty winter meal, try this easy Khichdi recipe. Start by washing and soaking 1 cup of rice and 1/2 cup of yellow lentils for 30 minutes. In a pressure cooker, heat 2 tablespoons of rice bran oil and add cumin seeds, mustard seeds, and asafoetida. Sauté mixed vegetables like carrots, peas, beans, potatoes, and tomatoes for a few minutes. Drain the soaked rice and lentils and add them to the cooker along with turmeric powder, red chilli powder, and salt. Pour in about 3 cups of water and pressure cook for 3-4 whistles. Serve hot with a dollop of ghee for a comforting winter treat.
2. Warm and Nutty Rice Bran Porridge:
Warm up your mornings with a delicious bowl of Rice Bran Porridge. In a saucepan, toast 1 cup of oats in 2 tablespoons of rice bran oil until aromatic. Add 3 cups of milk or plant-based milk and simmer gently for 15-20 minutes until thickened. Sweeten with honey or maple syrup and top with chopped nuts and dried fruits. This cosy and nutritious porridge is a delightful way to kickstart your day during chilly winters.
3. Cauliflower fried rice:
In a large pot, heat 2 tablespoons of rice bran oil. Add beaten eggs and cook, then cut into strips and set aside. In the same pot, stir-fry scallions, ginger, celery, red bell pepper, and carrots until the carrots are tender. Add peas, corn, riced cauliflower, low-sodium chicken stock, low-sodium soy sauce, and a few drops of sesame oil. Stir-fry until the cauliflower is soft. Remove from heat and fold in the cooked eggs, fresh chopped cilantro, and toasted sesame seeds. Enjoy this flavorful and nutritious cauliflower fried rice with a variety of vegetables.
4. Salad with Rice Bran oil:
You'll need a full lettuce, half a lemon for juice, minced garlic, a teaspoon of sugar, 1/4 cup of Rice Bran Oil, salt, and pepper. Mix the sugar with lemon juice until dissolved, then add garlic, salt, pepper, and Rice Bran Oil. Whisk thoroughly and drizzle over chopped lettuce for a delicious and nutritious salad. Bulgogi Icecream

So, for those who are not Korean and want to steal this recipe and for the people who want to take credit for it: I am not your invisible unnamed PoC friend that you happen to know and have stolen the recipe from, yet somehow managed to sell this FREE recipe to a website. If you do that, after my working on this recipe for literal months of gathering resources, reading up, etc, then I’ll be very upset at you. We are not friends, then are we? If you are white, you stole from a PoC, then double the shame, you imperialist. Stop stealing PoC recipes and claiming that you are friends and then making the recipe as white as possible. If you don’t know that, you definitely aren’t my friend and aren’t listening to my wishes, which makes you culturally appropriating. And before you say it, the origin of Ice cream is not from white Europe. I had the idea in 2019, but managed to complete the development in 2020, after a lot of failure. I’d been thinking about pioneering this recipe long before then, but lacked the finances to do so.
People stole my recipes before... so let’s see if they want to attempt it again. (Yes, Copyright does not protect recipes, but it doesn’t make you less of a donkey for doing so and then claiming it’s an invisible friend that gave you the recipe. No. It’s here. Link it and have respect for recipe development.).
But WHY?
I saw a recipe years back on kimchi ice cream, and I was super curious if it could be done with other Korean foods. I made jokes about Bulgogi Ice cream, but didn’t have the time or money to actually make it. I pioneered this recipe, because I found out there was kimchi ice cream, green tea ice cream, Philli Cheese Steak Ice Cream, garlic Ice Cream, honey ice cream, sesame seed ice cream, soy sauce ice cream, green onion ice cream, ginger ice cream, onion ice cream, but not a single soul had thought of Bulgogi Ice Cream. I checked in hangeul and in English. And well, me who has an ice cream maker and made Triple Yuzu Gooseberry Liquor Yogurt Cheese Ice Cream had to try and see if it was possible. It tastes excellent.
I’ve watched enough cooking shows and read cooking books, read up on food science enough shows to sink a ship, so I knew the basics in order to get it to work. But I did fail the first 3 times. (Which because of my finances took a month between before I could attempt again.)
Words of caution
This ice cream might take longer to congeal than “normal” ice cream. Do not mess with the salt ratios, except to cut them down.
History of Bulgogi
Bulgogi, for those that don't know is a Mongolian-imported and Korean-adapted dish. It technically isn't "true" Korean food, but one that most likely came during the Goryeo period. It is marinaded meat, mostly beef and comes with samgyeopsal, or Korean BBQ, also a Mongolian Import.
There are other types of bulgogi as well, which include pork and chicken, but the composition of those is different from the one with beef and would need a separate recipe.
Recipe Development
I tried the first time going wholesale and pouring the whole of the bulgogi in, but the soy sauce failed to let it set. There was too much salt. But one should not give up when they have a recipe in mind, so knowing some food science, I tried stab two, which was to deconstruct the bulgogi, take out the soy sauce (mostly) and reconstruct it again in the ice cream. This worked better, but it still was more of a slurry and failed to set properly. The third try, I reduced the egg yolk by one (since egg yolks influence freezing),  and added mejukaru to try to make up for the lack of soy flavor and reduced the soy sauce again.
The reason I used Spencer beef versus other types of meats is because it has a nice chew, less gristle and nice marbling. One can use something else, but there is something satisfying about chewing the ice cream. An acquaintance of mine was pretty insistent that it have a swirl, so I thought that up too.
Soy milk and rice milk ice cream base can be used instead, as necessary.
Mejukaru Meju is a block used normally to make soy sauce and is prefermented. Meju karu is the powder made from the fermented block. It can be found in most korean grocery stores. It will give a milder flavor of soy sauce without the hazard of excess salt softening the ice cream. It is optional since some people don't like the taste of soy and some people are allergic to soy.
One caution I have is to not go overboard with the soy sauce. The leftover marinade once thoroughly cooked can be used for other meats like pork, chicken, beef again, and to season tofu. The emphasis here is to make sure you cook the sauce thoroughly. I made the mistake of putting the sauce into the ice cream and it failed to set. Do not repeat my mistake, thinking it's a waste.
On Soy allergies
This is not medical advice, seek a real medical professional: Most soy sauce does not cause soy allergies since most of the soy breaks down, but if you need to sub the soy sauce, I would consider something like a mild fish sauce, which has a similar flavor profile. (same proportion). The other option is to make soyless soy sauce from scratch, but that’s unlikely.
On having Crohn's Disease: There are soy sauces without gluten in them. I make my own soy sauce and often cut out the wheat. It can be done. You can sub for 2 tsps 100% soybean powder, but the meat might not be as tender.
Bulgogi Ice Cream
Ingredients: 1/2 package of Beef, sliced spencer cut into 1/4 inch squares
Bulgogi Sauce Ingredients: 2 tbsps cup sesame seed oil 2 tbsp Soy sauce 1 head of garlic minced. 1 thumb of ginger, minced. 2 tablespoons honey 2-3 tbspoons sesame seeds
Ice cream ingredients: 3 egg yolks 1/2 cup granulated sugar 1 cup whole milk 2 cups heavy cream 2 teaspoons vanilla extract or vanilla bean paste
Ice cream Flavorants:
1 tbsp honey 1-2 clove garlic, ground 1 thumb fresh ginger peeled and ground 1 tbsp toasted and ground sesame seeds 1 tbsp toasted sesame seeds. 2 scallions, blanched (They can also be skillet fried in sesame seed oil--no soy sauce if you prefer to caramelize them) (2 tbsps mejukaru)
Optional Swirl Ingredients:
3 tbsp honey 1 clove garlic, finely minced 1/2 thumb ginger 2 tbsp toasted and ground sesame seeds 2 tbsps heavy cream

Make the Bulgogi: Combine the sauce ingredients: sesame seed oil, soy sauce, garlic, ginger, honey, sesame seeds. Stir it together. Add the cut up beef. Marinate for at least 1 hour. Cook the beef and sauce. (Sauce once cooked can be used for other things) Strain the beef. Put in freezer.

Make the Ice cream custard: - Add egg yolks and sugar to a medium saucepan and whisk until light yellow color and well-combined. In another small saucepan, heat milk until it begins to simmer. Gradually add milk to egg and sugar mixture, stirring constantly. Heat mixture until it reaches 165, but do not allow to go to a boil. As soon as it reaches the correct heat, remove and add vanilla. Combine with the ice cream ingredients and bulgogi. Refrigerate for an hour. Pour into ice cream mixture. As the mixture is combining in your ice cream maker add the heavy cream. The ice cream might take longer to set if you do not have an electrical machine with a auto freezing mechanism, so put into the freezer and check on it every few hours and stir.
If you want a swirl:
Combine the swirl ingredients, as the ice cream congeals pour last.

Notes: DO NOT add too much soy sauce, the ice cream will fail to set. Sesame seeds melt plastic in the microwave. If you want to toast them do it in 30 second bursts in a non-plastic container. And yes, microwave safe plastic will also melt.
2 Recipes for the leftover Bulgogi sauce:
Combine leftover egg whites and leftover bulgogi sauce together with a whisk. You can eat this OR
combine with meat of choice, coat with panko and deep fry.
It also can be made into more bulgogi and then the bulgogi and sauce made into japchae.

hello my friend! so what i find the easiest to throw together is a stir fry bc you can really use any protein and veggies, and it’s usually done in the time it takes to cook the rice. 
here’s my stir fry ~formula:
1. start the rice first, bc it takes longest. i use sticky/sushi rice, but anything will work, and you can also do quinoa/another grain. here’s a rice cooking guide!
2. if you’re using tofu (which i usually do), press it right away to drain the water. i use extra firm tofu, and i wrap it in many paper towels, then i putting a cutting board with a heavy pan/book/whatever i can find on top. extra firm usually only needs 15 mins to press, but it won’t hurt to leave it until you’re ready to cook. you can use chicken/fish/shrimp/beef/pork/etc, whichever’s easiest.
3. cut your vegetables. you can literally use anything! i put garlic in everything, but everything else varies. some ideas: onions or green onions, broccoli, green beans, asparagus, bell peppers, carrots, bok choy, snap peas/snow peas, baby corn, water chestnuts (they come canned!), mushrooms, etc. frozen veggies or the pre-cut packs in the produce section are a good idea if you don’t want to chop or don’t have time. 
4. cook your protein. for tofu, i usually cut it into cubes and coat them in some flour seasoned with whatever spices i feel like (mine is usually salt, pepper, garlic powder, onion powder, cayenne, and smoked paprika). then i fry it in some vegetable oil. it usually takes like...5 mins on each side, but i generally get lazy and don’t cook every side of every cube lol. you can use pretty much any protein and there’s youtube tutorials for the best way to pan fry all of them. you can also buy a rotisserie chicken from the deli and shred it, or frozen pre-cooked meats, which’ll both save a lot of time.
5. while the tofu/whatever’s cooking, make a sauce. mine is usually a random, unmeasured combination of: soy sauce, honey, some kind of chili sauce (sambal is my fave), garlic powder, rice vinegar, and sesame oil. you can 100% buy a premade stir fry sauce to make your life easier (kikkoman makes good ones, they’re usually in the asian foods section). if you wanna make your own, just start with like...1/3-1/2 cup of soy sauce and add stuff until it tastes good. it’s honestly very hard to mess up. 
6. remove protein from pan and cook veggies. as a general rule, hard vegetables take longest. put stuff like broccoli and asparagus in first, then onions, then softer things like bok choy. if you can’t tell if something’s done cooking, stick a fork in and feel how soft it is. if you still can’t tell, taste it. if you’re using frozen, follow instructions on the package. put the garlic in LAST or else it’ll most definitely burn and you’ll be sad. 
7. put protein back in w the veggies and pour in the sauce. cook it for a few mins to thicken it up. if you want, you can combine a tablespoon of corn starch and a tablespoon of cold water to help it thicken, but i wouldn’t recommend that if you’re gonna eat it again the next day, bc the corn starch makes it kinda gummy later on. 
8. serve over rice. i sometimes add a fried egg on top!

pro home cooks, which used to be called brothers green - he makes, like, everything, but a lot of his vids focus on cheap and easy meals. (i haven’t watched any of his meal prep vids but i bet they’re good)
if you have a day, or even a few hours, every week that you can set aside, you might wanna look into meal prep. you don’t even have to prep entire meals; just pre-cutting all your veggies and portioning them into containers makes cooking after work/school feel so much easier.

mind over munch - i s2g this woman is like the queen of meal prepping. she’s also like way too perky but it’s fine bc her vids are VERY helpful even if you don’t wanna make the exact meals she makes
goodful’s professional meal prepper series - she gets paid to go to ppl’s homes and meal prep for them, and she shares a lot of easy recipes that are good for prepping and also just general tips for the best ways to cook and store stuff!
and finally here’s some easy stuff i make when i’m lazy:
i boil water for pasta, i chop up broccoli into tiny little pieces and throw it in the boiling water with the pasta when there’s like 4 mins left. i drain it, put it back in the pan, and add butter, italian cheese(s), garlic powder or a garlic herb seasoning blend, salt, and pepper. it’s so good.
premade gnocchi with jarred sauce or storebought pesto, served w whatever vegetable will take the least time to cook (i had this today with asparagus lol)
canned salmon burgers! 
tuna & mayo mixed w rice, top w eggs and nori if i have it (thank u @oddesteyecircle)
smashed chickpea salad - i take a can of chickpeas and smash em w a potato masher, then i add mayo, dijon mustard, lemon juice to taste, and whatever spices i feel like (usually salt, pepper, garlic powder, onion powder, cumin, cayenne, paprika, turmeric bc i like the color it adds lol). serve on toasted bread w/ whatever you like on sandwiches (i do tomatoes, hima usually does cucumber slices and spinach)
this doesn’t count as cooking really but the chipotle black bean burgers from don lee farms (we get them at costco) are incredible. i usually make em w frozen fries and microwave steamed broccoli (if u haven’t caught on i love broccoli)
bfast for dinner (pancakes from a box, scrambled eggs, bacon/sausage, maybe some potatoes)
aaaand i think that’s all i have to say! when in doubt, u can always ALWAYS find a recipe on youtube for literally anything. i hope this was helpful!!!!!!!

양념(통)닭 (yangnyeom (tong)dak) - Sweet-spicy Fried Chicken

(Serves 4)
Yangnyeom means seasoned or marinated
Tongdak means whole chicken however some people just use it to just mean chicken (not necessarily whole chicken). Dak means chicken 
The overall word for Korean fried chicken is actually called chikin (치킨). Basic fried chicken without sauce is huraideu-chikin (후라이드치킨 - pronounced similar to fried chicken). Ganjang-chikin (간장치킨) is soy sauce chicken (ganjang means soy sauce). Banban (반반) means half-half (half huraideu, half yangnyeom) 
Equipment 
Measuring cups or scales 
Fine grater
Ziploc bag 
Saucepan 
Fryer or saucepan with about 1-2 inches of oil 
Tongs (or anything to get the chicken out of boiling oil)
Paper towels 
Ingredients 
24 wings or 8-10 boneless thighs - cut thighs into bitesize pieces 
(optional) 1 tbsp rice wine 
½ tsp Ginger - grated 
½ clove Garlic - grated 
Salt (to taste)
Ground black pepper (to taste)
Oil for frying 
Green onions (garnish) - sliced thinly diagonally 
Sesame seeds (garnish)
Batter
⅓ cup (45g) potato starch - sieved 
⅓ cup (45g) all-purpose flour - sieved 
⅓ cup (45g) sweet rice flour / glutinous rice flour - sieved 
1 tsp bicarbonate of soda
2 egg - beaten
Salt (to taste) 
Sauce 
5 tbsp ketchup 
2 tbsp honey 
1.5 tbsp gochujang 
1 tbsp light soy sauce
2 tbsp granulated sugar 
1 tsp sesame oil
½ cloves of garlic - grated
Instructions 
Marinate chicken in rice wine, ginger, garlic, salt, and pepper 
Preheat the fryer to about 170℃ 
Beat the egg and season with salt
Mix all the dry batter ingredients together 
Completely cover the marinated chicken in the egg and then the dry batter mixture 
Drop the chicken in the fryer in small batches
Fry until it’s completely cooked and looks golden brown (5-10 minutes) 
Remove the chicken from the fryer and place on a paper towel to dry
Fry it a second time for another (5-10 minutes) then remove and place it on some paper towel. 
In a saucepan, add all the ingredients for the sauce and stir. Simmer for 3-4 minutes.
Cover the fried chicken in the sauce and serve with green onions and sesame seeds 
It can be stored for a day in a fridge then reheated in an oven for 190℃ for 10-15 minutes

Time for some real KFC! Korean fried chicken that is. I made it along w/ some kimchi fried rice. - Chicken: Cut thighs into chunks. Marinated in sake/salt/pepper/minced garlic/diced shallots/red pepper flakes/ginger/oyster sauce. Let sit overnight. Next day, removed pieces & covered in corn starch (alas, no potato starch). Fried on medium/high heat for a bit. Removed. Then fried again on high. CRISPY! - Sauce: Mixed together gochujang/ketchup/honey/brown sugar/soy/minced garlic/sesame oil/ginger. Warmed up on low heat. Added in chicken to coat. - Rice: Made rice night before. Next day, Added shallots to kimchi & fried in pan w/ oil. Added rice, then bacon, then sauce (soy/sugar/gochujang). Stirred up a bit. Added crunchy wasabi peas/chopped green onions/salt/pepper/sesame oil. Topped w/ a bit of mozzarella cheese. Fried an egg & placed on top. - Plated: I garnished all w/ fresh chopped green onions/chopped dried seaweed. Sprinkled sesame seeds over chicken along w/ some red pepper flakes. - Result: GODDAMN DEELISH! That chicken was so crunchy thanks to both the starch & double fry. Sauce was great but will go a little hotter next time. I tried some new kimchi that wasn't all that so rice was okay. Will never buy that brand again. 一本风靡美国70年的英文中餐菜谱,附菜名翻译一览
今天介绍一本最早的英文中餐菜谱——《中国食谱 - How to cook and eat in Chinses》,一本风靡美国70年的中国菜谱!

先来说说这本神奇的菜谱——《中国食谱 - How to cook and eat in Chinses》,作者杨步伟。

菜名和菜谱
这本菜谱兼容南北,既有大肉也有小菜,面食,火锅,大部分都是寻常家里饭桌上能见到的。也有"炒蒲公英","涨蛋","橘羹"这些我闻所未闻的。
这些菜谱详细到所有配料的精确配比,分量,解释起饮食习俗来也深入浅出,这是中国人所不习惯的表达方式,却也是它能在西方迅速被接受的重要原因。

另外,值得一提的是,书里的示意图很像老教科书里的生物解剖图,但因为解释的是滚刀切的技巧,握筷子的手势,显得严谨又很可爱。
正如胡适的预测,stir-fry等词在现在的中餐馆和烹饪教材里随处可见,却没想过最初的翻译就出自这本书。
《中国食谱 - How to cook and eat in Chinses》,作者杨步伟。杨步伟,一个地道的中国女人。光绪十五年出生。小时候家里人叫她"小三少爷",调皮贪玩,她说自己天不怕地不怕就只怕鬼,和家里长辈,私塾老师斗智斗勇,拔马尾巴的毛,还打过黎元洪的屁股,十几岁才换了女装。

后和赵元任结婚,育有一女。杨步伟当过女校校长,后来赴日学医,加入过同盟会,又创建医院,开过饭馆,又办清华进城的公交车,又做过手提包卖,后来相夫教子之余写了很多书,其中还有一本风靡欧美几十年的中国菜谱。
这本菜谱是在康奈尔的图书馆偶然被发现的。1945年出版时就是英文版,杨步伟说自己英文一般,这本书是自己写中文版,女儿帮忙翻译,丈夫修改而来的。
她在前言介绍说自己也是伴着"优雅的女人不进厨房的观念"长大的,出国前甚至没有打过一颗蛋,但因为留学期间不喜欢日本菜才学了做菜。学习的方式就是 with an open mind and an open mouth (敢想敢吃敢问)。
胡适作序时说,杨步伟和女儿一起创造的一些新词或术语,终于可以贴切地向外国人解释中国烹饪技艺,比如"Stir-fry"(炒),"Meeting"(烩),"Plunging"(蘸),大胆预测的话,这也可能对英语词汇产生重要的贡献。

《How to cook and eat in Chinese》再版了二十多次,也被翻译成十几种语言。虽然今天的菜谱已经不拘泥于图片和文字,甚至不少美食教程视频都拍的美轮美奂,但杨先生在我心里却是当之无愧的民国美食"博主"第一人。

她说,"美国的烤栗子永远不好吃。有的裂口,有的太生,这是加热不均匀且断断续续导致的。中国的栗子是在沙子里炒的。不断搅动热沙子,这样栗子四面八方的温度都合宜。最后,栗仁又软又香,像是烤得恰到好处的地瓜一样。"
胡适说,"她的几百张菜谱,正如这张用沙子炒栗子的菜谱一样,是无数节俭朴素、心灵手巧的男女思考和尝试的结晶。它们如今被准确地记录在这里,是为了让所有愿意思考和尝试的人获益并感到快乐。"
下面翻译摘录部分她的总结。
中餐的形式
"我们习惯菜佐饭,和美国正好相反,而不是面包佐菜。中国小孩总是喜欢多吃菜少吃饭,就像美国人一样,但其实多吃米饭才会被视作乖巧而有礼貌的行为。"
"湖南,安徽等地通常习惯吃三餐,每餐都有白饭,其他地方早餐会更简单一些,比如把米煮粥,很多外国人去东方以前都没吃过。还有一些地方习惯吃两餐,两餐之间会夹着几次点心,晚上还会有宵夜。比如广东的一些餐馆就会以午茶做的好而出名。"
"参加宴会的时候在别人夹了菜以后动筷子才是礼貌的,主人为了避免礼让尴尬可以在开餐的时候主动给客人夹菜。"
"饭后吃水果是欧洲传来的习惯,中国人是习惯于在两道菜之间吃水果的。"

把中国展示给世界的人
虽然只是一本食谱,赛珍珠却说它值得诺贝尔奖,因为它第一次系统地让美国人知道了中国菜到底是什么味道。
文化的冲击浸透在生活的各个角落,味蕾的感受最能让人记住。他们初到美国,在接受西方异奇的同时用一种直接易懂的方式表达了一句--"这是我们的真故乡味"。
赵元任曾经走遍大半个中国研究各地方言,后来又在加州大学伯克利分校教授中国语文和语言学。这本《中国食谱》在欧美各国流传,是上世纪很多厨师,餐厅老板和家庭主妇的必读书,去年还出版了中文译本。把中国展示给世界的人还有好多好多,今天写下这篇文章是为分享这本有意思的"中国味",也为向他们致敬。

另,杨布伟的三本书里都有赵元任的批注,或补充或感慨,有时候他们一来二去还会在批注里斗嘴,在我看来是最默契的生活情趣。
金婚的时候,杨步伟在庆祝宴上赋诗:"吵吵闹闹五十年,人人都说好姻缘。元任今生欠我业,颠倒阴阳再团圆。"赵元任也和诗一��:"阴阳颠倒又团圆,犹似当年蜜蜜甜。男女平权新世纪,同偕造福为人间。"

Nasi Goreng Recipes From Indonesia

Do you feel like nasi goreng, but don't feel like a very high-calorie meal? Then this cauliflower nasi goreng is for you! Cauliflower is used to replace the rice. As a result, the meal contains fewer calories and more vegetables at the same time. Isn't that a win-win situation?
Don't really like cauliflower? No point. Thanks to the spices and the rest of the ingredients used, you will not taste the cauliflower again. Promised.
About the cauliflower nasi goreng
Based on the title of this recipe, you may have thought that this was a recipe for nasi goreng with cauliflower, but it is not. Instead, finely chopped cauliflower is used to replace the rice in nasi goreng. And yes, I know. Since "nasi" means rice and "goreng" means fried, the name of this recipe is incorrect. After all, the recipe does not contain a "nasi". I was therefore unsure whether I would just call it "cauliflower goreng", but "cauliflower nasi goreng" seemed a bit clearer to me. (Besides, this is just a food blog and not a language blog, so such a “mistake” doesn't really matter, right?)
To make this cauliflower nasi goreng you need few ingredients. With just a cauliflower, an egg and some ketjap manis you already have the basics. Add a spring onion, a shallot, some garlic and a few teaspoons of fresh ginger and the dish is almost complete. With only those ingredients, it tastes fine in itself, but in my opinion it is still a bit flat in taste. As you will see in the recipe, I therefore recommend adding a little ground galangal, coriander, jinten, turmeric and white pepper. Those spices make a world of difference.
Incidentally, I also put some carrots and peas in it so that the cauliflower nasi goreng in the pictures would have a bit more color (this also worked for my cod korma with cottage cheese). Of course, those ingredients also provide extra flavor; with cauliflower alone, every bite would have been the same. Instead of carrots and peas you can of course choose vegetables that you like. For example, ingredients such as bell pepper, corn, bean sprouts, sugar snaps and Chinese cabbage would go well with it.
Vegan and / or gluten-free cauliflower nasi goreng?
Do you want to make a vegan cauliflower nasi goreng? Then simply omit the bacon and the egg. For a gluten-free version, you can replace the sweet soy sauce with tamari, but the taste will be different. In that case I think I would use less tamari and maybe add something like coconut blossom sugar or honey to the tamari to get close to the sweet taste of sweet soy sauce. Or you simply omit the sweet soy sauce; the cauliflower nasi goreng tasted good without soy sauce.
To complete the meal, you can choose to serve with cucumber, tomato and / or atjar tjampoer. Instead of regular slices of cucumber, you can also add slices of sweet and sour cucumber. Naturally, prawn crackers or emping is also a good addition, as is sambal. If you are hungry, a simple chicken satay will not go wrong with something like this. To keep the meal vegetarian, you can opt for this tempeh saté with spicy peanut sauce instead of chicken satay.

INGREDIENTS
Grind 275 grams of cauliflower
1 egg
50 grams of carrots cut into matchsticks
50 grams of peas from the freezer
1 spring onion chopped finely
0.5 shallot chopped
1 clove of garlic in thin slices
2 tsp chopped fresh ginger
0.5 tsp galangal
0.5 tsp coriander seeds (coriander)
0.5 tsp cumin seeds (jinten)
0.5 tsp turmeric powder (turmeric)
0.25 tsp white pepper
0.5 tbsp sweet soy sauce
sea ​​salt to taste
2 tsp sambal ulek optional
1 tbsp oil for baking
INSTRUCTIONS
Chop the cauliflower by hand or in a food processor. Cut the carrots into thin strips, about the size of a matchstick (julienne). Cut the spring onion into thin rings and keep the green and white parts separate. Chop the shallot, thinly slice the garlic and finely chop the ginger (or grate the ginger).
Heat a layer of peanut oil, coconut oil or any other oil of your choice in a wok over medium heat. Add the sliced ​​white portion of the spring onion, as well as the shallot, garlic and ginger. Stir fry these ingredients for about three minutes. Then add the galangal, coriander, cumin, white pepper and turmeric powder. Bake these spices for a minute.
Set the heat as high as possible and add the carrot. Fry the carrot for a minute and then add the cauliflower. Bake all ingredients for about two minutes and add the peas. Stir everything well, make a hole in the middle of the wok and break the egg in it. Let the egg set for half a minute and stir fry all the ingredients until the egg has set. Then add the sweet soy sauce (possibly also sambal), stir everything well again and season with sea salt if necessary.
Garnish the dish with the green part of the spring onion.

Homecookings [May ed.]
Cheers to the end of another month~
I had my 2nd staycation of the year in mid-May, & it was productive! I got a lot done, for real! I did some watercolour practice~ Below are some works I did during this month; I used my Korea photos as a guide. It was fun!

I also watched some Kdramas; I highly recommend Rugal! If you’re into Kdramas like The K2 or City Hunter, you’ll like Rugal. There’s action, a little bit of sci-fi, crime (gang/organizations vs NIS teams), & excellent cinematography. Born Again is another Kdrama I watched; it’s not done airing yet so I guess I’m still technically ‘watching’ it. Despite low ratings, I am enjoying it! I like the 3 leads A LOT!
As you all know if you’re in Alberta (/Canada), things started to reopen. I’m not sure if it is a wise decision, but I will still keep on practicing social distancing. I mean, that only means I’m going to/from work anyway - again, this whole thing hasn’t impacted me all that much. In fact, when my BFFs & I had another video chat session to catch up/celebrate a birthday, a question discussed was “how has quality of life changed during the pandemic / how it’ll affect short term and/or long term QOL once it’s all over?” Tbh, my QOL has improved! Not significantly, but there has been some positive changes. I actually feel happier to be seeing less ppl (friends included). This reclusive life while keeping in contact via “wifi” has been the best of both worlds for me. I do miss going to Hmart... lol but other than that, I’m pretty self-sufficient at home. I’ve got loads of coffee, adequate amount of snacks, plenty of books to read, not running low of art supplies anytime soon. .. I’ve literally got everything that I need, you know what I mean? I even have things that are on my to-do/to-try lists that I can start if I want to *shrugs* I consider myself one of the lucky ones that aren’t affected, & I’m super grateful for it.
PS: I do need to watch out for the “Quarantine 15″ HAHA but I don’t think that will be an issue for me. Actually, who knows.. . continue reading this post & let me know if you think I’ll gain the Quarantine 15 :P

^ This is my cocktail consisting of cold milk, hot chocolate powder, instant coffee powder, & the cappuccino honey. It’s basically a cold mocha (not iced! Bcos I had no ice in it!). It was refreshing~ Some days in May were hot!

^ My homemade kimchi wrapping (cut up) pork loin. The kimchi I made (the 1st jar that I opened was kinda sour so it paired well with meats or to be eaten on its own; not the most ideal for soups). This was very refreshing! I only lightly seasoned the pork with salt & fresh ground black pepper. Then I peeled longitudinal strands of my napa cabbage kimchi & wrapped small pieces of the pork loin. Excellent appetizer, if I do say so myself :D

^ Hearty soup! I’m slightly surprised I haven’t shared this on here yet (at least I don’t think so). You know the Campbell brand creamy Thai chicken & rice soup? I LOVE LOVE LOVE that soup so much. I’d say it’s in my top 3 of the ones I’ve ever tried. Anyway, on its own, it is too salty for me. So what I do is dilute it with more veggies + water. Using about 1/3 of the can each time, I add anywhere between 1-2 cup of water with it into a pot, then add in whatever veggies I have: green cabbage, napa cabbage, mixed frozen corn/peas, tomato, cauliflower, & broccoli. These are my main choices. The amount I add depends on what else I have for the meal. The natural sweetness from the veggies give it a very good flavour, but the “background” Thai taste is still present.

^ My fancy hot chocolate with a book.. . This is my 3rd Sophie Kinsella book. I didn’t think I would be into her books but surprisingly I am.. . Her female protagonists are all kinda similar lol at least for the ones I’ve read anyway. But umm the fancy hot chocolate! It is a gourmet hot chocolate mix I purchased from the Butterdome Craft Fair back in December. I put it away & then the holidays passed.. . anyway, this was the Noel-blend, so it has a very chai feel to it with nutmeg & cinnamon. I tried a little bit of it before, & got no allergic reaction from it, so I up’ed my amount this time.

^ 2-ingredient baked wings. There are a lot of Asian-inspired sauces for marinating/cooking meats, I find. Like you always hear soy garlic, honey garlic, or ginger sesame, teriyaki, etc.. . you know what I mean? 1st of all, as a Chinese person, do I particular cook with these combos of condiments/sauces? No... lol I think it’s a very Westernized concept... OR the other good one is, “drizzle sesame oil on everything!” Which I also don’t do... Recently, there has been a lot of wings happening in my household, so I’m trying diff things with them. For these baked wings, I marinated the wings in (diluted) hoisin sauce + fish sauce. Hoisin sauce is sweet, while fish sauce is super salty. I think I added about the same amount of each...then added some water. Marinated these 8 wings for 5-6 hrs, then baked them for ~40mins. I didn’t turn them around, so only the skin side is dry-ish, while the bottom is moist + juicy.
PS: I prefer this 2-bone wing piece (rather than the drumlette, aka the mini drumstick that’s attached to this wing piece). How about you?

^ Grilled meat (pork + beef), kimchi, rice, & radish + pollock soup. 1st time using the electric contact grill in 2020! It has been around for so long, but we just don’t use it; so it made its way down to our basement storage...... It now resides in the kitchen but unsure how long it will stay........ Mom thinks it’s in the way, esp for such an infrequently used appliance. Tell me, what else should I use it for so it can stay around for longer?! :P

^ Jjapa-guri wings! THIS WAS SO AMAZING! Okay, have you guys watched Parasite? If not, that’s ok, just familiarize yourself with “jjapa-guri”. Long story short, it is a combo of 2 instant noodle (flavours): blackbean sauce + the Neoguri powder. The name is a compound term of the 2 essential components. For these wings, I used my blackbean sauce (from jar), with the Nongshim (instant noodle) kimchi powder. Can’t see the redness bcos the blackbean sauce is so dark. But anyway, I pan-fried the wings, & then they’re about 50% cooked, I added spoonful of the blackbean sauce & added some kimchi powder in (also some water so there’s a bit of a sauce created). So tasty!!!

^ Basa fillet stir-fry with rice. The stir-fry contains: choy sum stalks, green cabbage, bell peppers, & thin rice cakes. For the sauce, I used abalone sauce + sugar. Abalone sauce is more salty & has a more deeper flavour than oyster sauce, so a little bit goes a long way (at least the brand we have anyway). For my singular serving amount of ingredients like this for a stir-fry, I normally add 1 almost-overflowing tsp of oyster sauce. I added the same amount of abalone sauce & it was too salty for me personally. So I added sugar (not sure how much I added.. . maybe 2 tsps?). I don’t think abalone sauce is very common to the Western population, but it’s an item easily purchase-able at Asian grocery stores! Next time you’re in one, you should buy a small bottle & try it out!

^ “Hotpot leftover special”. Threw some leftover things from hotpot & made it into a soup. Over a bed of instant noodles :P Bcos it is my staycation, so I’m eating 2 instant noodles within 1 week *gasp*
PS: I normally like the plain white surface for my photos. What do you think about this colourful tablecloth? Personally speaking, too colourful, vibrant, summer-y & bright for my liking.

^ Nestle drumstick (the fudge flavour). 1st one in 2020~ Does anyone know how long these can be stored for in the freezer? No expiry or best before date on the box; this was a Costco product & there are 18 drumsticks (9 fudge; 9 caramel). 1 box of 18 probably lasts us like... 7 months HAHA bcos we eat it so infrequently. It’s crazy, I know. Looks amazing in the photo, but the cone part is like getting kinda soft. Esp at the bottom, it’s kind of.. . chewy. Still tastes fine & everything; but the cone is softened.

Trio of Towns Recipe Problems? PART 1
Okay, so, I got beef with Trio of Town’s recipe section. And it’s not just the lack of beef. XD;;
Though real quick, why DON’T we have the option to make our animals into meat? Look I know they’re cute and we love them, and you shouldn’t HAVE to, but there’s really no good logical reason why not. The game allows you to make fish dishes after all? Are fish not living creatures? Plus the game kills off your animals due to old age anyways, and it allows you to sell your animals at any time. So why not have a butcher in town? Again, no one has to use it if they don’t want. But for those who do, as long as nothing gross is shown, why not?
Anyways, besides the chicken and beef recipes I’m missing out on, here’s a few other issues I’ve noticed. I've tried my best not to comment on recipes I just don’t think sound good and stick to what I really believe is incorrect.
SALADS
Potato Salad - This is labeled as a Westown Recipe. However, I think this version of Potato Salad is one that Japanese/Chinese/Eastern people in general are more familiar with. This recipe calls for “Potato, cucumber, carrot and mayonnaise”, with the toppings being either “beans, pepper or radish”. Where I’m from, however, potato salad’s ingredient list is “potato, cucumber-pickles, eggs, and mayo”, with topping picks being “Salt/Pepper, Onions or Olives”. Perhaps there could be two potato salad recipes in the future, one from Tsuyukusa and one from Westown? Sharing and/or quarreling over different versions of recipes could actually be a plot point for future games, too. 
Mashed Potatoes - Recipe is fine but needs more topping picks. Should add butter and cheese. Also maybe sour cream as a new topping/craft? Sour cream isn’t available in TOT but maybe you could make it in a future game? Milk in the fermenter logically sounds like it would make sour cream, right?
Milk Salad - Okay I PROMISE I won’t comment on recipes I just find weird for the most part but... Do people really do this??? Just, pour milk on vegetables like cereal...? XD I have to ask, which specific vegetable is usually used with this recipe? I just cannot fathom which veggie tastes good with milk...?
Coleslaw - Again, must be a different version of the recipe. Ingredient list here is “cabbage, radish, apple, honey, yogurt” with topping picks as “salt/pepper and mayo”. Where I’m from coleslaw is “Cabbage (a red and green cabbage variety would be nice too), carrots, yogurt/mayonnaise and lemon juice”, with the topping picks being “Salt/pepper, onions or celery”. Perhaps one recipe could be “Sweet Coleslaw” and the other one “Savory Coleslaw”?
Fruit Salad - I could perhaps be wrong about this one, but cabbage and spice seem like odd toppings for this sweet fruit salad...? Were these toppings mislabeled, or do people really add these toppings to fruit salad? I would say better toppings would be either honey or other types of extra fruit, like grapes, banana, strawberry or kiwi. OR, perhaps there could be different versions -- A Westown Fruit Salad, a Tsuyukusa Fruit Salad, and a Lulukoko Fruit Salad, each with signature fruits from their respective towns.
SOUPS
Spaghetti Soup - Again, maybe this is a different version of the recipe from another culture. I personally have never had spaghetti soup, I just eat spaghetti, but it sounded like it probably shouldn’t have pumpkin in it...? I looked up the recipe for Spaghetti Soup and it seems like most people have it as it sounds, as a soup version of tomato sauce spaghetti. Perhaps there could be a “Vegetarian” spaghetti soup option from Tsuyukusa with the pumpkin, and one that more closely resembles what most of us recognize as spaghetti from Westown?
Bouillon Soup -- Nothing wrong with this recipe per se, but if there were meat options in the future there could be a vegetarian version of bouillon and a meat one, with salt/pepper as toppings to make it better.
Tom Yum Goong - I believe this recipe should also include lemon/lime and possibly chilis and maybe some herbs? Adding lemongrass as a herb you can forage would make this really authentic.
Minestrone - This isn’t TOO big a bone to pick, it’s pretty similar, but maybe add flour as a topping since minestrone often has noodles in it too, and pepper.
Fish Chowder/Clam Chowder - If celery was a veggie you could grow in future games, these and a few other recipes could use some celery.
GRILLED/FRIED
Vegetable Stir Fry - Really why not just let people add whatever kind of veggies they like to this one, there’s so many ways people like to mix and fry veggies? But I’m thinking it should also call for carrot or broccoli at least, and maybe have beans, pepper or soy sauce as a topping pick too? OR, maybe like the Fruit Salad, there could be a different signature vegetable stir fry recipe for each town? The Tsuyukusa Stir Fry, the Westown Stir Fry, and the Lulukoko Stir Fry!
Pizza - A really lovely simple pizza recipe we got here, but again along with the veggie stir fry, there could be more options. If meat were options that could be it’s own thing. But even just going with the veggie toppings we have in the current game, you could also add spinach, bell pepper, or pineapple as extra toppings. Maybe have an extra Veggie Pizza and Fruit Pizza recipe in addition to the Classic Cheese Pizza, and Meat Pizza if that was a future option?
Omelet/Mini Omelet - Cheese as a topping? OMELET DU FROMAGE PLZ...
Baked Beans - Seems like a Tsuyukusa recipe? A Westown recipe for ‘Baked beans’ would call for beans, tomato/ketchup, sugar/honey, maybe garlic or mustard if those were options in future games, and if meat were also an option, ham or bacon for sure. 
French Fries - If we can make tomatoes into ketchup later, well, duh.
Roasted Corn - Butter, Mayonnaise and maybe chili/spice as toppings.
POT DISHES
Cabbage Rolls/Stuffed Tomatoes - These bother me a little. WHAT is rolled into the cabbage? WHAT is stuffed into the tomatoes? We have NO IDEA. Please tell us! XD I’m thinking other veggies/mushrooms/rice/cheese makes most sense, maybe meat. Also there should maybe be a recipe for Stuffed Bell Peppers and/or Stuffed Mushrooms too?
Deep-FRIED Monkfish/Deep-FRIED Catfish/FRIED Shrimp/FRIED Tofu/FRIED Tofu Fritter/Deep-FRIED Fish Cakes - G...Guys... GUYS... “FRIED” WAS LITERALLY RIGHT IN THE NAME OF THE DISHES, COME OOOON... XD;;
Boiled Corn - Salt/Pepper and Butter as toppings.
Ahi Poke SALAD - Again... SALAD...? IDK, is it a pot dish despite the name...?
RICE DISHES
There’s actually nothing I can notice wrong with the rice section, seems pretty solid. Good job on this part, guys. Maybe just add a few extra curry-rice recipes?
NOODLES/BREAD
Bread - Mugwort and Sugar seem slightly odd for toppings? Maybe make a few new breads, like an Herb Bread so you can use mint/mugwort/whatever to make it fancier, and the sugar could go in a Sweet Bread recipe along with maybe honey/maple. For plain Bread, salt or butter as a topping makes more sense.
Corn Bread - Still needs milk and egg to the corn meal to make it corn bread? With butter or honey/maple as toppings? Corn meal alone is just... corn meal...
Vegetable Bread - If vegetables are stuffed into the bread instead of mixed into the batter as depicted in the picture, doesn’t that make it a sandwich? Maybe separate the Noodles and Bread section have a new sandwich section added to the Bread category if meat is added in a future game? Sandwiches could add several new recipe combinations.
Fruit Bread - There’s really quite a few different fruit bread recipes and I feel the game could expand this just a little/add a few varied pictures. Maybe an Apple-Cinnamon Bread, a Raisin Bread (this is already in the game but it’s in with the noodles, not the bread?) and a Berry Bread.
Crackers - Should also be with the breads and not the noodles. Maybe also an extra recipe for fancier Herb Crackers.
Spaghetti - Maybe I haven’t unlocked it yet? There’s a ‘Spaghetti Soup’ and a ‘Spaghetti Aglio e Olio”, which is made with chilis, but...? Is it unlocked later in the game or is there just no regular Spaghetti recipe...? *confused* ^^;
