Cacio e Pepe!
Cook a pasta (spaghetti, linguine, casarecce, gemelli, cavatappi all work well here) in just enough water to keep the pasta cooking without sticking to the pot
While the pasta is cooking, melt a few tablespoons of butter over low heat in a pan or pot that can fit the pasta plus stirring room (important)
Grate a few ounces of hard Italian cheese into a small bowl (Parmesan, Asiago, pecorino Romano, or any blend of those)
Add a fuckton of black pepper (a half-teaspoon or so)
When the pasta is cooked, remove the pasta pot from heat and use a slotted spoon or other noodle-grabbing utensil to move the pasta from the cooking pot to the butter pot. The melted butter pot can either be removed from heat or turned to the lowest setting on the stove.
Add the cheese and pepper to the pot with the butter and cooked pasta, add about 1/2 a cup of the water the pasta was cooked in, and stir the shit out of it. It will eventually develop into a creamy sauce. More pasta water can be added to loosen the sauce if needed.
(Tip: add some cloves of garlic and a tablespoon of miso to the melted butter for an incredible variation on this dish)
PEANUT BUTTER NOODLES!
Cook up any Asian wheat-based noodle (rice noodles are fine here too I’ve just got my preference) this recipe is 4-6 ounces of pasta
As the water is coming to a boil, mix in a small bowl (measurements here are a best-guess starting point, I don’t measure shit when I cook):
2 tbsp of peanut butter
One teaspoon soy sauce
Half teaspoon vinegar (apple cider, rice, or Chinese black vinegar)
Some toasted or black sesame oil
A clove of crushed garlic
Optional grated or ground ginger, chili oil whatever
Stir until combined into a dark brown paste
Once noodles are cooked, transfer noodles to a bowl, collect two teaspoons of the hot noodle-cooking water and whisk into the peanut butter mixture to loosen the sauce, pour the sauce over the noodles and toss, serve with whatever you want. This recipe is open to all kinds of adaptation, augmentation or whatever. I’ve cubed up chicken breast, marinated it in soy sauce, cooked that up and added it to the mix, incredible. It’s amazing with egg, with chili crunch, with stir-fried bell pepper or mushrooms, play with the ratios.

Yesterday, my 12 year old laptop died.
This machine was an XPS laptop. It was in perfect working order up until the motherboard decided to die. I've swapped keyboards, screens, batteries, and a track pad on this thing, all with the help of YouTube. I actually wanted to get this machine repaired until I learned it would be about 3 grand for a repair that might work. There would be no guarantee and it would be hard finding someone willing to work on a computer that old.
I'm paying someone for data recovery because he can do it better and quicker. When that's done and I have the hard drive, I'm going to donate my old XPS. It can still be repaired if you have the right part and enough time. People do. I'm donating it to a program that takes old computers like these, fixes them, and gives them to low income students. This computer will probably last another 5 years (or more). Parts for it are easily purchased on Amazon.
My new computer is coming today. It's the same build, just slightly newer. It will last me another 12 years I hope. I will repair it as needed. Parts are easily available on Amazon. It will do everything I need it to and, when it's time, I'll swap it all over to a new computer from that same series.
Being able to repair my own machines has made me an XPS user for life. It allows me to save money and cut down on e-waste. So many people are stunned that my old computer was 12 (the one I had before this was 15 before it failed). We are so used to a society with disposable technology that it's genuinely shocking to people when someone says they fixed their own laptop.
But why should people try? So many laptops are made so you can't just unscrew and pop the back off. So many computers are made to fail after two, three, or four years. So many computers are made to force you to buy a new one for whatever capitalist bullshit reason.
I'll gladly pay extra for right to repair and a solid build with easily available replacement parts. That's what's important to me.

if ur ever looking for an easier, cheaper and more balanced meal ive got the "recepie" for you
it's just instant noodles with eggs and veggies but it fills me up, and while it is high in sodium, is helpful if cooking is a bit of a challenge for you/you'd eat something worse for you otherwise
basically all of this can be changed to taste/appetite, but i have a big stomach, so I'll be making a larger bowl. recepie can easily be cut in half.
ingredients:
- 2 eggs
i love eggs and they're good for you duh. i eat lots of eggs because they help meet daily nutritional needs and if you buy an 18 pack, they can be kinda cheap; as well as the fact they can be easily used up if they're about to go bad
- seasoning salt (optional)
can be found at dollar store, can be replaced with reg salt and spice of choice
- frozen variety vegetables
i buy frozen because they're already chopped, alot cheaper, won't go bad (unless you thaw and refreeze them), and obviously vegetables are good for you. pick any veggie you want, i usually go with carrots, broccoli, or parisian mix.
- 2 packs of mr.noodle
base of the meal, cheap as hell. especially if you buy a full palette of them.
- butter/oil/lard
to fry the eggs
- spices & herbs of choice
spices really make this bad boy. i usually use garlic, paprika, pepper, oregano and ginger but honestly, throw pretty much a little of anything in here. as i type this, im using a bit of curry powder and sage in addition to the other ones.
steps:
- begin with a frying pan or pot. ive even used a steel mixing bowl, get crazy with it. set the stovetop to low-medium heat, on my stove i use 3.5/9. add butter and once it's melted and spread out easily, wait a minute for it to heat up more.
-crack the eggs in, there should be a nice sizzle. i like my yolks runny, and it mixes better with the "broth" later, so take a fork and carefully try to grab the clear membrane around the egg yolk. attempt to pull it off slowly, but if it doesnt come off fully, no biggie. this is just so the egg cooks more evenly while leaving the yolk soft. i use the seasoning salt to sprinkle onto the eggs, the broth does not need it.
-continue to cook until the white is solid. the yolk should still be almost all soft by now, but even if it isn't, itll still go well with the rest of it.
-put them into a bowl from the pan. if there are egg bits stuck on the pan after, they'll come off.
-put water, ¼-½ the bag of frozen vegetables, spices, and flavour packets into the pan. crank that baby to max heat. once it's boiling, put the noodles in. could probably turn the heat down a bit now. cook until the veggies are soft enough to be poked by fork without much effort. if there's not enough water, just add a bit more.
we're done! put the noodles into the egg bowl, or if you're crazy like me, put the eggs into the pan of noodles.
now, this makes alot of noodles, so for some it should probably be halved, but it works for me, and it works if you haven't eaten all day and are ravenous.

Made medieval mashed beans with figs. Or rather "Muos vonn bonen mite feygn"
The recipe is from H. Jürgen Fahrenkamp's book "Wie man eyn teutsches Mannsbild bey Kräfften hält", which is a compilation of historical medieval recipes from different places of what are now Germany and Italy, with a few French and Spanish dishes mixed in. Mr Fahrenkamp has added measurements to the recipes, which was not done back in the day, so following along is very easy and you can achieve delicious meals with very few ingredients.
So in short, i love this book a lot and am glad that I bought it last year on my trip with @marquisevonobst and this is the recipe I have now made at least a dozen times :3
The added veggies are oven baked parsnips, carrots and celery stalks, which go great with the beans. They are leftovers from yesterday.

Fuck it. Lemon dill salmon recipe.
Disclaimer: I do not measure when I'm cooking savory dishes
Ingredients:
1 large or 2 medium salmon filets
Veggies of your choice (I use 2 zucchini)
Olive oil
Lemon juice
Dill (I use dry but fresh works)
Onion powder (you can use an actual onion, I just don't like the texture)
Salt & pepper
Equipment:
1 sheet pan
Aluminum foil
A bowl
A knife
A cutting board
Food safe gloves (optional)
Meat thermometer (recommended but if you don't have one that's fine)
Instructions:
Preheat your oven to 425�� F (218° C)
Cut your veggies into relatively thin slices, if I had to guess I'd say a little under ¼ inch (about a ½ centimeter.) If you're using a fresh lemon instead of bottled lemon juice this is the time to cut it
Add your veggies to a bowl with a generous amount of olive oil, dill, onion powder, lemon juice, salt, and pepper. Toss with your hands or some tongs until the veggies are thoroughly coated with oil and spices
Take your salmon and drizzle a little oil on it along with plenty of dill, onion powder, lemon juice, salt, and pepper from earlier. This is where I recommend gloves, because next step is the rub the mixture into the salmon. Make sure to get both sides.
Arrange the veggies and the salmon (skin side down) on a foil lined baking sheet and stick in the oven for ~25 minutes
It should reach 145° F (62° C) minimum.
When it's done it should look like this

This chili takes less than an hour, from start to serve. Recipe below ofc, it's a refinement of one I posted many moons ago
Cheater's Chili
4 lbs. ground protein, cheap and fatty (I like to use two different ones like beef and pork, loose sausage works wonderfully too)
1-2 white or yellow onions, chopped as fine as you can stand
2 cans of Ro-Tel diced tomatoes or an equal volume of your favorite salsa
2 cans of chili beans (I like using black and pinto)
2.5 oz or so of chili powder (a whole small bottle or weigh it out from your Costco stash)
½ tsp. garam masala
As much garlic as you want, the minced stuff from a jar is fine
Whatever other seasonings you deem appropriate, this is VERY hard to fuck up
Procedure:
Chop your onions. A vegetable chopper is worth the investment, you just have to peel and quarter them before pushing them through the cutters and it saves so much time and risk. Anyway, throw your chopped onions into a big pot and then dump in the protein, being sure to remove any "meat diapers" that wind up in the pot. Add all the spices and then turn the heat on medium-style. Using some sort of spatula, break up your protein into roughly cherry sized pieces as you stir it all together, then cover your pot and let it cook for about 20 minutes, enough time for all the meat to brown.
Open up the cans (if you don't have an edge-cut can opener, put a magnet on the lids before you open for easy and safe removal) and dump them into the pot, liquid and all. Fold this into the mix with a different spatula from before to avoid cross contamination, then cover your pot and let it go until it simmers, this takes about another ten minutes. Take the lid off, marvel at your chili, and serve it up with crackers and milk/alcohol.

“Of course.” Seungmin responded, trailing you into the kitchen as you set the plates in the sink. “I love you.” He said quietly, his voice lilting up slightly. Were you actually okay?
“I love you too Minmin.” You place a a small kiss next to his eye and head towards the living room.
During the movie Seungmin kept stealing glances at you as you leaned on him but not into him. As you laughed but the curve of your mouth didn’t exactly reach your eyes. And how those same eyes were focused on the screen but your mind was obviously some place else.
Although you had said you were fine your silence gave him the answer you actually wanted to give. That Seungmin had struck a nerve more sensitive than he had known.
