Smashed Cauliflower & Cheese Casserole Recipe:

1- Preheat oven to 400 degrees Fahrenheit

2- Steam cauliflower (you can get frozen bags of cauliflower that steam in the microwave, which is super convenient)

3- Drain steamed cauliflower and smash with a potato masher (or a fork or whatever)

4- Pour into baking dish (drain, add to baking dish, then smash)

5- Mix in other veggies if desired (sliced mushrooms, diced celery, chopped fennel root, onion pieces - whatever will be cooked enough to eat after baking for 15 minutes)

6- Stir in big dollops of butter, sour cream, and cream cheese until well coated. Smooth into a flat layer.

7- Sprinkle with shredded cheese until well covered.

8- Bake 15 minutes or until cheese is molten & bubbly and crisp at the edges.
