I adapted a candy cane sugar cookie recipe to use up the smaller shards of my Lofty Pursuits Unicorn Droppings. The pink is pomegranate, blue is Tardis (blueberry?), and purple/brown is pb&j. I think the pomegranate turned out best (& was quite good with chocolate fondue!) I don’t care for the pb&j flavor as much in general, though.

Red, White, and Blue Chocolate Chip Cookie Bars
Cook Time: 30 mi
Ingredients:
For the Chocolate Chip Cookie Bars:
1 cup unsalted butter, softened
¾ cup granulated sugar
1 cup brown sugar
2 eggs
1 tbsp vanilla extract
1 tsp baking soda
3 cups all-purpose flour
½ tsp salt
1 cup mini chocolate chips
½ cup vanilla milk chips or white chocolate chips
For the Vanilla Buttercream Frosting:
½ cup unsalted butter, softened
3 cups sifted powdered sugar
3 tablespoons heavy cream
1 teaspoon vanilla extract
⅛ teaspoon salt
Instructions:
Chocolate Chip Cookie Bars:
Preheat Oven: Preheat your oven to 350°F (175°C). Line a 9x13 inch pan with foil, spray with cooking spray, and set aside.
Mix Dry Ingredients: In a bowl, whisk together the flour, baking soda, and salt. Set aside.
Cream Butter and Sugars: Using a mixer, combine the butter, granulated sugar, and brown sugar in a mixing bowl. Mix on medium-high speed until smooth and creamy, about 2 minutes.
Add Eggs and Vanilla: Add the eggs and vanilla extract to the butter mixture and mix until combined, about 1 minute.
Combine Wet and Dry Ingredients: Gradually add the flour mixture to the wet ingredients, mixing until just combined.
Add Chocolate Chips: Stir in the mini chocolate chips and vanilla milk chips (or white chocolate chips) using a rubber spatula.
Press Dough into Pan: Press the cookie dough evenly into the prepared pan. (Lightly spray your fingertips with cooking spray to make it easier, or use a rubber spatula.)
Bake: Bake for 30-35 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
Cool: Remove from the oven and allow the cookie bars to cool completely in the pan.
Vanilla Buttercream Frosting:
Mix Ingredients: Using a mixer, combine the softened butter, powdered sugar, heavy cream, vanilla extract, and salt. Mix until creamy and smooth. Adjust consistency with more powdered sugar for a stiffer frosting or more cream for a creamier frosting.
Frost Bars: Once the cookie bars have cooled, spread the vanilla buttercream frosting evenly over the top.
Decorate: Immediately add red, white, and blue sprinkles or other decorative toppings to the frosting, as it will firm up and decorations may not stick as well once it sets.
Cut and Serve: Cut into small squares and serve.
