I found some earl grey macarons that were reasonably priced to buy on their own, so while I wait on those to arrive, I'll jump back into the standard cookie upgrades. I don't have time to bake today, and somehow forgot to get crispy rice cookies, so I'm jumping slightly ahead to butterscotch cookies. I went with Eleni's New York butterscotch cookies for these.

These are crunchy and a little dry with a nice, slightly toasted butterscotch flavor. They're excellent for dunking, and an overall great cookie.

"oh but is it enough?? i wanted to make some extra gelt but the chocolate wasn't setting right. is it too late to try and get ingredients for macroons? is this enough variety?"
