Simple Garlic Butter Cod Fillets Ingredients: 4 cod fillets, about 6oz each and 1 inch thick 2 tablespoons olive oil Salt and black pepper, to taste 4 tablespoons butter, cut into half-inch pieces 4 cloves garlic, minced Fresh chopped parsley, for garnish 2 tablespoons lemon juice, for serving Directions: Pat the cod fillets dry with a paper towel, then season generously with salt and black pepper. Heat the olive oil in a large skillet over medium-high heat. Once hot, reduce the heat to medium and place the fillets in the pan, skinned side down. Gently press on each fillet with a spatula for about 5 seconds to ensure they make good contact with the pan. Cook without moving the fillets until the underside is golden brown, approximately 4 minutes. Carefully flip the cod fillets to avoid breaking and add the butter pieces to the pan. Cook for an additional 3-4 minutes, basting the fillets with the browning butter until they reach an internal temperature of 145°F (62°C). Remove the cod from the pan and set aside. Add the minced garlic to the remaining butter in the pan and cook for about 30 seconds, until fragrant. Stir in the chopped parsley and lemon juice. Adjust seasoning with additional salt if needed, and drizzle the garlic butter sauce over the cod fillets to serve. CREPES! Oh my god, these chocolate and vanilla crepes from Turkuazkitchen were delightful! And super quick! Filled with nutella and whipped cream, it was such a decadent breakfast.

I haven't cooked in awhile because of bad eye, back to work, back injury, etc. But felt like a steak. Rib-eye w/ creamy mushroom sauce & cheesy broccoli! - Steak: Seasoned w/ s&p. Dropped in hot pan adding butter/thyme/rosemary/whole garlic clove cut in half. Butter basted quickly to where it was barely rare. Took out to rest. - Mushroom sauce: In same pan, added chopped mushrooms & more butter. Let cook a bit. Added minced red onions & minced garlic. Simmered. Added beef broth. Well I didn't have beef broth so I saw that I could dilute a beef bouillon cube in 8 oz of boiling water so I did that & added. Seasoned w/ pepper/jalapeno salt & stirred. Added a bit of bacon fat. Let simmer a bit. Then added sour cream, stirred up & let simmer more. Added steak into the sauce & covered w/ sauce. Covered w/ lid & let simmer for very short time. - Broccoli: Heated up some frozen broc. Put on toaster oven tray & topped w/ garlic cheese curds & let melt up. - Result: Yup. DEEEEELISH. I misjudged the time on the steak in the sauce & it got more medium than I wanted. But still real good. Sauce was so on point. Broc was cheesy goodness. Tonight's non-podcast meal since we recorded Episode 800 on Sunday...steak and potatoes! Basic. But not really. I decided to try the reverse sear thing. Here goes. Let ribeye get to room temperature and then seasoned with salt/pepper/smoked paprika. Set aside. Pre-heated oven to 250F. Placed on rack w/ tray underneath and left in for about 45 minutes or so. Meanwhile, I had a russett potato. So, I heated it up (left skin on). Smashed it up. Seasoned with salt/pepper. Added butter/heavy cream/olive oil and whipped up well. Added grated parmesan cheese and continue to mix in. Set aside to re-heat later. I wasnt sure if I wanted any sauce so looked in fridge. Hmmm...I've got a bunch of stuff. Let's make something up! I put some greek yogurt in a bowl. Squeezed a lemon into it. Added salt/pepper/hot sauce/red pepper flakes/chopped parsley/minced garlic. Cooked up some bacon/chopped up/added to bowl. Mixed it all together. Nope, still not right. What else do I have. Well, I have a bit of Heinz 57 and some HP sauce. I added a bit of both to it! Ah, that did it! Sounds weird and gross but it was goddamn delicious! Set that aside. After about 45 minutes, I pulled the steak out. Meanwhile, I had left the bacon grease in the pan. Added butter and let it get hot. Threw in rosemary/thyme/garlic in. Then added steak to sear. Let it brown up on bottom/sides then flipped over. Butter basted for a bit. I wasnt confident in my skills and must have left it in pan too long. I took it out and set on cutting board. Butter washed it. Took thyme/rosemary/garlic and placed on top. Wrapped in foil and let sit for about 10. Unwrapped and removed everything and cut in. Yup. I left it in the pan too long. Came out more medium/medium+ than medium rare. Dammit. But still, it was goddamn tasty! Reheated potatoes. Plated up w/ a side of the yogurt sauce. Quite good!
