Ingredients: 2 ripe bananas, mashed. 1/2 cup peanut butter. 1/4 cup honey. 1 tsp vanilla extract. 1 1/2 cups old-fashioned oats. 1/2 cup whole wheat flour. 1/4 cup ground flaxseed. 1/2 tsp baking soda. 1/2 tsp cinnamon. 1/4 tsp salt. 1/2 cup chopped nuts e.g., walnuts, almonds. 1/2 cup dried fruit e.g., raisins, cranberries.
Instructions: Preheat the oven to 325F 165C and line a baking sheet with parchment paper. In a large bowl, combine the mashed bananas, peanut butter, honey, and vanilla extract. Add the oats, whole wheat flour, ground flaxseed, baking soda, cinnamon, and salt. Mix well. Fold in the chopped nuts and dried fruit into the dough. Using a cookie scoop or spoon, drop spoonfuls of dough onto the prepared baking sheet. Flatten and shape each cookie slightly with the back of the spoon. Bake in the preheated oven for about 12-15 minutes, or until the cookies are golden brown around the edges. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
