I made homemade dough and homemade picadillo so I could make pastelillos like my grandma used to make. They were delicious 😋 😍 Sometimes, when I don't feel like making dough, I use egg roll wrappers. They are a great and easy substitute for homemade dough. I love pastelillos. When I was a kid, my grandma would make large quantities of them, and I'd eat 10-15 at a time. My grandma loved to feed people so my voracious appetite made her very, very happy 😊 If Mother Teresa came over for dinner and only ate a little bit, my grandma wouldn't like her vey much because she no eat very, very good, but if Charles Manson came over and had thirds, she'd say that this boy might be a little crazy but i like him because he eats very, very good. If you ate well, my grandma would love you. Thankfully, I ate very, very well. I love my grandma. I miss her, but when I cook her food the way she used to cook it, I feel close to her. It's like she's standing right next to me. It's a wonderful feeling. ��💜💜

The problem with USAmerican recipes is that most of them call for ingredients that don't exist outside of the US and/or ready mixes. If I wanted to use a ready mix I would read the instructions on the box. Ergo functionally useless to me.

The problem with Brazilian recipes is that most of them are written as if they are just reminding you of how to make something you already know how to make. As such, information like how long to bake something, or what temperature the oven should be on, high or low fire on the stove, or even on occasion what kind of spoon (table or teaspoon) to use is deemed extraneous. Which is also functionally useless.

I end up using the Brazilian recipes while checking English-language ones for baking time/temp and verifying spoon sizes. And also just a healthy dollop of doing whatever the hell I want anyway, because in the end I am Brazilian after all.

#I actually think brazilian recipes are like that for two reasons #one is that until recently generally your mum or grandmother would teach you to cook #so they really are meant as reminders like don't forget x in recipe #or here is the best order of operations #and the second is that mathematical precision in food accuracy isnt really our thing #our thing is oh this is good what if i did this would it make it better?#thats why our pizz is like that and our sushi #as a culture we are very creative with food #so of course the recipe is like yeah go ahead and put 'a couple spoons of mayo'#and not like 2 unheaped tablespoons or 2 oz or whatever of mayo #bc its supposed to be about the vibe #also americans and their ready made food #i came across an easy cake recipe which was literally #just the instructions to assemble a 2 tier cake out of cake mix #that is not a cake recipe #then use x brand basil tomato sauce #or premade pie dough #or x brand sugar alternative #2 cans of x brand something or other #none of this is anything to me

I made a great batch of ricotta cheese today. It's so light and creamy, with a slight hint of lemon from the lemon juice that I used to make it. It is the best cheese that I have made so far. Delicious 😋 Now, I gotta figure out what to make with it. I'm thinking that I should make stuffed shells with this ricotta and some real Italian cheeses that I got from New York. That sounds wonderful. It's either that or a ricotta cheese cake. They both sound good. I might have to flip a coin to decide. 😁 either way, it'll be delicious 😋 Remember.... you've got a friend in cheeses 🧀 😉😁😍

#i am doing my best as an autistic adult to learn to cook all on my own and its scary. im proud of myself for adding another ingredient!#plus this means ive had like...FOUR different types of vegetables today???? normally i eat nothing but peanut butter so heck yeah #my mom called today and i mentioned i havwnt been eating well and she scolded me and then belittled me for not knowing how to cook #and at one point she said in a belittling tone “i guess i should have taught you how to cook!” and i said “that would have been nice.”#and she was like “well no one taught me. i just figured it out on my own when i was an adult.” i did NOT mention that one of our most common #meals growing up was Plain Baked Chicken (a little lemon juice and pepper as seasonings). i know no one taught her. i know my grandma was #busy trying to cope with being a 1970s housewife in the increasingly-nuclear-family atmosphere and didnt have time to teach my mom as a kid #and i know my mom was busy working 3 jobs at once to raise me so. but still.#anyways im letting my hurbis decide to name this dish Microwave Vegetable Casserole bc there isnt really a definition for casserole that i #follow so. i can stretch that definition to include my dish. fun fact: this is a dish i invented for a pet chicken i had! now i eat it #because its tasty and easy and one of the dishes i have experience with :) i just added garlic salt today for the first time and its even #tastier than before!#sorenhoots
