i need to learn to bake something new as everyone at work already knows i'm bringing them some carrot cake on friday....
#as some of u may have heard several times this month or any time the number 22 is mentioned its my bday on friday#so im baking something to bring to work#and i can bake more than just carrot cake#i think ive brought brownies to work more often than carrot cake. and ive also dabbled in chocolate chip oat cookies#and mokkapalat.#and yet#i saw my boss today and she jokingly was like ''haha i guess we'll be getting some carrot cake on our big planning meeting on friday''#which. hold on just to preface this i actually like my boss and she has my best interests in mind and shes v nice.#anyways i didnt even tell her id be baking smh. i mean i always bake something for work when theres a special occassion but still#and howd she guess it was carrot cake. ok probably bc thats my fave but still#i know i have a complaining tone in here but i think its funny and silly#i know i'm a predictable person but sometimes it manifests in weird ways#i did not know my carrot cake baking was THAT predictable#oh. i was thinking of going to the liquor store on fri bc its a tradition of mine and they have a new#cant remember if it was white or red but anyways some type of new seasonal flavor of wine glögg#i think regular glögg is superior but man can you imagine a red wine glögg with carrot cake#cozy spices...#especially since my carrot cake recipe is very winter-y as it has cinnamon and clove in it#i usually love lighting candles and getting cozy on the sofa as soon as the days get short#but i havent done that yet this year#can u imagine. little lights and candles on. red wine glögg and carrot cake. sitting on the sofa under a blanket.#watching something on the tv.#would love to read but its not ideal in candlelight#i usually like having a big light on bc i like to see but it's nice being in a dimly lit room when its dark anyways#leevi talks

store icing that came with these brownies tasted/smelled strongly kind of like wine and i had to toss it JUUUUUUUST in case thats a bad sign bc i couldnt find anything abt it. ah well

The way my grandma always makes apple cake or pie. With grated apples. Usually without the peel. Trust me it's often softer and much juicier and fruitier than otherwise apple baked goods with grated apple are objectively the best

Making my favorite brownie recipe and my mom’s mexicorn (street corn/elote) dip and some cilantro lime rice for work potluck tomorrow!
I’ve never made things for a potluck before but I made a soup for the soup cookoff last year at my old job and got 4th so I should feel more comfortable sharing my food with others!

Avocado (Persea americana)
#they are just good and a staple....8/10 i think#im sharing and rating as many fruits & vegetables as i can. you can share your opinions of them with me. im curious#i wasn't immediately into avocado cuz it reminded me of butter. i don't care for butter#but i enjoyed it through guacamole. which i really have to say points to where avocado shines#it's an excellent ingredient for dips sauces salad dressings and other things of that nature#it's also amazing as an ingredient in brownies. the best brownies ive made have had avocado. ill put that recipe in my cookbook for sure#and it provides a nice textural difference when you have a whole bowl of things. like a salad or rice bowl#also obviously nice in smoothies#and everyone knows that it's nice to put simply on toast.#that isnt my preference but if im doing anything close to that...im putting some cayenne/chili powder & nutritional yeast#that's just the best. a sprinkle of sea salt too if you like. that's the only way I'll have such a 'buttery' use of avocado#i haven't grown to like some varieties that are out there yet but I'd like to try more than the typical ones near me#share your thoughts about avocados

After 5-ish years of baking with short term memory problems, my biggest piece of advice for anyone baking with stuff like brain fog, adhd, etc is to triple-check all your measurements. 2 tbsp and 2 tsp look and sound extremely similar in recipes and you can and WILL mix them up eventually if you don't triple-check it every time you add something. I have had to spoon baking powder out of a bowl of flour, hoping desperately I remember where I dumped that tbsp that was supposed to be a tsp, too many times in my life.
My second biggest piece of advice is if you're cutting or multiplying a recipe, say, making 2x the amount or making 1/3 the amount, calculate your ingredient amounts ahead of time and write them all down by hand somewhere different from the original recipe. Do NOT calculate on the fly and do NOT neglect to write down what you're supposed to be doing. That is how you accidentally add twice the amount of eggs you're supposed to, because you forgot what you were multiplying by or you forgot to multiply in the first place and just read off the recipe absentmindedly. Your phone calculator is your best friend. WRITE IT DOWN.
My third biggest piece of advice is that brewed coffee, espresso powder, and/or dark stout beer enhances chocolate flavor, and almond extract and/or lemon juice enhances vanilla flavor. Use minute amounts so you don't make these additives the dominant flavor, it's supposed to accent the vanilla/chocolate. Here's some examples, both in the form of a standard 9-inch layer cake for simplicity: for a chocolate cake, I would add 1 tbsp of brewed coffee or stout, or 1.5 tsp espresso powder. For a vanilla cake, I would add 1/2 tsp almond extract or 1.5 tsp lemon juice. (When picking a stout, try to find a beer that has flavor notes like chocolate, coffee, cherry, and/or vanilla) This has nothing to do with baking with disabilities I just wanted to talk abt it

Doesn't Need Fixing - Brownies
(This is for preservation. Currently this recipe is on a very faded card stuck to my mom's fridge.)
Ingredients
1 cup flour
1/4 tsp baking powder
1/4 tsp salt
2 cups sugar
1 cup butter
3/4 cups cocoa powder
1 tsp vanilla
5 eggs
1/2 - 1 cup chopped nuts (optional, I never use them)
Directions
Preheat oven to 325
Mix eggs, sugar, cocoa, butter
Add dry ingredients
Bake in greased 9 x 13 inch pan 23-25 min

best brownies in the known universe (at least, according to my grandma)
some year and a half ago when i was getting ready to move out i combed through all the family recipes that lay lost to time and one of the ones that i found was my grandmas brownie recipe. idk where she got it from (nor can i ask cause she has dementia) and its a printed out email she sent to my mom in june 2000. but by george these the best brownies i have ever tasted. would she be pleased that i am sharing this recipe with my vast following? absolutely.
YOU WILL NEED:
5 tablespoons butter (unsalted) 1 ounce unsweetened baking chocolate (or as much as your heart desires) 2/3 cup unsweetened good cocoa powder 1 cup sugar (white) (superfine preferred, normal works fine) 1 cup sifted white flour (can use gluten free) 1/2 teaspoon baking powder as much cinnamon as your heart desires (your heart needs to desire at least some cinnamon. its essential to the recipe) 3 egg whites 1 egg splash of vanilla extract (again, non negotiable step!)
preheat your oven to 325 degrees. grease a square baking pan (9x9 preferably).
in a small saucepan over medium heat melt the butter and baking chocolate. while that is melting, sift together the flour, baking powder and cinnamon into a small bowl. once the butter and chocolate is done melting add the cocoa powder and cook it together for 1 minute. add in the sugar and stir. it will get very thick. this is correct.
set that aside to cool. while thats cooling take a large bowl and put in your egg whites, egg and vanilla. beat it up with preferably a whisk but you can use a fork if youre fresh out of whisks. once the chocolate is cool enough to not scramble your eggs dump it in the eggs and mix it together. add the flour in gradually and keep mixing until its smooth and happy.
spread into your greased baking pan. put it in the oven for EXACLTLY 18 MINUTES. very crucial step. they will come out slightly under done. that is what we want. as they cool they will continue to cook in the pan. we dont want them to get hard and sad. they are not good when they are hard and sad. do not overbake them. you will be sad.
slice them up and as the official last step on the original recipe says: EAT ENJOY AND MAKE MORE! (theyre very good with mint chocolate chip ice cream)
