~~~On a separate note, I'm sorry I've been away for a bit y'all I've been having a rough time, my nana passed away recently so I've been struggling with that. I may be posting less frequently for a while, hope y'all understand. But I did wanna get back into writing and I feel this is the perfect request to write to make my return. My nana was always making that good Southern food for Thanksgiving and Christmas. Her collard greens had to be the best I've ever had in my life, her broccoli casserole, mac and cheese, biscuits the whole shebang. She always had me in the kitchen with her insisting I learn how to make everything so I could carry on her recipes so when I saw this request I knew I had to pull out her recipe book. I know she'd also want me to go back to writing cause she loved Wolverine. She never got to see Deadpool and Wolverine but I showed her the clip where Hugh's shirt explodes and she went WOWIE! and watched it at least 10 times so I feel this is a good way to honor her memory, she'd want me to be thinking about Hugh Jackman. Nana this one is for you I love you.~~~

I focus on my Nana's broccoli casserole recipe in front of me, carefully mixing the blend of cream of mushroom soup, eggs, onions and mayonnaise in a bowl until it’s thick and creamy. I pull the bag of broccoli florets out of the freezer and add them to the mixture taking care to make sure they’re thoroughly coated. I take some of the cheddar cheese shreds and sprinkle it into the bowl stirring it in thoroughly before pouring the ingredients into a dish. I take extra care in sprinkling whatever shredded cheese I have left on the top of the casserole. I read from my Nana's recipe, crumbling up a few packets of Ritz crackers, and sprinkling the crumbs along the top of the casserole alongside the shredded cheese, just as she taught me when I was little. I grab my oven mitts opening the oven door, gripping the casserole dish tightly in my hands, slipping it into the oven. I set the oven timer to 45 minutes, pulling my oven mitts off. I turn my attention back to the pots on the stove, lifting up the lids to check on my collard greens and mashed potatoes. As soon as I lift the lids up the sweet aroma of a home-cooked meal fills the kitchen. A smile making its way onto my face. I begin clearing the table setting up the placemats and getting the plates and silverware ready. I jump slightly as the front door opens and closes, Logan's voice wafting through the air. “Darlin I’m home!” He calls out and I grin as I hear his voice, I poke my head out of the kitchen and I sight watch him kicking off his shoes at the front door. He looks up catching sight of me and I watch him take a deep breath inhaling the smell of my cooking. “Something smells delicious” He chuckles taking a few steps towards me, I step out of the kitchen, meeting him halfway and his eyes roam my figure hungrily taking in the sight of me in my apron. “And something else looks delicious” He chuckles wrapping his arms around me.
“Hi baby” I grin, giggling as he nuzzles his nose against the top of my head, “have a good day?” I ask softly, and he grunts running his hands through my hair and kissing the top of my head. 
“Better now I’m with you” He chuckles gruffly holding me tighter and I smile, “So whatcha got cooking for me” he pulls away slightly, his hand cupping my face, tucking my hair behind my ear, his other hand finding its place on my lower back.
“Hmm, some broccoli casserole, mashed potatoes, collard greens…” I grin looking up at him, fingers lightly tracing shapes on his chest. He groans, his lips falling down to mine in a passionate kiss. 
“Oh darlin you treat me so well” He chuckles, his lips falling from mine, ghosting along my jaw where he presses light kisses against it. His lips kiss down my neck and I let my head fall back slowly as he nips gently at the skin of my collarbone “Always cooking delicious meals f’me” he groans lightly, burying his nose in the crook of my neck inhaling deeply.
“Well you take such good care of me, only fair I take care of you too” I giggle.
“And you do it wonderfully” he grins, tightening his hold on me, I wrap my arms around his neck. “I appreciate everything you do for me" He kisses me, murmuring against my lips "lemme show you how much” He kisses me again, his hands leaving my lower back to palm at the fat of my thighs, massaging the skin rhythmically. I giggle leaning into his touch, closing my eyes only to have them spring open at the sound of the oven alarm going off I chuckle lightly as he groans loudly at the interruption. Keeping his forehead pressed against mine.
“Baby as much as I’d love that,  I gotta go check on the food… can’t let it burn” I say softly pushing lightly against his chest and he grumbles reluctantly letting me go. 
“Fine fine, just so all your hard work doesn’t go to waste” He grumbles and I smile patting his cheek lightly, weaseling out of his arms and walking back into the kitchen. He trails after me sniffing the air, humming quietly to himself. I grab a pair of oven mitts, opening the oven taking the food out putting the dish on the kitchen counter. I turn the stovetop off stirring the collard greens and mashed potatoes one last time before grabbing two plates gently scooping a large portion of food onto Logan's plate. Repeating the process and scooping a slightly smaller portion onto mine. I hand the plates over to Logan who sets them down on the table pulling my chair out for me. 
“Thanks honey” I grin and he pushes my chair in when I sit down, he grins at me slyly pouring me a glass of wine. Pouring another for himself before settling himself in the chair on the opposite side of the table. I take a small bite of each food giving it a small taste test, while Logan across the table digs in like a man starved, practically scarfing down his food. I chuckle lightly sipping my glass of wine. 
“Oh baby you outdid yourself” He mumbles through a mouthful of food, making me laugh. “Absolutely delicious” He compliments and I smile. 
“Used Nana’s recipe” I grin, “same one she used for Thanksgiving dinner” I chuckle, scooping up another forkful of food and guiding it into my mouth. “well thank you, Nana” He chuckles raising his glass of wine, waiting till I tap mine against his, before he takes a sip. It doesn’t take too long for us to finish up our food and I start to stand up as soon as Logan's plate is cleared, reaching across the table to grab it from him, but he tsks shaking his head at me. “Oh no you don’t” he says making me pause my movements my hand hovering over his empty plate. He smiles walking behind me putting his hands on my shoulders massaging gently kissing the back of my neck, gently pushing me back down into my chair.
“What?” I laugh, letting him guide me back into my chair.
“You cooked, which means I do dishes” He insists, and I chuckle.
“Alright, alright” I smile watching as he clears the plates from the table, he puts all the leftovers in containers and stores them in the fridge. Carrying the pots to the sink pouring soap in the pots letting the hot water run and fill them up. I watch him from my seat at the table taking another sip of wine, watching the muscles in Logan's arms flex as he scrubs the pots and pans rinsing them of soap before putting them in the dish rack to dry. He grabs a tea towel using it to dry his hands, as he turns around leaning back against the kitchen counter, his gaze landing on my figure. 
“Well I’m stuffed” he smiles setting the tea towel aside, “but…” He grins standing behind my chair massaging my shoulders again. He takes my hand tugging me out of my chair, holding me close to him, kissing me softly hands gripping my thighs, lifting me up slightly to sit on the dining table. He pulls my body to the edge of the table, making me lay back leaning on my elbows. He pulls up the chair I was previously sitting on, perching himself on the edge of my chair. He pulls my shorts off, my panties following not far behind. He tosses them aside letting them land in a forgotten corner of the room, his lips trailing along my thighs kissing them gently groaning softly at the taste of my skin. He grips my thighs guiding my legs over his shoulders, biting softly at my upper thighs, “I think I’ve saved just enough room for dessert” He purrs, his head dipping down between my legs.

on days where mental spoons are low and you don't feel like cooking...what are some simple snacks you like to reach for?
I love the analogy of mental spoons! I am having a few low mental spoon week, myself.
Meaning this question came at the prefect time!
Today, I've been snacking on a lot of grapes. Green ones are my favorite, and Pierre's had very fresh and crisp grapes; I bought three pounds of them!
I am a big fan of fruit in general. As I'm sure you know, I love pomegranates. I will also go for the occasional blood orange or a sugar bee apple.
Then, what I usually like with my fruit, are just a few cubes of cheese. A simple colby, cheddar, or mozzarella pairs nicely.
However, if you're looking for more full sized meals...
I feel that my simple guilty pleasure meals are a tad bit embarrassing and not something I would ever cook for another person; but I digress, these are very filling and simple.
First up, raviolis cooked in a flavored broth (usually chicken flavored.) If I'm feeling extra fancy, I'll add some Italian seasonings and garlic powder. I snuggle up with a blanket, with the bowl of 'soup' in my lap, and slurp it up while I read.
Also, and this one is more rare for me but also just as lazy. Buttered noodles. Noodles + butter = dinner. Similar to the very detailed recipe above: add seasonings if you want to be fancy. Bonus points if you have heavy cream and parmesan; then you can just make a tasty little sauce instead. I'll also throw in some frozen peas, broccoli, corn; really whatever vegetables I have on hand to make it "healthy."
Dinosaur chicken nuggets. Yes, specifically the dinosaur ones. I throw them in my mini oven for about 25-30 minutes until they're very crispy (nearly burnt) and enjoy with a random dipping sauce. Usually something sweet.
I also enjoy bread with spreads. Butter & jam, peanut butter & tomato, sweet potato, kaya, honey; almost anything.
Of course I will also have the occasional frozen meal, though I try to avoid them the best that I can.

“You want red or white?” You and Frankie were getting ingredients for your dinner date, and you were looking for the perfect drink to pair it with. 
“I want beer.” Frankie was a man with simple taste he either went with beer or whiskey, neither of which you happen to like. 
“I agree with red too.” You place the white blend back before carrying on to the refrigerated dairy items. 
Today at work there were few walk-ins so both of you scoured the internet for cooking recipes. Benny and Will partook in the festivities pointing out you should add a salad. Benny showed you some excellent stuff that he makes to bulk up for his fights. Ultimately you chose a Caesar salad from scratch with broccoli cheddar soup.
After work, you two headed straight for the store to gather your ingredients. Since you would be focusing on the soup and Frankie on the salad you guys split up. You found him in the pastry section looking at apple turnovers before you hit the wine aisle. As he went to grab one from the top you intercepted and took the one under it. 
The heavy whipping cream and some creamer were the last two things you needed to get before checkout. Like always Frankie pulled out his wallet before you could blink. 
“Gotta be quicker than that.” He taunts you while waiting for the payment to go through. 
“You two are such a beautiful couple.” The older lady checking you two out has a fond smile looking at you. 
“Thank you,” Suddenly it’s like you’re back in middle school and someone told you how good you and your crush looked together. During your small exchange, Frankie had already grabbed the bags from the bagging area. 
“You ready baby?” Nodding, you smile once more at the cashier before following after the man responsible for your flustered state. 
Out in the parking lot you fish through his pockets for the truck keys. With the groceries safely packed away, you make your way to your home. The drive is silent but comfortable and you take the opportunity to drift off to sleep. When Frankie wakes you, you find he’s already put the bags in your apartment. He even set up his salad station. 
“May the best chef win.” You tilt your head with squinted eyes in an effort to intimidate him further. 
“I think we both know who’s coming out on top hm?” Before he skirts past you he kisses your forehead. 
It seems you need to get used to cooking with another person in the kitchen since you both constantly bump into each other while making your dishes. Instead of ire the kitchen is filled with laughter at the chaotic mess you’ve created. While your soup is simmering you decide to bother Frankie by wrapping your arms around his waist and becoming dead weight. 
As horrible as it may make him sound Frankie can’t help but revel in the peace you provide him. He feels comfortable taking up space around you whereas in his home he feels like he’s on eggshells. This whole open marriage was supposed to give him and Maria time to recoup but he finds himself thinking of what a future could look like with you. Considering the relationship he had now was merely co-parenting anyway. 
“I hope you know if you’re trying to annoy me it’s doing the exact opposite.” His words, like always, send a fluttering in your lower stomach. 
“You say that now,” You let your sentence hang in the air while he finishes chopping the lettuce for the salad. 
The way that Frankie carefully crafts his ingredients shows how much he likes cooking, and you’ve never been more attracted to him. His salad looks better than what they serve at Panera Bread. 
“All I have to do is add the croutons, how’s the soup coming?” He turns his head to the side to look down at you. 
“It’s done, I’ll go set everything up in the living room.” Reluctantly you release Frankie and make your way towards the living room with the wine in tow. After your TV loads, you queue up Love Island with two glasses of wine left on the table.
Back in the kitchen, Frankie turns off the stove and waits for you. When you make it back the both of you divvy up the food to take to the living room. The Caesar salad is probably the best you’ve ever tasted and you are sure to let Frankie know. Following your lead he tries your soup and groans in delight at the simple but filling dish. 
“What’s this?” His head nods in the direction of the paused TV. 
“Love Island, you’ll grow to love it I promise.” Although reluctant to agree with your words he sits back and enjoys his meal. 
By the time his spoon hits the bowl, he’s fully invested despite his doubt. He’s even picked his favorite couple and animatedly talks about how much he loves their colloquialisms. Even though he was adamant that he only drank beer or whiskey he sure was downing the wine like it was about to expire. 
“Who knew British people were so trashy?” Frankie’s eyes are glued to the screen in fascination.
With the both of you comfortable on the couch you turn and tuck your feet underneath you. His whole body was slumped against your couch. The TV was just background noise as you let your thoughts wander to this predicament. 
“So this open marriage thing, am I the only woman you’re seeing.” They say curiosity killed the cat but you would rather have your answer than wonder. 
“Yes, honestly I wasn't particularly looking but Benny had brought you up and I was interested.”  Somehow you aren’t the least bit offended by his words.
“So you wanted to work more on your marriage?” Frankie fully turns his body to face you after your question.
“Yeah like I said I fucked up and it was on me to do the work to fix it but I think it was too late.” You nod along understanding his position.
“What about now are you two working it out?” As you wait for his answer your heart thunders in your chest. 
“No, I wanted to try but respected her wish for space. And now I’m starting to think we’re nothing more than co-parents.” The drop in his voice doesn’t go unnoticed and you wrap your arms around him hoping it’ll bring some comfort. “I don’t mean to dump all this on you.” 
“I asked Fransisco and I’m glad you’re being honest with me.” He doesn’t answer you and instead dips his head in the crook of your neck. “Considering how long you two were together it makes sense that you feel so deeply about it. I’d be alarmed if you didn’t.”
“What about you? I’m sure you have no shortage of suitors.” Frankie pulls back enough to kiss around your neck, the wine has him feeling friskier. 
“I don’t but only one caught my eye.” Your voice is barely above a whisper.
“Lucky me then.” His gravelly voice gives your lower stomach that familiar feeling. But Frankie doesn’t stop there, he lets his hands roam over your sides before he comfortably plants them on your hips. After he gives them a squeeze he pulls you into his lap with ease and you can’t help the giggles that follow.

By the time the pizzas arrive, the lobby is halfway cleared out so you grab a few paper plates from the break room before heading into the garage again. Although you know they won’t be able to eat much they still need something to hold them over.

After 30 minutes of this spinning rotation, they assure you that they’ll be fine until they finish. You take all the food leave it in the break room and fill up the coffee machine one more time before sitting back down. 
Steadily the boys come out from the garage to converse with the customers about their remaining work or the final price. As the last person leaves you lock the front door and hot tail it to the breakroom where the guys have a plate already laid out for you. 
“Dammit, I should have gotten soda.” The realization hits you now that there are three large pizzas without a drink in sight. 
“We got beer in the fridge sweets don’t worry about it.” Will’s statement causes laughter to bubble out of Frankie’s mouth. 
“She hates beer.” Frankie takes the beer you were offered. 
“Why?” Based on Benny’s face he couldn't fathom why you wouldn’t. 
“Maybe it has to do with the fact that it tastes like carbonated cat piss.” Since you were given the platform you would rave about how much you didn’t like beer. The room roared with laughter from all the guys at your barely-contained hatred for their favorite drink. 
“This can’t be coming from the same lady who said Pete Davidson was hot.” Benny’s quip takes you by surprise.
“I told you that in confidence.” You whisper-yell at him in faux anger. 
“Respectfully, you should’ve taken that to the grave.” Will comes out of nowhere to share his opinion and you can’t help the laughter tumbling out of you. 
The night carries on with all of you tearing down each box of pizza until there’s nothing left. All the beer in the fridge lays on the table opened and empty. tlb characters’ favorite meals:
michael: scrambled eggs with bacon and hash browns. michael is definitely a breakfast food fan, and this is his favorite breakfast meal. he prefers to make it himself, so he can cook the bacon the way he likes or put hot sauce on the eggs, but if he’s ever at a breakfast restaurant he’ll always order this there.
star: broccoli and cheddar soup. i don’t think star had a good relationship with her parents at all (in fact i hc that she ran away from home at 18) but her dad used to make this for her on special occasions and she’s never been able to find something that replaces it as her favorite food. every once and a while she’ll feel horribly homesick and get some of the campbell’s canned broccoli and cheddar soup.
david: tuna salad sandwich. he eats this like twice a month and when he does it’s the gross sandwiches that come in vending machines or the refrigerated shelf at gas stations. he truly and genuinely thinks it’s the best and most satisfying meal in the world will usually eat it alongside a can of diet coke.
dwayne: a reuben with salt and vinegar chips. he’s very picky when it comes to this specific thing. the bread on the sandwich can’t be toasted and the potato chips have to be kettle cooked or he isn’t satisfied. he hasn’t eaten this in years because there’s no restaurants in santa carla or the surrounding area that meet his high standards.
marko: bbq burger. specifically the one at a restaurant just outside of santa carla that closed down in the mid 1970s. he mourns the lose every day and has never found a bbq burger that hits quite the same.
paul: lasagna. his all time favorite is the one at this italian place in the town where he grew up, but he’s happy with any and all types of lasgna, including the shitty frozen meal ones.
laddie: spaghettios with hot dogs cut up in it. most of what he eats is fast food or from whatever quick service restaurants are on the boardwalk, so it’s not like he gets a lot of home cooked meals and he sees this as a sometimes treat that star or one of the boys will make for him every once in a while.
sam: grilled chicken tacos. he takes his tacos with cilantro and sour cream only, and as little spice as possible because he can’t handle it at all. he hasn’t eaten this at all since moving to santa carla cause his favorite version of it is at a mexican restaurant that the emersons used to go to semi regularly when they lived in arizona. if he ate any different chicken tacos it would just make him a little homesick and sad he can’t have the ones he likes.
edgar: blueberry pancakes with a side of onion rings. edgar seems like a diner food kind of guy to me (i haven’t forgotten the scene in the thirst where he and zoe get pancakes together), and he’s definitely a creature of habit so this is what he always orders. he refuses to put any sort of syrup on the pancakes and never gets any breakfast sides to go with them, it’s only ever onion rings.
alan: peanut butter and banana sandwich. i think that he and edgar were kind of left to their own devices a lot growing up (and it’s only gotten worse now that they’re teenagers), so they had to make their own meals and peanut butter and banana sandwiches are something they’d eat multiple times a week when they were kids. no matter how often he eats them he never gets tired of them.
lucy: chicken and dumplings. she makes this at least once a month, and every time michael or sam have ever gotten sick she makes it for them. she still uses her mom’s recipe from when she was a kid.

Long personal post ahead...
At the end of January I was laid off from my job and have unfortunately had no success finding a new job. Thankfully, I qualified for unemployment and that has helped me out but no longer having a stable income has been very stressful. I didn't expect to struggle this much to find another job and I know that I'm not the only one in this situation.
With all the free time I've had due to no longer having a set schedule that comes with having a job, I've been teaching myself how to cook and it's starting to become something I'm pretty passionate about.

I've come to really enjoy experimenting and coming up with my own recipes that I think would taste good and it makes me feel so fulfilled when something I throw together turns out better than I expected. Recently, I made this broccoli cheddar potato soup (though it was really chunky so it was more of a chowder than a soup) and it came out so well that I ended up eating all the leftovers myself. Haha.
This very unsuccessful job search has been incredibly frustrating and has definitely taken a pretty hefty toll on my mental health. It's hard not to feel discouraged when it feels like no one wants to give you a chance or take you seriously.
Despite how hopeless I've felt over all this, I'm just trying not to dwell so much on the negative aspects of this situation. It's better to focus on the positives and I wouldn't have taken the time to improve my cooking skills as much as I have in the past few months if I hadn't been laid off. I've had the free time to focus on what truly matters to me and I'm grateful for that.
I applied for a job yesterday, one that involved an assessment that took a bit of time to complete and it only took them A DAY to send me an email saying they weren't going to move forward with my application. I'm so fed up with feeling like I'm never given a fair chance at an interview and even to be hired. I've been set up for disappointment so much over the past few months that I'm starting to feel like I'm better off looking into paving my own way, using my passions as a way to earn a living. I've always felt I was wasting my time working at jobs that never let me show off my real skills so maybe it's time I take advantage of this unemployment struggle and turn it around.
I know this was a fairly long post and if you actually read this, I appreciate it. I wanted to get my feelings off my chest and this also felt like the best way to offer myself some self affirmation towards my desire to turn my passions into profit.

1. Conchas
I grew up eating these and they give me so much nostalgia, pan dulce in general is excellent but conchas will always be the best to me.
2. Avocado pasta
This is going to sound so strange, but ever since I’ve started cooking this has become one of my favorite things to eat. I have my own recipe for it, and the coldness and creaminess of the avocado mixed with the warmth of the pasta is amazing.
3. Broccoli Cheddar Soup
One of my comfort and safe foods, for some reason broccoli cheddar soup in a bread bowl is one of the best ways to eat it lol
4. Glorias
Well, Glorias de Linares, technically. Dulce de leche, goat’s milk, and pecans all mix together to create just most delicious sensation in your mouth.
5. Avocado sushi
I really like avocado lmao. I loved sushi before I became a vegetarian, so when I was finding solutions for my favorite foods I found avocado sushi and it’s just delightful.

HMMMM My favorite Thanksgiving dishes... Im a sucker for a good turkey with stuffing tbh!! Im suuuuch a slut for stuffing (which is also called 'dressing'? I dont necessarily know if there is a difference, both are made with bread, broth, aromatics and herbs, my family also would have diced onion and I thiiiink celery? in ours? idk I love it. BEST Savory side dish!!!)
After moving to Texas my in-law family also introduced me to casserole items that... well they're not EXCLUSIVE to Thanksgiving but I really fucking love them... Broccoli Cheddar Casserole (name is deceiving, its primarily rice and cheese with Some Broccoli LMAO) and Green Bean Casserole (green beans, cream of mushroom soup, and topped with french onion crunchie bits OMNOMNOM...)
both are SO SO good,,, raaaaa
.... man im a slut for side dishes!
To recap: Stuffing, Broccoli Cheddar Caasserole, and Green Bean Casserole are my favorites, and yeah some white turkey meat is pretty baller, too!
I'll also tell you an extra I liked, but its from my culture up in French Acadian Territory (aka, Maine and New Brunswick, Canada lol): Sugar Pie or Tarte Au Sucre. If you look specifically for an Acadian recipe, follow it, you will have an amazing sweet desert. Dont cut it into 8 slices, cut it into 16, it is VERY SWEET but its. The epitome of my childhood growing up. It was for Thanksgiving + Christmas, but worth shouting out.

Easy Vegan Meals for Children and Picky Eaters
Got a child that you need to feed or pack lunch for and don’t have much time? Have a picky eater living with you who’s trying to go vegan? Maybe you have a combination child/picky eater (like I was) living in your household? Well, this list of food is perfect for you! While not always the healthiest, sometimes just getting someone to eat can be challenging enough, so there’s nothing wrong with some simple, somewhat unhealthy meals every now and then. Many of these dishes can easily be made healthier by adding veggies! Here’s a collection of easy meals for the difficult eaters in your life. 
Macaroni and “Cheese”: Whether it’s boxed vegan mac or homemade, macaroni and cheese is a beloved classic for people of all ages and eating habits. Some boxed and frozen vegan mac and cheese that I’ve personally tried include Sweet Earth Cauliflower Mac, Field Roast Mac N’ Chao, Daiya Cheddar Style Mac & Cheeze, and Annie’s Deluxe Rich & Creamy Shells & Vegan Cheddar. You could also make a quick batch of mac and cheese yourself by boiling your pasta noodle of choice, making a roux with all-purpose flour and vegan butter, and slowly adding in your nondairy milk and vegan cheese shreds of choice (I personally use oat milk and either Follow Your Heart or Violife). If you’re looking to make your own cheese sauce, there are plenty of vegan recipes out there, such as this one from Nora Cooks or this one from Love and Lemons. Add broccoli, cauliflower, and/or some sauteed greens (such as spinach or kale) to make this classic, homey dish a little less unhealthy. 
Tacos: Whether you use a packaged spice mix or make your own (like this one from Vegan Richa), you can’t go wrong with a simple taco. Hard shell, soft shell, lettuce wrap, taco salad - whatever you do, it’s up to you and sure to be delicious! I personally like to use black beans (and sometimes chickpeas or TVP) as my meat substitute. You could also add other veggies to the dish, such as mushrooms, carrots, zucchini, bell peppers - anything you want, really. Top with lettuce, tomato, vegan cheese, salsa, and/or pico de gallo for some added flavor and texture.
Sloppy Joes: In place of meat, use tvp, lentils or mushrooms. If you can find a canned sauce that is vegan friendly, that will work just fine for a quick meal, but homemade is best, in my humble opinion. Not sure where to start? Try this recipe from Nora Cooks!
Grilled Cheese: Get two slices of bread, a couple slices of vegan cheese, and enough vegan butter to spread on the outside of the bread. Put the cheese slices on top of the bread and then put the bread slices in a pan over medium heat until cheese is melted and bread is toasted. Add some tomato slices or fresh greens if you’re into that or serve the sandwich with some soup (I like tomato soup best). 
Pizza: Who doesn’t love a good pizza, am I right? If you’re lucky enough to live somewhere that serves good vegan pizza, there’s absolutely nothing wrong with getting it as a treat every now and then. Frozen vegan pizzas that I’ve seen in stores where I live have been limited to Daiya pizzas (which I haven’t tried, so I can’t comment on taste), but I know there are others out there. You can easily make your own pizza by buying vegan-friendly dough (either frozen, premade bread or package mix), jarred pizza sauce, vegan shredded cheese, and toppings of choice (such as spinach, mushrooms, pineapple, etc.). Looking to make a pizza from scratch? Try this one from Love and Lemons or this one from Nora Cooks. 
Spaghetti: Jarred sauce and spaghetti noodles, what could be simpler? You could also add some vegan parmesan on top, some vegan meatballs or tvp to the sauce, and/or a bunch of vegetables for added flavor and texture. Making your own sauce is really simple, too! Here’s a recipe from my mom that I use whenever I’m craving spaghetti (note that the link also has recipes for lasagna and chili) -  Spaghetti Sauce.
“Chicken” Nuggets: There are plenty of frozen vegan chicken nugget options out there now, from Morning Star to Gardein to Impossible, etc. If you want something without all the preservatives and processing that goes into making fake meat, you could try making your own. These recipes from Nora Cooks and Sweet Potato Soul look yummy! Serve them with some homemade fries, baked potatoes, or roasted vegetables for a filling and delicious meal. 
Quesadillas: Another yummy Mexican dish that you can whip up easily. You can make a simple one by purchasing tortillas and vegan cheese shreds to melt inside. You can also add whatever veggies and spices you want. If you’re looking for recipes to follow along with, these from Love and Lemons and Nora Cooks look delicious!
Baked Ziti: More pasta, yay! Warm, cheesy and saucy, what could be better than baked ziti on a chilly day? This vegan baked ziti from Nora Cooks uses ziti containing wheat and a cashew sauce, but it does have gluten free and nut free options listed! If you want to add some healthy factors to it, mix in some greens (like spinach or kale) or other vegetables (like broccoli, cauliflower or zucchini).
Peanut butter and Jelly Sandwich: Simple yet delicious! Great to take to school or work for a quick lunch. Have it with some raw veggies or fruit slices to add some more nutrition to your meal. Want to take your sandwich to the next level? Try this PBJ Coconut Bacon Sandwich from Elephantastic Vegan!
Fried Rice: Rice and vegetables - couldn’t be simpler! While you can certainly find frozen vegetable fried rice that is vegan friendly in many grocery stores, there’s just something satisfying about making it yourself. This recipe from Nora Cooks is so good!

Are you telling me a mixed vegetables fried this rice
Get your vegetables. I used frozen vegetables like a loser but any vegetables oughtta work. Steamed broccoli would be good. Green beans, carrots, and corn was what I used and it slapped.
Make some rice (boil water, add about half as much rice with the understanding that rice grows, simmer for for 10-15 minutes or until it's about as soft as you want it LOOK AT ME: POKE IT WITH A SPOON DO NOT TOUCH THE BOILING RICE WITH YOUR FINGER, fluff and serve)
Butter a frying pan and heat it
Put the rice and veg in the frying pan and let them heat up for a short while. They'll sound pretty when it's ready.
Then crack in an egg.
And scramble it.
I always make my fried rice pretty soft cooked but you can get it crispy if so desired
Easy on the soy sauce. Use sesame seed oil too.
In total, including clean up and buffer time it takes about an hour, but it could take longer or shorter depending on how fast you cook.
Boujee botato burrito
This one's stupid
But it tastes GOOD
Prepare some steak fries however you like to prepare stake fries. I deep fry and my mama bakes them. Air fryer, pan fried, cooked over an open flame idc.
Get a tortilla. Not a tiny one either, we're working with steak fries here.
Here me out. I know this is stupid but AMERICAN CHEESE is actually best in this case. It's got a good texture. And juuuust enough flavor to compliment and give the burrito a little grounding without becoming a main aspect of the dish.
So put your tortilla on your Large Heating Surface Of Choice, I use a grill but whatevers big enough, a frying pan would work, and toast it and melt the cheese a little.
Then put on your fries.
Then, and I need a citation for this because I do not know the exact combination of herbs but use Cajun seasoning. Look up badia cajun seasoning and use that. Or season to taste, you want a slightly sweet and spicy blend, kinda like the seasoning on a barbecue chip but more Green and Yellow
Then top it with romaine lettuce and wrap it.
Or other lettuce or maybe spinach, but you don't want to overload the flavor.
This one takes much less time, the longest part is cooking the fries, I'd say about 20 minutes total, even with clean up.
It tastes.. in the same ballpark as a gyro. Not the same at all, but like if a gyro had a cousin from Weeki Wochi Springs (and... that's pretty accurate actually. As someone who is intimately familiar with the Really Sweaty parts of florida and is reasonably familiar with our next door flood buddy (louisianna) and the food from both places. Look if you've ever been to Natchitoches, LA and try food from there you'll know what I mean)

It's soup. So we're clear.
This is borderline stew, and is something to make to feed you for several days, it's very hearty.
And this is a leftover soup! But it doesn't have to be you can make it fresh if you want to.
But chop up some fries and chicken (I used leftover steak fries and chicken tenders, which have a story behind them but not for here, I'm not that southern)
Put them in a deep pot with some butter to start getting them warm. The chicken needs to be all the way cooked beforehand, this is where the leftover part comes in handy. The steak fries less so but yk
When they're warm and popping a little, add a can of cream of chicken soup, milk, cheddar and mozzarella cheese, SALT, chili seasoning, a shake of Tony chachere's, (that's pronounced SaShaRay's if you wanna ask for it at a grocery store), and a dash of honey mustard.
Let it warm and mingle on high heat until it tastes super good.
Put aside and make some rice (sea above). Yellow or brown rice would be SO GOOD with this, especially yellow rice. I only had white on hand tho loll
Mix the rice into the soup, and heat it up again to serving temp.
I'd serve it with some nutty bread. Not pumpernickel or white bread. Rye would be good. Or even just some standard wheat bread. Maybe some cheddar biscuits or cornbread lol.
This one takes much longer just by nature, I'd give it an hour to an hour and a half, clean up included.

Goat cheese
Blueberries
Honey
Rosemary if you're a homestuck (or have good taste in herbs)
Put it in a (oven safe) bowl or even straight on some thick bread (foccacia would work well. That's fecasha if you've never seen the word written out. Horse divorce).
Put it in the oven, or better, a toaster oven (not a microwave)
Heat it until the berries and goat cheese get soft
Blend it all together
Serve..
It takes maybe 15mins

Also! As someone who violently cannot eat any kind of squash raw or cooked but who loves zucchini bread, eating vegetables baked or cooked into something else is better than not eating the vegetables at all, especially if you’re making things at home where you can make substitutions to make the rest of the recipe healthier as well.
Foods with a significant veggie content that may not be the healthiest option but are infinitely healthy than not eating veggies at all:
- zucchini bread (also: honorable mention, banana bread. Bananas aren’t veggies but a lot of people, myself included, have texture issues with them and they’re a fantastic source of potassium)
- carrot cake
- literally any pasta dish with tomato sauce
- a BLT
- grilled cheese sandwich with tomatoes OR tomato soup
- a philly cheesesteak with peppers and onions
- actually literally any deli sandwich with veg on it
- sweet potato fries (my dad used to make them cut into circles and baked with copious amounts of butter and salt, they were divine)
- Mac and cheese with broccoli
- similarly, broccoli cheddar soup in a bread bowl (actually a god tier soup)
- goulash (ground beef and pasta and cheese and diced tomatoes)
Yes, these dishes have fats and carbs and things that aren’t the healthiest, but that doesn’t erase the nutritional value if the vegetables they have! And besides, eating healthier isn’t about only eating vegetables and lean protein. You literally need fats and carbs to survive! Carbs are where your body gets its energy!
Fed is best. Fed. Is. Best. People usually say that in relation to infants and breastfeeding versus formula, but it’s true for everyone. If the “unhealthy” option is the only way you’re gonna get that nutrient, then congrats, that’s the healthy option.
i mean this in the gentlest way possible: you need to eat vegetables. you need to become comfortable with doing so. i do not care if you are a picky eater because of autism (hi, i used to be this person!), you need to find at least some vegetables you can eat. find a different way to prepare them. chances are you would like a vegetable you hate if you prepared it in a stew or roasted it with seasoning or included it as an ingredient in a recipe. just. please start eating better. potatoes and corn are not sufficient vegetables for a healthy diet.
