Indian Lentil Curry with Spinach (Dal Makhani)
Ingredients:
- 1 cup black urad dal (whole black gram lentils)
- 1/4 cup rajma (kidney beans)
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 teaspoon cumin seeds
- 1/2 teaspoon coriander seeds
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon garam masala

- 1 cup chopped fresh spinach
- 1 tablespoon ghee (clarified butter)

Instructions:
1. Rinse the urad dal and rajma thoroughly. Soak them in water for at least 8 hours, or overnight. Drain and set aside.
2. Heat ghee in a large pot over medium heat. Add cumin and coriander seeds and let them sizzle for a few seconds. Add onions, garlic, and ginger and sauté until softened and fragrant.
3. Stir in turmeric, red chili powder, and garam masala. Cook for 30 seconds, or until fragrant.
4. Add the soaked lentils, diced tomatoes, and salt to the pot. Stir well to combine. Pour in enough water to cover the lentils by 2 inches. Bring to a boil, then reduce heat to low and simmer for 30-45 minutes, or until the lentils are tender and the curry has thickened.
5. Stir in the chopped spinach and cook for a few minutes, or until the spinach wilts.
6. Adjust the seasoning with salt to taste. Garnish with chopped cilantro and serve hot with rice or naan bread.

Superfoods in Indian Diet; right from your kitchen
One of the best things about living in India is its food and the culinary heritage that we experience in every meal that we consume. No wonder; back in medieval times, India was the world’s most sought-after country due to its treasure of spices, hidden from the rest of the world. To the present day, the culinary diversity that we find in India cannot be found anywhere else in the world. However, despite having a plethora of food options that are readily and easily available, we often find ourselves purchasing inexpensive, imported alternatives.
There is a long list of food items that are so affordable that they can be found in every Indian household, yet they are inexpensive and often a luxury overseas, such as in the US. The list includes spices such as turmeric, cardamom, and ashwagandha (15x more expensive), grains such as millets and black gram (10x more expensive), and fruits and vegetables such as guava and jackfruit (20x more expensive). Without waiting any further, let’s learn about the Desi superfoods that you can add to your diet based on their affordability and availability.
Everyday Nutritional Powerhouses: Here, we will talk about the superfoods that are not only affordable but also readily available in our households.
Dal (lentils): Packed with some protein, fiber, and many essential minerals, dal is indeed a staple for a reason. You can explore diverse varieties like moong, masoor, tur, urad, and more for different nutritional benefits.
Leafy Greens: Do not try to underestimate the power of palak (spinach), methi (fenugreek), and sarson (mustard greens). Not only are these loaded with vitamins, minerals, and antioxidants, but they also boost your immunity in the chilling winter season.
Seasonal Fruits: Embrace the abundance of papaya, bananas, guavas, and oranges to fuel your body with vitamins and natural sugars.
Spices: We might know them as spices that add flavor to our meals; spices such as turmeric, ginger, garlic, and chili peppers are more than just flavor enhancers. They are anti-inflammatory powerhouses with many health benefits, such as regulating blood pressure and playing a major role in the prevention and treatment of various cancer types.
Yogurt: It is a natural source of probiotics for gut health, calcium for strong bones, and protein for muscle development. It can be consumed plain, flavored, or even with fruits.
Nourishing Yet Special: This category will include superfoods that are not as easily found in households like the ones mentioned above, yet they are hidden gems that carry more nutrients than you can take.
Millets: Ragi (finger millet), bajra (pearl millet), and jowar (sorghum) are some of the gluten-free grains that are rich in protein, fiber, and certain micronutrients. They’re most commonly used in rotis, dosas, or porridge.
Nuts & Seeds: Chia seeds, flaxseeds, and pumpkin seeds are packed with nutrients such as omega-3 fatty acids, essential minerals, and protein. You can soak them in water overnight before consuming them or directly sprinkle the seeds on your salads, yogurt, or porridge.
Amla (Indian Gooseberry): One of our top favorite superfoods, amla is a vitamin C powerhouse that boosts immunity, aids in digestion, and comes with anti-inflammatory properties. You can enjoy it raw, pickled, or in the form of juice.
Coconut: Another superfood like the Indian gooseberry, coconut water is the hub of electrolytes, while its flesh has healthy fats and fiber. While it grows in the south, coconut can be found easily in the northern regions of India. Although it is mostly consumed raw, coconut’s nectar and flesh also make it a key ingredient in various South Indian dishes.
Jackfruit: This versatile vegetable can be enjoyed unripe or ripe. Ripe jackfruit offers antioxidants and vitamins, while unripe jackfruit provides a meaty texture in vegetarian dishes.
Exquisite and Rare Nutritional Delights: Last but not least, this category will take you through some of the rare, expensive superfoods that are worth every penny that you spend on them.
Saffron: Found in the northernmost region of India, i.e., Kashmir, saffron adds a luxurious touch to many dishes and drinks while boasting anti-inflammatory and mood-boosting properties. Due to its scarcity, saffron is one of the most duplicated superfoods. Purchase saffron only from a reliable dealer.
Black Rice: A nutty-flavored rice rich in antioxidants and fiber and known for its longevity-promoting properties.
Ashwagandha: This powerful herb is an adaptogen that helps the body manage stress and improve stamina.
In the big picture, embracing India's diverse superfoods offers a treasure trove of health benefits while remaining kind to your wallet. From readily available lentils and greens to hidden gems like millets and amla, these culinary powerhouses pack a punch of nutrients without the hefty price tag of imported trends. So, explore the vibrant flavors of India, nourish your body with local abundance, and discover that superfoods don't have to be exotic or expensive.

Dosa
In this post, let's talk about the Dosa and the science behind it. Dosa is a much-loved traditional South Indian breakfast item. It is essentially a crepe or pancake made with a rice batter. Dosa is enjoyed with various side dishes such as sambar, chutneys, pickles or spice powder. Like many other Indian dishes, Dosa's origin is difficult to trace. It dates back at least a thousand years. Special thick Dosas are offered to deities in temples like Tirumala, Alagar Kovil etc.
Tirumala Dosa (It is thick compared to the usual Dosa, with a topping of butter. )
There are umpteen varieties of the Dosa. For starters, we have the Masala Dosa with fried potatoes or the Podi dosa which is Dosa with fiery spice powder sprinkled on it. Butter dosa, onion dosa (For those who eat), and cheese dosa are also popular. Then, one can change the main grain in the batter from rice to get dishes like Rava Dosa, Pesarattu, Ragi dosa, Millet dosa etc. Adventurous people may like to try dishes like Paneer dosa, Pav bhaji dosa, pizza dosa etc. The possibilities are endless!
Varieties of Dosa
This post is neither a recipe for Dosas nor is it a recommendation for the best Dosa eateries to try. Rather let's dive into the science behind this wonderful appetizing dish. Basically, rice (Oryza sativa) and urad dal (Vigna mungo) are soaked in water for 6-8 hours before grinding, and this batter is spread on the pan to make crispy dosas.
Dosa batter
To understand the science behind the scenes, we need to know some basics. Respiration is a vital process that is literally keeping us alive. In simple words, the glucose from the food that we eat gets "oxidized" to produce energy. There are 2 main steps in this breakdown: 1. Glucose gets broken down to pyruvic acid 2. Depending on the amount of oxygen, pyruvic acid is further broken down to produce energy. Generally, when there is abundant oxygen, pyruvic acid enters the "Citric acid cycle" to produce energy and release CO2. However, in the absence of oxygen, pyruvic acid gets converted to lactic acid, such as in yeast. This process has been exploited by humans for food production since time immemorial.
Rice is full of carbohydrates arranged in long chains of glucose. Allowing the batter to soak and rest for 6-8 hours gives it enough time to ferment. Bacteria naturally occurring on the grains such as Leuconostoc mesenteroides, Streptococcus faecalis, and Lactobacillus fermentum carry out fermentation in the batter, releasing carbon dioxide and making the batter fluffy. This fermentation is usually "kickstarted" by mixing the batter using bare hands.
(Simplifies representation of respiration)
Fermentation has quite a few benefits. Firstly, it helps to break down the anti-nutrients like phytic acid present in rice and urad dal. The lactic acid formed during the fermentation process aids the digestion of food like a probiotic. Moreover, useful substances like vitamins and folic acid are also produced during the process.
An interesting fact is that a pinch of fenugreek (Methi) seeds are added to the dosa batter before soaking to provide a slightly alkaline pH for fermentation. They also contain enzymes that break down complex carbs to simple glucose to be used by yeast. Also, optimum temperature is essential for fermentation. A temperature of 25-35 degrees Celsius works best for a good batter.
So this was a brief explanation of the science behind these crispy delights. So whether it is at MTR, Minerva, Chutneys, Rameshwaram cafe, or homemade (the best one); let's take a moment to appreciate the science that goes into our food to make it delicious. Wait ... it's not over yet!

The grilling process uses little to no oil, reducing calorie content.
The marinade often includes turmeric, garlic, and ginger, which have anti-inflammatory and antioxidant properties.
High in protein and low in fat, tandoori chicken or fish is an excellent choice for health-conscious diners.
Pair your tandoori dish with a side of green salad or mint chutney for a wholesome meal.
2. Lentil-Based Dishes (Dal)
Dal, or lentil curry, is a staple in Indian households and is rich in nutrients. There are various types of dal, such as yellow lentils (moong dal), split chickpeas (chana dal), and black lentils (urad dal), each offering unique flavors and health benefits.
Why It’s Healthy:
Packed with plant-based protein, making it ideal for vegetarians and vegans.
High in dietary fiber, which aids digestion and keeps you full for longer.
Low in fat and cholesterol while being a great source of essential vitamins and minerals like iron and potassium.
Dal can be enjoyed with a side of whole-grain roti or brown rice for a balanced meal.
3. Grilled or Steamed Appetizers
For those looking for lighter starters, opt for grilled or steamed Indian appetizers. Popular options include:
Paneer Tikka: Cubes of cottage cheese marinated in spices and grilled.
Vegetable Kebabs: A mix of minced vegetables, herbs, and spices formed into patties and grilled.
Steamed Momos: Indian-style dumplings filled with vegetables or lean meat.
Why It’s Healthy:
These appetizers avoid deep frying, significantly cutting down on unhealthy fats.
Ingredients like paneer and vegetables provide protein, calcium, and fiber.
These appetizers are perfect for those who want a flavorful start to their meal without overindulging.
4. Roti and Whole-Grain Breads
Indian breads like naan are a popular choice, but for a healthier alternative, consider opting for roti or whole-grain breads. Roti is a flatbread made from whole wheat flour, making it a nutritious accompaniment to curries and dals.
Why It’s Healthy:
Whole grains provide complex carbohydrates, offering sustained energy.
Rich in fiber, which supports digestion and heart health.
Pair roti with a vegetable curry or dal for a meal that’s both hearty and healthy.
5. Vegetable Curries
Vegetable-based curries are not only flavorful but also packed with nutrients. Dishes like aloo gobi (potatoes and cauliflower), baingan bharta (roasted eggplant), and palak paneer (spinach and cottage cheese) are great options.
Why It’s Healthy:
Vegetables are a rich source of vitamins, minerals, and antioxidants.
Cooking methods like steaming and simmering retain the nutritional value of the ingredients.
When prepared with minimal oil and light spices, these curries are low in calories.
To keep your meal healthy, choose curries with tomato-based or yogurt-based gravies rather than those made with cream or butter.
6. Raita and Side Salads
No Indian meal is complete without raita or a refreshing side salad. Raita is a yogurt-based dish mixed with ingredients like cucumber, mint, or roasted cumin.
Why It’s Healthy:
Yogurt is an excellent source of probiotics, which promote gut health.
Low in calories and rich in protein and calcium.
Pairing raita with spicy dishes can also help balance flavors and cool the palate.
7. Herbal Teas and Light Desserts
For a light and healthy conclusion to your meal, consider traditional herbal teas like masala chai made with low-fat milk or desserts like fresh fruit salads spiced with a dash of cardamom and saffron.
Why It’s Healthy:
Herbal teas aid digestion and provide antioxidants.
Light desserts avoid heavy creams and sugars while still satisfying your sweet tooth.

The Truth about White Rice: Hidden Dangers of Processed Carbohydrates
White Rice might perhaps be the staple preparation item seen in any number of Indian recipes. It has been a staple for thousands of years and is integrated into a host of traditional dishes ranging from biryani to idli. Boiled with a fluffy texture, it may seem paler than other things but brings unmatched to so many recipes. However, in the case of White Rice, the refined nature promises secret dangers that should be negotiated because of the rich food heritage of India. This blog explores the deception of White Rice and highlights the reasons for embracing better alternatives to uplift diet and health quality.
The Refining Process and Its Impact
White Rice is preferred in Indian cooking because of the soft texture of the cooked Rice which helps to balance rich curries and stews. Of course, this also means that during the refining process, the bran and germ of the Rice grain are stripped away, leaving the nutrients and fiber behind. The only thing left is the starchy endosperm of the Rice grain, which has far fewer health benefits to offer.
Nutrient Removal
Rice loses a good amount of nutritional value through refining. Here's what's lost:
- Fiber: Fiber helps to prevent constipation and maintain stable blood sugar levels. It is used for digestive health.
- Vitamins: Some deficiencies found in White Rice include B vitamins, B1 or thiamine, B3 or niacin, and B6, which are used in energy metabolisms and total well-being.
- Minerals: Some of the important minerals in diets are lost during the refining process, such as iron, magnesium, and zinc.
Notably, many of these nutrients are replenished by enrichment but are far from comparable to the integral nutritional value found with brown Rice or other whole grains.
Health Risks of White Rice
1. High Glycemic Index
The high GI in White Rice forces the glycaemic activity and rapid spiking of blood sugar levels, eventually leading to insulin resistance, thereby increasing the risk of type 2 diabetes area of tremendous concern in India with each passing year, with cases increasingly ascribed to lifestyle and dietary habits.
Comparison: Traditional Indian grains like Brown Rice and Millets have a low GI; which hence keeps the blood sugar level more balanced.
2. Weight Management Issues
Weight gain and obesity, which are increasingly of concern among India's population today, could be linked with high-GI foods like White Rice that cause hunger and overeating. The high fiber content in more grain types would reduce hunger and help retain their weight control.
White Rice in Indian Heritage
Indian heritage does not have any other place but a revered one for White Rice. It is used to prepare:
Any kind of Biryani: Steamed fragrant Rice with spices, meat, and sometimes vegetables.
Idli and Dosa: Steamed fermented Rice cakes and crepes from Rice and urad dal or black gram respectively.
Pulao: Rice preparation cooked with aromatic spices and vegetables or meat based on the choice.
As these cuisines constitute an impeccable portion of Indian culture, giving way to healthier options does not degrade the original staple foods in any way.
Healthier Variants Dominant in the Indian Tradition
1. Brown Rice
Brown Rice is a whole grain that includes bran and germ, thereby increasing the fiber content and also vitamins and minerals. It is much healthier than White Rice and can easily be a substitute for most traditional recipes.
Usage: Brown Rice Biryani or Pulao may be a wholesome alternative to traditional recipes.
2. Millets
Indians have been consuming these super grains such as Foxtail millet, Finger millet, and Barnyard millet for generations. Essential minerals, fiber, and protein are rich in Millets.
Usage: Millets offer a wholesome and nutritious substitute for your regular Dosa, Khichidi and Upma.
3. Quinoa
Tiny Quinoa is a nutritious grain that is becoming more popular because of its high protein content and low GI, although not of Indian origin. It can be included in Indian dishes to improve health.
Usage: Quinoa can be used as a substitute for Rice in biryani or pulao or added to salads for that protein boost.
Healthier Grains in Traditional Dishes
There's no limit to the flavours of the traditional when making healthier grains. Here's how you can incorporate alternatives:
1. Begin Step-Wise: Mix Brown Rice with white Rice in your recipes. Gradually increase the percentage of brown Rice over time.
2. Experiment with Flavours: Spice up Brown Rice with flavouring herbs to make it all the more presentable in your recipe dishes.
3. Breathe New Life into Traditional Recipes: Replace White Rice with Brown Rice, Millets, or Quinoa while preparing your favourite traditional recipes and breathe a healthier twist to these old recipes.
Conclusion: Rephrasing White Rice
White Rice itself has a deceitful story. Its highly refined nature has decreased its nutritional value and is proven to contribute to many health problems. In consequence, by learning about the negative impact White Rice has on you and healthier Indian-tradition-based alternatives, you can modify your diet and improve your well-being.
The incorporation of whole grains, whether Brown Rice, Millets, or Barley, besides a healthier lifestyle, does justice to India's rich culinary heritage. Adapt to these changes, and you'll enjoy traditional flavours with healthy food on your table.

Ingredients Needed To make Valaithandu Thogayal, gather these ingredients:
Banana Stem (Valaithandu) – finely chopped, about 1 cup
Fresh Grated Coconut – 1/2 cup
Urad Dal (split black gram) – 2 tablespoons
Red Chilies – 2-3 (adjust to your spice preference)
Tamarind – a small piece
Salt – to taste
Oil – for roasting ingredients (about 1 tablespoon)
Step-by-Step Recipe for Valaithandu Thogayal
Step 1: Prep the Banana Stem
Cleaning banana stem can be a bit tricky due to its fibrous nature. Start by peeling away the outer layers until you reach the soft core. Cut it into thin, circular slices and remove any fibers you come across. Then chop the slices into small pieces.
Step 2: Sauté the Ingredients Heat oil in a pan. Add urad dal and red chilies, and roast until the dal turns golden brown. Add the chopped banana stem and sauté for a few minutes until it softens slightly. Turn off the heat, and add fresh grated coconut and tamarind. Let the mixture cool.
Step 3: Blend to a Chutney
Transfer the cooled mixture to a blender. Add salt to taste and grind to a coarse or smooth consistency, depending on your preference. If needed, add a few teaspoons of water to help blend, but ensure the thogayal remains thick.
Step 4: Serve and Enjoy! Your Valaithandu Thogayal is ready! Serve this delightful chutney with steaming hot rice, dosa, or even as a dip for snacks. Its subtle flavors and healthy ingredients make it an ideal addition to any meal.
