NOM. My husbeast made the Bacon Wrapped Meatloaf recipe he's gotten very good at tonight, and ye gods it is so good. We skip the onions and hot sauce, but this is the best, juiciest, tastiest meatloaf. NOM NOM.

Bacon Wrapped Bbq Sausage and Beef Meatloaf
1 lb Italian Sausage
1 lb Ground Beef
3 eggs
1/2 cup almond flour
1/2 cup grated parm
Salt Pepper and garlic
3/4 lbs bacon
1/4 cup no sugar added ketchup
1/2 cup g Hughes bbq sauce (I used hickory)
Set oven to 400 f
In a large mixing bowl mix Italian sausage ground beef eggs almond flour grated Parm salt pepper and garlic together and form into a long loaf
Wrap back. Around your loaf till covered and stick in oven for 30 minutes. If your bacon is fully cooked on the outside broil till cooked.
Mix together your ketchup and bbq sauce and brush all over your loaf place back in oven till glazed over at 400f
Slice and enjoy!

Decided to go full-on culinary mode and make a bacon wrapped meatloaf with baked potatoes for dinner (well, dinners because I want to make it last for a couple of days). I've never tried this and I'm hoping that it turns out great. More at 11.

For the turkey meatloaf:
I used one pound of 93/7 ground turkey. Put salt, pepper, msg, minced garlic, plain chicharrons, grated parm, chopped up broccoli, and two eggs. Mix together, let sit out to get to room temp.
Set the oven to 375 F. Put raw turkey mix in bell pepper, wrap in foil leaving the top of pepper exposed. Put in oven for 40 minutes. Take out, drain off accumulated liquid from turkey meat. Put on broil for two minutes, Remove from oven.
Then added pepper jack cheese (I actually had ghost pepper jack cheese here, but not necessary) Top with mostly cooked chopped bacon. Stick back in oven with broiler on for 1 minute. Remove and let cool. Then enjoy!
I also topped it with some green onions and a fresno red pepper garlic cream sauce that I made. Lmk if you'd like that as well.

MAPLE GLAZED BACON-WRAPPED MINI MEATLOAVES
35 MINUTES PREP TIME- 80 MINUTES TOTAL TIME- 8 SERVINGS
INGREDIENTS
No-Stick Cooking Spray 3 tablespoons Maple Syrup 1 teaspoon Spicy Brown Mustard 1 pound lean ground beef (93% lean) 1 pound ground pork 2/3 cup chopped yellow onion 1 cup fresh button mushrooms, chopped fine 1/3 cup all-purpose flour 2 eggs, beaten 2 tablespoons Tomato Paste 2/3 cup Tomato Sauce 3/4 teaspoon salt 1/2 teaspoon ground black pepper 8 slices bacon, cut in half
DIRECTIONS STEP ONE - Preheat oven to 375°F. Line baking sheet with aluminum foil. Spray with cooking spray; set aside. Combine maple syrup and mustard in small bowl; set aside. STEP TWO - Combine beef, pork, onion, mushrooms, flour, eggs, tomato paste, tomato sauce, salt and pepper in large bowl until blended. With hands, form mini meatloaves (about 2 inches wide) and place on baking sheet. STEP THREE - Wrap bacon around each meatloaf, tucking ends under sides. Brush bacon with syrup mixture. STEP FOUR - Bake 30 minutes. Turn on broiler and cook another 5 to 10 minutes to crisp bacon.

BACON AND LEGS!

Inspired by my dad's bacon wrapped meatloaf, I wondered "What else would taste great bacon wrapped? Chicken!"
Here's the recipe for those who wanna try it.
Ingredients
Chicken Drumsticks x10 2 packs of bacon.
1 1/2 tsp Salt 1 or 2 tsp Garlic Powder 1/4 tsp Chili Powder 1 1/2 tsp Smoked Paprika
Instructions
Remove skin from chicken legs.
Put in zip lock bag(s), add seasonings. Seal and shake bag(s) until all legs are covered in seasonings.
Leave bags of seasoned chicken in fridge overnight to marinate.
Preheat oven to 350.
Put tin foil on cookie sheet with a ridge, less shiny side up. Spray tinfoil with cooking spray to prevent sticking.
Brown legs for 20 minutes.
Take legs out, let cool for a while before wrapping them in bacon. Don't wrap the bone, just the meat.
Set oven to 400 and cook the legs for 30-40 minutes or until bacon is crispy.

Ultimate Glazed Meatloaf
Ingredients
For the Meatloaf:
▢ 2 lb Ground beef, (85%-90% lean)
▢ 1 lb Ground sweet Italian sausage
▢ 2 Large eggs
▢ 1 Red onion, medium, finely chopped
▢ 3 clove Garlic, minced
▢ 2 Poblano or Anaheim pepper, medium, finely diced (boosted for flavor)
▢ 2 cup Cremini mushrooms, finely chopped
▢ Ritz crackers, 2 sleeves, crushed
▢ 1/2 cup Milk
▢ 1 cup Pecorino Romano cheese, finely grated
▢ 1/2 cup Fresh parsley, chopped
▢ 2 tbsp Worcestershire sauce
▢ 1 1/2 tsp Kosher salt , to taste
▢ 1/2 tsp Black pepper , to taste
▢ 2 tsp Paprika, smoked paprika if possible
▢ 2 tsp Italian seasoning
▢ 8 -10 slices Applewood-smoked bacon, optional, for wrapping - but is it really optional??
For the Glaze:
▢ 1/2 cup Ketchup
▢ 2 tbsp Brown sugar
▢ 1 tsp Worcestershire sauce
▢ 1 tbsp Adobo sauce 
▢ 1 tsp Dijon mustard 
▢ 1-2 tsp Hot sauce, optional
For the Demi-Glace - THIS IS COMPLETELY OPTIONAL
▢ 4 cup Beef stock, high-quality, homemade, or concentrated store-bought
▢ 1 cup Bold red wine, e.g., Cabernet Sauvignon or Merlot
▢ 2 tbsp Tomato paste, don't forget, you can roast it for a few minutes before adding to unlock flavor!
▢ Red onion, ½ medium, finely chopped
▢ 2 clove Garlic, minced
▢ 2 tbsp Butter
▢ 2 tbsp Flour, for a roux
▢ 1 tbsp Worcestershire sauce
▢ 1 tbsp Soy sauce
▢ 1 tsp Balsamic vinegar
▢ 2-3 sprigs Fresh thyme
▢ 2 Bay leaves
▢ 1 tsp Peppercorns
▢ 1 tsp Honey
▢ 1 tbsp Cold butter, to finish the sauce
For Searing:
▢ Oil or bacon fat, or the skillet
Instructions 
Prepare the Meatloaf:
Preheat your oven to 375°F (190°C).
In a large bowl, combine:Ground beef, Italian sausage, red onion, garlic, poblano/Anaheim pepper, mushrooms, Ritz crackers, milk, Pecorino Romano, parsley, Worcestershire sauce, kosher salt, black pepper, paprika, and Italian seasoning.
Add the eggs and mix gently until just combined. Do not over mix!
Shape the mixture into a loaf and place it on a rimmed baking sheet or in a loaf pan.
Optional: Wrap the meatloaf with applewood-smoked bacon, overlapping slices slightly.
Make the Glaze:
In a small bowl, whisk together:Ketchup, brown sugar, Worcestershire sauce, adobo sauce, mustard, and hot sauce (if using).
Brush the glaze generously over the surface of the meatloaf. Reserve a little glaze for later, if desired.
Bake the Meatloaf:
Place the meatloaf in the oven and bake for 40–45 minutes, or until the internal temperature reaches 150–155°F
The glaze will caramelize into a sticky, flavorful layer.
Remove the meatloaf from the oven and let it rest for 5–10 minutes.
Portion and Sear:
Once the meatloaf has rested, slice it into portions.Heat a skillet over medium-high heat and add a small amount of oil or bacon fat.Sear the meatloaf slices for 1–2 minutes per side, until golden brown and crispy.
Prepare the Demi-Glace: REMEMBER, TOTALLY OPTIONAL!
Sauté Aromatics:Heat 2 tablespoons of butter in a saucepan over medium heat.Add the red onion and garlic, sautéing until softened and fragrant (about 2–3 minutes).Stir in the tomato paste and cook for another minute to deepen the flavor.
Deglaze with Wine:Pour in the red wine, scraping up any browned bits from the bottom of the pan.Let it simmer until reduced by half (about 8–10 minutes).
Add Stock and Flavor Boosters:Stir in the beef stock, Worcestershire sauce, soy sauce, balsamic vinegar, thyme, bay leaves, and peppercorns.Bring to a boil, then reduce to a simmer. Let the mixture reduce by about half (20–25 minutes).
Strain the Sauce:Strain the reduced sauce through a fine mesh sieve, discarding the solids.Return the strained liquid to the pan.
Thicken with Roux:In a small skillet, melt 2 tablespoons of butter over medium heat.Whisk in 2 tablespoons of flour and cook, stirring constantly, until golden brown (2–3 minutes).Gradually whisk the roux into the strained sauce, ensuring no lumps form.
Adjust Seasoning and Consistency:Stir in the honey, if using, to balance the acidity. Adjust salt and pepper to taste.Let the sauce simmer gently for 2–3 minutes until thickened and it coats the back of a spoon.
Finish with Butter:Remove the sauce from heat and swirl in 1 tablespoon of cold butter for a glossy finish.
Serve:
Plate the seared meatloaf slices.Spoon the rich demi-glace generously over each portion.Drizzle with the reserved glaze for an extra layer of flavor, if desired.
