Folks from the US getting condescending about people not from the states has to be my least favourite genre of posts. Like, i swear every other week I see some shit written in half baked (british) english slang about baked beans or jellied eels or rotten teeth and it drives me up the wall. Just a bunch of fundamental misunderstandings about a place they've never been too with little to no curiosity about what life might actually be like there.
Im only coming at this from a UK angle so cant speak for anywhere else but a quick rundown on all this shit states side people get wrong about our food specifically because thats what winds me up the most.
Beans on toast is a cheap staple breakfast food, not the cornerstone of our cullinary tradition.
In most urban city centers you get a complex mix of diaspora informed food stuffs, primarily indian and east asian because of all that colonialism we did. Relatively large muslim populations also bring in middle eastern influences.
Even what you might think of as a classic british pub will sell you a basic curry unless you're in the arse end of nowhere. This is not niche shit. Our whole food culture is shaped by this.
What you could call 'classic' british cooking like full roast dinners with Yorkshire puddings, propery gravy, sruffung, and all the other fixings are fucking great actually. Bit of lamb with mint, bit of pork with apple sauce, cut of beef with mustard. It goes hard.
Even if you are in the arse end of nowhere stuff like pasties, proper pies, stews with dumplings, fish and chips, and other sea side holiday basics that make you think of little coves in north devon are also good, actually. Yes its not spiced to all hell and back, but they incoperate herbs and vegatables and stocks in ways that give it a unique depth of flavour distinct from cultures informed by a more spice heavy tradition.
Say what you will about our shit (complimentary) chicken shops and rubbery high street donner in years of nights out blind drunk in student bits of the city they've never once given me the gastric distress y'all describe post taco bell.
Of course our mexican food isn't particularly authentic, the countries half a planet away and we dont have a large mexican diaspora. What we do have is tuned for mass market appeal by largish chains or sold out of artisinal taco food trucks that we all find a bit wanky tbh.
Spicy food exists, and we quite like it. Yes even pasty white tony who turns the colour of jam when he eats a medium hot vindaloo. Indian food is a cornerstone of our national diet of course we know what chilli powder is.
And finally nobody eats fucking jellied eels it was a victorian era poverty food and even then only in london.
Also our chocolate is better than yours because we dont put the weird chemical in it that makes it taste like sick. Eat a kit kat and die mad about it.

There are whole treatises on immigrant cooking but it's so interesting to do it in real time.
I wanted some noodles with pickled eggs and immediately started the process.
They use a lot of unsweetened soy sauce. The thing is, sweetened soy sauce, as known in Indonesia, is so much cheaper here. And then there was the sesame oil. I have some sesame seeds, but they're hardly a staple, and my local supermarket did not stock sesame oil at all. And then there was the sesame paste, well, fuck it. I went with peanut butter for that. And no, they did not have white sesame seeds.
Unsweetened soy sauce, very expensive, immediately becomes a luxury, so we're doing this with sweetened soy sauce, omitting the sugar, and black sesame seeds. Also peanut butter and some Indonesian crushed pepper paste (sambal). Was it good? Yes! Did it, at this point, have anything to do with the Japanese version? I don't have money to be all authentic, crikey.
Also, Dutch national cuisine is extremely heavily influenced by not having:
Arable land
The climate to grow anything but cabbage, root vegetables or onions (few herbs). Spices are insanely expensive. We stil say that something is 'dear as pepper' (peperduur).
Do you know what we did have?
Livestock. And dairy. Plus beans and some fruits like apples, pears maybe some cherries and forest fruits.
So Dutch meals can only really be flavoured by meat! Fish is somehow a springtime and summer dish, because you need very soft baby carrots and very fresh vegetables to actually enjoy a meal of plain fish - again not even lemon - plus potatoes and some lettuce.
And oh, what if meat is unavailable?
(Not even bacon?)
There's only one thing for it, you smother it in cheese.
Now of course nowadays, you can buy herbs and spices. But still, our people are very bad at making vegetarian dishes, because if you can't flavour anything with meat or cheese what are you gonna do? Buy cumin?! Who has that kind of cash, traditionally?
So you see a lot of meats seasoned with fruits, or fruit served as a side dish. You see a lot of cabbage and kale mashed through potatoes. Why? It softens the taste; cabbage is quite harsh. You also see people basically give up on dinner, really, and inventing really tasty meat and cheesy bites. That does not a meal make, but they're really really good. It does also create a culture obsessed with desserts. If dinner is a bit of a bland affair, dessert can lift your spirits considerably.
A lot of this "White people can't season their food" comes from traditionally not having learnt non meat-based seasoning. We've tried to get by with fruits and the best cheese we could manage.
And sure. I am very eagerly brushing up on other kitchens, because now we absolutely can buy five spice and lentils and ginger. But I'm so much milder about "bad" cuisine or unauthentic foods. People are trying to do the best with what they have available and indeed what they know. Also, learning a foreign cuisine is hard and can be very expensive.
And I've decided that it's infintely easier to cook Surinamese in the Netherlands and Indian in the UK, so I'll cook Gordon Ramsay recipes when I'm there and sweet soy sauce chicken noodles when at home. Also try finding endive outside of Turkey and Holland. It's no use.

YES I WOULD LOVE TO TELL YOU ABOUT MALAYSIAN FOOD!! I would show u pics but um 🧍->🏃‍♂️💨. Ur gonna have to google it king LOL. The first day back my dad and I went out to a mamak stall (basically just a restaurant for malay-chinese-indian food), and I had roti canai (a type of flatbread with curry) and teh tarik, which I have missed dearly. I dont typically like normal english breakfast tea so getting to have authentic teh tarik was SO GOOD. Teh tarik (translating to "pulled tea") is made with condensed milk and gets its name from how after the drink is mixed it gets continuously poured over and over from one container to another until it gets super frothy.
I've also been getting reacquainted with my favourite fruits 🥰 that you cant get in Australia like mangosteen and jambu air (ai-yer). Mangos and dragon fruit you can get in australia but. um. Theyre bad. They just taste like sweet water. Also unfortunately for me rambutan i havent been able to find rambutan 😔😔. Those look similar to lychee but they taste pretty different, less tangy and sweeter.
Ive gone out with a friend to have cendol (c promounced as a "ch") which is a cold desert with coconut milk and rice jelly, along with other toppings should you choose it. Im also in the process of convincing my bff to do a 3h road trip with me specifically for food in a city called Ipoh 😭 wish me luck.
AND, im getting one of my relatives to teach me how to make rendang and char kway teow. The rendang specifically because the one she makes i prefer over what's usually made in restuarants. I think it's a state difference in recipes or smtg? So the ones you'll find in restuarants are KL/Selangor rendang and she makes from Kedah. Thats just a theory tho im not actually sure.

Its so funny you say that about blackberries bc where i live we have them literally growing everywhere on the side of the road AKDNWKDNKWDN in the summer when they start putting out fruit one of my roommates will sometimes go out and just pick a bunch for the whole household, and they always taste SOOOOO much better than the store-bought ones. Im genuinely not sure how to describe the taste of blackberry other than like. Its very sweet but also very tart (i go for the slightly less ripe ones tbh bc i prefer tart things to super sweet) at the same time, and sorta pops in your mouth a little bit when you chew it. Honestly its one of my favorite fruits i would highly recommend them if you can find em anywhere!!!!
My resolution this year is a bit silly but i wanted to go for a very fun easy one, so its to use every sticker i own this year :] ive already started by putting a few on the creeper minifridge that my roomie got me for xmas 😂😂😂😂😂😂 and i have some scrapbook ideas as well to use my fancier ones that my friends have gotten me!!!! Also you are so valid about the writing-- tbh if you wrote more than expected then it sounds like you succeeded instead of failed, so thats awesome!!! :DDD
